Effective Components of Commercial Enzyme Food Products and Their HACCP Scheme (시판 효소식품의 유용성분과 HACCP 관리 방안에 관한 연구)

  • The effectiveness and safety of Enzyme Food, a group of dietary supplements designated by Korean Food Law, were evaluated and the possibility of HACCP (Hazard Analysis Critical Control Point) application was investigated. Chemical composition, enzyme activities and the degree of bacterial contamination in 12 samples of different brands sold in Korean market were measured. The chemical composition of the selected products varied and inconsistent to those claimed in the label description. It is known that effectiveness of Enzyme Food depends on enzyme activity, but enzyme activities of ${\alpha}-amylase$ varied from $1,793\;{\mu}g/min$ g to $159\;{\mu}g/min$ g and those of ${\beta}-amylase$ ranged from $171\;{\mu}g/min$ g to $11\;{\mu}g/min$ g. The protease activities varied from $27.57\;{\mu}g/min$ g to $0.18\;{\mu}g/min$ g. In coli-form bacterial test, positive reactions were appeared in the 50 % of the samples. Numbers of bacteria ranged from $1.3\;{\times}\;10^5\;to\;1.2\;{\times}\;10^9$. Five CCPs were identified; heating, inoculation, cultivation, drying and granulation. Consideration of HACCP system indicated that the pretreatment of raw material, checking of bacterial contamination and stability of enzyme activity during fermentation process were important factors for the quality of Enzyme Foods.

Effects of Segmenting Video Lectures on the Learning Outcomes -Focusing on the Mobile Learning Environment Using Smartphones- (동영상 강의 분할시간이 학습성과에 미치는 영향 -스마트폰을 활용한 모바일 학습환경을 중심으로-)

  • This study aims to evaluate the effect on the academic achievement and satisfaction of the learner's prior knowledge level and segmenting time of video lectures in an learning environment using smartphones. Depending on the level of prior knowledge, learners were divided into two groups of the upper 35% and the lower 35%. Each group was offered video lectures by a 5-min, 10-min, 15-min, and 20-min length. As a result, a high level of prior knowledge only had a positive effect on the academic achievement. With respect to the segmentation time of video lectures, 10-min, 15-min lectures were effective to the academic achievement and 15-min, 20-min lectures influenced positively the learners' satisfaction. Moreover, the interaction between the level of learners' prior knowledge and the segmentation time of video lectures only had an impact on their academic achievement. The results of the simple effect analysis conducted to examine the effect of interaction carefully show that 15-min, 20-min video lectures are more effective for the upper 35% in prior knowledge and 10-min ones are better for its' lower 35%. In a nutshell, these findings suggest that the high-prior knowledge groups could be provided with a longer video lectures, and furthermore, 5-min video lectures are not adequate in a mobile learning environment with smartphones.

Coconut-derived D-xylose affects postprandial glucose and insulin responses in healthy individuals

  • Metabolic alterations including postprandial hyperglycemia have been implicated in the development of obesity-related diseases. Xylose is a sucrase inhibitor suggested to suppress the postprandial glucose surge. The objectives of this study were to assess the inhibitory effects of two different concentrations of xylose on postprandial glucose and insulin responses and to evaluate its efficacy in the presence of other macronutrients. Randomized double-blind cross-over studies were conducted to examine the effect of D-xylose on postprandial glucose and insulin response following the oral glucose tolerance test (OGTT). In study 1, the overnight-fasted study subjects (n = 49) consumed a test sucrose solution (50 g sucrose in 130 ml water) containing 0, 5, or 7.5 g D-xylose powder. In study 2, the overnight-fasted study subjects (n = 50) consumed a test meal (50 g sucrose in a 60 g muffin and 200 ml sucrose-containing solution). The control meal provided 64.5 g of carbohydrates, 4.5 g of fat, and 10 g of protein. The xylose meal was identical to the control meal except 5 g of xylose was added to the muffin mix. In study 1, the 5 g xylose-containing solutions exhibited significantly lower area under the glucose curve (AUCg) and area under the insulin curve (AUCi) values for 0-15 min (P < 0.0001, P < 0.0001), 0-30 min (P < 0.0001, P < 0.0001), 0-45 min (P < 0.0001, P < 0.0001), 0-60 min (P < 0.0001, P < 0.0001), 0-90 min (P < 0.0001, P < 0.0001) and 0-120 min (P = 0.0071, P = 0.0016). In study 2, the test meal exhibited significantly lower AUCg and AUCi values for 0-15 min (P < 0.0001, P < 0.0001), 0-30 min (P < 0.0001, P < 0.0001), 0-45 min (P < 0.0001, P = 0.0005), 0-60 min (P = 0.0002, P = 0.0025), and 0-90 min (P = 0.0396, P = 0.0246). In conclusion, xylose showed an acute suppressive effect on the postprandial glucose and insulin surges.

