The Metabolizable Energy Value, Standardized Ileal Digestibility of Amino Acids in Soybean Meal, Soy Protein Concentrate and Fermented Soybean Meal, and the Application of These Products in Early-weaned Piglets

  • Three experiments were conducted to evaluate the metabolizable energy (ME) value, standardized ileal digestibility (SID) of amino acids (AA) of soybean meal (SBM), soy protein concentrate (SPC) and fermented soybean meal (FSBM), and the application of these products in early-weaned piglets. In Exp. 1, four barrows with initial body weight (BW) of $14.2{\pm}1.4$ kg were used in a $4{\times}4$ Latin square design. The diet 1 contained corn as the only energy source. The other three diets replaced 25% of corn in diet 1 with one of the three soybean products, and the digestable energy (DE) and ME contents were determined by difference. In Exp. 2, four barrows (initial BW of $18.2{\pm}1.5$ kg) were fitted with ileal T-cannulas and allotted to a $4{\times}4$ Latin square design. Three cornstarch-based diets were formulated using each of the soybean products as the sole source of AA. A nitrogen-free diet was also formulated to measure endogenous losses of AA. In Exp. 3, ninety six piglets (initial BW of $5.6{\pm}0.9$ kg) weaned at $21{\pm}2$ d were blocked by weight and assigned to one of three treatments for a 21-d growth performance study. The control diet was based on corn and SBM, the two treatments' diets contained either 10% SPC or FSBM and were formulated to same SID lysine to ME ratio of 3.6 g/Mcal. The results showed that the ME content of SPC was greater than SBM (p<0.05). The SID of most AA in SPC was greater than the SID of AA in SBM (p<0.05). For the essential AA, the SID of histidine, isoleucine, leucine, lysine and threonine in FSBM were greater than in SBM (p<0.05). Even though they were fed same SID lysine to ME ratio of 3.6 g/Mcal diets, pigs fed SPC and FSBM diets had greater weight gain, G:F (p<0.05) and better fecal score (p<0.05) than pigs fed SBM diet. In conclusion, SPC showed a higher ME content and SID of AA than the SBM. SID of some essential AA in FSBM was higher than SBM and was similar with SPC. But the lower antigenic proteins and anti-nutritional factors content in SPC and FSBM may be the main factors affecting the performance of early-weaned piglets rather than the increased ME content and SID of AA.

포유자돈에 있어서 포유자돈용 발효유의 급여가 생산성, 혈액특성, 및 설사지수에 미치는 영향 (Effects of fermented milk substituted for creep feed on growth performance, diarrhea score and blood profiles in lactating piglets)

  • 본 연구는 포유자돈용 발효유의 급여가 포유자돈의 생산성, 설사지수, 혈액특성에 미치는 영향을 알아보기 위해 시험을 실시하였다. 사양 시험은 3산차 모돈($Landrace{\times}Yorkshire$)은 14두를 공시하여, 2처리구 처리당 7두로 분만 후 부터 이유시까지 3주간 사양시험을 실시하였다. 시험설계는 1) CF (Creep feeding), 2) FM (fermented milk)로 실시하였다. 포유자돈용 발효유의 급여가 생산성에 있어서 유의적 차이는 보이지 않았으나, 생시체중이 입붙임 사료구와 비교하여 수치상 낮았으나, 이유체중에서는 포유자돈용 발효유를 급여한 구가 300 g 증가한 결과를 나타내었다. 포유자돈용 발효유의 급여시 설사지수에 있어서는 처리구간 유의적 차이가 없었다. 혈액 특성에 있어서는 혈액내 백혈구 함량에 있어서는 처리구간 유의적인 차이를 나타내지 않았지만(P>0.05), 혈액 내 면역 글로불린 함량에 있어서는 입붙임 사료를 급여한 처리구가 포유자돈용 발효유를 급여한 처리구보다 높게 나타났다(P<0.05). 이와 같은 결과는 입붙임 사료는 탄수화물, 단백질, 지방 및 면역관련물질을 함유하고 있으나, 본 연구에서 사용된 포유자돈용 발효유는 장내 미생물균총에 유익한 영향을 미치는 유산균은 함유하고 있으나, 다른 면역물질 및 첨가제를 함유하고 있지 않아 혈액 면역세포에 영향을 미치지 않은 것으로 판단된다. 결론적으로 포유기간 동안 입붙임 사료를 대신하여 포유자돈용 발효유를 급여하여도 생산성에 부정적인 영향을 미치지 않는 것으로 판단되며, 입붙임 사료를 대체할 수 있는 물질로 급여 가능할 것으로 사료된다.

