충청지역 일부 대학생의 코로나-19 이후 식생활 변화, 가정간편식과 배달음식 이용 실태 (Change of dietary habits and the use of home meal replacement and delivered foods due to COVID-19 among college students in Chungcheong province, Korea)

  • 충청지역 소재 대학에 재학 중인 남녀 대학생 460명을 대상으로 2020년 12월에 학업방식과 식생활 실태에 대한 조사를 통해 코로나-19로 인한 대학생의 식생활 문제를 제시하고자 하였다. 조사 항목은 일반사항, 비대면 수업 실태, 최근 6개월 동안의 신체활동 및 체중변화, 식습관 (코로나-19 발생 전·후의 식습관 변화, 가정간편식 및 배달음식의 이용 실태)으로 구성하였다. 연구대상자가 재학 중인 대학교의 소재지는 '시'의 비율이 69.4%였으며, 주요 거주지는 '가족과 함께 자택'이 59.1%로 가장 높았다. 주된 수업참여 방식은 '70.0% 이상 비대면'이 40.4%, '100% 비대면'이 40.2%로 나타났고, 수업을 수강한 장소는 97.6%가 '집이나 기숙사의 자기 공간(방)'이었다. 최근 6개월 동안의 신체활동 변화는 전체 연구대상자의 52.8%가 신체활동이 감소한 것으로 응답하였고, 체중변화는 남학생의 47.8%가 체중 증가로 나타나 여학생의 32.2%에 비해 높았다 (p < 0.01). 가정간편식의 이용 빈도 분석결과, 코로나-19 발생 전에는 '주 1~2회/한 달에 2~3회/한 달에 1회 이하'로 응답한 비율이 남학생 62.7%, 여학생 69.6%로 높았던 반면, 코로나-19 발생 후에는 '주 3-4회/주 5-6회/하루 1회 이상'으로 응답한 비율이 남학생 57.4%, 여학생 46.7%로 높게 나타나 코로나-19 발생 후 가정간편식의 이용 빈도가 증가한 것으로 나타났다 (p < 0.05, p < 0.001). 배달음식의 이용 빈도는 여학생의 경우 코로나-19 발생 전 '한 달에 2-3회/한 달에 1회 이하'로 응답한 비율이 58.3%로 높았던 반면, 코로나-19 발생 후에는 '주 1-2회/주3-4회/주 5-6회/하루 1회 이상'으로 응답한 비율이 64.6%로 높게 나타났다 (p < 0.001). 코로나-19로 인해 비대면 수업이 진행되면서 식습관에 미친 부정적인 변화로는 '불규칙한 식사' (56.7%)의 비율이 가장 높았으며, '배달음식 섭취 증가' (42.2%), '간식 섭취 증가' (33.3%), 'HMR과 같은 가공식품 섭취 증가' (30.4%)의 순으로 나타났다. 대상자가 경험한 긍정적인 식습관의 변화로는 '음주빈도 감소'가 33.9%로 가장 높았고, '외식 빈도 감소' (26.1%), '직접 조리 증가' (24.4%)로 나타났다. 이상의 결과에서 대학생들은 코로나-19로 인해 비대면 수업 참여 비율이 높았고, 이 시기 동안 대학생들은 활동량 감소와 체중 증가, 불규칙한 식생활, 가공식품·배달음식·간식 섭취 증가와 같은 바람직하지 못한 식습관 문제의 증가를 경험하였다. 따라서 코로나-19로 인해 제한된 외부 활동과 식생활의 변화로 나타날 수 있는 대학생의 건강과 영양문제의 예방과 관리를 위한 영양교육과 정책적 지원의 필요성이 높은 것으로 사료된다.

산업근로자의 건강증진 행태에 관한 관련요인분석 (A Study on Health Promotion Behavior and It′s Related Factors of Industrial Workers)

