  • This study was undertaken to investigate the effect of cereals on the physicochemical and ,sensory characteristics of Noti. Noti is one of Korean traditional pan-fried glutinous cereal cakes. In this case, Noti was made from the steamed glutinous Chinese millet flour. Acid value was not increased abruptly. TBA value was maintained, reducing sugar content was increased, and the average value of gelatinization degree was increased as compared with the first day that glutinous Chinese millet Noti was made during 90 day storage. Through sensory evalution, flavor, consistency(the inner part), and moistness were unfavorable according to the storage. The texture tended to increase depending upon the storage period. The hardness of glutinous Chinese millet Noti by Instron measurement was slowly increased. Cohesiveness and elasticity were increased during storage.

  • In 1492 year, the corn originated in America continent had spread all over the world after spreading into Europe by Columbus. Since the Corn had a similar shape with adlai's one (Yulmoo(율무)), it had been written by the different name of adlai (Yulmoo) at the "訓蒙字會(Hun-mong-ja-hoe)(1527)". Therefore we should consider "Hun-mong-ja-hoe" is the first record of the corn and it is a significant historic record in the civilization exchange between the Orient and the Occident that this record has the only difference of around 30 years later after the spreading corn to Europe. However, this is on the assumption that it is correct for a scholar of Korean literature to persist in that '叡山本' of "Hun-mong-ja-hoe" could be considered as the first edition. The corn had been once classified as a same kind of the Chinese millet because the people had been recognized the corn as a similar group of the Chinese millet and the Indian millet. The Chinese millet contains a summer vigor and becomes as an ingredient of alcoholic drink. And we can find out that $C_4$ type plant (such as corn, Chinese millet, Indian millet, foxtail millet) mostly have a tendency to belong to the food for "Taeumin(太陰人)", because of its high energy efficiency, a flourishing absorption of fertilizing and a strong emission power. The fried corn with a strong summer vigor and a raised feature has a good effect to the treatment of the teethridge disease. And the tea of corn with an warm feature, thanks to its functions of making the stomach and intestines comfortably as well as urination, is a proper food for the 'Taeumin" who is apt to overeat themselves.

Preference of Adult Alfalfa Weevil, Hypera postica (Gyllenhal), (Coleoptera: Curculionidae), to Different Seedlings of Upland Crops (알팔파바구미 성충의 밭작물 유식물에 대한 기주선호성)

  • Occurrence of adult alfalfa weevil, Hypera postica Gyllenhal, was observed at Chinese milk vetch field, and host plant preference of its $1^{st}$ generation adult was observed at greenhouse and Chinese milk vetch field. The over-wintered adult of the weevil appeared from late March and peaked in mid April while the $1^{st}$ generation adult appeared from late April and peaked in late May. However, the occurrence of over-wintered adult was very low contrary to the $1^{st}$ generation adult which was very high with some variations among observed years. In greenhouse, host plant preference of $1^{st}$ adult generation of H. postica was evaluated with 11 different seedlings. H. postica was found to occur in significantly higher number on Chinese cabbage seedling followed by soybean, and kale at 7 days after releasing(DAR). Corn, crown daisy and sorghum were found to be the least preferred with nil occurrence of the weevil. Seedlings damage rate by H. postica feeding at 7DAR was the most severe on Chinese cabbage(60.0%) followed by soybean(50.0%), kale(30.0%), foxtail millet(16.7%), proso millet(13.3%) and lettuce(3.3%) significantly. Also, seedlings damage rate by H. postica at 7DAR in Chinese milk vetch field had shown the similar trend with Chinese cabbage(46.7%), soybean(43.3%), kale(23.3%), foxtail millet(13.3%) and proso millet(13.3%) in greenhouse significantly. Accordingly, results on host plant preference of H. postica from this study can be used as a basic information for safe cultivation of upland crops at near or around green manure crop field.

  • The purpose of this study is to understand the Chinese noodles(mian tiao). Wheat seems to have been cultivated 3-4,000 years before according to the archaeological evidences from the neolithic sites. The five grains(rice, millet, beans, barley, barnyard millet) already appeared in the period prior to Chin dynasty and were used as whole grain, but it was not until Chun Chu Zhan Guo period that the introduction of the flouring method stimulated the cultivation of wheat. In Chin-Han period, when water power and animal force were put into usage to facilitate the mass production of wheat flour, 'Bing', a designation for all the food made of wheat first appeared in the literature, and it was this 'Bing' that had later developed into noodles. In Wei Chin Nan Bei Chao period, roasted 'Bing', namely 'Kao-Bing' made its first appearance, and in Tang period, various noodles were created with the increase of restaurants specialized in noodles. In Song dynasty, 'La-Mian', the noodles stretched and beat from noodle dough, was first introduced, and in Yuan period, invention of drying method made the appearance of dried noodles, 'Gua-Mian', possible, which was good for easy and long preservation. Qing dynasty developed the noodles with a variety of assorted ingredients. The Chinese noodles are classified by various standards such as main ingredients, cooking methods, kinds of sauce, secondary ingredients, shape, eating method, flavor, and look.

