Evaluation of Anthropometric Characteristics, Bone Density, Food Intake Frequency, Nutrient Intakes, and Diet Quality of Pre- and Postmenopausal Women - Based on 2008~2011 Korean National Health and Nutrition Examination Survey - (폐경 전후 여성의 신체계측, 골밀도, 식품섭취빈도, 영양소섭취 및 식사의 질 평가 - 국민건강영양조사 2008~2011에 기초하여 -)

  • This study was conducted to investigate the anthropometric data, bone density, serum profiles, nutrient intakes and diet quality of premenopausal and postmenopausal women. For the study, we obtained data for analysis from the combined 2008~2011 Korean National Health and Nutrition Examination Survey (KNHANES). The height and weight were 157.8 cm and 58.7 kg in premenopausal women and 155.5 cm and 58.3 kg in postmenopausal women, respectively. The obesity rate was 27.49% in premenopausal women and 34.98% in postmenopausal women (p<0.001). Total cholesterol, LDL-cholesterol, triglyceride, GOT, GPT and alkaline phosphatase in postmenopausal women were significantly higher than those in premenopausal women (p<0.001). The prevalence of osteoporosis was 0.0~0.89% in premenopausal women and 0.48~13.22% in postmenopausal women (p<0.001). In postmenopausal women, rates of hypertension, stroke, myocardial infarction, depression, and diabetes were significantly higher than those in premenopausal women. Water, fat. ash, sodium, retinol, thiamin, riboflavin and niacin intakes in premenopausal women were significantly higher than those in postmenopausal women. Water, fiber, Ca, and, K intakes were below KDRIs (Dietary Reference Intakes for Koreans) in both groups. The mean adequacy ratio (MAR) of premenopausal women was higher than that of postmenopausal women (p<0.001). The index of nutritional quality (INQ) in premenopausal women was also higher than that of postmenopausal women except iron and vitamin C. Therefore dietary guidelines and an education program should be developed for desirable improvement of health, bone density, nutrient status and dietary quality of postmenopausal women.

Effect of Calcium Source using Tilapia Mossambica Scales on the Bone Metabolic Biomarkers and Bone Mineral Density in Rats (Tilapia Mossambica 비늘 (어린) 유래 칼슘소재가 흰쥐의 골격대사지표와 골밀도에 미치는 영향)

  • This study was done to evaluate the effect of Ca source using fish (Tilapia mossambica) scales on the bone metabolism. Male Sprague-Dawley rats, 4 weeks of age, were fed low-calcium diet (0.15% Ca) for 2 weeks. The rats on the low-calcium diet were further assigned to one of following three groups for an additional 4 weeks: 1) Ca-depletion group (LoCa) given 0.15% Ca diet ($CaCO_3$), 2) Ca-repletion group (AdCa) given 0.5% Ca diet ($CaCO_3$), 3) Ca-repletion diet (AdFa) received 0.5% Ca diet (Ca source from Tilapia mossambica scales). Serum parathyroid (PTH) and calcitonin showed no differences among experimental groups. Whereas LoCa group elevated the turnover markers, serum ALP and osteocalcin, and urinary deoxypyridinoline (DPD), AdCa and AdFa groups reduced their values. Elevation in the femoral weight, ash and Ca contents was observed in AdCa and AdFa groups. Bone mineral density was increased in AdCa and AdFa groups by 25-26% compared with LoCa group. These data demonstrate that Ca repletion with either Ca source from Tilapia mossambica scales or $CaCO_3$ is similarly effective in the improvement of bone turnover markers and BMD, suggesting the usefulness of Tilapia mossambica scales in the prevention of bone loss compared with $CaCO_3$.

Effects of Phytase Supplementation on the Performance of Broiler Chickens Fed Maize and Wheat Based Diets with Different Levels of Non-phytate Phosphorus

  • An experiment was conducted to evaluate the effects of phytase supplementation on the growth performance, nutrients utilization and bone mineralization in broiler chickens. Day-old broiler chicks (n=480) were equally devided into eight treatment groups and fed maize or wheat based isocaloric, isonitrogenous and isocalcium diets having two non phytate phosphorus (NPP) concentrations (0.50% and 0.30%) and two phytase levels (0 and 500 phytase units/kg diet) in a 42 days growth trial. Maize based dietary treatments were MC (NPP 0.50%, MN (NPP 0.30%), MNP (MN+500 units of phytase) and MCP (MC+500 units of phytase), whereas wheat based experimental diets were WC (NPP 0.50%), WN (NPP 0.30%), WNP (WN+500 units of phytase) and WCP (WC+500 units of phytase). The NPP levels were maintained by dicalcium phosphate. Reduction in dietary NPP depressed live weight gain and feed intake and increased feed conversion ratio (FCR). Phytase supplementation to low NPP (0.30%) diets significantly (p<0.05) improved the growth performances of broilers. The supplementation to low NPP diets allowed complete, safe and economic replacement of dietary inorganic P (dicalcium phosphate) to reduce feed cost per kg live weight gain of broilers. Reduction in dietary NPP did not affect retention of nutrients except phosphorus (P) but had a significant (p<0.05) depression in tibia ash and minerals (Ca, P) concentration in serum and tibia ash. Phytase supplementation at low NPP level was effective (p<0.05) in improving the retention of dry matter, Ca and P and Ca and P concentration in serum and tibia ash. However, the supplementation was not effective at high level of NPP (0.50%). There were no significant (p>0.05) differences in carcass quality among dietary treatments. The response of phytase was greater in low NPP and maize based diets as compared with high NPP and wheat based diets, respectively. The results show that phytase supplementation to low NPP (0.30%) diets improved the growth performance, relative retention of nutrients (N, Ca and P) and minerals (Ca, P) status of blood and bone in broiler chickens, with a better efficacy in maize based diets.