남은 음식물 발효사료 급여가 도체 특성 및 돈육품질에 미치는 영향 (Effects of Fermented Food Waste Feeds on Pork Carcass and Meat Quality Properties)

  • 본 실험은 돈육의 도체성적과 육질을 비교함으로써 남은 음식물 발효사료 급여효과를 살펴보고자 실시하였다. 도체성적으로 생체중, 도체중, 도체율, 등지방두께, 도체등급, 부분육량 및 정육율을 측정하였으며, 육질평가로 pH, 보수력, 저장감량, 가열감량, 전단력, 육색 및 NPPC 육색 및 근내지방도를 측정하였다. 도체특성에 있어서 등지방두께를 제외하고 도체중, 지육율 및 최종등급은 대조구와 FFWF구간에 유의적인 차이가 없었으며, 부분육 생산량과 정육율에 있어서는 FFWF구가 대조구에 비하여 다소 높게 나타났다. 육질특성에 있어서는 pH는 FFWF구가 대조구에 비하여 다소 낮게 나타났으나, 보수력, 드립감량, 가열감량, 전단력 등은 대조구와 FFWF구간에 유의적인 차이가 없었다. 육색에 있어서는 FFWF구가 대조구에 비하여 L*-값이 높고 a*-값이 다소 낮게 나타났으며, 주관적인 방법으로 측정된 NPPC 육색과 근내지방도는 처리구간에 차이가 없었다 따라서 본 연구의 결과로 볼 때 남은 음식물 발효사료의 급여가 일반배합사료 급여와 비교하여 도체 및 육질 특성에 있어서 크게 떨어지지 않는 것으로 판단되었다.

  • 본 연구는 발효사료(Fermented feedstuff added Saccharomyces cerevisiae; FFSC)의 급여가 한우 육성 비육우의 육성성적과 도체등급에 미치는 영향을 검토하기 위하여 실시하였다. 평균체중이 230$\pm$24kg인 한우 비거세우 26두를 공시하여 발효사료를 급여하는 처리구(FFSC)와 발효사료를 급여하지 않는 대조구(Control)로 나누어 14개월간 실시한 실험 결과는 다음과 같다. 육성기, 비육전기 및 비육후기 동안 일당증체량 및 사료섭취량은 대조구에 비해 처리구에서 유의적으로 높은 결과를 보였다. 비육전기 및 비육후기 동안 사료효율은 대조구에 비해 처리구에서 개선되는 것으로 나타났다. 전 시험기간동안 처리구 및 대조구의 일당 증체량은 각각 1.06 및 0.98kg으로 나타나 대조구에 비해 처리구에서 19% 개선되는 결과를 보였다(P< 0.05). 전 시험기간 동안의 사료섭취량은 처리간에 큰 차이를 보이지 않았다. 그리고 사료효율 역시 처리간에 큰 차이를 보이지는 않았으나 대조구에 비해 처리구에서 7% 정도 향상되는 것으로 나타났다. 도체중, 도체율, 등지방두께, 배최장근단면적 및 육량지수를 포함한 육량형질의 경우 처리간에 차이가 없는 것으로 나타났다. 근내지방도의 경우 대조구에 비해 처리구에서 개선되는 결과를 보였다. 처리구 및 대조구의 ‘A’ 등급 출현율은 각각 44.4 및 25.0%로 나타났다. 육질 ‘1’ 등급은 처리구에서만 출현하였다. 이상의 결과에서 한우 비거세우에 대한 발효사료의 처리는 육성기, 비육전기 및 비육후기 동안에 일당증체량, 사료섭취량 및 사료효율을 개선시키는 것으로 나타났으며, 또한 도체형질 중에서 배최장근단면적과 근내지방도를 개선시켜 최종적으로 비육우의 육량 및 육질 등급을 향상시켜 한우 비육우의 경제성을 증진시키는 효과가 있는 것으로 판단된다.

