관광호텔 CEO의 리더십이 종사원 직무 만족에 미치는 영향 (The Effects of CEO Leadership on Employees' Job Satisfaction in Tourist Hotels)

  • This study examines the effects of CEO leadership on Employees' job satisfaction in tourist hotels. Samples were the employees working at 10 deluxe hotels in Seoul and a total of 300 copies of the questionnaire were distributed, among which 191 valid ones were used for the analysis. After data cording, answers were processed by SPSS 12.0. As a result of the factor analysis on CEO leadership, 3 factors(management style, settlement style, and work style) were extracted; for employees' job satisfaction, 3 factors(work environment, service environment, and job environment) were extracted. As the results of the study, management style and work style among CEO leadership factors have a statistically positive impact on work environment. Next, management style has a statistically positive impact on service environment. Finally, management style and work style has a statistically positive impact on job environment.

호텔 진입공간의 유형별 인지특성 및 이미지형성구조에 관한 연구 (A Study on the Cognitive Characteristics and Image Formation Structure of Hotel Access Space)

  • This study classified visual perception types of access space at 17 five-star hotels in Jejudo and examined their cognitive characteristics and image formation structures in an effort to provide basic information important for designing the elevation and the access spaces of a hotel. The results of this study are as follows. Access space image of experimental hotels showed more negative evaluations at both city hotels and resort hotels, viewing angle (upward angle) was also positively evaluated between $10^{\circ}{\sim}12^{\circ}$ and $18^{\circ}$ and central type in arrangement type and detour access and straight access types in access circulation type were positively evaluated. When viewed from an upward angle of $10^{\circ}$ to $12^{\circ}$, the most important factors were as plasticity, decorativeness, and creativity; from $18^{\circ}$ it was such factors as harmony and peculiarity; and at $45^{\circ}$ it was factors like decorativeness and stability. In considering the various access types, the most important factors in a straight access type were peculiarity and harmony; for one-time curved access type it was by decorativeness, creativity, Peculiarity, and stability; and for detour access types it was decorativeness, stability, and peculiarity. Influential of factors affecting image formation and plasticity and harmony factors and the form had more influences on image formation.

부산 지역 특급호텔에 종사하는 조리사들의 직무 실태에 관한 연구 (A Study on Current Status on Job Activities of Cooks at Deluxe Hotels in Busan)

  • A study was carried out to get information on hotel cooks. We needed to obtain the information on the working environment and satisfaction of the cooks to improve the working environment, a culinary art training program and an efficient man power control program. This study surveyed 305 cooks who work for deluxe hotels in Busan. The results were as fellows: The great part(67.2%) of the cooks was male and less than forty years old (85.6%), 67.0% of the cooks graduated from college and they had over 5 years(33%) or 1${\sim}$3 years(32.0%) in their current work places. 74.8% of the cooks earned less than 1.5 million won in a month. The cooks had on the average 1.53 lieences per person, and the most popular ones were the Western style(55.1%) and Korean style(49.2%) culinary arts. The most work places of the male cooks were Western style(49.3%) and Japanese style(41.8%) restaurants, but those of the female cooks were Western style(49.3%) and Korean style(30.6%) restaurants. The male cooks have worked over 5 years(36.0%) or 1${\sim}$3 years(31.0%) at these work places and the working period of female cooks ranged overall. Job satisfaction was found higher than satisfaction of work places and had no connection with age, job ranks, level of salary and academic background. The higher the age, job ranks, level of salary and academic background were, the more all the cooks satisfied about their jobs and work places.