  • From September 2, 1995 through October 31, this questionnaire was made by the 1, 200 industrial workers who work for 15 enterprises of 5 types of business. And it was for helping to devise a policy and to develop a program for industrial workers' health promotion by understanding the consciousness behavior level of industrial workers in our country and the related factors which are under the influence of it and health promotion behavior. The summary and conclusions are as follows. 1. In health promotion score level by related factors, the health diagmosis level score was 7. 37(81.9/100) of the perfect score 9, nutrition level score was 7.00(77.8/100), health education behavior level score was 6.00(66.7/100), exercise behavior level score was 6.01(66.8/100), occupational disease knowledge level score was 6.00(66.7/100). 2. Health diagnosis behavior level was significantly high when the age is older, when the occupation term is longer, when the economic status is better. And wjem tje satosfoed degree for vocational aptitude, working environment, and the education contents. 3. Nutrition (dietary habit) status level was high in men, in the age group of 40 over, in the group of having their spouse, in the group of being paid over one million won a month, in the upper economic classes (P〈0.001). It was also high in graduates middle school and in daytime workers (P〈0.05). 4. Health education behavior level was high in the older ahe hroup, in a single life (separation by death, divouce, separation) and in the longer occupation term(P〈0.001). 5. Exercises behavior level was high in men, in the workers who are paid 500~990 thousand won a month, in the better economic classes(P〈0.01). 6. Knowledge level on an occupational disease was high in men, in the older age group, in the group of having a spouse, In the workers who are paid 500~990 thousand won a month, in the group of having a longer occupation term, and in the residents living not in a large city(P〈0.01). 7. When health status was higher, health promotion behavior, behavior level, health diagnosis (P〈0.001), nutrition(P〈0.05), health education behavior (P〈0.05), exercise behavior(P〈0.01) and the knowledge level on an occupation disease was high. 8. The main factors which are under the influence on the degree of practicing healthy life were the level of knowledge and behavior, sex, his/her health status, and the satisfied degree of working environment. These variables could explain it 18.0%. 9. The factors which are under the influence on health promotion behavior and behavior levels were the variables of the satisfied degerr of education contents, sex, health knowledge, economic status, health status, occupation terms, monthly income, working tiredness. These variables could explain it 21.3%. By these results, it is inportant for industrial workers' health promotion to level up the health diagnosis behavior, dietary habit considering nutrition, behavior on health education, behavior for exercise, and knowledge on an occupational disease. Especially we should develop the proper program considered sex, health status, satisfied degree of working environment and education contents, economic status, eccupation terms, knowledge on health, and behavior level. Because health promotion business gies in gear with productivity promotion.

소득수준에 따른 우리나라 성인의 식품 및 영양소 섭취수준 비교 - 2001 국민건강$\cdot$영양조사 결과를 중심으로 (Food and Nutrient Consumption Patterns of the Korean Adult Population by Income Level - 2001 National Health and Nutrition Survey)

  • To explore the relationship between economic status and food and nutrient intake patterns, the 2001 National Health and Nutrition Survey result was analyzed. Dietary intake data of 6,978 Korean adults of 20 years and older who participated in the 2001 National Health and Nutrition Survey were used along with their demographic data. Economic status of the subjects was classified into the following 4 groups based on the self-reported average monthly income of household with reference to the minimum monthly living expenses (MLE) in 2001 : low < $100\%$ MLE $\leq$ middle < $200\%$ MLE $\leq$ high < $300\%$ MLE $\leq$ higher, Individuals in the higher income class had significantly higher mean intake for most of the nutrients including energy, protein, carbohydrate, fat, calcium, thiamin, riboflavin, niacin and vitamin C, and a higher percentage of energy intake from fat. In addition, they consumed more animal foods including meats, eggs, fish/shellfish, milk/dairy products and fats. On the other hand, the mean intakes of individuals in the lower economic class for calcium, vitamin A, and riboflavin were lower than $75\%$ of RDAs. And, there was a predominant difference in contribution of fat to total energy intake among the groups of different economic status. These results showed that household income is an important factor influencing the food and nutrient intake patterns of the Korean adult population. Although individuals at different age classes may respond differently to a change in economic status, developing and implementing nutrition policy and intervention programs for those nutritionally vulnerable groups should consider the economic status as an important factor to customize and differentiate the content of the Program. Dietary life and mukbang- and cookbang-watching status of university students majoring in food and nutrition before and after COVID-19 outbreak

  • Purpose: With increased time spent at home due to prolonged online classes, this study sought to determine how the coronavirus disease 2019 (COVID-19) pandemic has impacted the mukbang- and cookbang-watching patterns and dietary life of college students. Methods: All students majoring in food and nutrition (FN) at a college in Gyeonggi, Korea, participated in the survey in April 2019 (M/F = 36/106) and June 2020 (M/F -37/130) and data were analyzed using SPSS 26.0. Results: Compared to students responding in 2019, those in 2020 reported more frequently eating alone (p < 0.01) and cooking (p < 0.01), and evaluated their diets better regarding pleasant mealtimes atmosphere (p < 0.05), moderation in drinking (p < 0.05), and not consuming excessively delivery foods (p < 0.001), processed foods (p < 0.01), foods with animal fat (p < 0.01), salty foods (p < 0.01), and sweets (p < 0.01). Although the proportion of respondents who answered that they watched mukbang and cookbang at least occasionally did not change, greater proportions of respondents reported watching both genres frequently (p < 0.001, respectively) and spending less time/day in watching mukbang (p < 0.05) in 2020 vs. 2019. While they evaluated the effect of mukbang- and cookbang-watching on overall diet similarly, the proportion of respondents that reported feeling as though mukbang-watching prompted them to eat more of less-desirable foods decreased from 54.3% to 41.5% (p < 0.05). Diet improvement of participants due to COVID-19 resulted in that the association between frequent mukbang-watching and unhealthier dietary habits in 2019 was not shown in 2020. Conclusion: Our results suggest that the prolonged at-home stays due to COVID-19 might have improved many aspects of diet and decreased undesirable effect of frequent mukbang-watching in case of college students majoring in FN.

