Studies on Nutritional Components, Safety and Physiological Active Efficacy of Moringa oleifera Leaf (모링가(Moringa oleifera) 잎의 영양성분, 안전성 및 생리활성 효능에 관한 연구 고찰)

  • Moringa oleifera leaves, seeds, pods, roots, and flowers have been widely used for their medicinal and nutritional properties. Many studies have been conducted on the chemical composition and effectiveness of M. oleifera. In fact, almost every part of M. oleifera has been found to contain essential nutrients and medicinal value. Especially, the leaves of M. oleifera are known to have various nutrients and diverse efficacy. Several studies have assessed the potential toxicity of the leaves when prepared by various methods. The results showed that the M. oleifera leaves when prepared differently were safe in locally used doses and amounts. Moreover, M. oleifera is known to contain various physiological efficacies, including antioxidant, anti-inflammatory, antidiabetic, and anticancer effects and so on. In the latest research, many attempts are being made to utilize the diverse effects of M. oleifera. This research seems to be bringing a promising view of M. oleifera as a therapeutic functional food for various diseases.

A Study on Introduction of New Food Labeling for Reduction of Sodium Intake (나트륨 섭취 감소를 위한 식품표시 개선에 대한 연구)

  • The objective of this study is to provide direction in the improvement of sodium labeling in an effort to reduce consumption. We surveyed confirmation and importance of food labeling and nutrition information and we also analyzed the willingness to pay on new nutrients labeling. Consumers checked the sell-by-date, product name, method of intake, but not nutritional information. They also checked for calories and carbohydrates but they were not interested in sodium, sugar, and trans fat which are health hazard nutrients. It is necessary to improve nutrition labeling, because consumers are experiencing difficulties in obtaining sodium information under the nutrition labeling system. Consumers will pay about 0.66% more if new sodium labeling is introduced. In conclusion, food labeling system can be improved by smooth and efficient access of information. for health-hazard nutritional components, such as sodium, it is important to introduce policies that reduce their intake. This can be done by providing consumers with clear and concise information. The social costs of high sodium intake could be reduced, hence improving the national health.

Awareness and Consumption Behavior of Vegetarians and Omnivores on Plant-based dairy alternatives (식물성 대체 유제품(Plant-based dairy alternatives)에 대한 채식주의자와 잡식주의자의 인식 및 소비행동)

  • This study investigated the awareness and consumption behavior of 118 vegetarians and omnivores toward plant-based dairy alternatives. The preference and choice attribute questionnaires were compared. Significant differences were obtained between the two groups when considering the purchase experience, preference, and selection attributes of plant-based dairy alternatives. Vegetarians had more experience purchasing plant-based dairy alternative products. In both groups, environmental and animal protection were the major factors that influenced the highest response rate for purchasing plant-based dairy alternatives. The preference score of vegetarians for plant-based dairy alternative products was high, indicating that vegetarianism had a significant effect on their preference for plant-based dairy alternative products. Analysis of selection attributes revealed that price, product weight, appearance, and manufacturer were considered important by vegetarians, whereas nutritional components and labeling, manufacturing environment, composition of ingredients, and taste and texture were considered more important by the omnivores. Results of this study can be used as basic data for the future development of the fast-growing industry producing plant-based dairy alternative products.

Comparative analysis of nutritional components in various parts of Hovenia dulcis Thunbergii

  • In this study, the nutritional compounds present in various parts of Hovenia dulcis Thunbergii (H. dulcis) were compared. Regarding the free sugar content, fruits exhibited the highest fructose concentration (9.42 g/100 g), whereas branches (2.46 g/100 g) and leaves (5.82 g/100 g) contained the highest glucose levels. The most common types of organic acids were citric and tartaric acids in the fruits, citric and malic acids in the branches, and malic and succinic acids in the leaves. The leaves exhibited the highest total amino acid content of 12,102.91 mg/100 g, whereas vitamin C is predominantly found in branches and leaves at 367.85 mg/100 g and 336.21 mg/100 g, respectively. In H. dulcis, β-carotene was present in high concentration in leaves (2.41 mg/100 g), whereas the branches (0.15 mg/100 g) and fruits (0.09 mg/100 g) contain smaller amounts of it. Vitamin E, α-tocopherol, was present in high concentrations in the fruit (11.01 mg/100 g), branches (6.61 mg/100 g), and leaves (11.01 mg/100 g).

Statistical Optimization of Medium Components for Milk-Clotting Enzyme Production by Bacillus amyloliquefaciens D4 Using Wheat Bran-an Agro-Industry Waste

  • In this paper, two statistical methods were applied to optimize medium components to improve the production of the milk-clotting enzyme by Bacillus amyloliquefaciens D4. First, wheat bran juice, skim milk powder, and $Na_2HPO_4$ were shown to have significant effects on D4 enzyme production using the Plackett-Burman experimental design. Subsequently, an optimal medium was obtained using the Box-Behnken method, which consisted of 3.31 g/l of skim milk powder, 5.0 g/l of sucrose, 0.1 g/l of $FeSO_4{\cdot}7H_2O$, 0.1 g/l of $MgSO_4{\cdot}7H_2O$, 0.1 g/l of $MnSO_4{\cdot}2H_2O$, 0.1 g/l of $ZnSO_4{\cdot}7H_2O$, 1.52 g/l of $Na_2HPO_4$, and 172.45 g/l of wheat bran juice. With this optimal medium, the milk-clotting enzyme production was remarkably enhanced. The milk-clotting enzyme activity reached 3,326.7 SU/ml after incubation of 48 h, which was 1.76-fold higher than that of the basic medium, showing that the Plackett-Burman design and Box-Behnken response surface method are effective to optimize medium components, and B. amyloliquefaciens D4 possessed a high rennet-producing capacity in the optimal medium.

