두충잎의 첨가가 육계의 성장 및 육질에 미치는 영향 (Effects of Dietarv Supplementation of Eucommia ulmoides Oliver Leaves on Performance and Meat Quality in Broiler Chicks)

  • The present study was conducted to investigate the effects of dietary Eucommia ulmoides Oliver leaves(EUOL) on the growth performance and meat quality of broiler chicks. The dietary treatments consisted of the control diet(corn-soybean meal basal), and EUOL 2, 4, and 6% diets. The latter three diets were prepared by adding 2, 4, and 6% EUOL to the control diet. Ninety-six Arbor Acre male broiler chicks were randomly allotted to 16 pens; four pens per treatment and 6 birds per pen. The growth performance and carcass weight of broiler chicks fed EUOL diets were not significantly different(P>O.05) from the control birds. Also, the muscle color degrees(L*a*b *)in brolier chicks were similar to each other. The blood concentrations of protein, sugar and glutamic-pyruvic transarninase(GPT) were not different(P>O.05) between control and treatment groups. The blood total cholestrol content was significantly(P<0.05) decreased by the addition of EUOL. However, the addition of EUOL did not change the muscle components significantly. The bone hardness of broiler chicks fed EUOL was significantly(P<0.05) higher than that of control chicks.

The Effect of Feeding Different Levels of Sardine Fish Silage on Broiler Performance, Meat Quality and Sensory Characteristics under Closed and Open-sided Housing Systems

  • Two experiments were conducted to evaluate the use of fish silage prepared from Indian oil sardines, Sardinella longiceps, as partial replacement of soybean meal as a sole source of protein for growing broiler chickens. The main objective of Experiment 1, an ileal digestibility assay, was to assess the nutritional value of fish silage compared with soybean meal for feeding broiler chickens. The two test ingredients, soybean meal and dried fish silage, were incorporated into semi-synthetic diets, as the only component containing protein. The ileal digestibility coefficients of amino acids of fish silage were considerably higher than those of soybean meal (p<0.001). The lower digestibility of amino acids from soybean meal was related to the presence of anti-nutritional factors such as trypsin inhibitors. Fish silage had higher levels of sulphur-containing amino acids than soybean meal. The objective of Experiment 2, a growth study, was to evaluate the effect of feeding fish silage on performance and meat quality characteristics of broiler chickens raised under closed and open-sided housing systems. Four diets containing various levels of fish silage (0, 10, 20 and 30%) were evaluated. Daily feed intake, body weight gain and feed conversion ratio were measured. At the end of Experiment 2, 96 birds were randomly selected and slaughtered to evaluate meat quality characteristics. Housing type had significant effects on feed intake and body weight gain (p<0.01). Birds in the open-sided house consumed 4.7% less amount of feed and gained 10.6% less than their counterparts in a closed house. Birds in both houses fed diets containing 10 and 20% fish silage gained more than birds fed 30% fish silage. The current study produced evidence that fish silage can replace up to 20% of soybean meal in broiler diets without affecting either growth performance or the sensory quality of broiler meat.

Effect of Achyranthes japonica extract on growth, digestibility, microbiota, gas emission, and meat quality in broilers fed different protein diets

  • Achyranthes japonica extract (AJE) is a multifuctional products that express anti-inflammatory, antioxidant and anti-microbial properties. This study was aimed to evaluate the effects of AJE addition to standard and low crude protein (LCP) diet on growth performance, nutrient digestibility, excreta bacterial count, excreta noxious gas emissions, breast meat quality, and organ weight of broiler chicken. A total of 340 one-day-old Ross 308 broilers [initial body weight (BW) of 43.10 ± 1.46 g, 5 replicate cages per treatment, and 17 birds per cage] were randomly distributed into 1 of 4 dietary treatment groups for a 35 day trial. The diets were provided based on three age stage of the broiler. In the starter stage broiler were fed basal diet. Experimental diet were fed to broiler from day 8 to 35. In growing (days 8-21) and finishing (days 22-35) stage broiler were fed: Standard crude protein (SCP) diet and LCP diet with 0.025% and 0.05% of AJE supplementation respectively. Here, the SCP and LCP diets were 21.50% and 20.86% CP during days 8-21 and 20.00% and 19.40% CP during days 22-35, respectively. The SCP diets with 0.025% AJE supplementation resulted in higher (p < 0.5) BW gain (BWG) at finishing stage and a tendency to lower feed conversion ratio and BWG in the overall period compared to LCP diets with or without AJE supplemenation. Moreover, dry matter and nitrogen digestibility were increased with SCP diet along with 0.025% of AJE. No significant difference was found in meat quality parameters except for pH. Interestingly, the NH3 gas emission to the environment was found to be less with different levels of CP and AJE supplementation. Therefore, we concluded that the addition of 0.025% AJE to the SCP diet improved broiler growth performance and nutrient digestibility with low fecal NH3 emissions.

