Effects of a short period nutrition education program on the dietary behavior and the dietary intake of female college students with the different adiposity index (단기간의 영양교육이 비만도가 다른 여대생들의 식생활 태도와 영양소 섭취에 미치는 영향)

  • Effects of a short-period nutrition education program on the dietary behavior and the dietary intake were investigated in sixty nine healthy female college students. Questionnaires for general health information, character type, dietary behavior and dietary intake were answered by the subjects. All the subjects were participated in the nutrition education program which was carried out twice during the study. Subjects were divided into three groups according to their adiposity indices (AI), which are low AI (33 subjects), normal AI (31), and high AI (5). In the normal and the high AI group, the nutrition education program appeared to influence the dietary behaviors of the subjects significantly. However the program did not significantly influence the dietary intake of three groups, except PUFA ratio. It appears that a longer-period nutrition education program is required for influencing both the dietary behavior and the dietary intake of the subjects.

Effect of Community Based Participatory Research Nutrition Education Program for 3rd Grade Elementary School Students in the Ulsan Area (울산 지역 일부 초등학교 3학년생 영양 교육 프로그램 개발 및 효과 - 지역 사회 기반 참여 연구를 중심으로 -)

  • This study was evaluate the effects of community based nutrition education program offered to 3rd grade elementary school students. Students enrolled in intervention programs 4 times per class by nutrition teacher & public health center. The subjects were asked to 606 students fill out a questionnaire before and then after completion of community based nutrition education program. After completion of the community based nutrition education program, nutrition knowledge score increased from $5.07{\pm}1.65$ to $6.24{\pm}1.53$ (p<0.001), dietary attitude score increased from $16.79{\pm}2.70$ to $19.52{\pm}2.71$ (p<0.001), dietary behavior score increased from $4.79{\pm}1.23$ to $5.31{\pm}1.14$ (p<0.001). The changes in nutrition knowledge scores were positively correlated with dietary attitude and dietary behavior. Above results showed that community based nutrition education program was effective for the improvement of dietary habits of 3rd grade elementary school students. Therefore this study is suggested effective Community-Based Participatory Research public health program and this program can be used at school and at public health centers.

Assessment of Dietary Education Program for Children from Low-Income Families in Korea (취약계층 아동 대상 식생활 교육의 효과성 평가)

  • The purpose of this study was to develop a dietary education program, and to evaluate the effectiveness of the education program for children from low-income families. A total of 242 children (122 education groups and 120 control groups) were run six times a dietary education program from April to December 2018, and a questionnaire was administered before and after the education to evaluate effectiveness. Elementary school students were the most prevalent in the education and the control group. In the education group, the body height and weigh were 137.27 cm and 33.69 kg, respectively, and in the control group the body height and weight were 143.48 cm and 40.64 kg, respectively. The education group showed positive change in dietary self-efficacy and dietary knowledge compared to the control group. In particular, 'I can have meals regularly' (Education Group: 4.00 points from 3.71 points) and 'I can choose fruits instead of cookies candies as snacks (Education Group: 4.01 points from 3.70 points) The score increased after participation in the program. In the change of nutritional and hygiene knowledge of children, the education group scored 3.63 of 10 points before education, but the score significantly increased to 5.70 points after education(p<0.001).

Studies Inquiry on School Dietary Education in the Home Economics Education (가정교과교육에서의 학교식생활교육 모색)

  • Recently, Korean society is experiencing many serious dietary problems of adolescents. There is an urgent need to revitalize and improve the effects of dietary education program for middle and high school students. The purpose of this study is to establish the basis for dietary education in school. This research was conducted using various dietary education program of foreign countries in order to find a way to increase the effects of the program so that more and more adolescents can participate in and eventually get benefits from it. We analyzed contents of the program and the ways how the program is actually conducted in other countries. We were able to find some important factors for developing new directions of dietary education program contents. The dietary education for middle school students requires a practical integrative approach based on home economics education. This study was initiated from the probing question of how should we set dietary education goals and contents of middle and high school. It will definitely play a important role in establishing a standard framework for dietary education based on the Home Economics Education in middle and high school students.