호텔 식자재 구매관리 전략 (Strategy of Purchasing Management for Hotel Food Materials)

  • 본 연구는 서울시 소재의 특1, 2등급 호텔의 식자재구매관리에 관한 실증분석을 통하여 등급간의 차이를 검증하여 이에 따른 전략을 수립하고자 하였다. 실증분석결과 식자재 구매관리 수준을 높이기 위해서는 특2급의 경우과학적 기법과 시스템이 구축되어야 하며 전문검수원의 육성과 과학적 검수방법의 활용이 개선되어야함을 알 수 있었으며, 구매계약과 효율적인 구매방법의 강구가 이루어져야 함을 알수 있었다. 저장관리 분야에 있어서는 등급간의 차이가 낮게 나타났다. 연구결과를 토대로 한 시사점으로는 첫째, 전산시스템을 도입하여 인력운영의 효용성을 높여야 한다. 둘째, 식자재구매 매뉴얼을 토대로 한 교육훈련이 이루어 져야 한다. 셋째, 인력순환배치를 통한 검수담당자의 전문성을 높여야 한다.

국내 비체인 특급 호텔과 외국계 체인 특급 호텔 조리.식음료 종사원의 직무만족도 비교 분석 (Job Satisfaction of Employees in F&B Department: Domestic Independent Deluxe Hotel vs. International Chain Deluxe Hotel)

  • The purposes of this study were to measure the job satisfaction levels of F&B(Food & Beverage) personnel in hotel by using JDI(Job Descriptive Index), to investigate relationships between demographic variables or job type and job satisfaction, to determine the relative importance of the five facets and to identify the effects of job satisfaction on turnover intention by hotel. Questionnaire was developed and distributed to 660 employees who are currently working in food & beverage department of hotel A (Domestic independent deluxe hotel) and hotel B(international chain deluxe hotel). A total of 498 questionnaires were usable; resulting in 75.5% response rate. The survey was conducted between March 16 to 27, 2000. As a result of analysis on job satisfaction, total JDI score was 136.57 out of full mark 210. Personnel of Hotel A was more satisfied significantly with work itself (p<.01), supervision (p<.001), co-worker (p<.01), total JDI (p<.001) than those of hotel B. Total JDI and work itself score were higher on employees of front of the house than those of back of the house in both of hotels. Payroll was the most important facet on job satisfaction. Finally, work itself (p<.001) and payroll (p<.05) had a significant effect on turnover intention in hotel A and work itself (p<.001), supervision (p<.05) and promotion (p<.05) did in hotel B. The findings indicated the necessity of human resource management apt to the vision of enterprise and the organizational culture.

관광호텔의 대 고객 관계 마케팅 활동 개선방안에 관한 연구 (A Study on Improving the Relationship Marketing Activities of Tourist Hotels)

  • This study attempted to present the ways of improving relationship marketing activities of tourist hotels. The field survey was carried out at six deluxe hotels in Seoul to find out their relationship marketing activities and analyze the problems of the activities. The problems were analyzed as follow; 1) lack of adequate understanding of the importance of relationship marketing, 2) poor contents of customer file information, 3) insufficient service encounter management, 4) negative inducement of guests' complaints, 5) insufficient survey of guests' satisfaction, 6) insufficient relationship maintenance programs and regaining program of lost guests. This study relationship marketing activities should be improved with customer information file establishment, service encounter mangement, and communication enforcement as follow; 1. Customer Information File Establishment As relationship marketing Is marketing for individual, it needs customer file information. The guest information files should be made in detail in all the market segments. Hotels have to make use of the information strategically for establishing relationship with their guests. 2. Service Encounter Mnagement Because the guest-oriented mind and professionalism of hotel staff are prerequisite for relationship continuity, hotel should make efforts to make its staff keep the mind and cultivate expert service technique of the staff. 3. Communication Enforcement Communication enforcement consists of communication activities and communication programs which are focused on contact intensity and two-way communication.

