어린이 영양지수를 이용한 강화군 영·유아의 식행동 실태 평가 (Evaluation of Dietary Behavior of Infants and Toddlers in Ganghwa County by Using Nutrition Quotient (NQ))

  • The objectives of this study were to assess food intake frequency and food behavior of infants and toddlers by using the Nutrition Quotient (NQ). A total of 368 subjects (infants 111, toddlers 257) in Ganghwa county were analyzed in this study. The NQ was examined using an NQ questionnaire, which consisted of 19 food behavior checklist items. The items were grouped into five categories: balance, diversity, moderation, regularity, and practice. All data were statistically analyzed by SPSS 20, and significant difference was evaluated by Student's t-test and $x^2-test$. The BMIs of infants and toddlers were $16.54kg/m^2$ and $16.01kg/m^2$, respectively. The frequencies of consumption of vegetables and fruits were higher (p<0.001) in girls and toddlers compared to boys and infants, respectively. Food behavior of meal regularity (p<0.001), breakfast eating (p<0.001), and chewing well (p<0.001) were also higher in toddlers compared to infants. Total NQ score of infants and toddlers were 62.05 and 64.91, respectively, which were within medium grade. The NQ score of toddlers was higher than that of infants (p<0.0.5). NQ score was positively correlated with parent's education, monthly income, age, and exercise. Therefore, children and their parents need proper nutrition education and counseling to correct their eating habits and improve their nutritional status.

한국인 식생활지침에 기반한 노인의 식행동 평가항목 개발 (Development of Food Behavior Evaluation Items for the Elderly Based on Korean Dietary Guidelines)

  • A checklist of dietary behavior items for the elderly was developed based on Korean dietary guidelines. First, a literature review was conducted, and 63 preliminary items, including 30 items on food intake, 12 on eating habits, and 21 on dietary culture, were obtained to evaluate the dietary guidelines. The preliminary items were evaluated by experts using Lawshe's method to verify the content validity. They were then revised, resulting in 52 items: 25, 11, and 16 in the food intake, eating habits, and dietary culture domains, respectively. A face-to-face survey was conducted on 331 people over 65 years of age in the metropolitan area, and their one-day food intake was surveyed using a 24-hour recall method in August 2022. The 48 items, including 24, 11, and 13 items on food intake, eating habits, and dietary culture, respectively, correlated significantly with the evaluation indicators of nutrient intake, such as mean adequacy ratio, dietary diversity score, and nutrient intake density. These items were considered suitable for evaluating the elderly's compliance with dietary guidelines.

초등학생 학부모들의 자녀 간식 및 식생활 교육에 대한 실태 및 인식 (Parent's Behavior and Perception of Their Kids' Snacking Behavior and Dietary Life Education)

  • The objective of this study was to investigate parents' behavior and attitudes regarding their kids' snacking and dietary life education. A survey was conducted with the parents (N=412) of elementary students from seven provinces, includeing Seoul, Busan, Daegu, Kwangju, Gyungnam, Chungnam, and Kangwon. Kids' snacks consisted mainly of purchased foods rather than homemade foods. Parents' main concerns regarding kids' snacks were nutrition (44.9%), taste (24.3%), and safety (23.5%). Over 50% of parents checked food labels, especially expiration date (96.4%), food ingredients (49.5%), and food additives (33.5%). The snack items frequently provided to kids were fruits (62.8%), milk (55.5%), bread (47.1%), and snack items (23.3%). Parents responded that the amount of their kids' snacking was adequate (47.8%), small (33.7%), or large (18.2%). The results show that more research is needed regarding the adequacy of kids' snacking, considering that 15.7% and 22.4% of the children ate more and less, respectively, than their daily energy requirement. 76.5% of the parents performed home education regarding their kids' dietary habits, especially on the topics of 'balanced diet' (83.9%), 'healthful food' (53.7%), and 'eating three meals a day' (40.2%). Parents obtained dietary information from TV (65.2%), internet (12.0%), and newspapers (7.0%). From this study, we found that parents perceived their kids' snacking behavior correctly, and considered home-education for their kids' dietary habits positively. However, the information resources were limited, which makes it necessary to develop parents' education programs.

남녀 중학생의 식행동, 영양지식 및 체형, 체중조절과 영양교육에 관한 인식비교 (Comparative Study on Dietary Behavior, Nutrition Knowledge and Cognition of Body Image, Weight Control and Nutrition Education of Middle School Students according to Gender)

  • The purpose of this study is to find out how important providing nutrition education to young students is. The study is based on the assumption that students' food behavior, nutrition knowledge and cognition of body image, weight control and nutrition education are considerably influenced by gender. A total of 495 students (249 boy and 246 girl students) were surveyed in one middle school located Siheungsi, Gyeonggido. The average height and weight of the boy and girl students are 164.6 cm, 54.4 kg and l58.5cm, 47kg, respectively. According to average BMI, the boy students($20.0kg/m^2$) are in the normal state. However, the girl students($18.2kg/m^2$) are underweight. For the status of meal intake, 52.4% of the students took breakfast everyday. Female students had dinner with lower intake frequency than males(p<0.05). For snack intake, the kinds of snack differ according to gender(p<0.05); more milk for male and more fruit for female students. The scores of dietary behavior based on Mini Dietary Assessment were 21.5/30 for male and 21.3/30 for female students. The nutrition knowledge scores of 4.6/10 for male and 4.6/10 for female students were not significantly different according to gender. The score of dietary behavior is based on Mini Dietary Assessment. The survey shows that in terms of the experience of weight control, 35.5% of the girl students have made an effort to watch their weight and 21.8% of the boy students have tried controlling their weight(p<0.0001). It turns out that the students who have been provided nutrition education are more satisfied with their body shape than those who have never been provided nutrition education(p<0.05).

