Taste-active Components of Powdered Smoke-dried Oysters and Its Application (훈건 굴을 이용한 분말조미소재의 정미성분 및 활용)

  • The powdered boil-dried oyster (C), the powdered smoke-dried oyster (OS-1) and the powdered smoke-dried oyster scrap (OS-2) were examined for their taste-active components, quality characteristics for potential utilization as a natural flavoring substance. The free amino acid level of OS-l and OS-2 were 395.6 mg/100 g and 551.5 mg/100 g, respectively, and that of betaine of OS-1 and OS-2 were 164.6 mg/100 g and 214.9 mg/100 g, respectively. The contents of inorganic ions were rich in Na, K, P, Ca and Mg in that order. Major free amino acids were taurine, glutamic acid, proline, alanine and glycine. The extract condition of the OS-1 and OS-2 the instant soup was the most appropriate at $98^{\circ}C$ for 1-5 min. The hot water extract of OS-1 and OS-2 with additives such as salt, sugar, pepper and onion powder had a good organoleptic qualities compared with the conventional flavoring substances in a local market. We conclude that powdered smoke-dried oyster and its scrap can be commercialized.

Studies on Bioactive Substances and Antioxidant Activities of Marine Algae from Jeju Island (제주도 연안 서식 해조류에 대한 주요 활성성분 및 항산화효능 연구)

  • The objective of this study was to investigate the useful components and potential antioxidant activities of 30 marine algae, collected from Jeju Island in Korea. The contents of bioacitve substance of extracts from marine algae, such total polyphenol and carbohydrate, were determined. The extract of Distromium decumbens had the highest amount of total polyphenol content (21.27%), and that of Gracilaria incurvata Okamura had the highest amount of total carbohydrate content (10.18%). The antioxidant activities of extracts obtained from algae were tested through the evaluation of DPPH radical and hydroxyl radical scavenging activity. The extracts of Distromium decumbens, Sargassum hemiphyllum (Turner) C.Agardh, Sargassum serratifolium (C. Agardh) C. Agardh and Acrosorium yendoi Yamada were found to have more than 80% DPPH radical scavenging activity and that of Dictyota okamurae (Dawson) $H{\ddot{o}}tning$, Schnetter, et Prud'homme van Reine, Myagropsis myagroides (Martens ex Turner) Fensholt, Sargassum serratifolium (C. Agardh) C. Agardh and Cladophora wrightiana Harvey showed more than 50% hydroxyl radical scavenging activity. These results suggest that algae collected from Jeju Island would be good raw materials for antioxidant.

Effects of Cochlodinium polykrikoides on Oxidative Status and Immune Parameters in the Marine Medaka Oryzias javanicus

  • In this study, the marine medaka Oryzias javanicus was exposed to two concentrations of non-toxin-producing red tide dinoflagellate C. polykrikoides (1,000 and 2,000 cells ml-1) for 96 h, and the time-course biochemical responses of antioxidant and immunity parameters were analyzed in the liver tissue. Significant ichthyotoxicity with increasing cell concentrations of C. polykrikoides and exposure period was observed for 96 h. Opercular respiratory rate was lowered in marine medaka exposed to 2,000 cells ml-1 of C. polykrikoides. Intracellular malondialdehyde (MDA) content significantly elevated in response to both cell concentrations. In the case of glutathione (GSH) content, the levels were significantly elevated by 1,000 cells ml-1 of C. polykrikoides, but the contents significantly depleted upon exposure to 2,000 cells ml-1 of C. polykrikoides. Similarly, enzymatic activities of catalase (CAT) and superoxide dismutase (SOD) were increased by 1,000 cells ml-1 of C. polykrikoides, whereas their activities were lowered by 2,000 cells ml-1 of C. polykrikoides. Analysis of the two immunity parameters, alternative complement pathway and lysozyme, showed significantly lowered activities in 2,000 cells ml-1 of C. polykrikoides-exposed liver tissue. These biochemical effects of C. polykrikoides on marine medaka would be helpful for understanding its acute effects in marine fish.

Characteristics of ignition and micro-explosion for droplets of water-in-fuel emulsion (유화액적 연료의 점화와 미소폭발의 특성)

  • The water-in-fuel droplets were applied to investigate the effect of mixing ratio between water and decane, ambient temperature, droplet size and spacing between droplets on ignition and micro-explosion in a heated chamber with high temperature. The ignition temperature of droplet was found lower as the droplet size was increased and the contents of water was decreased. The life time of droplet, however, decreases as the contents of water increases due to the micro-explosion. The occurrence of micro-explosion also increases as the size of droplets and the ambient temperature increase. The flame spread speed gets faster as the contents of water and the number of suspender decreases.