Optimal Cultivation Time for Yeast and Lactic Acid Bacteria in Fermented Milk and Effects of Fermented Soybean Meal on Rumen Degradability Using Nylon Bag Technique

  • The objectives of this study were to determine an optimal cultivation time for populations of yeast and lactic acid bacteria (LAB) co-cultured in fermented milk and effects of soybean meal fermented milk (SBMFM) supplementation on rumen degradability in beef cattle using nylon bag technique. The study on an optimal cultivation time for yeast and LAB growth in fermented milk was determined at 0, 4, 8, 24, 48, 72, and 96 h post-cultivation. After fermenting for 4 days, an optimal cultivation time of yeast and LAB in fermented milk was selected and used for making the SBMFM product to study nylon bag technique. Two ruminal fistulated beef cattle ($410{\pm}10kg$) were used to study on the effect of SBMFM supplementation (0%, 3%, and 5% of total concentrate substrate) on rumen degradability using in situ method at incubation times of 0, 2, 4, 6, 12, 24, 48, and 72 h according to a Completely randomized design. The results revealed that the highest yeast and LAB population culture in fermented milk was found at 72 h-post cultivation. From in situ study, the soluble fractions at time zero (a), potential degradability (a+b) and effective degradability of dry matter (EDDM) linearly (p<0.01) increased with the increasing supplemental levels and the highest was in the 5% SBMFM supplemented group. However, there was no effect of SBMFM supplement on insoluble degradability fractions (b) and rate of degradation (c). In conclusion, the optimal fermented time for fermented milk with yeast and LAB was at 72 h-post cultivation and supplementation of SBMFM at 5% of total concentrate substrate could improve rumen degradability of beef cattle. However, further research on effect of SBMFM on rumen ecology and production performance in meat and milk should be conducted using in vivo both digestion and feeding trials.

Effects of Substitution of Fermented King Mushroom By-Products Diet on the Growth Performance, Carcass Traits and Economics of Fattening Pigs

  • This study was conducted to investigate the effects of fermented king oyster mushroom by-products diet (FMBD) on the growth performance, blood characteristics, and carcass traits of fattening pigs and its economics. The fermented diet mainly contained 40.0% king oyster mushroom (Pleurotus eryngii) by-products, 20.0% corn, 28.0% soybean meal, 0.1% supplemental probiotics and 0.08% cellulase. The mixed ingredients were fermented for 1 d at $37^{\circ}C$ followed by 9 d at room temperature, after which they were dried at $45^{\circ}C$ for 3 d. Pigs (n=96) were divided into eight heads per pen, four diet treatments and three replications. The basal diet (C) was substituted with 20% (T1), 50% (T2) and 80% (T3) FMBD. The concentration of crude protein (CP) was significantly higher (p<0.05) at the end of the fermentation period. The average daily gain (ADG) and feed efficiency were significantly lower (p<0.05) in T3 than C. Additionally, carcass grade was significantly better (p<0.05) in all treatments than C and the ratio of high carcass grade was higher. Although substitution of FMBD decreased growth performance, it improved carcass grade and decreased the feed cost of fattening pigs. Therefore, it was expected that the increase in the utilization ratio of FMBD will reduce the cost of animal production.

