Studies on the Sensory Characteristics of Korean Tea and Related Products (국산차(國産茶)의 관능적 품질특성에 관한 연구)

  • The sensory quality characteristics of 7 different types of Korean traditional tea products were analyzed. For the standardization of sensory testing condition, the optimum drinking temperature were measured with 50 students, and all the samples tested were found to fall in the range of $60-70^{\circ}C$. The optimum concentrations of tea for drinking were generally met with the amount recommended by the producer. A total of 45 sensory describing terms expressing the taste, odor, and mouthfeel were collected. Using the sensory describing terms as the character notes, flavor profile analysis was made for each tea product with 8 members of trained panel. The differences in quality characteristics of 29 test samples were evaluated and shown in the chart constructed by the quantitative descriptive analysis method.

Effect of tissue culture medium waste after harvest of Korean wild ginseng on growth performance and diseases resistance in broiler chickens (산삼배양액 급여에 따른 육계의 생산성 및 질병 저항성 효과)

  • The large amount of tissue culture medium (TCM), which contains some of the active secretory components of Korean wild ginseng (KWG; Panax ginseng) such as saponins, is usually discarded after harvest of KWG. The present study was aimed to investigate the efficacy of oral administration of the TCM-KWG on growth performance and diseases resistance in broiler chickens. A day old broiler chickens randomized in 6 groups (n = 60/groups) were administered orally with 0, 2, 4, 8, 16 and 32 mL/L TCMKWG through drinking water for 5 weeks and examined the change of weight gain, feed intake and blood components. Also, five weeks old broiler chickens (n = 15/groups) were challenged orally with Salmonella (S.) gallinarum and investigated the mortality in broiler chickens. An average weight gain and feed intake significantly didn't change in TCM-KWG administration groups as compared to control group. The concentration of calcium (Ca), phosphate (Pi) and potassium (K) in serum were increase by TCM-KWG administration in broiler chickens. We also found that oral administration of TCM-KWG through drinking water significantly reduced the mortality in broiler chickens experimentally infected with virulent S. gallinarum. The results of this study indicated that TCM-KWG administration may elevate the resistance on disease and improved the skeleton formation and body homeostasis of chickens, and TCM-KWG can be used as a cost-effective and environmentally alternative additives to control of the disease and growth.

A study on the Dietary Culture Practice of the University Students at Campus Town in Pusan (부산지역 대학생들의 대학가 음식문화 실태조사 연구)

  • The purpose of this study was to investigate a dietary life style of university student at campus towns and the actual condition of F&B(Food and Beverage) shop. This survey about the dietary was carried out with a variety of questionares about the life style. The subjects are 364 males and 278 females university students in Pusan area. The collected data were analyzed by SPSS Package Program. The summary of the results are as follows : The most of the subjects have a meal in-cam-pus restaurant with rice during daytime. In out-campus popular restaurant is a flouryfood restaurant and the most of subject used to go the restaurant to take a meal more than once for 2~3 days. Although a half of the subjects are satisfied with the restaurant in out-campus. Some of the subjects are unsatisfied with a price of food. A taste is the most popular criteria for selecting food in the restaurant and almost of the subjects take a meal in price 2000~2500won. Cchachangmyun is the most popular with the subject in the flouryfood restaurant, coffee is popular with the subject in the coffee shop. A half of the subjects used to go a hof house to drink, and beer is the most popular liquor with them. More than a half of the subject have a drinking at least more than once for a week in the drinking shop. A half of male subjects are able to drink more than 2,ooocc beer and more than a half of female subjects are able to drink more than 500cc beer. More than a half of the subjects want to new F&B shop to got a new experience.

Factors Affecting Eating Attitude in Shift Work Nurses (교대근무 간호사의 섭식태도 영향요인)

  • This study was conducted to identify the relationship between sleep quality, stress, depression, and eating attitudes of shift work nurses, and to determine the influencing factors of eating attitudes. Participants were 152 shift work nurses working at a university hospital and data collection was performed from July 1 to July 20, 2021. The collected data were analyzed by descriptive statistics, t-test, ANOVA, Pearson's correlation coefficient, and multiple regression. In this study, the prevalence of abnormal eating attitudes at clinical and sub-clinical levels was 7.9% and 19.1%, respectively. There was a positive correlation between eating attitudes and depression, and the influencing factors of eating attitudes were alcohol drinking(1 time/month) and depression. Therefore, it is necessary to find strategies to prevent depression in order to improve the eating attitude of nurses working in shifts, and repeated research on the relevance of alcohol drinking and eating attitudes is needed.

Comparison of Calcium Intake Status among Elementary Students by Participation in the School Milk Program (학교우유급식 참여여부에 따른 초등학생의 칼슘 섭취실태 비교)

  • This study was conducted to investigate whether there is a difference in calcium intake between elementary school students who are participating in the school milk program and those who are not. The study samples consisted of 240 milk program participants and 120 non-participants in the fifth and the sixth grades at a school located in Cheong-ju. The survey questionnaire included questions related to general status, drinking milk at school, and intake of milk and dairy products at home. An FFQ (food frequency questionnaire) was composed of 30 calcium-supplying foods, which surveyed the normal intake amount at one time and the frequency per month. The average daily intake of calcium by the participants (1052.3 mg) was higher than that of the non-participants (772.5 mg) by 279.8 mg, and the major consumed food item contributing to the difference was milk. The major sources of dietary calcium were 'milk' for the participants and 'ice cream' for the non-participants. In a question asking the reasons for participation in the program, 48.8% of the participants answered 'benefits to health', and the primary reason why the nonparticipants did not drink milk at school was 'stomach pain' (55.0%). Among the participants, 80.4% said they 'are drinking milk at home', which was in contrast to only 50.8% of the non-participants. And 48.7% the participants said they drank 'more than 1 cup' of milk at home, and 47.5% of the non-participants said they drank 'less than 1 cup'.