향토음식의 산업화가치 평가를 위한 지표 개발 연구 (Development of Evaluation Indicators for Industrialization of Local Cuisine)

  • The purpose of this study was to develop an evaluation indicator for the industrialization of local cuisine. We conducted a literature study, interviews with experts, and a Delphi survey. The resulting evaluation indicator was divided into four groups and nine sub-groups. The four groups were locality, taste and functionality, industrial base, and business value. The nine sub-groups were traditionality, regionality, eating quality, nutrition and functionality, condition of development, technological level, rights and policy, marketability, and ripple effects. Also 22 items were created as indicators for evaluating classes ; historicity, sustainability, rarity, awareness of local resident, the number of similar restaurant, appearance, taste, nutritional balance, health functionality, availability of raw materials, suitability of environmental exchange of market, standardization of recipe, simplification of recipe, storability, intellectual property rights, government's policy, appropriacy of price, popularization, possibility of franchise, globalization, improvement of local image, vitalization of local economy. The four most important classes corresponded to one of the four groups. These classes were sustainability, taste, state (local autonomy) policy, vitalization of local economy. The implications of this study are that the possibility of industrializing the local cuisine of each region can be evaluated and applied. Moreover, these indicators could promote the discovery of local cuisines, support planning for the commercialization of local cuisine.

실천적인 영양교육 프로그램 (KHIDIKIDS)을 통한 초등학교 저학년생의 식생활 태도 및 식습관 향상 (Application of a Practical Nutrition Education Program, KHIDIKIDS, for the Improvement of Dietary Attitudes and Habits of Elementary Students)

  • The purpose of this study was to improve the dietary attitudes and habits of elementary students in lower classes through a 12-week practical nutrition education program called KHIDIKIDS, which was developed by Korea Health Industry Development Institute (KHIDI) in 2004 based on the 2003 Children's Dietary Guidelines of the Ministry of Health and Welfare of Korea. KHIDIKIDS has never been applied in the field, therefore, another purpose of this study was to evaluate the program in the school education and suggest the ideas for the improvement. KHIDIKIDS was applied to a class of 2nd-grade elementary students consisting of 28 children in Seoul during the fall semester of 2005, and the effect of the program was measured by using questionnaires for the students and their parents. The statistical analysis of the study was conducted by using SPSS WIN 11.5 program, and the results were as follows: The children's knowledge on nutrition was improved significantly by KHIDIKIDS education (p<.001), such that the average score on nutritional knowledge increased from 8.32 to 9.64 after education. This practical nutrition education program also improved the dietary attitudes and habits of children especially in healthy body weight, daily exercise, and having breakfast (p<.05). Parents also showed very positive responses for the nutrition education. During the application of KHIDIKIDS in the field, the followings were indicated for adjustment, First, some education content of the week was too much to be finished in a class hour and more hours need to be allocated. Second, some terminology need to be adjusted to help the students understand easily. Thirdl, the order of the's Basic Food Groups' needs to be matched with the order of each food group in the 'Food Tower' not to make children be confused. Above results showed that KHIDIKIDS was effective for the improvement of dietary attitudes and habits of lower elementary students. However, further educational effects would be achieved when the education was started from the 1st to higher grades along with the parents' participation.

초등학생의 식품알레르기 교육 프로그램의 효과 평가 (Effectiveness Evaluation of Food Allergy Education Program for Elementary School Children)

  • This study aimed to evaluate the educational effects of an education program about food allergies in elementary school children. We conducted an education program consisting of eight classes for a total of 4,744 students at 100 elementary schools in Seoul and investigated changes in knowledge and awareness about food allergies in participants using a questionnaire. A total of 576 students (12.1%) reported that they have taken medical treatment because of a food allergy. After education, the knowledge score of participants significantly increased from 2.7 to 3.3 out of 5.0 (p<0.001). The ratio of having a friend with a food allergy decreased from 24.7% to 19.8% (p<0.001). The participants responding as having helped a friend with a food allergy significantly increased from 15.5% to 17.7% (p=0.003). Before education, 16.8% of respondents answered that they felt pity for friends with food allergies, whereas this percentage significantly decreased after education (p=0.034). Among 576 students with food allergies, 21.5% reported that they felt depressed due to their food allergies before education. However, the percentage significantly decreased after education (p<0.001). These results suggest that the education program about food allergies for elementary school students needs to be extended more widely to children.