호텔 진입공간의 구성요소 및 특성에 관한 연구 (A Study on the Components and Characteristics of Hotel Access Space)

  • In this study, an examination and an analysis are carried out on the forms and components of the access spaces of hotel entrances from the front gate of five star hotels in Jejudo, Korea. The results of the study are as follows. In terms of the arrangement of the hotel, city hotels with a relatively narrow site area are influenced by site shape, while resort hotels with a relatively wide site area are affected by the environment. However, the location of the front gate was determined by the access road from the outside. Therefore, forms of access space are related to the front gate, which is governed by the access road, and to the entrance, which is determined by the hotel arrangement. If the front gate is in line with the hotel entrance, a straight line and the hotel are arranged vertically to the front gate(side arrangement) or the hotel is arranged horizontally to the front gate, but if the entrance is not in line with the front gate, it appears as a curved shape. However, those who use their own cars have a variety of choices for access route depending on the location of the parking lot.

관광호텔 객실 공표 가격과 실거래 가격, 수용 가격과의 인구통계적 변수별 차이 - 대전지역 특급호텔 종사원을 중심으로 - (Differences of Rack Rate, Transaction Rate and Acceptability Rate by Demographic Variable in Tourist Hotels)

  • This study is to explore how the employees of tourist hotels perceive moderate room rates and price acceptance. Sampling was taken among employees for deluxe hotels at Yusong in Daejeon. A total of 150 samples were distributed and 124 valid samples were selected for this research. Answers were processed by SPSS 15.0 after data coding. The results of study are as follows; First, annual average sales price of hotel rooms is \99,223, and the rack rates take up 49.7% of the transaction rates. Second, the rack rates which many employees think moderate are in the range of $50.09{\sim}75.13%(\100,000{\sim}150,000)$ of the rack rates. Third, many employees consider $40.07{\sim}50.09%(\80,000{\sim}100,000)$ of the rack rates as the moderate acceptability rates. Finally, the differences of fair rates by age and annual income were noticeable. These hotels ought to narrow the gap between rack rates and transaction rates. This study has a meaning to draw up a new plan for the room rate policy.

특급 호텔 식음료 부서 종사원의 조직몰입이 직무만족도에 미치는 영향에 관한 연구 - 리더-부하교환관계의 조절 역할을 중심으로 - (Study on the Relationship between Organizational Commitment and Job Satisfaction in Food & Beverage Department of Deluxe Hotel - Moderating Effect of Employees' Leader-Member Exchange -)

  • The purpose of this study was to understand the influence of employees' commitment (affective, normative, continuous) in the food & beverage departments of deluxe hotels upon job satisfaction and analyze the moderating effects of the leader-member exchange on the relationship between organizational commitment and job satisfaction. Based on a total of 403 food & beverage employees, this study reviewed the reliability and fitness of the research model and verified two hypotheses. The hypothesized relationships in the model were tested simultaneously by using SEM. The proposed model provided an adequate fit to the data, ${\chi}^2=635.160$ (p< .001), df=112, GFI= .845, NFI= .851, CFI= .874. SEM showed that organizational commitment (affective: ${\beta}=428$; normative: ${\beta}= .293$; continuous: ${\beta}= .342$) showed a positive significant influence on job satisfaction. However, the findings demonstrate that the leader-member exchange did not moderate the relationship between organizational commitment and job satisfaction. Limitations and future research directions are also discussed.

  • 본 연구에서는 호텔 종사원의 직무스트레스와 소진, 반생산적 행동과의 유기적인 인과관계를 고찰하였으며, 이러한 인과관계에서 종사원의 조절초점에 따른 조절효과를 추가적으로 검증하였다. 서울지역 특급 호텔 종사원 362명을 대상으로한 표본을 바탕으로 분석하였으며, 연구결과, 종사원의 직무스트레스는 소진에 유의한 영향을 주었고, 소진은 반생산적행동에 유의한 영향을 주는 것으로 나타났다. 따라서 종사원이 근무 상황에서 자신의 직무에 대한 스트레스가 높아지면 소진이 일어나고 이로 인해 반생산적 행동의 경향도 높아지게 되는 것으로 추측된다. 더불어 종사원의 소진과 반생산적 행동 사이의 인과관계에 있어서 종사원의 조절초점 중 예방 초점이 유의미한 조절효과를 보이는 것으로 조사되었다.