A Study on the Confucian Influences on the Food Life during Chosun Period (朝鮮時代의 崇儒主義가 食生活에 미친 影響)

  • To point out the Confucian Influence in Chosun, we deal with religious ceremonies, the decline of drinking tea, the spread of dog meat and the development of nutrition for the aged. The result is follows. First, the chosun confucianism changed the Buddhist familty ceremonies of Koryeo period into the confucian cermonies formed by Chu-Tzu's influence. So, buddhist sacrificial table turned into confucian one which was more systematric and more formal on the basis of chosun culture of food. Second, Chosun confucian scholars shrank from drinking tea because tea was the symbol of Buddhism. As a result, our people came to drink " Sung-nyung(scorched-rce tea)" and the common people drank Maggeolli instead of syung-nyung. Furthermore, this resulted in developing some kind of beverages. third, the people of Chosun had little rejection to dog meat and it was popularized in Chosun, Dog maet was popular in Chinese countries, Chu. Chin. and early Han. Later, dong meat almost disappeared except the purpose if healing. the reason why people had little rejection to dong meat in Chosun was that Chosun Conflucianism was the revival of Chu. Fourth, Chosun's state religion was confucianism which emphasize filial duty, the basis of humanity. The gentry researched into medication and nursing I case their old parents got sick. As a result, nutrition for the aged was developed.

Analysis of Waterborne Pathogenic Bacteria among Total Coliform Positive Samples in the Groundwater of Chungcheongnam-do Province, Korea (충남지역 지하수에서 분리한 총대장균군 양성시료 중 수인성 병원균의 분석)

  • Objectives: To ensure the microbiological safety of groundwater, it was confirmed whether waterborne pathogenic bacteria in groundwater samples tested positive for total coliforms in the Chungcheongnam-do Province region. Methods: Total colony counts, total coliforms and fecal coliforms were tested according to the process mandated by the drinking water quality testing standards of Korea. DNA was extracted from the samples, tested positive for total coliforms, and then subjected to real-time PCR to detect waterborne pathogenic bacteria. Results: A total of 115 samples were inadequate for drinking water. Thirty-one cases (27%) showed positive for fecal coliforms and nine cases (7.8%) showed total colony counts exceeding drinking water standards. Twenty-seven cases (23.5%) showed three items (total colony counts, total coliforms and fecal coliforms). Using the real-time PCR method, waterborne pathogens were detected in 57 cases (49.6%) in 115 samples. Seventy-eight cases of waterborne pathogenic bacteria were detected (including duplications): 27 cases of pathogenic E. coli (EPEC (19), ETEC (5), EHEC (1), EAEC (1) and EIEC (1)); 45 of Bacillus cereus; two of Yersinia spp.; two of Salmonella spp.; one of Staphylococcus aureus; one of Clostridium perfringens. Conclusion: The real-time PCR method can offer rapid and accurate detection of waterborne pathogenic bacteria. Therefore, this assay could be an alternative to conventional culture methods and can further ensure the microbiological safety of groundwater.

Antibacterial Activity of Elven (맥반석의 항균활성)

  • Analysis of components in elven(trade name, Holon killer sand) and its antibacterial activity were studied. Zinc was the highest composition by the element analysis in the elven, and heavy metals concentration was quite low on the basis of drinking water standard of this country. The antibacterial activity for 24hr culture was the most effective in Bacillus Subtilis ATCC 6633. In which, there was no growth in 24hr when 50% extract of elven was employed for the culture. And the next strong activity was shown in Stapylococus aaeruginosa ATCC 27853. But, Streptococcus mutans did not reveal any gowth inhibition by when elven extract of 10% was added in the culture broth.

A Study on the Improvements of Food and Culture in Dewey Decimal Classification System (음식문화 분야의 DDC 분류체계 개선방안에 관한 연구)

  • The purposes of this study are to examine how food and culture and Korean foods are reflected in the classification systems and to propose improvements of DDC to classify various subjects related to the materials of food and culture. For the study, six classification systems - DDC(Dewey Decimal Classification), UDC(Universal Decimal Classification), LCC(Library of Congress Classification), KDC(Korean Decimal Classification), NDC (Nippon Decimal Classification), China Library Classification - were analyzed in aspects of eating and drinking customs, eating etiquette, nutrition and diet, food and drink, meal and table service, beverage technology, and food technology. As a result, there were few headings about Korean food in six classification systems and it was necessary for DDC to have new headings for classifying Korean and Asian traditional foods and table services. Due to the literary warrant in classification systems, it is required to publish and disseminate various Korean food recipes and publications to add new headings or notes in future classification systems.

Organizational Culture, Organizational Structure and Emotional Labor of Dental Workers Impact of Convergence on Job Satisfaction (치과종사자들의 조직문화, 조직구조 및 감정노동의 융합적 관계가 직무만족에 미치는 영향)

  • This study surveyed the convergence of organizational culture, organizational structure, emotional labor on job satisfaction of dental workers and analyzed it with SPSS WIN18.0 program to obtain statistically significant results(p<.05). Organizational culture was high men, dental hygienist, university graduates, hospitals, many workers, High income. Organization structure was high hospitals, many workers. Emotional labor was high low age and career, single, drinking. Job satisfaction was high more than 10 workers, high income. There was a positive correlation between job satisfaction, organizational culture, organizational structure. The regression analysis showed that Y (job satisfaction) = .907 + .106 (organizational structure). Therefore, in order to enhance job satisfaction of dental workers, it is necessary to make an effort to form a positive organizational culture by considering variables related to organizational structure.
