Quality Characteristics of Got Mul-Kimchi during Storage by Type of Kimchi Containers Using Plastic Ark Shell (꼬막껍질을 이용한 김치 저장 용기의 종류별 저장 기간에 따른 갓 물김치의 품질 특성)

  • This study was conducted to evaluate the quality characteristics of got mul-kimchi during storage by type of kimchi container using a plastic ark shell. The pH level, acidity, hardness, color, sensory evaluation, and microbiological activity were performed. Kimchi containers were prepared with 0%, 2%, and 3% plastic ark shell. The pH level of 2% container samples showed no significant difference compared with that of the control, whereas pH levels of 3% container samples were significantly (P<0.05) higher than those of the control and 2% sample. Acidity was not different among treatments up to 4 weeks, whereas acidity of 3% container samples was significantly (P<0.05) lower than those of the control and 2% samples after 8 weeks. Hardness significantly decreased (P<0.05) upon 0, 2, and 3% treatments with increasing storage time, but there was no significant difference among the treatments. Hunter color L values increased in the order of 0, 3, and 2% with increasing storage time. In sensory evaluation of crunchiness, 3% container samples had significantly (P<0.05) higher crunchiness than the control. Total viable cells in the 3% container with got mul-kimchi were significantly (P<0.05) lower than those of other samples at 12 and 16 weeks of fermentation. Numbers of lactic acid bacteria in the 2% and 3% container samples were significantly (P<0.05) lower than those of the control samples after 16 weeks of fermentation. These results show that the plastic ark shell kimchi container extended storage compared with the control.

Behavior of Campylobacter jejuni Biofilm Cells and Viable But Non-Culturable (VBNC) C. jejuni on Smoked Duck (훈제오리에서 캠필로박터균 생물막 및 Viable But Non-Culturable(VBNC) 상태에서의 행동특성)

  • Biofilm cells and viable but non-culturable (VBNC) state may play a role in the survival of Campylobacter jejuni under unfavorable environmental conditions. The objective of this study was to investigate the behavior of C. jejuni biofilm cells and VBNC cells on smoked duck. The transfer of C. jejuni biofilm cells to smoked duck and its ability to resuscitate from biofilm and VBNC cells on smoked duck was investigated. Transfer experiments were conducted from C. jejuni biofilm cells to smoked duck after 5 min, 1 h, 3 h, and 24 h contact at room temperature, and the efficiency of transfer (EOT) was calculated. In addition, smoked duck was inoculated with C. jejuni biofilm and VBNC cells and then stored at 10, 24, 36, and $42^{\circ}C$ to examine the cells' ability to resuscitate on smoked ducks. The 5 min contact time between C. jejuni biofilm cells and smoked duck showed a higher EOT (0.92) than the 24 h contact time (EOT=0.08), and the EOT decreased as contact time increased. Furthermore, C. jejuni biofilm cells on smoked duck were not recovered at 10, 24, and $36^{\circ}C$, and C. jejuni VBNC cells were not resuscitated at $42^{\circ}C$. Although the resuscitation of C. jejuni biofilm and VBNC cells was not observed on smoked duck, microbial criteria of C. jejuni is needed in poultry and processed poultry products due to risk of its survival and low infectious dose.

  • ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$(1445) is a book compiled the medical achievements of China and Choseon in those times and it's our source of pride to have it In this country. It also deserves careful investigation since this book can provide some clues of features of missing books in China and Korea. The extent of accuracy of xylographica of old books determines the possiblity of in depth further study. So authors attempted to investigate the xylographica of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ one of the 3 main books in Korea. Previous investigation done by Miki Sakae and Kim Doo Jong are noticeable. On the basis of their respective works, we analyzed 'Annals of the Choseon Dynasty' to find records related with ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ and estimated the situation of its publication. We tried figure the situation of those times of China, Japan and Korea(including North Korea) and tried to estimate the book's original xylographica as much as we could. By King Sejong's command, the first draft of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ consisted of 365 books was made by collaboration of civil officials and medical officers during the period from 1443 to 1445. And then from 1451(first year of Moonjong's reign) to 1464(l0th year of Sejo's reign) lots of manpowers were employed and through the process of countless erasure, proofreading, arrangement and rearrangement revised version of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ which is called by Sejo text was completed. After 3 years of wood engraving work, the first printed form of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ (alternately called Seongjong text) in folding case consisted of 266 chapters, 264 volumes came into the world in 1477.(8th year of Seongjong's reign). This was 32 years after the initial completion of the edition. So ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ exists in three forms as Sejong text, Sejo text and Seongjong text respectively. Since those texts were plundered during the Japanese invasion of Korea in 1592, none of the original copy remains within korea. The texts were constantly moved to kadeungcheongieong, to Kongdeungpyeongio, Jesookoan of Edo, to East University of department of classic books, to Cheoncho archives, to the Imperial Museum and finally is kept in the royal palace at present. (Doseoryo text Eulhae printing type) Reduced-size republication books of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ in wooden type were imported at the time of 'Byeongja Korea-Japan Treaty in 1876' and of those 2 books, one copy was treasured in the Royal Household of the Yi Dynasty and than was lost during the Korean War circa 1950. The other remaining copy has been kept succesively by Kojong's imperial grant, Royal doctor Hong Cheol Bo, Hong Taek Joo, Hong Ik Pyo the book agent, and now is kept In Yonsei University Library and this is the only existing copy in Korea at present. In 1965, Dongyang Medical college published the transcription version of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ consisting of 11 books and then in 1981 after edition and arrangement by Choonghoa(中華) publishing company, photoprint copy of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ was published in Keumgang(金剛) publishing company In 1991, October Yeokang(驛江) publishing company producd photocopies of ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ which were previously translated into Korean by North Korea Institute of Oriental Medicine and then issued by medical publishing company. In China, two institutes, Zhejiang Institute of Traditional Chinese Medicine and Huzhou Traditional Chinese Medical Hospital cooperated to publish a revised and marked text consiting of 11 books by adding marking points to japanse Edohakhoondang text which were used as a reference. Both the korean and chinese texts issued were grounded by the ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ kept in the royal palace. Any further study concerning ${\ulcorner}$Classified Collection of Medical Prescriptions${\lrcorner}$ can acquire its accuracy and objectivity when the japanese text kept in the royal palace is taken as an original copy.

Effect of Milling Degree on the Physicochemical and Sensory Quality of Sogokju (도정도에 따른 소곡주의 품질 및 기호도 변이)

  • Sogokju, a Korean glutinous rice wine and one of the oldest Korean traditional wines, is famous for its unique taste acquired from a 100-day incomplete fermentation process. This study investigated the effects of the degree of rice milling on the physicochemical and sensory characteristics of Sogokju. It evaluated the physicochemical characteristics, pasting and color properties, and structural properties of starch using four different degrees of milled rice (Oryza sativa L.) cultivar Dongjinchalbyeo. Samples of brown rice with milling yields of 92%, 84%, 76%, and 68% were produced using both abrasive and friction whiteners. This study showed that the protein, lipid, and ash content of milled rice decreased as the degree of milling increased. The lower hardness of the kernel below milling yield 92% suggested that milling may be related to the lower protein content of the kernel. The pasting curve showed a significant increase in viscosity properties as the degree of milling increased. This is due to the decrease in protein and lipid content, the increase in starch content, and the difference in amylopectin chain-length distribution. Further milling of white rice, based on 92% milling yield, had an effect on the amylopectin chain-length distribution due to the degree of polymerization (DPn) of 37~60. The long chain of amylopectin also contributed to the viscosity. The increase in the degree of milling decreased the glucose and total sugar content of Sogokju. However, it increased the total acidity of Sogokju. Moreover, the lightness of Sogokju decreased while its yellowness increased. These results indicate that the degree of milling can alter the taste and color of Sogokju. The sensory evaluation showed that the increase in the degree of milling decreased consumer preference for Sogokju. The sensory score for Sogokju was positively correlated with its brix degree, glucose content, pH, and protein content of raw rice.