  • This study was performed to develop an index assessing the overall diet quality for Korean. The study subjects consisted of preschool children (PC), elementary school children (EC), high school students (HS), college students (CS), and adults over 30 years old living Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 people. Newly developed Korean diet quality index (KDQI) was an index assessing the overall diet quality from the view point of balance. KDQI was based on the nutritional problems of Koreans, dietary risk factors for chronic degenerative diseases, 5 major food groups, and dietary guidelines. The ten components of KDQI were vegetables, fruits, dairy products, dietary variety score, calcium intake, iron intake, energy intake, fat intake, and cholesterol intake. The full score of each component was 10 points and the score of KDQI was calculated by summing the scores of the 10 components. When the KDQI was applied to this study subjects, the distribution of subjects KDQI scores was similar to normal distribution. Mean score of KDQI was 56.0 and the range of the mean by age was from 45.7 for the subjects over 70 years old to 60.7 for the elementary school children. The components which composed the lowest three means were dairy intake, fruit intake, Ca intake in most age groups. Mean score of DVS was one of the highest three but not for the subjects over 50 years old. After subjects with KDQI score over 70 were classified to higher poop and those with KDQI score under 40, to lower group, nutritional characteristics were compared. Energy contributions of carbohydrate, proteins, and fit, percentages of RDA for major nutrients, and dietary diversity scores were more adequate in the higher poop than in the lower group. The lower poop had more risks for chronic degenerative diseases. According to the results, KDQI was valid index to assess the overall diet quality and it could be used to detect risk group for malnutrition and chronic degenerative diseases.

Nutrient Contributions of the Five Meal Components in School Lunch: $Entr{\'{e}}e$, Milk, Vegetable/Fruit, Bread/Grain, and Miscellaneous

  • This retrospective study was designed to evaluate the nutrient contributions of the five meal components of school lunch menus planned for elementary students in two school districts (District A and B) in the Midwestern state of the United States. The 4-week cycle menu was planned for two time periods (Period 1 and Period 2) following guidelines for NuMenus and general menu planning principles. Menu components of planned and served menus for two time periods were analyzed using $Nutri-Kids^{TM}$. No significant differences in the nutrient content of between Periods 1 and 2 were found for District A. District B served significantly more vitamin A and total fat in Period 1 and significantly more calories, iron, vitamin A, protein, and total fat in Period 2 than was planned. The major nutrients provided by the entree component included protein, calories, cholesterol, total fat, saturated fat, and sodium. Milk was an important source of calcium and provided approximately one-third of the total protein and vitamin A in the meal. The vegetable/fruit component was the major source of vitamins A and C. The grain/bread component provided approximately 20% of the carbohydrates among five meal components. The miscellaneous component affected the sodium and fat content of the menus. Menu planners can use the results of this study to enhance their knowledge of the nutrient contributions of each meal component and as inputs for planning menus that meet children's nutritional requirements.

A pheromone mutant of Schizosaccharomyces pombe displays nucleolar fragmentation

  • Stresses and nutritional starvation are two main external signals for the induction of sex pheromones in the fission yeast Schizosaccharomyces pombe. In an attempt to identify the components involved in transduction of starvation signals, we screened 135 temperature-sensitive (ts) mutants and isolated 6 mutants that induced the pheromone even in the presence of a nitrogen source. These mutants exhibited two distict induction phenotypes: pheromone induction at restrictive but not at permissive temperatures; and pheromone induction at both permissive and restrictive temperatures. The times required for the maximum pheromone induction at the restrictive temperature differed slightly in each mutant. In addition to the pheromone induction phenotype, the ts243 and ts304 mutants exhibited cell-division-cycle defects. The ts304 mutant cells showed an abnormal cytoplasmic DAPI staining pattern. The nucleolus of this mutant seemed to be fragmented, a phenomenon which is typically observed in aged yeast cells. The result of our genetic analysis indicated that the pheromone induction mutants belonged to 6 separate complementation groups. We designated these mutants pws1 to pws6.

Comparison of the Nutritional Compositions of Insect-Resistant and Glufosinate-Tolerant Rice and Conventional Rice

  • The nutritional composition of transgenic rice (Agb0101) with bar and modified cry1Ac1 genes grown with herbicides was compared with that of its non-transgenic counterpart. The analyzed components (proximates, amino acids, fatty acids, minerals, vitamins, trypsin inhibitors, and phytic acid) in the herbicide-treated Agb0101 brown rice were substantially equivalent to those of its non-transgenic counterpart.

Analysis of Nutritional and Volatile flavor Compounds of Garlic Shoot (마늘순의 영양적 성분 및 향기 성분 분석)

  • To enhance the utilization of garlic shoots as food material, the nutritional and volatile flavor com pounds were investigated for garlic shoots, both cold and warm region type garlic shoots. Proximate composition of cold and warm region type was as follows, respectively; crude protein 2%, crude lipid 0.4%, crude ash 1.1% and 1.5%, crude fiber 1.3% and 1.5%. The major fatty acids of 2 varieties of garlic shoots were linoleic, palmitic and linolenic acid, and their desaturation ratio of them was comparatively high, showing 73.7 and 66.8%, respectively. Free sugars were composed of glucose, sucrose, fructose, arabinose and sorbitol. In the total amino acid analysis, the major amino acids were glutamic acid and aspartic acid. The volatile flavor compounds of fresh garlic shoots extracted by hexane and Likens-Nikerson steam distillation apparatus were identified to be methyl-2-propenyl disulfide, diallyl disufide, propenyl propyl disulfide, di-2-propyl-trisulfide, 2-vinyl-1,3-dithiane, and 2-vinyl-4H-1,3-dithiin. Hexane was more effective than steam distillation for extraction of volatile components of garlic shoots.