Comparison of Carcass Characteristics, Meat Quality, and Blood Parameters of Slow and Fast Grown Female Broiler Chickens Raised in Organic or Conventional Production System

  • The objective of the study was to compare the carcass characteristics, meat quality, and blood parameters of slow and fast grown female broiler chickens fed in organic or conventional production system. The two genotypes tested were medium slow-growing chickens (SG, Hubbard Red JA) and commercial fast-growing chickens (FG, Ross 308). Both genotypes (each represented by 400 chickens) were divided into two sub-groups fed either organic (O) or conventional (C) systems. Chickens of each genotype and system were raised in a semi environmentally controlled poultry house until 21 d of age and were assigned to 5 pens of 40 chickens each. Then, O system chickens were transferred into an open-side poultry house with an outdoor run. At 81 d of age, 10 female chickens from each genotype and from each production system (n = 40) were randomly chosen to provide material for analysis, and were weighed and brought to the slaughterhouse to assess carcass characteristics and meat quality. The blood parameters were determined by using 5 female chickens from each genotype and from each production system (n = 20). FG had the higher live weight, along with carcass, breast, and thigh-drumstick weights compared to SG (p<0.05). FG had the higher breast yield, whereas SG had the higher thigh-drumstick yield (p<0.05). The O system resulted in a higher amount of abdominal fat (p<0.05). In addition, the O system values were higher for dry matter, crude ash, crude protein, and $pH^{15}$ values in breast meat, and for crude ash, crude protein, and $pH^{15}$ values in drumstick meat (p<0.05). In addition, total saturated fatty acids, total mono-unsaturated fatty acids, and total omega 3 were significantly higher in the O system than in the C system. Thus, the O system showed a positive advantage compared to the C system regarding female chicken meat quality, primarily within the ash, protein, and total omega 3 fatty acid profiles. In conclusion, the present study indicated that the main factor affecting the carcass characteristics of female chickens was genotype, whereas the organic system contributed to enhanced meat quality. These findings provide a better understanding of the relative roles of genotype and production systems in female broiler characteristics, and might aid producers in designing their facilities to optimize yield and quality while maintaining acceptable animal welfare standards.

Comparison of Quality Traits of Meat from Korean Native Chickens and Broilers Used in Two Different Traditional Korean Cuisines

  • With the aim of investigating the differences in the quality traits between Korean native chicken (Hanhyup, KNC) and broilers commonly used in two different traditional Korean cuisines, the chemical composition and sensory properties of breast and thigh meat from the two chicken strains were assessed. KNC for baeksuk (chicken meat braised in soup with various Oriental medicinal plants; KNL), KNC for samgyetang (similar to baeksuk but young chickens and ginseng are used; KNS), broiler for baeksuk (BL), and broiler for samgyetang (BS) were used as treatments in this study. KNL and KNS contained higher protein but lower fat content than BL and BS. The $L^*$ values of breast and thigh meat, but not the $a^*$ values, were significantly different between KNS and BS, whereas significant differences in both values were observed between KNL and BL. Compared to the other three types of chickens, KNS contained the highest total and insoluble collagen content, and KNL and BL showed higher inosine-5'-monophosphate content in their meat. Overall, KNL and KNS contributed darker, less tender meat with higher protein and less fat content together with more n-3 fatty acids, as opposed to their counterparts used for the same cuisines. Based on the results of the sensory analysis, even though there are some differences in physiochemical traits, different chicken sources do not differ in overall sensory quality. This information can help consumers to understand better the meat available for their preferred traditional cuisines.

Effect of Dietary Supplementation of the Combination of Gallic and Linoleic Acid in Thigh Meat of Broilers

  • This study was performed to investigate the combined effect of dietary supplementation of gallic and linoleic acid (GL) on the antioxidative effect and quality of thigh meat from broilers. Broilers received 3 dietary treatments: i) commercial finisher diet (control), ii) 0.5% GL (gallic:linoleic acid = 1 M:1 M), and iii) 1.0% GL during the 22 to 36 d. The pH value of broiler thigh meat was increased by GL supplementation. Water holding capacity of the thigh meat was enhanced by the 1.0% dietary GL supplementation. Antioxidative effect (total phenolic content, DPPH radical scavenging activity, $ABTS^+$ reducing activity, reducing power, and TBARS value) in the thigh from the broilers improved significantly with 1.0% GL. Linoleic acid and docosahexaenoic acids were higher in the broilers fed both levels of dietary GL. However, volatile basic nitrogen content and microbiological quality was not shown to be different between control and treated group. Results indicate that 1.0% dietary supplementation of GL can improve the antioxidant activity of broiler thigh meat and may enhance the meat quality.