  • Imwonshibyukji was a copying manuscript written around 1825, the 27th year of king Soonjo of the Josun Dynasty. It was a massive home encyclopedia of total 52 books and 100 volumes. The unpublished 'Jeongjoji' of its 17-20th volumes analyzed the cooking methods on the steamed rice and gruel and studied the degree of their usefulness and medical values in the light of the cooking process science. The cooking method on the steamed rice was composed of 14 items, and the general introduction outlined 6 kinds of the rice. These were all quoted from Chinese literatures. The 11 items present the methods on the general production of the rice, 2 on the cooking process, and 1 on the preservation. The main material of the rice was rice, and others were naked barley, prosomillet, foxtail millet, glutinous millet, etc. , and the secondary materials were glutinous rice, small red bean, black soybean, potato, bamboo seed, jujube, taro, gaertner, chestnut powder, persimmon power, julib(Zizania caduciflora), mangcho(Erigeron canadensis), namchok(Nandina domestica), licorice root, nitrous, peach, palmicha(schizandra, jinseng, cheonmoondong(Asparagus), and honey are mixed), etc. The literatures quoted in the rice were all 33, in which 23 were Chinese (69.7%) and 10 were Korean (30.3%). In the case of gruel, the cooking methods on the general gruel were described in 41 items, and on the gruel for a medical treatment were in 48 items, in which there was not a cooking method on the gruel but only its medical values were presented. The materials used for the general gruel were approximately 60 kinds: rice, glutinous rice, munbean, job's tears, rye, soybean, black sesame seed, antler of cervidae, chicken, crucian carp, and various medical materials, etc. The gruel was mainly used for protection and medical treatment, and partly for food for hungry people. The literatures quoted in the gruel were total 57, in which 26 were Korean(45.6%), and 31 were Chinese (54.4%). It can be their characteristics that Almost all of the Chinese literatures on the methods of the steamed rice and gruel do not exist.

  • This study was undertaken to investigate the effect of cereals on the physicochemical and sensory characteristics of Noti. Noti is one of Korean traditional pan-fried glutinous cereal cakes. Noti made from the steamed glutinous rice flour, glutinous Chinese millet flour, glutinous millet flour or glutinous Indian millet flour is saccharified with malt, and then pan-fried. Noti also has sweet taste without sugar added. In addition, Noti has elastic characteristic, high calorie and good flavor. Long storage makes it better taste. In this case, Noti was made from the steamed glutinous rice flour. By the sensory evaluation, color, flavor and moistness were unfavorable according to the storage. Consistency was not strongly increased when comparing with the common rice cake depending upon the storage. The texture tended to increase by storage period. Optimum conditions of the safe storage and overall acceptability were to add 15% malt and keep 6hr saccharification time at 60$^{\circ}C$. During the period of storage for 90 days, reducing sugar content was similar, moisture content was low and maintained, and the acid value was not increased abruptly. The hardness was not increased rapidly and fungal growth was considerably low. Cohesiveness and elasticity were increased during storage.

Optimum Conditions for Artificial Fruiting Body Formation of Cordyceps cardinalis

  • Stromatal fruiting bodies of Cordyceps cardinalis were successfully produced in cereals. Brown rice, German millet and standard millet produced the longest-length of stromata, followed by Chinese pearl barley, Indian millet, black rice and standard barley. Oatmeal produced the shortest-length of fruiting bodies. Supplementation of pupa and larva to the grains resulted in a slightly enhanced production of fruiting bodies; pupa showing better production than larva. 50~60 g of brown rice and 10~20 g of pupa mixed with 50~60 mL of water in 1,000 mL polypropylene (PP) bottle was found to be optimum for fruiting body production. Liquid inoculation of 15~20 mL per PP bottle produced best fruiting bodies. The optimal temperature for the formation of fruiting bodies was $25^{\circ}C$, under conditions of continuous light. Few fruiting bodies were produced under the condition of complete darkness, and the fresh weight was considerable low, compared to that of light condition.

Morphological Variation of Foxtail Millet (Setaria italica (L.) P. Beauv.) Germplasm Collected in Korea, China and Pakistan (우리나라와 중국, 파키스탄에서 수집한 조 계통들에 대한 형태적 변이)

  • To understand the morphological differentiation of the 26 accessions of Foxtail Millet collected in Korea (15 accessions), China (7 accessions) and Pakistan (4 accessions), we analyzed 9 morphological characteristics such as plant height, panicle length, leaf number, tiller number, heading time, seed weight and panicle color etc. Most accessions of foxtail millet collected in Korea showed late heading time, tall plant height and long conical panicles. While foxtail millet accessions of Pakistan showed early heading time, short plant height and short conical panicles. In case of Chinese accessions, some accessions of them showed similar characteristics with Korean accessions, and the other showed similar characteristics to Pakistan accessions. In ANOVA analysis, most of quantitative characteristics such as plant height, leaf number, internode number and heading time showed significant differences among foxtail millet accessions collected from Korea, China and Pakistan. Principal component analyses clearly discriminate foxtail millet accessions of Korea from those of China and Pakistan. In PCA analysis, most of quantitative characters such as panicle length, leaf number and internode number greatly contributed in positive direction, whereas several quantitative characters such as tiller number, seed weight and panicle color contributed in negative direction on the first axis. Thus, these morphological characteristics could be used to classify the foxtail millet accessions collected in Korea, China and Pakistan. The present results could expand our understanding of the morphological variation in foxtail millet accessions from Korea, China and Pakistan, and also could be useful for foxtail millet germplasm preservation.

  • Distribution of archaeological sites where the rice and Itallian millets were excavated was discussed in relation to the rice culture of Yangshao era. According to the distribution of the sites where the rice and Italian millet remains were excavated, the putative border of rice growing area, Italian millet growing area and mixed-cropping area were drawn. Discussions were made about the drifting of the area of mixed-cropping, north and south, depending on the climates of archaeological eras, The climates of the eras were discussed with the various remains of animals and plants excavated from each era's sites. Examining the chronology of mixed-cropping area the extension of rice culture were traced chronologically. And the extension of rice culture towards north-east during the last period of Yangshao era, and the feasibilities of transfer to the Han-river mouth area in Korea, 5,000 aBP(about Before Present), were discussed.
