  • Several studies revealed that low calcium intake is related to high prevalence of cardiovascular diseases such as hypertension. The prevalence of hypertension is high in Koreans along with their low dietary calcium consumption. Thus, the aim of this study was to evaluate the status of calcium intake between the hypertension and normotension groups and to investigate the correlation between dietary calcium intake and blood pressure, blood lipid parameters, and blood/urine oxidative stress indices. A total of 166 adult subjects participated in this study and were assigned to one of two study groups: a hypertension group (n = 83) who had 140 mmHg or higher in systolic blood pressure (SBP) or 90 mmHg or higher in diastolic blood pressure (DBP), and an age- and sex-matched normotension group (n = 83, 120 mmHg or less SBP and 80 mmHg or less DBP). The hypertension group consumed 360.5 mg calcium per day, which was lower than that of the normotension group (429.9 mg) but not showing significant difference. In the hypertension group, DBP had a significant negative correlation with plant calcium (P < 0.01) after adjusting for age, gender, body mass index (BMI), and energy intake. In the normotension group, total calcium and animal calcium intake were significantly and positively correlated with serum triglycerides. No significant relationship was found between calcium intake and blood/urine oxidative stress indices in both groups. Overall, these data suggest reconsideration of food sources for calcium consumption in management of the blood pressure or blood lipid profiles in both hypertensive and normotensive subjects.

  • Purpose: This study was to determine the effects of calcium intake on bone mineral density (BMD) in pre and post menopause women and to provide basic data for enhancing bone health of middle aged women. Methods: A total of 700 middle-aged women living in Seoul and Geonggi Province were interviewed during the period from June 2003 through January 2004 to investigate their social. demographic and physiological characteristics, health and daily activity performance, and their dietary patterns, and bone mineral density was measured. The survey of dietary intake was 24 hour recalls, and the individual calcium intake was calculated using food frequency. Data of 618 subjects was used for the analysis. Of the calcium intake levels, BMD values of the subjects of 20% of high level. 60% of middle level and 20% of low level were analyzed and compared. Results: The level of calcium intake according to general characteristics of the subjects was significantly related to age (p=0.001), education levels (p=.003) and marital status (p=.001). The BMD of the lumbar vertebrae and femur of the subjects taking a high level of calcium showed significantly higher than that of the subjects taking a middle level and low level of calcium. Femoral T-score was also significantly higher in subjects taking a high level of calcium than that of those taking a middle level and lower levels of calcium. Lumber spine T-score was higher in the high level group than that of the middle level group. Conclusion: The study revealed that women taking a high level of calcium had better bone health. Therefore. calcium intake is extremely important in daily dietary intake so that the intake of calcium-rich foods is highly recommended.

  • The effect of fat supplementation of high calcium (Ca) diets on the performance, intestinal pH, body composition and size and weight of organs in growing chickens were investigated in two experiments. Growing chickens tolerated a high dietary level of Ca (22.5 vs 12.1 g/kg) in the presence of 6.3 g/kg of available phosphorus without any significant effect on performance. Intestinal pH was significantly increased by the addition of excess Ca and fat which probably created the right pH for the formation of insoluble Ca soaps. Excess dietary Ca increased carcass linoleic acid concentration at the expense of palmitic and stearic acid contents, whilst the addition of sunflower oil (80 g/kg diet) to the diet increased carcass linoleic acid concentration at the expense of palmitic acid content of the carcass. Intestinal and visceral organ size and weight were not influenced by excess Ca or fat. However, there was a non significant increase in the intestinal dry weight per unit of length caused by excess dietary Ca. It was concluded that excess dietary Ca of 22.5 g/kg did not significantly influence the performance of meat chickens. However, excess Ca increased intestinal pH and altered carcass fatty acid composition. Fat supplementation did not alter intestinal pH with high Ca diets. Excess dietary fat altered carcass fatty acid composition and reduced protein content. Intestinal and visceral organ size and weights were not influenced by excess dietary levels of Ca of fat.

  • The purpose of this study was to investigate the dietary habits and nutrient intakes of the elderly living in Songnam area. Responses from 318(153 men, 165 women) elderly individuals aged from 58 to 92 were analyzed. The results of this study are as follows. Regular dietary habit scores of the elderly women were worse than those of the men. Balanced dietary habit scores turned out to be the lowest among the various measured indices. The dietary assessment data showed that the energy intakes of males and females were 86.8% and 83.1% of the RDAs, respectively. The nutrients taken less than RDA on the daily basis were protein, calcium, iron, vitamin A and vitamin B$_2$. Nutrient intakes were gradually decreased as the age increased. Energy intakes of males and females from carbohydrate were 70% and 73% respectively. Vitamin A, vitamin B$_2$, and calcium were the most deficient nutrients on the basis of the intake percentage of RDA. Therefore, to improve nutritional status of the elderly, it is recommended that intakes of vitamin A, B$_2$ and calcium-rich food should be increased. Also suitable dietary guidelines and educational programs seem to be necessary for promoting health conditions of elderly people in Songnam area.