The Effect of pH on the Formation of Furfural Compounds in the Glucose and Fructose with Amino Acid Enantiomers in Maillard Reaction

  • This study was conducted to investigate the effect of pH on the formation of furfural compounds from glucose and fructose reacting with amino acid enantiomers in the Maillard reaction. Hydroxymethylfurfural (HMF) content was highest at pH 4.0, and decreased with increasing pH. HMF was significantly higher in glucose-based systems than fructose-based systems. Furfuryl alcohol (FFA) and 5-methyl-2-furaldehyde (MF) were not increased with increasing pH, and only small amounts were formed. In addition, 2-furaldehyde (F) was found to increase in the systems, as pH increased. However, the content was small and variable. 2,5-Dimethyl-4-hydroxy-3(2H)-furanone (DMHF) was only found in Glc/D-Asn, Glc/L-Lys and Fru/D-Lys system, but the content was not increased with increasing pH. 2-acetylfuran (AF) was higher in Glc (or Fru)/L-Lys and Glc (or Fru)/D-Lys systems at pH 7.0. However, at pH 4.0, the content of AF was higher in the Glc (or Fru)/Gly and Glc (or Fru)/L-Asn systems. Therefore, this study aimed to observe the effect of pH, sugars and amino acid enantiomers on the production of furfural and related compounds by the Maillard reaction. A clear tendency was observed for some classes of compounds to be more easily formed at higher or lower pH. HMF was more readily formed at lower pH, while FFA, F, DMHF and MF were inhibited by acidic conditions. Particularly, compounds like FFA, F and MF were not affected by pH changes. In addition, DMHF and MF were only formed in L-Lys and D-Lys system.

중학생들의 식품첨가물에 대한 인식과 교육에 관한 연구 (A Study on the Recognition and Education of Food Additives in Middle School Students)

  • The purpose of this study is to offer youth with the basic materials for developing nutrition education programs and to help domestic science teachers in schools implement effective dietary education by examining their awareness of food additives. In the source of acquiring knowledges on food additives, the results were through mass media, technology and home economics teachers, and family members in order. The majority of students thought that they don't need the education about food additives. As effective teaching methods, they first selected the use of visual media, followed by experimental cooking classes, field trip, and inquiry lessons using processed foods. As a result of analyzing the education on food additives in accordance with demographic factors, more number of female students, compared to male students depicted the need for education on food additives. Further, the lower the cost students spend on purchasing processed foods per day, the higher the necessity of the education they indicate. The necessity of education content on food additives showed significant difference depending on the cost of buying processed foods, and the degree of interest and help real-life according to gender indicated significant differences. The satisfaction with education on food additives, which was implemented in home economics education revealed significant differences according to gender. This study aims to provide the basic data for the development and research of educational programs regarding good eating habits among the general youth. However, there are limitations to the presentation of the practical training program. For this reason, based on the results of this study, further studies should follow this study in order to develop and study educational programs related to food additives for teaching and learning purposes.

초등학교 저학년을 위한 실천중심의 식생활 교재 및 교사용 지침서 개발 (Development of Practical Dietary Education Textbook and Teaching Manual in Elementary School Students)

  • This study was conducted for researching demand on dietary education of low-level elementary school students and to develop an activity based textbook and a teaching manual on the subject. For necessity of dietary education, 88.8% of subjects answered dietary education is needed. The desirable frequency of the education was once a week (65.7%). The most appropriate time for the education was "school lunch" (37.5%), "special activity" (29.9%), "regular class" (12.4%) and "after school activity" (12.1%). The most preferred educational method was "experiment and practice" (40.1%). The desirable educational materials were "computer materials" (20.7%), "actual objects" (20.1%), "videotapes" (16.5%), "photographs-pictures" (12.2%) and "fairy tales-cartoons" (12.2%). The students wanted dietary information as "cooking" (26.1%), "growth and nutrition" (23.7%) and "right food information" (20.1%). The textbook was composed of five major chapters, which were "Traditional Dietary Culture", "Food", "Dietary Habit", "Hygiene and Environment" and "Cooking". Each major chapter had five to six smaller chapters, adding up to total of 32 chapters. The textbook had fun characters, illustrations, photographs and cartoons to deliver the main theme of each chapter. The textbook was in activity format so that it coul be readily and directly used in actual classes. The teaching manual was composed of background, goals, teaching plans and teaching points. The smaller chapters had learning goals, teaching-learning resources, important points, teaching-learning processes and reference materials. Videos were produced to help cook five snacks in the cooking chapter. Also, "Healthy Song" was created to be used in classrooms. This textbook will be helpful in children's right dietary habits and growth.
