Norovirus (NV) is becoming a major cause of foodborne illness in many countries. At present, very little is known about the survival of NV in the environment or the disinfection procedures needed to remove NV from contaminated surfaces. Feline calicivirus (FCV, $1{\times}10^{6.75}\;TCID_{50}/mL$) was used as a surrogate model for NV to investigate the effectiveness of sanitizing treatments for the viruses attached to food and food contact surfaces. Ammonium chloride (2%), organic acids (3000 ppm), and ethanol (70%) were most effective, providing $4\;log_{10}$ (99.99%) reductions in FCV titers on food or food contact surfaces. The disinfection efficacies of most agents on ceramic and glass surfaces were greater than stainless steel. The results from this study can be applied in the food industry to reduce NV-associated foodborne illnesses.
The objective of this study is to investigate the satisfaction and the perception of school food service using environmental-friendly agricultural product of elementary, middle and high school students and parents. We surveyed related to satisfaction of school food service, perception of environmental-friendly agricultural product and perception of school food service using environmental-friendly agricultural product. As a result, the majority of students and parents want to expand the school food service using environmental-friendly agricultural product. Also It was analyzed that the use of environmental-friendly agricultural products would increase school food service satisfaction. In other words, the using environmental-friendly products in school food service experience positive effects thorough school food service, it will give a positive effect on the satisfaction of school food service. As a results of this study contribute to making policy about expansion school food service.
본 연구는 경인지역 대학생을 대상으로 친환경농산물에 대한 지식정도를 알아보고, 환경과 친환경농산물에 대한 인식을 5점 척도로 평가하여 일반사항, 환경농산물에 대한 지식이 환경과 친환경농산물에 대한 인식에 어떠한 영향을 미치는지 알아보기 위해 실시되었으며, 그 결과는 다음과 같다. 첫째, 친환경농산물에 대한 자가 지식을 묻는 문항에 친환경농산물에 대해 '매우 잘 알고 있다'와 '잘 알고 있다'로 응답한 비율이 52.9%이었으며, 친환경농산물인증마크를 올바르게 선택한 학생은 50.9%이었다. 나머지 40.1%의 학생들이 오답으로 선택한 것 중 농산물품질인증마크가 65.8%로 가장 많았으며, 친환경농산물의 인증을 정부와 민간기관에서 병행하고 있는 것에 대해 87.0%가 모른다고 응답하였다. 둘째, 환경과 친환경농산물에 대한 인식을 5점 척도로 조사한 요인별 결과, 친환경농산물의 이미지에 대한 5문항의 평균 점수는 $3.84{\pm}0.68$로 높게 나타났으며, 5문항 중 '친환경 농산물은 건강에 좋은 것이다'라는 문항이 $3.95{\pm}0.84$로 가장 높은 점수를 나타내었고 '품질인증마크가 붙은 친환경농산물은 믿을 수 있다'의 평균 점수는 $3.70{\pm}0.92$로 가장 낮았다. 셋째, 환경에 대한 태도 3문항의 평균 점수는 $3.51{\pm}0.73$이었고, 3문항 중 '환경은 후세들을 위하여 최대한 보전하는 것이 원칙이다'라는 문항이 $4.16{\pm}0.90$으로 가장 높은 점수를 나타내어 이러한 환경보전 의식과 후세들을 생각하는 마음이 친환경농산물의 소비에 긍정적인 영향을 미칠 것으로 사료된다. 넷째, 농약에 대한 태도 2문항의 평균 점수는 $3.58{\pm}0.87$로 농약의 과다 사용과 잔류에 대한 불안감이 높았으며, 친환경농산물에 대한 인식에 영향을 미치는 요인 중 친환경농산물에 대한 자가 지식 정도는 친환경농산물의 이미지, 환경에 대한 태도, 농약에 대한 태도 모두에 유의한 영향을 나타내었다. 다섯째, 친환경농산물의 소비 증진을 위해 개선되어야 할 점으로는 '가격인하'에 대한 의견이 48.3%로 가장 많았고, '믿을 수 있는 생산자와 제조회사의 확립' 21.2%, '친환경농산물에 대한 홍보강화' 15.0%, '구매 장소의 다양화' 11.9%, '친환경농산물의 품질 향상' 8.3%, ‘품질인증 표시제도의 강화' 4.4% 순이었다. 이상에서 조사된 바에 의하면 대학생들은 친환경농산물을 환경과 건강에 좋은 농산물로 인식하고 있었으나 친환경농산물과 관련된 지식이 부족한 것으로 나타났다. 환경과 친환경농산물에 대한 좋은 인식은 구매 행동으로 이어질 수 있으며, 친환경농산물에 대한 올바른 지식은 구매 시 단순히 '가격'을 기준으로 판단하지 않게 해 줄 것이고, 끊임없는 유통 구조의 개선과 친환경농산물을 찾는 소비자의 증가는 친환경농산물의 '가격 인하'로까지 이어질 것이다. 소비자로서 바람직한 가치관을 가지고 올바르게 식품을 선택할 수 있도록 대중매체는 친환경농산물에 대한 적극적인 홍보를 수행하여야 하며 대학생들을 대상으로 식품 선택 및 소비자 교육을 실시하여 올바른 정보를 제공해 주어야 할 것이다.