광주지역 일부 저소득층 여자노인에서 지역사회 영양중재 프로그램 적용에 따른 식행동 변화 및 영양상태 개선 효과 (The Effect of a Community-Based Nutrition Intervention Program on Dietary Behavior and Nutritional Status of Low-Income Elderly Women in Gwangju City)

  • This study was conducted to measure the effect of a community-based nutritional intervention program on dietary behaviors and nutrient intakes of low-income elderly women in Korea. The subject of the study was a group of 88 elderly women using the free meal service in Dong-gu, Gwangju city in Korea. The study was carried out from April to July 2009, and the pretest, application of nutrition education, and post-test were applied in each stage. This community-based nutrition intervention program consisted of snack supplement and nutrition education provided three times a week and 36 times in total. The nutrition education was led by the nutritionists and professionals using various educational media. Snack supplement included were milk, soymilk, carrot juice, bread, yogurt, and bananas. The result of pretest showed that the nutrient intakes of the subjects were much below the Recommended Nutrient Intake (RNI) level of Dietary Reference Intake for Koreans. Comparison of the dietary behavior score and nutrient intakes before and after the nutritional intervention program indicated that the food behavior score increased from 3.1 to 5.6 (P<0.001) and intake of energy, protein, carbohydrate, thiamin, niacin, vitamin C, iron, and potassium of the subjects all increased significantly (P<0.05). Mean Adequacy Ratio (MAR) of their nutrient intakes was also improved from 0.53 to 0.64 (P<0.01). These results indicated that the nutrition intervention program conducted in this study was effective in improving dietary behavior and nutrient intakes of elderly women in local community.

Effects of Lifestyle and Dietary Behavior on Cardiovascular Risks in Middle-aged Korean Men

  • Lifestyle and dietary behavior intervention as the primary prevention of lipid disorder seems safe and compatible with other treatments of cardiovascular diseases. Cross-sectional associations between lifestyle factors and dietary behavioral factors with plasma lipid and lipoprotein levels were analyzed in 189 middle-aged men in Suwon, Korea. Overnight fasting plasma levels of total cholesterol, high-density lipoprotein(HDL)-cholesterol, triacylglycerol and glucose were analyzed. Blood pressure and anthropometric data were also measured. Lifestyle factors such as smoking status, alcohol consumption and frequency of physical exercise were evaluated by a self-administered questionnaire. Questions regarding dietary behavior were also asked. The subjects were 43.8%${\pm}$7.9 years old, and 23.8%${\pm}$2.6kg/m$^2$. From stepwise regression analyses, significant correlates with total cholesterol level were body mass index(BMI), alcohol intake(negative), age and coffee drinking(model R$^2$=14.3%). BMI, breakfast-skipping, age, and sleeping hours were significant for triacylglycerol level(model R$^2$=15.8%). BMI, alcohol drinking(negative), age, and coffee drinking were significant for low-density lipoprotein(LDL)(model R$^2$=11.7%). Age(negative), BMI(negative), alcohol drinking, stress level(negative), physical exercise, and cigarette smoking(negative) were significant for high-density lipoprotein(HDL)(model R$^2$=12.1%). From stepwise regression analyses, excluding BMI and age as factors in the model, alcohol intake(negative) and coffee drinking were significantly correlated with total cholesterol level(model R$^2$=4.4%) : breakfast-skipping with triacylglycerol(model R$^2$=3.2%) : alcohol intake (negative) with LDL level(model R$^2$=3.4%) : alcohol intake, physical exercise and stress level(negative) with HDL level(model R$^2$=6.3%). The findings suggest that a healthy daily lifestyle and dietary behavior may have an anti-atherogenic effect by altering plasma lipid and lipoprotein levels in middle-aged Korean men. 여대생의 식생활 양상 및 운동여부와 체성분 구성의 관계 (A Study of Body Composition, Dietary Behavior, and Exercise among Students at Women's Colleges)

