The purpose of this study was to analyze the relationships among variables focusing on what kinds of characteristics of eco-friendly consumption value affect dietary attitude, nutrient intake behavior, health behavior and quality of life, and establish a relationship model. The subjects of this study were 238 eco-friendly consumers. SPSS 23.0 and LISREL 8.50 were adopted to examine measurement model by using analysis method. The results were as followings; First, eco-friendly consumption value has a positive impact on dietary attitude and health behavior. Second, dietary attitude affects nutrient intake behavior positively. Third, the impact of nutrient intake behavior on health behavior is significant. From the results of this investigation, it was found that eco-friendly consumption value affects dietary attitude, health behavior and that the health behavior was positively influential on quality of life. It was also verified that eco-friendly consumption value affects dietary attitude, nutrient intake behavior, and health behavior. Moreover, it was also confirmed that the higher eco-friendly consumption value is, the higher dietary attitude, trust, health behavior and quality of life will be, thereby improving the good healthy life provided.
This study was intended to investigate dietary behavior, health related behavior and the effects of nutrient intake of female college students. Dietary behavior, health related behavior and the perception of the body conditions were surveyed with anonymous questionnaires, and 24hrs recall method for nutrient intake was obtained from 161 female college students in Chungbuk area. The mean height and weight of the subjects were $161.4{\pm}5.0$cm and $53.8{\pm}7.4 $kg, respectively. The dietary behavior of female college students was generally inadequate. More specifically, irregularity of meals, indifference of dietary balance, and skipping breakfast, showing $4.77{\pm}2.20$for dietary behavior score, $11.76{\pm}3.89$ for DVS and $3.58{\pm}0.82$ for DDS, respectively. It was found that almost 63% of subjects did not anything for health care and the frequency of exercise of subjects was low. The perception of body conditions of the subjects seemed to be generally positive. However, satisfaction levels on body shape was very negative showing that only 12.4% of subjects answered as 'very satisfied' and 'satisfied'. When nutrient intake of the female college students was compared with Dietary Reference Intake for Korean, folate(45%), potassium(55%), vitamin C(59%), Ca(72%), fiber(72%), Fe(79%) and energy(80%) were found to be insufficient. But protein(138%), P(122%) and Na(179%) were found to be oversupplied. The nutrient intake of fiber, plant Ca, vitamin A, ${\beta}$-carotene, vitamin B6, vitamin C, folate and vitamin E were significantly higher, and those of Fe, Zn and protein were a little high in the high score group of dietary behavior. Also Food group intake, DDS and DVS were higher in the high score group of dietary behavior.
This survey of 527 children, aged 4 to 6 years, focused on family and dietary environment, nutritional status and personality. It was conducted from June to October, 1986. The results showed that 68.0%(breakfast)and 55.4% (evening meal ) of the subjects indicated they had meals with the family everyday. Analysis of the nutritional status children showed all nutrient intake except protein an diron was insufficient compared with RDA. Carbohydrate provided 58.3% of total calorie intake ; protein accounted for 15.7% . fat provided 26.0%. There was a positive relation between income and nutrient intake. Children with employed mothers showed lower nutrient intake than children with unemployed mothers. Food attitude was positively related to nutrient intake, nutrient intake of children with good eating behavior was higher than that of children had poor eating behavior . Activity level had a significant correlation with intake of calories, fat, vitamin A, vitamin B$_1$, and Vitamin B$_2$. Mood was correlated with intake of protein, iron, vitamin A, vitamin B$_2$ and vitamin C.
Differences in food and nutrient intake among Korean adults based on different stress levels were investigated using information obtained from 7,370 adults who participated in the 1998 Korean National Health and Nutrition Survey. The twenty-four hour recall method was used for this dietary survey. Data pertaining to indivisual stress levels were collected by means of interviews as part of the National Health Behavior Survey. Following the analysis of variance, Duncan's Multiple Range Test was used to test the differences in food and nutrient intake among groups with different levels of stress. Eighty-three percent of the study subjects were reported to have a certain level of stress. Unlike the observations made in European and American studies, there were no significant differences observed in food and nutrient intake based on the stress levels among Korean adults of either sexes. These results may imply that even though stress was clustered with other health related behavior, the association between food intake and stress among Koreans was very weak. This study was conducted to evaluate the nutritional status of the elderly women, who attended the Health Promotion Program of the Seogu Health Center in Daegu. The study subjects were 158 elderly women in an urban community. The general characteristics, dietary behavior (nutritional knowledge, nutritional attitudes and dietary habits), food and nutrient intake were surveyed by an individual interview. The average age of the study subjects was 70.9 $\pm$ 2.3 years of the subject group 79.1% ranged in age from 65 to 74 years and 20.9% were over 75 years. Their average score for nutritional knowledge, nutritional attitudes and dietary habits was 7.3 (total mark of 10), 7.2 (total mark of 10) and 9.1 (total mark of 22) respectively. Specifically, the level of the dietary habits of the study subjects was very low. In relation to food group intake of the study subjects according to age, their food intake was low. The total, plant. and animal food intake were 1078.9 g, 954.4 g (88.5%), and 244.4 g (11.5%), respectively. The mean daily energy intake and nutrient intake according to percentage of the Korean RDA were higher in the from 65 to 74 year group than in those people over 75 years. The average calories and the mean percentage of nutrient intake, except for vitamin C and phosphorus. were below 75% of the Korean RDA. It seems that the nutrient intake was very low. The mean nutrient adequacy ratio (MAR) was 0.59. Nutritional status of age over 75 years old was significantly lower than that of 6574 years old group (Mar = 0.60 VS 0.54, p < 0.05) The correlation coefficients between their dietary behavior (nutritional knowledge, nutritional attitudes, dietary habit) and their mean nutrient adequacy ratio (MAR) showed significant linear relations. In conclusion, if nutritional education is to affect the dietary behavior of elderly women, it should be included in a Program to Promote their nutrition and health status.