Purpose: Previous studies have highlighted that the nutritional behaviors among South Korean workers are far from ideal. This study examined the organizational influences affecting the eating practices of office workers in South Korea. Methods: We conducted in-depth interviews with 22 office workers at 12 companies in South Korea. The interviewer inquired about the employees' daily routines on food and beverage intake. The various factors that influence their food choices in their work environments were also explored. The interviews were transcribed and then analyzed using a content analysis. Results: A framework analysis revealed 7 key recurring themes, and these were grouped under three levels: team-, company-, and corporate group-levels. First, team dinners are core social events for all the workers and they tend to include high-caloric food and alcoholic beverages. The frequency of team meals and the food associated with them depend on various team characteristics such as gender composition, the nature of a team's work and the team leaders' emphasis on group meals. Second, the company's policies and practices regarding budget allocation for team meals and subsidies for cafeteria meals affect the workers' food intake practices. In addition, the physical environment of the worksite cafeterias can influence the choices of foods. Third, various corporate group policies that were not designed to target food intake had additional positive effects on the workers' eating behaviors. Conclusion: This study provides important insights into the broader organizational influences on the food consumption of employees in their workplace. These insights can be used to design and implement more effective intervention strategies for improving the nutritional behaviors of office workers.
Objectives: This study examined the usage status and the degree of satisfaction of university foodservice (UF) perceived by international students in Busan. Methods: A questionnaire survey was conducted on the utilization of UF, improvement requirements, preference type and recipe, as well as the importance and satisfaction of UF quality attributes as perceived by international students (n=604) at universities in the Busan area between April and June 2017. Results: UF was 'generally satisfied' or 'very satisfied' in about 35.4% of the study population, and 'not very satisfied' or 'not satisfied at all' in approximately 11.5%. Approximately 21.7% said that UF contributed to dietary life 'very much' or 'quite significantly' and 36.4% said 'not very much' or 'not at all'. The largest demand for improvement of UF was 'variety of menu' (52.0%). The most leftover food in UF was kimchi (30.3%) and broth/stew (19.2%), and the major reason for having leftover was 'not to one's taste' (27.8%). After dividing the foodservice quality attributes into 5 factors - food quality and price, sanitation, convenience, physical environment, and service environment - and analyzing the importance and satisfaction of each factor, it was shown that satisfaction was generally lower than the degree of importance. Sanitation factor was high for both importance and satisfaction of UF, while convenience factor was high for the importance but low for satisfaction of UF. Four variables in the food quality and price factor ('food taste', 'freshness of food', 'nutritive value of food', and 'reasonable price') and 3 variables in the convenience factor ('variety of menu', 'prompt food service', and 'display of the meals for the day') had high importance but low satisfaction, showing the need for an improvement on these areas. Conclusions: Based on the study results, it is necessary to improve the food quality, as well as the price and convenience factors, and to provide various menus to increase the satisfaction of UF in international students.
Environment, food, and disease have a selective force on the present and future as well as our genome. Adaptation of livestock and the environmental nexus, including forest encroachment for anthropological needs, has been proven to cause emerging infectious diseases. Further, these demand changes in meat production and market systems. Meat is a reliable source of protein, with a majority of the world population consumes meat. To meet the increasing demands of meat production as well as address issues, such as current environmental pollution, animal welfare, and outbreaks, cellular agriculture has emerged as one of the next industrial revolutions. Lab grown meat or cell cultured meat is a promising way to pursue this; however, it still needs to resemble traditional meat and be assured safety for human consumption. Further, to mimic the palatability of traditional meat, the process of cultured meat production starts from skeletal muscle progenitor cells isolated from animals that proliferate and differentiate into skeletal muscle using cell culture techniques. Due to several lacunae in the current approaches, production of muscle replicas is not possible yet. Our review shows that constant research in this field will resolve the existing constraints and enable successful cultured meat production in the near future. Therefore, production of cultured meat is a better solution that looks after environmental issues, spread of outbreaks, antibiotic resistance through the zoonotic spread, food and economic crises.