Trace Metals In Several Edible Marine Algae Of Korea

  • The present paper deals with nine kinds of trace metal contents among 79 samples, more than 20 species of edible marine algae collected during 1973∼1975 along the coasts of Korea. Among the metals detected by the atomic absorption spectrometer, Mg content is variable in 2.09∼13.84mg/g-dry on an average and 5.31mg/g-dry in a mean of green, brown and red algae, whereas Fe is 0.148∼2.343 and 0.747mg/g-dry; Mn 0.015∼0.191 and 0.063mg/g-dry; Zn 0.007∼0.082 and 0.030 mg/g-dry; Cu 0.005∼0.054 and 0.017mg/g-dry; Pb 0.0017∼0.082 and 0.0043mg/g-dry Co 0.0009∼0.0024 and 0.0016mg/g-dry; Cd 0.0002∼0.0034 and 0.0011mg/g-dry, and Cr is 0.0007∼0.0074 and 0.0021mg/g-dry, both on an average and in a mean respectively. The trace metal contents in the seaweeds investigated are variable according to species, collecting seasons, places and kinds of metal It is interesting that in Sargassum thunbergii some metal contents such as Fe, Mn, and Zn are specially high in September1974 through the year investigated.

Fish Oil Variation during Enzymatic Ethanolysis (어유의 효소적 에탄올화 반응 특성)

  • Enzymatic ethanolysis of fish oil with immobilized lipase was investigated for reducing the free fatty acid contents and enhancing the function of fish oil. Ethanolysis reactions were carried out in erlenmeyer flask (25ml) containing a mixture of squid viscera oil and 99.9% ethanol using 1% (based on w/w squid viscera oil) immobilized lipase. The reaction mixtures were incubated at $50^{\circ}C$ and shaken at 100rpm. Ethanol was added into the mixture by stepwise addition method of Shinmada[9]. Measurement of free fatty acid molar amounts was studied by Acid Value. Tendency of oil variation during transesterification was studied by TLC method. Enzymatic ethanolysis composed diglyceride, monoglyceride and fatty acid ethyl ester with reducing free fatty acid contents. Also, selective ethanolysis by Lipozyme TL-IM and Lipozyme RM-IM mostly did not react at the sn-2 position of squid viscera oil. Lipozyme RM-IM was more suitable enzyme to reduce the free fatty acid contents by ethanolysis than Lipozyme TL-IM. Squid viscera oil was transformed into suitable properties (5 in Acid Value) for functional fish oil production.

  • This study investigated the direction of program development in emotional education through storytelling without separating intellectual education in current schooling. As the basic research on program development for elementary school students' emotional intelligence, this study examined how storytelling affects program development in emotional education, and the direction of program contents and structures using storytelling. Firstly, current storytelling and existing programs used for emotional education were analyzed and the direction of program development in emotional education was investigated. Secondly, the structures and procedures of programs for emotional education through storytelling were examined. Finally, stressed contents and items by each factor consisting of emotional intelligence related to the curriculum, and more discussions to consider were inquired. For systematic emotional education, there must be efforts made on developing contents of each factor comprising emotional intelligence; and teaching must be done through the interrelatedness among home, society and school. Furthermore, the construction of social system across the country is required. In conclusion, this study suggest the emotional education needs new curricula based on narrative, because it is dependent on personal emotions and situations.

  • Analysis of stomach content for common squid was carried out to investigate the difference in seasonal and ontogenetic feeding behavior. Totals of 1368 common squid were collected monthly off Busan from September 2004 to August, 2005. Size range of common squid was 8.5-31.8 cm mantle length (ML) during the study period. Of the 1368 stomachs examined, 599 specimens (43.8%) were empty. Stomach contents indicated that common squid was carnivore: Large portion of stomach contents consisted of fish and mollusca (mainly common squid). The stomach contents index (SCI) seemed to increase with size, though there was no statistical difference between size classes significantly. Cannibalism was minimum in size range of 15-20 cm ML, but was steadily increased with size. Cephalopods were the major prey during spring and summer when common squid were small, but fish replaced it during autumn and winter when they became large.

  • This study investigates the effect of air contents on concrete properties, compressive strength, chloride migration coefficient and freeze-thaw resistance. Chloride migration and freeze-thawing test conducted in accordance with NT-BUILD 492 and pr-EN 12390-9, respectively. As a result, compressive strength reduced with air contents increase, but chloride migration coefficient more influenced by the water-binder ratios than air contents. Air contents of hardened concrete measured half times that of fresh concrete after mixing. Also, concrete scaling decreased with air contents increased.

The Distribution of Heavy Metals in the Surface Waters and Sediments of Gaduk Channel in Jinhae Bay, Korea (진해만의 가덕수도 표층수와 표층 퇴적물 중의 중금속 분포)

  • Heavy metals in the surface seawaters and sediments were measured in Gaduk channel of jinhae Bay. The high concentrations of heavy metals in the seawaters were found at the stations near the islands. In the seawaters, the mean concentrations of dissolved heavy metals except for Pb were not higher than previous data in this bay. Higher heavy metal contents in the surface sediments were observed at the stations adjacent to the Geojedo or Gadukdo of the Gaduk channel. The contents of Co,Ni,Zn,Cu,As and Cd in the surface sediments showed relatively high correlation coefficients with IL and COD. The order of enrichment factors(EFs) of heavy metals in the sediments on the basis of average shale values was As>Cd>Pb>Zn>Co>Cu>Hg>Ni, and the EFs of As,Cd,Pb and Zn at whole stations were higher than 1. EFs of Ni and Zn on the basis of natural background concentration in Korean coastal sediments were lower than EFs by average shale.