  • Purpose: The aim of this study was to examine BMI, body fat mass, percent body fat, waist-hip ratio, soft lean mass, skeletal muscle mass, and fat free mass, and to determine the association between dietary behavior and exercise and body composition among students at women's colleges, and decide on the relationships among them. Method: This study employed a cross-sectional study design and a convenient sampling method. Ultimately, a total of 404 students participated in the study, which was conducted from September 1 to December 22, 2009. Measurements administered were comprised of dietary behavior and a questionnaire on exercise. The SPSS Win 18.0 statistics program was used for analysis of final data. Results: Major findings are as follows: 9.9% of participants showed a high BMI, and more than 56% and 38% of participants showed a high percent body fat and waist-hip ratio, respectively. Dietary behavior showed a significant negative association with percent body fat (r=-0.110, p=0.027) and waist-hip ratio (r=-0.118, p=0.018). Compared with the non-regular exercise group, the regular exercise group showed a high level of soft, lean mass (t=4.15, p<0.001), skeletal muscle mass (t=3.13, p=0.002), and fat free mass (t=4.00, p<0.001). Conclusion: For maintenance of proper body composition, health promotion programs for management of dietary behavior and regular exercise for students at women's colleges should be developed.

Changes in Dietary Behavior Among Adolescents and Their Association With Government Nutrition Policies in Korea, 2005-2009

  • Objectives: This study was conducted to observe recent changes in adolescents' dietary behavior and indirectly evaluate the effects of the government's nutritional policies in Korea. Methods: We analyzed the secular trends in seven dietary behaviors using the Korea Youth Risk Behavior Web-based Survey data from 2005 to 2009. Through literature review, we included the policies implemented for the improvement of adolescents' dietary behaviors during the same periods. Results: The significant linear trends were observed in all dietary behaviors (p<0.05). Overall, all behaviors except the fruit intake rate were desirably changed during five years but undesirable changes were observed between 2008 and 2009 in all behaviors. Within those periods, several policies were implemented including 'Ban on carbonated-beverages in school', 'Green Food Zone', etc. Despite confirmed evidence of their effects, the policies on individual behavior such as nutrition education didn't influence the prevalence of dietary behaviors because they were conducted to too limited persons. Polices on the school environmental improvement, such as ban on carbonated beverage in school, were more effective because they decreased the exposure of undesirable food environment. However, for effect of Green Food Zone improving community environment we couldn't come to a conclusion because of too short period after full implementation. Conclusions: Among government nutrition policies conducted from 2005 to 2009, those on environmental improvement, especially in school, were more effective than those on individual behavior. Therefore, the development and implement of policies on school environmental improvement are needed in Korea.

슬로라이프를 기반으로 한 식생활교육 프로그램의 개발과 효과성 검증 (Development and Evaluation of Dietary Education Program Focused on Slow Life in School Children)

  • The aim of this study was to develop a Dietary Education Program focused on Slow Life (DEPSL) and verified its effectiveness in elementary school children using the extended Theory of Planned Behavior (TPB). The DEPSL was developed effectively according to the systematic program development model, ADDIE. The developed DEPSL was applied to the Education group (EDU), which was total of 130 students aged 12-13 in an elementary school by trained instructors for five weeks. The control group (CON) composed of 100 students of the same age was not given any dietary education. Pre- and post- questionnaires were collected from the students in both groups to compare the change in students' dietary life during educational intervention between EDU and CON. EDU showed significant positive effects in all extended TPB variables (p< .01), but CON showed a significant difference only in the 'knowledge' and 'behavior intention' (p< .05). In addition, the extended TPB model verified its conformity to determine if the effect of education leads to a change in the children's behavior. In conclusion, the DEPSL has a positive impacts on dietary life in school children. Nevertheless, further research will be needed to develop various and specialized dietary education programs with different level of grades in other school areas.

영양상담을 통한 식사행동의 변화가 운동선수의 운동능력 향상에 미치는 효과 (A Behavior-Modification Approaches to Improved Exercise Performance for Athletes Through the Multipe Nutritional Counseling)

  • Management of nutrient intakes through behavior-mordification can be important for improving exercise performance in athletes. The purpose of this study was to determine the effectiveness of nutritional counseling for improving exercise performance capability in athletes. The subjects were seven golfers and fourteen ju-do athletes from Hoseo university, and they have nor received professional hel[ from dieticians. Prior to nutritional counseling, their dietary intakes, lifestyles and dietary habits were evaluated. Nutritional counseling sessions were conducted by a trained dietician every 2-3 weeks for 3-4 month. After 5 counseling sessions, nutrient intakes, lifestyle and dietary habits were re-evaluated. Exercise performance capability was measured by maximal exercise stress test using treadmills. Individual data were assessed as quality index represents the better nutritional status. The common dietary and lifestyle problems were overeating binging, overeating, snacking and drinking alcohol prior to the nutritional counseling. After counseling sessions, the quality index of dietary habits seemed to decrease, especially in ju-do athletes, representing nutritional problems were resolved. Body fat and body mass index decreased in ju-do athletes, but not in golfers. Both athletes have shown to increase oxygen uptake at anaerobic threshold and maximal oxygen uptake status, which represents that the athletic performance capacity was improved after counseling sessions. Their respiratory quotients were decreased. In conclusion, nutritional counseling sessions over five times are an effective and efficient approach to change dietary habits to improve exercise performance capacity. Furthermore, clients can have good dietary habits and learn how to manago muscle strength by behavior modification through multiple nutritional counseling sessions.