죽초액의 첨가가 육성오리의 생산성 및 육질에 미치는 영향

  • 죽초액을 사료내 0%, 1%, 2% 및 4%로 첨가하여 5주 동안 급여했을때 육성오리의 생산성 및 육질에 미치는 영향을 조사한 결과는 다음과 같다. 증체량과 일당증체량은 죽초액 1%구에서 비교적 증가하였으나 유의성은 인정되지 않았다. 사료섭취량은 죽초액을 첨가함에 따라 약 간 증가하는 경향이였다. 도체중은 1%구가 비교적 증가하는 경향이였다. 죽초액 2%와 4%구에서 육성오리 가슴육의 단백질함량의 유의적인(P<0.05) 증가와 지방의 유의적인(P<0.05) 감소를 나타냈다. 콜레스테롤 함량과 TBA는 죽초액을 첨가함으로써 유의적(P<0.05)으로 감소하였다. 지방산 조성은 죽초액 2%구에서 콜레스테롤의 전구물질이며 포화지방산의 가장 높은 비율을 차지하는 palmitic acid가 죽초액을 급여함으로써 감소하는 경향인 반면에, 맛과 풍미에 영향을 주며 불포화지방산의 가장 높은 비율을 차지하는 oleic acid는 죽초액을 급여함으로써 증가하는 경향이었다. 관능평가 결과 맛과 풍미 그리고 외관에 있어 죽초액 1%와 2%구에서 유의적(P<0.05)으로 높게 나타났다. 장내 살모넬라균과 대장균의 수가 죽초액의 첨가수준의 증가에 따라 감소하는 경향으로 항균작용 효과가 있음을 알 수 있었다.

국내산 시판 닭 가슴살의 품질 특성 (Quality of Commercial Broiler Breast Meat Retailed in Korea)

  • 본 연구에서는 국내에서 유통되는 각기 다른 브랜드 6종의 닭 가슴살 제품에 대해 이화학 검사, 조직감 검사 및 관능평가를 통하여 품질 비교 평가를 수행하였다. 평가 결과 일반 성분에서는 큰 차이가 없었으나, pH, 색상, 조리손실률에서 제품 간 큰 편차가 나타났다. 특히 연도 측정에서는 연도가 높은 제품군(A, B, C, D)과 연도가 낮은 제품군(E, F)으로 구분이 되어 제품의 숙성기간 또는 제품군별 냉동 방식에 따라 연도가 영향을 받음을 알 수 있었다. 묘사분석 결과 저작경도와 저작응집성에서 제품 간 유의적인 차이가 나타났고 두 특성 모두 F 제품에서 가장 높은 강도를 보였다. 소비자 기호도 조사 결과 연도 및 수분감이 가장 낮은 제품에서 기호도가 가장 낮게 나타나 연도 특성이 닭 가슴살의 품질을 결정하는 가장 중요한 지표 중 하나라는 것이 밝혀졌다. 본 연구에 사용된 닭 가슴살 제품은 제품별 사육부터 가공, 유통과정에 있어서 여러 가지 다양한 변수가 존재하고 이에 대한 정보가 공개되지 않았으므로 제품 품질 차이에 영향을 주는 인자들을 정확하게 독립적으로 구분하기는 불가능하나 현재 국내에 시판 유통되는 닭 가슴살 제품의 품질 간 큰 차이가 존재하고 소비자들의 기호도에 영향을 미치는 요인들을 밝혀냄으로써 국내 가금육 제조업체들이 소비자들의 기호도가 최적화된 닭 가슴살 제품을 생산 및 관리하는 데 본 연구 결과를 유용하게 사용할 수 있을 것으로 판단된다.

Effects of Pig Skin Collagen Supplementation on Broiler Breast Meat

  • This study aimed to enhance the quality of broiler breast meat by adding pig skin collagen to feed. A total of 50 Ross 308 broilers were classified according to the following feeding regime for two weeks: basal diet (NC), basal diet+0.1% fish collagen (PC), basal diet+0.1% pig skin collagen (T1), basal diet+0.5% pig skin collagen (T2), and basal diet+1.0% pig skin collagen (T3). The moisture content was the highest in the PC group, and the protein content was the lowest in the T1 group (p<0.05). The fat content was higher in the T1 and PC groups, whereas the ash content was higher in the T3 group (p<0.05). Drip loss was the highest in the NC group and the lowest in the T2 group (p<0.05). Lightness was low in groups T2 and T3, redness was low in groups T2 and PC, and yellowness was low in groups T1, T2, and PC (p<0.05). The collagen content of the chicken breast was the highest in the T3 group, and that of the skin was the highest in the T1 group (p<0.05). The texture characteristics of springiness, cohesiveness, chewiness, and hardness were the highest in the T3 group (p<0.05). In conclusion, the supplementation of a broiler diet with pig skin collagen was found to increase the collagen content of the breast meat, indicating the improved quality of the broiler breast meat.

팽이버섯 탈병배지의 사료첨가가 육계의 질 및 생산비용에 미치는 영향 (Effect of the Adding of Flammulina velutipes Cultivation Media Wastes into Chicken Feed on the Meat Quality and Production Cost of Broiler)

  • 버섯(mushroom)의 가축사료화 가능성을 조사하여 친환경농업 소재개발의 기초자료로 활용하고자 시험한 결과, 팽이버섯 탈병배지를 육게사료에 5~10% 첨가시 사료절감 10~20%, 복강지방 감소 25~37% 및 육질개선 효과가 있었다. 또한 팽이버섯 탈병배지를 육계사료에 5~10% 첨가하여 사육한 닭고기는 아미노산 함량이 33~38% 증가하였으나, 20% 이상 첨가시는 오히려 감소하는 경향이었다.