Effect of Fermented Chlorella Supplementation on Growth Performance, Nutrient Digestibility, Blood Characteristics, Fecal Microbial and Fecal Noxious Gas Content in Growing Pigs

  • A total of 96 growing pigs ((Landrace${\times}$Yorkshire)${\times}$Duroc; BW = $26.58{\pm}1.41$ kg) were used in a 6-wk feeding trail to evaluate the effects of fermented chlorella (FC) supplementation on growth performance, nutrient digestibility, blood characteristics, fecal microbial and fecal noxious gas content in growing pigs. Pigs were randomly allotted into 1 of 4 dietary treatments with 6 replicate pens (2 barrows and 2 gilts) per treatment. Dietary treatments were: i) negative control (NC), basal diet (without antibiotics); ii) positive control (PC), NC+0.05% tylosin; iii) (fermented chlorella 01) FC01, NC+0.1% FC, and iv) fermented chlorella 02 (FC02), NC+0.2% FC. In this study, feeding pigs PC or FC01 diets led to a higher average daily gain (ADG) and dry matter (DM) digestibility than those fed NC diet (p<0.05), whereas the inclusion of FC02 diet did not affect the ADG and DM compared with the NC group. No difference (p>0.05) was observed on the body weight, average daily feed intake (ADFI), gain:feed (G:F) ratio, the apparent total tract digestibility of N and energy throughout the experiment. The inclusion of PC or FC did not affect the blood characteristics (p>0.05). Moreover, dietary FC treatment led to a higher (p<0.05) lactobacillus concentration and lower E. coli concentration than the NC treatment, whereas the antibiotic supplementation only decreased the E. coli concentration. Pigs fed FC or PC diet had reduced (p<0.05) fecal $NH_3$ and $H_2S$ content compared with those fed NC diet. In conclusion, our results indicated that the inclusion of FC01 treatment could improve the growth performance, nutrient digestibility, fecal microbial shedding (lower E. coli and higher lactobacillus), and decrease the fecal noxious gas emission in growing pigs when compared with the group fed the basal diet. In conclusion, dietary FC could be considered as a good source of supplementation in growing pigs because of its growth promoting effect.

발효된 음식폐기물의 사료화 잠재력에 관한 연구 (Potentials of the Fermented Food Wastes as the Animal Feed)

  • 음식쓰레기를 고속발효시켜 동물사료로서 이용할 수 있는가의 여부를 검토하고자 인하대학교 병원과 한양대학교 병원에서 환자급식용으로 제공하는 음식쓰레기를 일정량 채취하여 140L들이의 고속발효기에서 발효시켰다. 첨가제로서는 수분조절 및 영양분의 균형을 위하여 건조한 비지와 톱밥을 습중량으로 약 40~50% 섞었고 종균제를 내용물 총량의 1/300 정도 넣었으며 $46{\sim}52^{\circ}C$의 발효온도에서 40~48시간 발효시켰다. 건조비지를 수분조절제로 사용한 경우는 조단백질과 조회분, 칼슘, 인의 함량이 시판되는 돼지사료보다 약간 떨어졌으며, 톱밥을 수분조절제로 사용한 경우는 조섬유의 함량만 크게 높았고, 기타 다른 성분은 크게 낮았다. 이러한 사실로 미루어 볼때 건조비지를 첨가제로 사용했을 때만이 보조사료로서의 가치가 인정된다고 하겠다.

Growth, Feed Efficiency, Behaviour, Carcass Characteristics and Meat Quality of Goats Fed Fermented Bagasse Feed