  • This study aimed to evaluate changes in the TN and TP removal efficiencies, depending on whether or not a settling process is applied, in a sequencing batch reactor (SBR) process with a membrane bioreactor (MBR). Nutrient removal was considered in terms of developing an advanced water treatment system for ships in accordance with water quality standards set forth by 227(64). For these purposes, the TN and TP concentrations in the inflow and outflow water were measured to calculate the TN and TP removal efficiencies, depending on whether or not a settling process was used. Water discharged from a bathroom, which was constructed for the experiment, was used as the raw water. The experiment that included a settling process was conducted twice, and the operating conditions were: aeration for 90 min, settling for 30 min, agitation for 15 min, and settling for 15 min for one experiment; and aeration for 150 min, settling for 45 min, agitation for 15 min, and settling for 15 min in the other. Operating conditions for the experiment that did not include a settling process were: aeration for 180 min and agitation for 60 min. The concentration of the mixed liquor suspended solids (MLSS) in the reactor was 3,500 mg/L, while the aeration rate was 121 L/min and the water production rate was 1.5 L/min. For the two experiments where a settling process was applied, the average TN removal efficiencies were 44.39% and 41.05%, and the average TP removal efficiencies were 47.85% and 46.04%. For the experiment in which a settling process was not applied, the average TN removal efficiency was 65.51%, and the average TP removal efficiency was 52.51%. Although the final nutrient levels did not satisfy the water quality standards of MEPC 227(64), the TN and TP removal efficiencies were higher when a settling process was not applied.

Minimally Invasive Cardiac Surgery through A Small Right Parasternal Incision (개실술에서 우측흉골우연소절개법을 이용한 최소침투수술)

  • Background: Minimally invasive techniques for open heart surgery are widely accepted in these days. There are minimally invasive approaches by the right or left parasternal incision and another approaches by mini-sternotomy of upper or lower half or sternum. We report the safety and efficacy of minimally invasive technique with right parasternal incision compared with the routine full sternotomy. Material and Method: From April 1997 through February 1999, 20 patients(Group A) underwent minimally invasive cardiac operations. We chose 41 patients(Group B) whose preoperative diagnosis were the same and general conditions were similar and who underwent routine full sternotomy before April 1997. We compared A group and B group in many aspects. We performed routine full median sternotomy in B group but we did a minimally invasive technique through a small right parasternal incision in A group. Result: mean age was 36.1 years in both groups. In disease entities, there were 11 cases of ASD, 9 cases of mitral valve disease in group A, and 16 cases of ASD, 25 cases of mitral valve diseases in group B. In ASD, operation time, cardiopulmonary bypass time of aortic occulusion time were 263 min, 82 min, and 41 min in group A and 180 min, 53 min, and 32 min in group B. In mitral valve disease, operation time, cardiopulmonary bypass time and aortic occlusion time were 267min, 106 min, and 70min in A group and were 207 min, 82 min, and 69 min in group B. There were significant differences in operation time, CPB time, and ACC time between group A and group B. There was a significant difference in the amount of bleeding in postoperative day 1 between group A and group B of mitral diasease. However, there was no significant difference in the amount of bleeding in other comparisons. Mean length of incision was 8.7 cm in group A. There was no significant difference in postoperative complications between A group and B group. There was no mortality in either group. Conclusion: We conclude that this minimally invasive technique with right parasternal incision is cosmetically excellent but it is not effective in reducing operative time and there was no significant difference in recovery time and postoperative complications compared with routine full sternotomy.

Physicochemical Properties of Dried Anchovy (Engraulis Japonica) Subjected to Microwave Drying (마이크로파 건조 방법에 따른 멸치의 건조 특성)

  • For the purpose of improving quality of dried anchovy, raw anchovies after hot air drying were subjected to six different processes: 5 min microwave and 1 min holding-12 times (MW5), 10 min microwave and 1 min holding-6 times (MW10), 5 min microwave with hot air and 1 min holding-12 times (MWH5), 10 min microwave with hot air and 1 min holding-6 times (MWH10), 5 min microwave vacuum and 1 min holding-12 times (MWV5), 10 min microwave vacuum and 1 min holding-6 times (MWV10) at 100 Watt and 2450MHz. There were no significant effects of different processes on water content, pH, color, acid value and volatile basic nitrogen. The sum of fatty acids on commercial anchovy occupied 38.34% of saturates 22.91% of monoenes and 22.91% of polyenes and dried anchovies subjected to microwave processes had similar compositions. Dominant fatty acids were palmitic acid and docosahexaenoic acid in each process. Among the free amino acids, alanine, arginine, lysine and leucine were dominant in all processes. Dried anchovies showed little significant differences in texture in all processes. Sensory evaluation data showed that the quality of dried anchovy subjected to microwave process was acceptable and microwave vacuum process was the most desirable one.

