  • The purpose of this study was to analyze characteristics of the obese children in depth and provide basic information for a comprehensive educational program for the obese children. Physical and biochemical characteristics, nutrient intake, and self-esteem, etc. of 16 obese elementary school children (OC) and 14 normal weight elementary school children (NWC) were examined. Self-esteem was measured using Likert-type scales with description. Plasma levels of total cholesterol, LDL-cholesterol, and glucose of OC were higher than those of NWC. Dietary intake with a lunch provided more energy and vitamin B1 in OC than in NWC. Physical appearance and athletic competence among self-esteem in OC were lower than in NWC. However, there was no significant difference in physical activity between OC and NWC. In OC, atherogenic index was positively related with waist circumference, obesity index and BMI while athletic competence self-esteem was negatively related with them. It is recommended that the children should receive the comprehensive educational program for improving children' dietary behavior and their self-esteem.

  • Stress has been associated with poor eating behavior and diet quality. Yet, the relationship between nutrient and food intake and perceived stress in Korean female adults has not been validated. The purpose of this study is to identify the relationship between nutrient and food intake and perceived stress in Korean female adults. This is a cross-sectional study based on the 2014-2015 Korean National Health and Nutritional Examination Survey data. This study investigated 2,010 female adults age 19~64. In this study, according to subjects' perceived stress, we classified subjects into very low-stress recognition group (VLSRG) (n=211), low-stress recognition group (VSRG) (n=1,223), high-stress recognition group (HSRG) (n=488) and very high-stress recognition group (VHSRG) (n=88). Daily nutrients and food group intake, food groups consumed (Dietary Diversity Score, DDS) were analyzed using data from the 24-recall method. The VHSRG had a larger proportion of subjects that were younger (p<0.0001), single (p<0.0001) and smokers (p<0.0001) compared to the VLSRG. Energy and food intake did not differ between the four groups. Percentage of subjects with protein (p=0.0322), vitamin A (p=0.0364) and vitamin C (p=0.0115) intake lower than the EAR (estimated average requirement) in the VHSRG were significantly lowest in the four groups. Also, food intake percentage from fruits and seaweed groups in the VHSRG were lower than other groups (p=0.0034, p=0.0015). DDS in the VHSRG (3.87) was significantly lowest in the four groups (p=0.0022). Results suggest that perceived stress in Korean female adults may by significant to consider in nutritional education programs.

  • This study was undertaken to investigate the dietary behavior and sugar intake of korean school children. The subject were 131 school lunch program children and 149 non school lunch program children lived in Soung Nam city. Sugar intake, food intake, dietary behavior and anthropometric measurement were studied through personal interview using 24-hour recall dietary data and records. Total daily energy and nutrient intake of children were higher than RDAs except for intake of Calcium and vitamin A. The nutrients intake of school lunch program children were significantly higher than that of non school lunch program children (p<0.05). The range of daily sugar intake was 10 g to 220 g and the total daily sugar intake was $63.0{\pm}37.4\;g$. Sugar intake of school lunch program children ($51.4{\pm}25.7\;g$) was significantly lower than non school lunch program children ($73.1{\pm}42.9\;g$) (p<0.0001). The more sugar intake increase more intake of Energy, Fat and Carbohydrate. The result of stepwise multiple regression analysis using the sugar intake of children as dependent variable, energy, vitamin $B_2$, protein, niacin, calcium school lunch program, education of fathers are significant explanatory variables, explaining 44.8% of variation. Result of this study suggest that school lunch program is desirable for good dietary behavior and decreation of sugar intake of school children.

  • This study was performed to evaluate the effectiveness of a nutrition education program developed for nutritionally imbalanced adolescents. A summer nutrition camp was held for 23 overweight and 16 underweight subjects. Its effectiveness with regard to was evaluated at the end of the camp and 6 months later. Nutrition knowledge, nutritional attitude, food behavior, nutrient intake, exercise habit and ideal body figures desired by the subjects. The results showed significantly higher nutrition knowledge scores at the end of the camp as compared to those obtained prior to the camp program, and these scores were maintained for at least six months. Nutrition attitude scores also improved after the education program, and these improved scores also lasted for 6 months. However, the food behavior scores measured 6 months after the education program were not significantly different from those obtained prior to the camp. Also, the exorcist habit, the ideal body figures and the body figures desired by the subjects remained unchanged. When nutrient intakes of subjects were assessed before the program and 6 months later, the mean daily vitamin C intake was significantly increased after the education program. Also, the intake of iron from plant food sources increased in the overweight subjects, while less iron from animal source were consumed by the underweight subjects. Both groups tended to consume more vegetables and fruits 6 months after the education program which may have contribute to the higher vitamin C and plant-based iron intakes. These results indicate that a 4-day nutrition education camp program sustained changes in nutrition knowledge and nutrition attitude for 6 months. The increased intake of vegetables and fruits was also achieved through this education program. However, changes in dietary behavior in adolescents may require repeated education. • A total of 5,597 Korean subjects aged 20-64 years were analyzed using the KNHANES 2013-2015. Among the subjects, 41.1% of males and 5.5% of females were smokers, and risk of developing metabolic syndrome in smokers was significantly increased in men with age, alcohol, physical activity, obesity, and sleep(aOR 1.785, 95% CI 1.004-3.174), whereas it was not significantly higher in women. As a result of analyzing the difference of average nutrient intake according to smoking and metabolic syndrome, the energy, retinol and vitamin C intake were significant when age and gender were corrected in the smoker and metabolic syndrome group. In this study, we found that smoking behavior and metabolic syndrome were related to nutrient intake which requires a national level of lifestyle intervention for the prevention and management of metabolic syndrome.