A Nutrition Education Program for the Children of Obese or Unbalanced Dietary Habits (편식아 및 비만아의 영양교육 효과)

  • A nutrition education program has been designed for the children of obese or unbalanced dietary habits. A total of 120 children(60-obese and 60-unbalanced dietary habits) who were in 5th-6th grade was chosen for the program and the effectiveness of the nutrition education was evaluated. The nutrition education program was organized into daily lessons(3 wks). A booklet was made for the education and used during the education period, dealing with 5-Basic Food Groups and their functions, excess or deficiency in a human body, food exchange list, importance of health, obesity, unbalance dietary habits and of school lunch program were emphasized in every day session. dietary recall records were collected to assess their daily food intake and the amounts of meals were discussed. During the education period, booklets, wall charts, photographs, food models, VTR films and slide films were utilized. Assessment of effects of the nutrition education program was carried out by a nutrition knowledge test, food habit records, anthropometric measurements and food preference test. The nutrition knowledge scores were significantly improved after the education and the scores were higher on the children in the school with school lunch program. The anthropometric measurements and food preference test revealed no significant influences of the education on the children, showing that the education period was too short to change their eating behavior any may need a long-term education program. Food habit scores were improved after the education in both experimental and control groups. The experimental groups showed higher scores than the control group.

Development and Evaluation of Home Economics Dietary Education Programs for Improving the Sustainable Dietary Competencies of High School Students (고등학생의 지속가능한 식생활 역량 향상을 위한 가정과 식생활교육 프로그램의 개발 및 평가)

  • This study aimed to develop, and evaluate the effectiveness of, a home economics dietary education program that could be used to improve high school students' sustainable dietary competencies. To achieve this goal, learning objectives and elements were selected for the education program to improve the students' sustainable dietary competency. The content validity of this program was verified with numerous experts. After implementing the new educational program, its effect on high school students' sustainable dietary competencies was assessed through pre- and post-tests. The results of this study are summarized as follows. First, through the textbook analysis, the necessity of developing an educational program that can cultivate the three areas that constitute a sustainable diet (environment, health, and consideration) was confirmed. Second, a total of nine teaching and learning plans for sustainable dietary education programs were developed. From there, content validity verification was conducted by experts, indicating that the developed educational program was highly applicable in the field. Third, after the implementation, a survey was conducted based on a questionnaire consisting of 20 items related to three areas of sustainable diet, while the pre- and post-test assessment indicated statistically significant differences in all three areas: environment (pre: 3.40, post: 4.46, p<.001), health (pre: 3.15, post: 4.32, p<.001), and consideration (pre: 3.46, post: 4.48, p<.001). It is expected that the educational program developed in this study will be used as a basis for dietary education that fosters food citizenship in high school home economics courses.

Study on Development and Evaluation of Nutritional Education Program for Preschool Children in Association with Center for Children's Foodservice Management, Childcare Facilities and Home (어린이급식관리지원센터, 유아교육기관과 가정을 연계한 영양교육 프로그램의 개발 및 효과에 대한 연구)

  • The purpose of this study was to develop and evaluate a nutritional education program for preschool children in association with Center for Children's Foodservice Management, childcare facilities and home in order to provide nutritional knowledge and change food attitudes in children. The program was repeated three times using the same educational theme and consisted three steps. Step 1 involved visiting education with teaching tools by a dietician. Step 2 involved home education with a worksheet and participating in events with parents. Step 3 involved repeated education with a textbook by a preschool teacher education reports sent to the center. The subjects of this study were 3 to 5-year-old children at 89 childcare facilities located in Busanjingu. Interest in meals at childcare facilities, dietary guidance for parents of children, and dietary attitudes of children were evaluated before and after education. Number of parents interested in meals managed by childcare facilities (kitchen visiting, meals observation, progress of children's education) increased after education. Mean scores for meal awareness in parents in the form of three questions (proper food distribution, hand washing before mealtime, nutritional and hygienic satisfaction with meals) significantly (p<0.05) increased after education. Mean dietary guidance for parents' scores for all questions except table manner significantly (p<0.01) increased after education. Mean dietary attitudes for children in the form of six questions (try to eat various vegetable, eat meals without leaving, wash hands before mealtime, eat cleanly, reduce sodium intake and keep table manner) also significantly (p<0.001) increased after education. As a results, the nutritional education program applied in this study, positive influenced children's nutritional knowledge and dietary attitudes, and parents' dietary guidance of children.