Consumer anxiety about food safety is increasing, and the ability to make an accurate assessment is inadequate due to the lack of food safety information. This research focuses on relations among main variables, such as food hazard awareness, food apprehension, food safety information awareness, and food safety management system evaluation. In addition, to the moderating effects of food safety information awareness between food hazards awareness, food apprehension, and food safety management system evaluation. First, food hazards awareness and apprehension was slightly higher than the average level, also there was a significant difference in food hazard apprehension according to food hazard awareness. However, the level of food safety information was not high, meaning consumers were not as well informed as expected. We divided food safety management system evaluation into awareness and practice, subsequently, the results of both were at a low level. Food safety information awareness' moderating effect was also confirmed. Consumer organizations and the government need to provide specific and correct information to Korean consumers, that also implement a wide range of consumer education related policies.
Purpose: Along with the trend increasing dining-out and enjoying variety of menu, dessert café has been introduced as a new type of food service provider and grown up rapidly. We need to verify structural relationship that dessert café environment influences overall quality and brand image and loyalty. Research design, data, and methodology: This study seeks to understand how in-café environment influence overall quality, brand image and loyalty directly and indirectly based on SOR theory. We examine detail effect of in-café environment on overall quality and brand image and subsequently loyalty. Sample data were collected from 563 online survey panels and analyzed by using SmartPLS 3.2.9. Result: The results indicates that all sub-dimensions of in-café environment influences positively overall quality. While, menu and atmosphere make positive impact on brand image. price, food and beverage quality, employee service do not affect significantly brand image. Further, overall quality influences positively brand image and both overall quality and brand image affect positively loyalty. In addition, overall quality plays full mediator role in relationship among price, food and beverage quality, employee service and brand image. Conclusions: Dessert café should differentiate itself from competitors through physical and non-physical environments which are likely to influence overall quality. As overall quality mediates between environment and brand image and influences loyalty, dessert café is required to communicate strength of functional quality and service quality aggressively. Additionally, favorable brand image affecting loyalty is required to be dominated in advance as the market is likely to be segmented along with its growth.
The food service industry represents one of Korea's fastest-growing and most challenging areas of business but it is at the beginning of the industry. Italian cooking of the food service industry has a lot of merits but it is difficult to manage because of the shortage of domestic customers and the poor management of the industry. This research suggests the marketing strategies in order to systematize Italian food service satisfy the customers requirements and promote the sale of Italian food. The circulation structures should be simplified and systematized in order to enhance the quality of the food and lower the price. Italian food should be recognized as health food cooked with unsaturated fatty acid, olive oil. It is necessary that the Italian food for the Korea especially for the women and children be developed. The information about Italian food the advertisement of it should be structured because 13 percent of Italian food sale has dropped in the current environment.
본 연구는 생산단계 방울토마토 중 fluopicolide 및 metrafenone의 경시적 잔류변화를 조사하여 반감기를 산출함으로서 생산단계 잔류허용기준을 설정하고자 수행하였다. Fluopicolide 및 metrafenone 농약을 안전사용기준에 준하여 각각 포장 1, 포장 2 지역으로 나누어 기준량 처리하였으며, 약제처리 2시간 후를 0일차로하여 0, 1, 2, 3, 5, 7, 10일차에 시료를 채취하여 분석하였다. 두 약제 모두 LC-MS/MS를 이용하여 분석하였으며, MLOQ(Method Limit of quantitation)는 0.005 mg/kg이었다. 분석결과, fluopicolide 회수율은 92.7∼94.8%이었고, metrafenone의 회수율은 82.6 ∼88.0%이었으며, 두 약제 모두 표준편차는 10% 미만이었다. 방울토마토 중 각각의 농약에 대한 반감기는 fluopicolide의 경우 15.0일(포장 1)과 12.8일(포장 2)로 나타났으며, metrafenone의 경우 18.9일(포장 1), 21.5일(포장 2)로 나타났다. fluopicolide 및 metrafenone에 대하여 방울토마토 수확 10일 전 잔류량이 각각 0.27 mg/kg, 2.29 mg/kg이하로 나타난다면 수확 시 잔류량은 MRL 수준 이하일 것으로 판단된다.