Effect of Double Layer Nonwoven Fabrics on the Growth, Quality and Yield of Oriental Melon(Cucumis melo L. var. makuwa Mak.) under Vinyl House (보온부직포 이중피복이 참외의 생육, 품질 및 수량에 미치는 영향)

  • The use of blankets to preserve heat in oriental melon cultivation is a common practise without artificial heating and warming systems. Efficiency of blanket decreased with annually usage. This experiment was conducted to investigate the effect of double layer nonwoven fabrics on heat conservation, plant growth, fruit quality and yield of oriental melon in greenhouse. The results were compared among the non-woven fabrics of 9+3, 6+6, 6+3 and 12 ounce from transplanting to April 20, 2001, 2002. Night temperature within tunnel was high at 9+3, 6+6, 6+3 and 12 ounce in order. In plant growth, stem length, leaf numbers and exudate, under double layer nonwoven fabrics were better than single layer blanket of 12 ounce especially, 9+3 double layer blanket was the best. Fruit weight, flesh thickness, soluble solid and marketable yield rate remained same in all treatments. Fermented fruit rate was the highest in 12 ounce as $32.9\%,\;19.6\%\;under\;9+3,\;17.1\%\;under\;6+6,\;16.6\%$ under 6+3 double layer nonwoven fabric, respectively. Compared to 2,260kg yield per 10a of 12 ounce single layer nonwoven fabrics, $7\%$ was increased under 9+3 but $3\%\;and\;13\%$ were decreased under 6+6 and 6+3 double layer nonwoven fabrics, respectively. Compared to income, 4,499-thousand-won per 10a, of 12 ounce single layer blanket, $13\%\;and\;3$ were increased under 9+3 and 6+6 double layer nonwoven fabrics, respectively. Whereas, $10\%$ decreased under 6+3 double layer nonwoven fabrics. From this results it is evident that 9+3 double layer nonwoven fabrics was the best for thermokeeping, fruit quality, and was most economic under non heating system.

  • This study was conducted to investigate the situation of ICT apply to plastic greenhouse, and the results be apply to design of new one. A CFD analysis were conducted to monitering the ventilation and energy saving of the single span greenhouse newly designed. The causes of delay to apply ICT to plastic greenhouse are the high cost for installation(24%), insufficiency of after services(19%), often disorder(16%), unskillful management of soft ware(15%), insufficient ICT efficiency(13%) and unsatisfying of income increase(12%). The parts of problem occurred in ICT plastic greenhouse are the structure, actuator, environmental control system and sensor(approximate 14%, respectively), remote control technique(13%), plant management technique(12%), energy saving technique(10%) and utilization of software(8%). In the condition of lateral window closed, the average wind speed changed to slow, but it was faster in the condition of leeward side window opened than in the condition of lee and winward side window opened. The air movement in the condition of lateral window closed occur by air moving fan not by out air. It is not affect the room temperature but effective the uniformity of room temperature. The average temperature of low height greenhouse was uniform than high height one. The average temperature in condition of 3rd curtain opened become same with outside temperature after 2 hours, but take more 5 hours in condition of 3rd curtain closed.

Influence of $NH_4^+$ and $NO_3^-$ Ratios in Fertigation Solution on Growth of Snapdragon Plug Seedlings and Changes in Medium Chemical Properties ($NH_4^+:NO_3^-$ 시비 비율이 금어초 플러그 묘 생장과 상토 화학성 변화에 미치는 영향)

  • Objective of this research was to investigate the influence of $NH_4^+$ and $NO_3^-$ ratios in liquid feeding on the growth of snapdragon 'Potomac Red' and changes in medium chemical properties. The seeds were sown into 200 plug trays and fertigated once a week with nutrient solution containing various ratios of $NH_4^+$ and $NO_3^-$ such as 0 : 100, 27 : 73, 50 : 50, 73 : 27, and 100 : 0. The total N concentrations were adjusted to 50, 100 and $150\;mg{\cdot}L^{-1}$ in plug stages of 2, 3, and 4, respectively. Determination of seedling growth and analysis of plant tissue and root medum were conducted at 56 days after sowing. The treatment of 27 : 73 ($NH_4^+:NO_3^-$) had the greatest plant height, fresh weight, and dry weight. The N and P contents in 27 : 73 ($NH_4^+:NO_3^-$) treatment based on the above ground plant tissues were 2.39 and 0.39%, respectively, which were the greatest among treatments. The elevation of $NH_4^+$ ratio in fertigation solution decreased tissue Ca and Mg contents, but that did not influence tissue K content. The variations in $NH_4^+:NO_3^-$ ratios impacted the soil solution pH and the difference among treatments had been severe since three weeks after sowing. Elevation of $NH_4^+$ ratios in fertigation solution increased electrical conductivity and concentrations of K, Ca, and Mg in soil solution of root medum. The $NH_4^+$ and $NO_3^-$ concentrations in the soil solution were high in weeks 2, 3, and 4, then decreased gradually as the biomass of seedlings increased. Medium P concentration decreased gradually as seedlings grew, but statistical differences were not observed among treatments.