Studies on the Removal of Silica from the Boric Acid Solution by Reverse Osmosis Membrane Process (역삼투막 공정을 이용한 붕산수 중의 실리카 제거에 관한 연구)

  • This studies concern the separation of aqueous boric acid solution and same solution containing silica using cellulose acetate RO S/W 4040 module manufactured by Hydranautics Co. The operating conditions of the applied pressures, temperatures, and feed flow rate are also investigated to characterize the permeabilities, biroc acid recovery, and silica rejection, so that the optimum operating conditions would be found out. In the case where the operating conditions are the temperature 35$^{\circ}$C, The pressure 20atm, and the feed flow rate 2.82 l/min, for the boric acid aqueous solution, the boric acid recovery 58.7% and the permeation rate 2.82 l/min were obtained. And also the results showed the boric acid recovery 68.1% and the permeation rate 1.56 l/min at the operating conditions, 35$^{\circ}$C and 10atm. For the boric acid solution containing silica, when the feed solution are at the conditions of 35$^{\circ}$C and 3.2atm, the boric acid recovery 69.7%, the silica rejection 97.5% and the permeation rate 0.47 l/min were obtained. And the operating conditions were at 35$^{\circ}$C, 20atm and the feed flow rate 2.92 l/min, the results showed the boric acid recovery 56.4%, the silica rejection 96.1% and the permeation rate 2.72 l/min.

Prediction of VO2max Using Submaximal PACER in Obese Middle School Boys (최대하 PACER 검사를 통한 비만 남자 중학생의 VO2max 추정)

  • The purpose of this study was to develop the equation of $\dot{V}O_{2max}$ by $sub_{max}imal$ PACER method for obese middle school boys. For this, $_{max}$imal test using Bruce protocol in lab was performed and then PACER $_{max}imal$ test with portable $\dot{V}O_{2max}$ equipment. To decide the level of submaximal test, during PACER with portable equipment, we found the section in which target hreat rate(over 75%$HR_{max}$) and then per section(75%,80%,85%,90%,95%) metabolic responses were recorded, with which we analyzed multiple regression by stepwise method. Model 1(at 90%$HR_{max}$): $\dot{V}O_{2max}$(ml/kg/min) = 142.721-0.275(repetition)-0.48(HR)+0.177(weight)-1.536(age)[%error 3.90ml/kg/min; performance until 2 stage(13 repetition)]. Model 2(at 95%$HR_{max}$): $\dot{V}O_{2max}$(ml/kg/min) = 182.851-0.103(repetition)-0.744(HR)+0.186(weight)-0.324(age)[%error 4.51ml/kg/min; performance until 3 stage(25 repetitions)]. estimated $\dot{V}O_{2max}$ from Model 1 was different about $3.25{\pm}6.32ml/kg/min$(%error=6.84%), otherwise model 2 was $3.16{\pm}4.54ml/kg/min$(%error=5.75%). considering %HRmax, as the submaximal test model 1 might be fit more than model 2 for obese middle school boys.

Effect of Microwave Plasma on Sterilization of Acidovorax citrulli Infected Watermelon Seeds (저온플라즈마(Microwave Plasma)를 활용한 Acidovorax citrulli 감염 수박종자의 살균 효과 검정)

  • This study was conducted to check the sterilization efficacy of microwave plasma (MWP) against the watermelon seeds infected with Acidovorax citrulli 11-251. Watermelon seeds were artificially vacuum inoculated to produce A. citrulli 11-251 infected seeds. Aac ImmunoStrip and scanning electron microscope (SEM) results suggests that, seeds (coat and endosperm) were infected under the concentration of 1×107/30 min. MWP sterlization process was carried out at 50 W (3 min, 5 min, and 10 min), 80 W (3 min, 5 min, and 10 min), and 100 W (3 min, 5 min, and 10 min). According to the results, MWP sterilized the artificially inoculated seed coats by 95.96% at 80 W/10 min and seed endosperms by 100% at 100 W/10 min respectively. Although, seeds were sterlized by MWP, germination rate of seeds were low as compared to non treated (negative control) seeds. Moreover, cell membrane of A. citrulli 11-251 was damaged while observed in SEM after sterilized with MWP. Further studies regarding the appropriate sterilization condition by MWP against A. citrulli infected seeds for germination will be conducted in our next study.