  • The study was designed to observe the effect of dietary calcium and fats on plasma cholesterol level, hepatic microsomal fluidity and HMG-CoA reductase activity as well as the excretion of fecal bile acids and neutral sterols in 1, 2-dimethylhydrazine(DMH)-treated rats. Male Sprague Dawley rats, at 7 weeks of age, were divided into 2 groups, 0.3% and 1.0% Ca levels and each group again subdivided into 2 groups of corn oil and perilla oil. Each rat was intramuscularly infused with DMH for 6 weeks to give total dose of 180mg/kg body weight and also fed experimental diet containing 15%(w/w) different fit and Ca(0.3% or 1.0%) for 20 weeks. High dietary calcium(1.0%) did not significantly influence on plasma cholesterol as well as hepatic microsomal fluidity and HMG CoA reductase activity, but significantly reduced the excretion of total bile acid per gram of faces and increased the excretion of total neutral sterol. However, high dietary Ca reduced the excretion of secondary bile acid(deoxycholic and lithocholic acids) which was known as promoter for colon cancer. Perilla oil rich in n-3 ${\alpha}$-linolenic acid significantly decreased plasma cholesterol by increasing hepatic microsomal fluidity compared with corn oil, but did not influence on HMG CoA reductase activity. Perilla oil did not influence on fecal excretion of total and primary bile acids, but reduced the excretion of secondary bile acids. Therefore, it could be recommended to consume more fish product and food rich in calcium and use more perilla oil in meal preparation to prevent from coronary hear disease and colon cancer especially when high fit diet has been practiced. • This study was performed to evaluate the effect of dietary protein source and sulfur amino acid content on bone metabolism in ra. Thirty male rats (body weight 145$\pm$2g) were divided into three groups. The rats in the first group were fed on casein 20% diet as animal protein source and those in the second group were fed on soy 20% diet as plant protein source. Sulfur amino acid ratio of these group was 1.07:1. The rats in the third group were fed on soy 20% diet and the sulfur amino acid were supplemented with the amount contained as much in the soy 20% diet. All rats were fed on experimental diet and deionized water ad libitum for 9 weeks, The total body, spine, femur bone mineral density and bone mineral content were measured using Dual Energy X-ray Absorptiometry Calcium, phosphate, pyridinoline, creatinine in urine and calcium, phosphate, alkaline phosphatase, osteocalcin in serum were measured. During the experimental period, plant protein (soy protein) group had a lower urinary Ca excretion, urine pyridinoline & crosslinks value and had a higher Ca efficiency in total bone and femur bone mineral density than animal protein (casein) group. There were no significant differences in serum calcium, phosphate, alkaline phosphatase and osteocalcin among the three groups of the rats. The findings from this study demonstrated that plant protein (soy protein) is beneficial of bone mineral density because it had a higher Ca efficiency in total bone and femur bone mineral density than animal protein (casein). However, the supplementation of sulfur amino acid on soy results were consistent with prior studies that dietary sulfur amino acid load had a negative effect on calcium balance. The rats fed sulfur amino acid supplementation diet increased urinary calcium excretion and decreased calcium efficiency for total and femur mineral density. Therefore, dietary protein source and sulfur amino acid content influence bone metabolism. (Korean J Nutrition 37(2): 100-107, 2004)

  • This study was conducted to determine the association between dietary calcium intake and biomarkers related to lipid and glucose metabolism and inflammation in Korean patients with type 2 diabetes. Seventy-five subjects (41 males, 34 females) were recruited from a group of patients who had visited the department of endocrine medicine. Data on anthropometric characteristics, clinical indices such as hemoglobin A1c and C-reactive protein (CRP), and dietary nutrient intakes were collected. Subjects were divided into three groups on the basis of their calcium intake [< EAR (below estimated average requirement), EAR-RNI (between EAR and recommended nutrient intake), > RNI (above RNI)]. Average calcium intake of < EAR, EAR-RNI, > RNI groups were $462.7{\pm}18.7$, $649.7{\pm}12.8$, and $895.7{\pm}21.7mg$, respectively. Energy intake was not different among groups but intakes of protein, total and saturated fatty acids were significantly higher in > RNI group than < EAR group. Analysis of covariance revealed that HDL cholesterol level was significantly higher in EAR-RNI group, as compared to < EAR group after adjustment with confounders such as age, sex, BMI and energy intake (p < 0.05). Levels of CRP and homeostasis model assessment 2-insulin resistance (HOMA2-IR) were significantly lower in EAR-RNI group. Total cholesterol level was higher in EAR-RNI and > RNI groups, although within the normal range. Our results suggest that dietary calcium intake may influence the levels of HDL-cholesterol, CRP and HOMA2-IR and subsequently, help management/treatment of type 2 diabetes patients.

  • In order to investigate calcium , phosphorous and magnesium intake of breast-fed infants, consumed volumes of human milk and those mineral contents of the milk were examined at 0.5, 1, 2, 3, 4 and 5 months of lactation. Calcium , phosphorus and magnesium contents of human milk during the first 5 months of lactation averaged 26.0, 13.7 and 3.70mg/100g, respectively. Calcium intake of infants averaged 192.3 and 171.0mg/day which represented 39.7 and 33.5% of the RDA for boys and girls, respectively. Phosphorus intake of infants averaged 100.7 and 85.2mg/day which represented 26.2% and 23.4 % of the RDA for boys and girls respectively. The calcium /phosphorus ratio of human milk averaged 2.00 during lactation. The results of this survey suggest that, the reevaluation of calcium , phosphorus and magnesium intake and recommended dietary allowance of these nutrients during infancy is merited.

  • This study was undertaken to examine the effect of salting in 10% salt solution added 2% calcium chloride on the kimchi fermentation. The addition of calcium chloride extended edible periods of the Kimchi to 4~5 days and increased relatively the hardness of Chinese Cabbage. In the addition of calcium chloride, the activities of amylase and $\beta$ -galactosidase were not high during all periods fermentation. Polygalacturonase and protease activities were low 2~21%, 2~26% all periods fermentation, respectively. There were significant correlations between the delay of ripeness and decreasing enzyme activation. The amount of free amino acid by the treatment with calcium chloride was decreased of 10~16% at the late of fermentation than that of control. the treatment with calcium chloride of the Kimchi was increased hardness, but decreased cohesiveness and gumminess was during all periods fermentation. the adhesiveness was increased at the early of fermentation but decreased at the late of fermentation.