Importance-Satisfaction Analysis of a Dietary Life Education Program - Focusing on Dietary Life Education Program Participants in Seoul and Gyeonggi - (식생활교육 프로그램의 중요도-만족도 분석 - 서울·경기 식생활교육 프로그램 참여자를 중심으로 -)

  • This study was conducted to determine the elements that are required and that need improvement in the contents of dietary life education and the educational environment by analyzing the importance-satisfaction of a dietary life education program for dietary life education trainees. The results of the rank test for the satisfactory elements of dietary life education were in the order of competence of instructors, educational contents, time of education, educational environment and affordability of tuition. The importance-satisfaction analysis of the contents and construction of the dietary life education program showed that "suitable contents for the theme of the class", "contents and construction of practice class", "diversity of practice menu" and "diversity of educational contents" had high importance and satisfaction scores and therefore, could be maintained at their current levels. Meanwhile, "adequacy of class time" and "contents and construction of theory class" showed low importance and satisfaction scores, requiring a little effort. Whereas, "time and construction of group practice", "structure of textbook for class" and "duration of course and number of classes" showed relatively low satisfaction compared to importance, requiring major efforts for improvement. Similarly, analysis of the lecture element from dietary life education showed that "professional lecture by instructors", "lectures suitable for themes" and "lecture applicable in real life" had relatively low satisfaction compared to importance, requiring major efforts for improvement. In addition, analysis of the educational environment from dietary life education showed that "adequacy of lecture room space", "cooking equipment", "diversity of cooking utensils" and "sanitary condition of cooking utensils" also require major efforts for improvement. Therefore, dietary life education should not be executed with a simple delivery of knowledge but with both theory and practice classes to increase its application in real life, and active and specific efforts are required to nurture professional instructors and establish educational strategies.

A Study on the Effect of the Nutrition Education Program on the Dietary Self-efficacy and Dietary Practice for Elementary School Children. (영양보건교육이 초등학교 아동의 식이 자기 효능감과 식행동 실천에 미치는 효과)

  • Purpose: The study was to test the effects of nutrition education program changing the dietary self-efficacy and dietary practice of elementary school children. Method: The study was designed as a nonequivalent control group pretest-posttest design. The subjects of the study were 70 boys and girls in the fourth grade of elementary school in Seoul. They were devided in two groups evenly : control group and treatment group. The control group participated in the nutrition education with 4 sessions for 4 weeks. data were collected by self-reported questionnaires(dietary self-efficacy and dietary practice) from the 28th of August to the 10th of October. 200l. Result: 1. A hypothesis that 'the elementary school children who participated in the nutrition education may get higher points on dietary self-efficacy than the elementary school children who did not participated' has been adopted(t=-6.36. p<001). 2. A hypothesis that 'the elementary school children who participated in the nutrition education may get higher points on dietary practice than the elementary school children who did not participated' has been adopted(t=-5.03. p<001). Conclusion: The nutrition education is an effective nursing intervention strategy for elementary school children by supporting them form positive dietary self-efficacy and improve dietary practice.

Effects of Individualized Diet Education Program on the Dietary Knowledge and Self-Care Compliance among Hemodialysis Patients (개별식이교육 프로그램이 혈액투석 환자의 식이요법에 대한 지식과 식이자가간호 이행에 미치는 효과)

  • Purpose: The purpose of this study was to explore the effect of individualized diet education program on dietary knowledge and self-care compliance among hemodialysis patients. Methods: The design of the study was quasi-experimental nonequivalent control group pre-post test design. Fifty patients were assigned to an experimental group and fifty patients were assigned to a control group. Individualized diet education program was applied to the experimental group once every two weeks for twelve weeks. Results: Dietary knowledge increased significantly in the experimental group when compared to the control group. Dietary self-care compliance improved significantly in the post-test of the experimental group, however, the difference was not significant. Conclusion: The individualized dietary education program was effective in improving dietary knowledge. The individualized diet education program needs to be incorporated as an important nursing intervention. Nurses should provide individualized diet education program for hemodialysis patients.