  • This study was performed in order to identify nutritional factors affecting on skin sebum content with 131 female university undergraduates in 2003. We measured the sebum contents of 4 facial spots to classify their skin types. Daily energy and nutrient intakes of the subjects were not deficient except in calcium and iron, which were 466.2 mg (66.6% RDA) and 8.5 mg (53.4% RDA) relatively. We observed no significant difference of energy and nutrient intakes among the 3 skin types. But significantly higher consumption of grains and slightly higher frequencies of several food groups (excepting starches) were shown in oily skin types, so they might have higher nutrient intakes. Serum indices and food preferences mostly revealed no difference among the 3 skin types. But in the oily skin type, serum phosphorus levels were significantly lower than others, suggesting phosphorus-rich food consumption like soft drinks and pains could lead to a dry skin type rather than an oily one. Also in the oily skin type, sweet taste preference was slightly tower than others; more-over, sweet intake was lower samely significantly. There was mostly no significant relationship between facial sebum contents and nutrient intakes, dietary behavior, food frequency and food preference except in some factors. Animal protein intake showed a significant negative relationship toward facial sebum content. On the other hand, in normal skin type, Fishes consumed was slightly higher than others, so that higher animal protein consumption presumably leads to normal skin type. Frequency of fried food and bacon and preference of fried foods showed slightly negative relationships toward facial sebum content. Regular meal times showed significantly increased facial sebum content.

  • In order to identify valuable factors for improving dietary quality of Korean rural elderly, the consumption frequency of food groups, dietary habits and health behaviors related to nutrient intakes of the elderly over 85 of Sunchang County were studied. The 171 subjects (61 males and 110 females) were chosen from Sunchang Province by stratified sampling. Among food groups, the consumption frequency of meat and fish groups influenced significantly on their nutrient intakes than the other groups. The subjects consuming more than 4 times per week of meat or fish had significantly higher nutrient intakes level than the other groups. The group consuming milk and milk products everday was higher in vitamin $B_2$ intake level than the other groups. Among dietary habits, the groups with good appetite and regular mealtime compared with the groups with low appetite and irregular mealtime had significantly higher nutrient intake levels. The family type was the determining factor of nutrient intakes. The subjects living with family members consumed higher nutrient intakes than the subjects living alone. The smoking and the alcohol consumption themselves did not affect nutrient intakes, but the subjects having alcohol consumption frequently more than once a day had lower nutrient intakes than the others. The group with dentures did not differ significantly from the without denture group in nutrient intakes; however, those who had chewing problems showed the lower nutrient intakes compared to those who did not have chewing problems. The subjects with more than two kinds of clinical symptoms had lower nutrient intakes than the subjects with less than two kinds of clinical symptoms. These results indicate that the identifying factors for desirable nutrient intakes of rural elderly were characterized as appropriate consumption frequencies of meat and fish, good appetite, living with family, regular mealtime, chewing without difficulty, and low incidence of chronic disease.

  • The purpose of this study was to investigate night-time eating habits, and dietary habit and nutrient intake of university students in a particular area of Chungnam. We surveyed night-time eating status, frequency, and preference for eating foods at night in 458 university students. We divided the subjects into two groups according to their night-time eating habits and gender and compared dietary behavior, lifestyle, and nutrient intake between the groups. In total, 77.1% of the students ate a night-time snack. The major reason why they ate a night-time snack was hunger. The cost of the night-time snacks was 3,000~10,000 won and they ate mostly with their friends. The order of frequent night-time eating foods was beverage, milk and its products, snacks, flour foods, and fruits. The subjects with a night-time eating habit skipped breakfast, went to bed late, and drank alcohol more than subjects without a night-time eating habit. Total and animal fat intake of subjects with a night-time eating habit in both men and women were significantly higher than subjects without a night-time eating habit. In conclusion, night-time eating by university students may be a bad habit from the viewpoint of skipping breakfast, drinking alcohol, and eating a high fat diet. Therefore, in support of proper dietary management, it is necessary to form positive dietary habits, including night-time eating.