This study investigated dietary behavior and nutrient intake in children with developmental disorders as compared with non-disabled children and assessed the relationship between dietary behavior and nutrient intake. The survey was conducted on 118 students ($4^{th}$ and $5^{th}$ grade) of four special education schools and 244 students of an elementary school (control group). The survey was carried out using a questionnaire and an interview. Of the disabled children, children with a mental disorder comprised 72.9% and those with emotional disorders including autism comprised 26.3%. The average percentages of height and weight to standards for age were significantly lower in the disabled female children as compared with the non-disabled female children. Scores for table utensil handling skills, eating behavior, and an unbalanced diet were lower in the disabled children compared with those in the non-disabled children. Dietary behavior scores were not significantly different by either gender or age in the disabled children. Mean energy intake was less than the estimated energy requirement in both groups. Nutrients taken at less than the recommended intake level were calcium, iron, vitamin A, and folate in both groups. Food behavior score at mealtime, personal hygiene score at mealtime, and an unbalanced diet score were significantly correlated with iron and vitamin A intake in disabled male children. Personal hygiene score at mealtime was significantly correlated with calcium, iron, and vitamin A intake, and unbalanced diet score was significantly correlated with iron and vitamin A intake in disabled female children. Although the nutritional status of disabled children with developmental disorders was appropriate in general, improvement in their dietary behaviors through education and practice would allow them to eat balanced diets with essential nutrients.
This is an analysis of the dietary behavior, nutrient intake status and INQ(Index of nutritional quality) of 129 college women according to their residences in the Daegu area. The average height and weight were 160.0 cm and 54.5 kg respectively. Diet intake data were obtained by using the 24-hour recall method to evaluate the usual diet of the subjects. The energy intake of the group, living alone was higher than that of living a roommate and living at home. Ca, Fe, Zn and folate intakes were low in all the groups. The composition rate of carbohydrate, protein and fat for energy intake was 58.9 : 15.5 : 25.6 in living alone, 59.9 : 15.1 : 25.0 in living with a roommate and 61.2 : 15.5 : 23.3 in living at home, compared with the preferred of 65 : 15 : 20. The group living alone showed significantly better mean adequacy ratio(MAR, 0.7) than the other groups (p<0.05). The group living with a roommate showed significantly better INQ in vitamin $B_6$ (p<0.01) and Fe (p<0.05) than the other groups did In conclusion, this study indicates that nutrient intake in college women in Daegu is considerably lower than the RDA values. Furthermore the group living alone showed better dietary behavior and nutrient intake status than the other groups. A nutrition education program for college women is necessary.
This study was conducted to investigate the nutritional status and factors related to dislike of vegetables in the students who avoid eating vegetables in elementary school. The subjects were classified into VDG (vegetable dislike group, 75 children) and control group (69 children) by amount of vegetable left in school feeding. The survey included the items of demographic characteristics, dietary behaviors, nutrition knowledge, food preference, reason for dislike of vegetables and nutrient intake of the subjects. Dietary behavior and nutrition knowledge scores of control group were higher than those of VDG. The average score of food preference was 4.9 and 4.7 in control and VDG groups respectively. The preference score of root vegetables was the lowest in subjects. In the view of nutrient intake, the calorie intake of control group was higher than that of VDG. Protein intake of control and VDG was enough as compared with their RDA. Except vitamin E, most nutrient intake of control group was higher than that of VDG. VDG consumed lower calorie, vitamin A, vitamin $B_2$, vitamin C, Ca, P, Fe and Zn than control group. The scores of the dietary behavior and nutrition knowledge in the subjects were positively related to the status of some vitamins and minerals intake. These results show that the scores of nutrition knowledge and dietary behavior of VDG were lower than those of control, causing low intake of vitamins and minerals such as vitamin A, Ca and Fe.
The purposes of this study were to assess dietary intake obtained by easy method and to compare dietary behavior of house wife and female college students in Yanbian. The subjects consisted of 276 house wives and 228 female college students. Mean daily energy intake of house wives was 1926.0kcal and that of female college students was 1949.0kcal. Calcium intake as NAR(Nutrient adequacy ratio) was lowest in house wife and female college student. Iron intake was also low in subjects and lower in female college student than in house wife. Meal frequency per day was regular in subjects. Skipping meal time in subjects was breakfast and snaking time was late evening generally. Frequency of eating out was rare in most subjects and 60.6% of subjects preferred chinese food in eating out, while house wives preferred Korean food than female college student in eating out. The vegetables were preferred than meat or fish and used by fried in sauces. Hot and sour tastes were more like than greasy taste in subjects. Nutrient intake levels and dietary behaviors of house wife were to be like as those of female college students in general. BMI(Body mass index) was lower in female collage students than house wives, similarly in Korean. According to these results, house wives and female college students in Yanbian had similar dietary patterns. Calcium intake was tend to be low and dietary pattern was regular, dietary qualifies of subjects were adequate. Nutrient intake and dietary pattern in Yanbian were to be like as in Korean, and the Korean-Chinese in Yanbian maintained traditional dietary pattern.
This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.
