  • Purpose: In this study, we focused on the image processing method to determine the external quality of Fuji apples by identifying surface defects such as scabs and bruises. Method: A CCD camera was used to capture filter images with 24 different wavelengths ranging between 530 nm and 1050 nm. Image subtraction and division operations were performed to distinguish the defect area from the normal areas including calyx, stem, and glaring on the apple surface image. All threshold values of the image were examined to reveal the defect area of pretreated filter images. Results: The developed operation methods were [image (720 nm) - image (900 nm)]/image (700 nm) for bruise detection and [image (740 nm) - image (900 nm)]/image (590 nm) for scab detection, which revealed 81% and 90% recognition ratios, respectively. Conclusions: Our results showed several optimal wavelengths and image processing methods to detect Fuji apple surface defects such as bruises and scabs.

  • This study was carried out to investigate the difference of the body image recognition, food habits, food behaviors and nutrient intake according to the obesity index(underweight-, normal-, obese group) in children(aged 10.8 ys, 47 boys, 33 girls). Subjects were eva1uated based an anthrofometric measurement and questionnaries including food record diary in Changwon. The results are summarized as follows. The weight, BMI, body fat, waist circumference, hip circumference and birth weight except height showed a significant difference between the three groups(p<0.001). The waist and hip circumference showed the possibility of being a predictor of obesity in children. The children's obesity was related to mother's weight(p<0.01), but not to father's. Ninety percent of the obese group, 47.8% of the normal group, and 37.8% of the underweight group preferred a thinner figure than their current status. The underweight group did more exercise regularly than the other groups. The underweight and obese groups had more irregular meal times and foster eating habits compared to the normal group. Most of subjects(89.9%) had an overeating habit, and tole ratio of the overeating habit increased with obesity. Fifty five percent of the subjects clad the habit of skipping meals, mainly breakfast. 46.8% of the subjects ate snacks more than twice per a day, the underweight and obese groups had snacks more of than the normal group. The preferred snack was 'cookies'and 'fruits & juices'. 53.8% of the subjects had a prejudice for special food(especially 'pulses'(37.9%) and 'vegetables'(31.0%)). The assessment scores of food behaviors was relatively low in most of the subjects. Most nutrient intakes, except vitamin B$_1$, C and phosphate, were lower than those of Korean RDA. The nutrient intake of the normal group was higher than the underweight and obese groups. The results of this study showed some nutritional problems, which indicates the need for nutritional management for the children. To educate children, who are able to change their food habits and lifestyle, each means to help healthy growth and to help them become healthy adults.

  • This descriptive study looks into the levels of BMI, dietary habits, body image, and eating attitudes which have a major impact on the obesity management of female college students. A total of 173 female college students from the same school participated in this study by filling out a self-administered questionnaire investigating actual conditions. The average age of the participants was 19.5 years old and the average BMI was $21.8kg/m^2$. There were statistically significant differences in dietary habit at home (t=2.957, p=.004), eating attitudes BMI (F=5.324, p=.006), actual body image within perceived body esteem and BMI (F=36.979, p=.000), level of state body esteem BMI (F=11.539, p=.000), level of eating attitudes BMI(F=5.324, p=.006). Among the relationships between variables, the higher the BMI, the higher the score for perceived body esteem and problems concerning eating attitudes became prevalent. The higher the actual body image score, the lower the state body esteem and problems concerning eating attitudes became prevalent. Therefore, there is a need for education that enhances positive body image and eating attitudes in order for female college students to manage obesity due to dietary habits.

  • With the changing consciousness of consumers, there has been an increasing interest in nature-friendly lifestyles and safety of food ingredients. Therefore, the LOHAS image, which has value in social health and sustainability, is expected to be a factor that helps restaurants establish differentiation strategies. This study examined the LOHAS image of restaurants on involvement and willingness to pay. The results were as follows. First, eco-friendly food ingredients and interiors among the LOHAS image factors of restaurants had a significant effect on involvement. Second, the perception of LOHAS in the LOHAS image factors of restaurants had a significant effect on involvement. These results may be due to the lack of a conceptual understanding of LOHAS among restaurant customers, who fail to properly grasp its meaning. Therefore, in order to promote the LOHAS image of restaurants to customers, it is necessary to consider presenting POPs or signs that will enable customers to understand the concept of LOHAS inside the restaurant. Third, consumers' involvement turned out to have a significant effect on their willingness to pay. Thus, it is necessary to imprint the image of a LOHAS restaurant using eco-friendly colors, sculptures, and agricultural products so that customers can perceive food ingredients or interior elements as eco-friendly.

  • The quality characteristics of muffins with different types of rice flour, such as soft flour (CON), soft rice flour (SRF), floury rice flour (FRF), and rice flour (RF) were assessed by using Image J program, which includes their particle size analysis, moisture content, pH, color, specific volume, baking loss rate, texture. (D[4, 3]) is weighted mean diameter, which is directly obtained in particle size measurements showed large values in the order of rice flour, floury rice flour, soft rice flour, and soft flour. The moisture content was high in the CON and SRF groups with small particle sizes. There was no significant difference in pH, L and b value. The a value was significantly low only in the RF group with large particle size. The smaller the particle size, the higher the specific volume and baking loss rate. Image J showed that the number of pores decreased when fewer smaller particles were the powder, but the pores were larger. Among the rice flours, the SRF group, excluding the CON group, scored high in all the acceptability elements. The results from this study can be used as basic data that can contribute to research on various rice-processed foods.

  • This study was performed to investigate body image perceptions of women about themselves and their preschool children and also to investigate the relationship between these perceptions. Subjects were 545 women and their children (279 boys and 268 girls) residing in Daejeon city. $67.7\%$ of women were classified as normal group, $18.6\%$ as overweight group, and $13.8\%$ as underweight group by BMI. $68.5\%\;and\;78.7\%$ of their boys and girls, respectively, were classified as normal group, $22.4\%\;and\;16.4\%$ as overweight group, $9.1\%\;and\;4.9\%$ as underweight group by WLI. Women made relatively accurate judgments on their current body sizes and selected their body images as the most desirable one. But they preferred plumper figures for their children and failed to perceive their overweight children as overweight. While $74.7\%$ of women wished to be thinner, $81.1\%$ of them wished their children to be fatter. Women spending less then 100 thousand won and more than 500 thousand won as monthly food expenses and having only one child perceived their children's current body sizes the lowest and the highest, respectively. Women wished boys to be fatter than girls. Their current body sizes were correlated positively with the children's current body size (p < .01), and their healthiest, attractive, and 'wish' figures were correlated positively with children's current, healthiest, attractive, and 'wish' figures (p < .05- p < .01). Body size dissatisfaction (wish to be thinner) and BMI of women were correlated negatively with children's healthiest and attractive figures (p < .01). These findings suggest that in order to correct the women's body image misperceptions and to prevent childhood obesity, mother's perception about healthy body images for themselves and their children need to be included in nutrition education. Also, it is necessary to assist mothers to understand the relationship of body size and weight status with the risk of chronic disease which might appear later in their children's life.