  • The effects of long-term feeding of diets based on bermudagrass hay supplemented with lucerne hay cube (LH) or fermented bagasse feed (FBF) on the growth rate, feed efficiency, behaviour, gut development, carcass characteristics and meat quality of goats were investigated. Six spring-born 8-month-old male crossbred (Japanese Saanen${\times}$Tokara native goats) bucks weighing mean 21.6 kg were allotted to 2 treatment groups (3 animals each) and each animal had ad libitum access to feeds, i.e. bermudagrass hay (basal diet)+LH or FBF throughout the experiment. The FBF was produced by the solid-state fermentation of substrates containing dried sugarcane bagasse mixed with wheat bran in a ratio of 1:3 (w/w DM) with Aspergillus sojae. The live body weight, final weight and average daily gain were not different between treatments. Average basal diet intake of goats fed FBF diet was significantly higher than that fed LH diet (p<0.05), but average dry matter intake (DMI; g/day and g/$W^{0.75}$), feed conversion ratio, digestible crude protein (DCP) and total digestible nutrients (TDN) intake of experimental diets were not significantly different between treatments. Goats fed on LH and FBF diets had similar eating, rumination, resting and drinking behaviours, and blood constituents except for phosphorus content. Slaughter and carcass weights, net meat percentage [(total meat/carcass weight)${\times}$100], loin ratio [(loin/total meat)${\times}$100] and rib-eye area were not different between treatments. However, goats fed FBF diet had lower dressing percentage and higher bone/muscle ratio compared with goats fed LH diet (p<0.01). Empty gut and guts fill of goats fed FBF diet were significantly greater (p<0.05 and p<0.01, respectively) than those fed LH diet. The weights of rumen and abomasum were also significantly heavier in goats fed FBF diet (p<0.05), but the length and density of papillae of rumen in goats were not different between treatments. Although meat composition of loin was not different in both groups, the meat of goats fed FBF diet was superior to that of LH diet in flavor, aroma and overall quality of loin (p<0.01). In conclusion, the nature of the diet consumed voluntarily did not affect subsequent growth, nutrient intake and behaviour of goats but had an influence on carcass traits and sensory evaluation of meat partly, when either of LH or FBF was fed with bermudagrass hay.

톱밥발효돈분 재이용이 돼지 성장에 미치는 영향 (Effect of Reusing Sawdust Fermented with Swine Excretion on the Growth Performance of Pigs)

  • 톱밥발효돈사에서 8개월 동안 1차 이용된 톱밥발효돈분 240kg당 $15.12{\times}10^{12}CFU$의 유효미생물이 함유된 균제 1.5%를 첨가하여 퇴적 통풍 발효상에서 75일간 발효시킨 톱밥발효돈분을 톱밥발효돈사 사육상에 채운 후 체중 30kg 내외의 96두(암퇘지 48두, 거세돼지 48두)를 공시 배합사료 kg당 톱밥발효돈분에서 사용한 동일한 균제 1.5%를 첨가하여 균제 무첨가 톱밥발효돈분+사료(T1), 균제 무첨가 톱밥발효돈분+균제첨가 사료(T2), 균제 첨가 톱밥발효돈분+사료(T3), 균제 첨가 톱밥발효돈분+균제 첨가 사료(T4) 4개처리로 $2{\times}2$요인 배치하여 사양시험을 수행 톱밥발효돈분의 재이용이 분뇨처리 및 돼지 성장에 미치는 영향을 조사한 결과는 아래와 같다. 1. 톱밥발효돈분 사육상의 입식 전후의 비료 성분함량은 총질소, 가리 비료 성분 및 총탄소/탄질율은 처리간 차이를 보이지 않았으나 인산 함량은 입식후 57% 증가되었다. 2. 톱밥발효돈분 사육상 온도는 처리간에 차이가 없었다. 3. 톱밥발효돈분 사육상 및 분자리에서 기생충란은 돈편충, 란솜간충, 돈회충, 콕시듐, 대장발란티디움 등이 검출되었다(10~30미만/slide). 4. 톱밥발효돈분의 이용기간은 체중이 증가함에 따라 각각 52, 26, 16, 4, 5, 3일로 점차 짧아졌다. 5. 증체 및 사료요구량은 급여 사료중 균제첨가시 일당증체량이 4%, 사료요구율이 8% 유의하게(P<0.05) 개선 되었으나 톱밥발효돈분에 균제첨가시 첨가효과는 나타나지 않았다. 6. 도체중과 등지방 두께도 처리간에 차이를 (P>0.05) 보이지 않았다.