  • It is shown that a map having an extension to an open map between the Alex-androff base compactifications of its domain and range has a unique such extension. J.S. Wasileski has introduced the Alexandroff base compactifications of Hausdorff spaces endowed with Alexandroff bases. We introduce a definition of morphism between such spaces to obtain a category which we denote by ABC. We prove that the Alexandroff base compactification on objects can be extended to a functor on ABC and that the compact objects give an epireflective subcategory of ABC. Immunogenicity, Reactogenicity and Safety of a Combined DTPa-IPV Vaccine Compared with Separate DTPa and IPV Vaccines in Healthy Korean Infants (한국의 건강한 영아를 대상으로 DTPa-IPV 혼합백신을 접종한 경우와 DTPa 백신과 IPV 백신을 각각 투여하였을 경우의 면역원성, 반응원성 및 안전성)

  • Purpose : To compare immunogenicity and reactogenicity of a combined diphtheria-tetanus-acellular pertussis-inactivated poliovirus vaccine (DTPa-IPV, $Infanrix^{TM}$ IPV, GlaxoSmithKline Biologicals) with co-administration of commercially available DTPa and IPV vaccines at separate injection sites (DTPa+IPV). Methods : A total of 458 infants aged 8-12 weeks were randomized to receive three-ose primary vaccination at 2, 4 and 6 months with DTPa-IPV or DTPa+IPV. Blood samples were collected pre and post vaccination for measurement of immune responses. Reactogenicity was assessed following each dose using diary cards. Results : One month post-dose 3, seroprotection rates for anti-diphtheria, anti-tetanus and anti-poliovirus types 1, 2 and 3 were ${\geq}99.5%$ and vaccine response rates to pertussis antigens were at least 98.6% in both DTPa-IPV and DTPa + IPV groups. Non-inferiority between the groups was demonstrated based on pre-defined statistical criteria. Incidences of both local and systemic symptoms were within the same range across both groups with grade 3 symptoms reported following no more than 4.3% of DTPa-IPV doses and 4.5% of DTPa + IPV doses. Two serious adverse events (both pyrexia) after DTPa-IPV administration were considered vaccine-related. Both infants recovered fully. Conclusion : Combined DTPa-IPV vaccine was immunogenic and well tolerated when used as a three-dose primary vaccination course in Korean infants. DTPa-IPV could be incorporated into the Korean vaccination schedule, reducing the number of injections required to complete primary immunization.

Neuroprotective Effect of Dizocilpine (MK-801) via Anti-apoptosis on Hypoxic-ischemic Brain Injury in Neonatal Rats

  • Purpose: Current studies have demonstrated the neuroprotective effects of dizocilpine (MK-801) in many animal models of brain injury, including hypoxic-ischemic (HI) encephlopathy, trauma and excitotoxicity, but limited data are available for those during the neonatal periods. Here we investigated whether dizocilpine can protect the developing rat brain from HI injury via anti-apoptosis. Methods: In an in vitro model, embryonic cortical neuronal cell culture of Sprague-Dawley (SD) rats at 18-day gestation was done. The cultured cells were divided into three groups: normoxia (N), hypoxia (H), and hypoxia treated with dizocilpine (HD). The N group was prepared in 5% $CO_2$ incubators and the other groups were placed in 1% $O_2$ incubators (94% N2, 5% $CO_2$) for 16 hours. In an in vivo model, left carotid artery ligation was done in 7-day-old SD rat pups. The animals were divided into six groups; hypoxia (N), hypoxia (H), hypoxia with sham-operation (HS), hypoxia with operation (HO), HO treated with vehicle (HV), and HO treated with dizocilpine (HD). Hypoxia was made by exposure to a 2 hour period of hypoxic incubator (92% N2, 8% $O_2$). Results: In the in vitvo and in vivo models, the expressions of Bcl-2 in the hypoxia groups were reduced compared to the normoxia group. whereas those in the dizocilpine-treated group were increased compared to the hypoxia group. However. the expressions of Bax and caspase-3 and the ratio of Bax/Bcl-2 were revealed reversely. Conclusion: Dizocilpine has neuroprotective property over perinatal HI brain injury via anti-apoptosis.