Effect of Bluefin Tuna Bone on Calcium Metabolism of the Rat (참다랑어 골분이 흰쥐의 칼슘대사에 미치는 영향)

  • This study was conducted to examine the effect of bluefin tuna bone on the bone metabolism of the rats. Weaned 6-week old male rats were fed low-calcium diets for 2 weeks after the adjustment period. Rats were divided into 6 groups and were fed experimental diets for six weeks. Experimental groups were \circled1 Normal calcium: CC (0.5% CaCO$_3$; control) \circled2 TB (bluefin tuna bone powder) \circled3 CT (citrated bluefin tuna bone powder) \circled4 BB (bovine bone powder) \circled5 CL (calcium lactate) \circled6 Low calcium LC (0.15% CaCO$_3$). Low-calcium diet group (LC) showed the lowest calcium retention. There was no differences in calcium excretion in stool and calcium absorption among various calcium sources. Serum calcitonin levels were high in TB, CT and BB group compared to those in CC, CL LC group. Parathyroid hormone and osteocalcin levels showed no differences among experimental groups. Deoxypyridinoline (DPD) levels were significantly higher in LC group than in other groups. Wet weight of the femur were significantly high in TB and CT group, and dry weight of femur showed no differences among normal calcium groups. Bone density of femur in LC group was significantly lower than those of normal calcium feeding group, and TB group showed highest bone density among experimental groups. There was no differences in bone metabolism among various calcium sources. Therefore, it is pointed out that the amount of calcium intake is very important because there was significant differences between normal calcium diet and low calcium diet. According to the results of femur weight, ash, calcium and bone density, it is suggested that bluefin tuna bone have alternative effects to bovine bone powder on the maintenance of bone health.

Biological Availability of Various Sources of Ca and P Supplements in Young Chicks (병아리에서 인산칼슘 첨가제의 생물학적 이용성)

  • This experiment was carried out to evaluate biological availability of Ca and P in 4 different sources of tricalcium phosphate in young chicks. One hundred and twenty five-day-old male Single Comb White Leghorn chicks (10 treatments$\times$3replication$\times$4chicks) were used in trial 1 and 2, respectively, for 12 days of feeding period. Trial I was to evaluate the availability of phosphorus in the supplements, Standard purified diets were prepared to supply 0.07, 0.14 and 0.21%P using a mixture (1 : 1) of NaH$_2$PO$_4$ and KH$_2$PO$_4$ as the reference Phosphorus sources. Bone breaking strength of the tibia determeined by an Instron instrument appeared inadequate to be used as a criterion due to very high variations of the measurement within a treatment. Thus, tibia bone ash content was utilized as a criterion to evaluate th biological avilability of phosphorus in the supplements. The levels of the biological availability of the four different sources of dicalcium phoshate were 77.1, 91.0, 96.4 and 95.5%, respectively, and those of the three tricalcium phosphate sources were 94.1, 95.0 and 99.5% , respectively. Trial 2 was to determeine the levels of Ca biologically available in the supplements. Standard purified diets were made to supply 0.2, 0.3 and 0.4% Ca using CaCo$_3$ as the reference calcium source. When bone ash content was utilized as a criterion for the availability, the levels of calcium biologically available to the chicks were 78.3, 234.1, 87.6 and 244.5%, respectively, for the 4 different sources of dicalcium phosphate and 99.5, 84.0 and 101.5% , respectively, for the 3 different sources of tricalcium phosphate. The observation that two calcium sources appeared to be utilized with an unusual efficiency can hardly be explained at this moment. When they were revaluated on the basis of body weight gain, the availabilities of the four sources of dicalcium phosphate were 89.2, 58.2, 104.1 and 103.1% and of the three tricalcium phosphate were 112.6, 106.0 and 96.3% , respectively.

Effect of Fermented Soybean, "Natto" on the Production and Qualities of Chicken Meat

  • Natto is a Japanese traditional soybean product fermented by Bacillus natto. The effect of natto supplement on the production and qualities of chicken meat was studied since the effective use of various waste foods is required in Japan. Dried natto prepared by heating at $60^{\circ}C$ was added to a basic diet at an amount of below 2%. The supplementation of dried natto did not influence the weights of the carcass, breast and thigh meat, fillet or abdominal fat. Growth of the thighbone such as the length, thickness of cortex bone, and Ca/P ratio in bone ash were not altered by the addition of natto. However, the pH of male meat decreased following the supplementation of dried natto from days 28 to 80. The water-soluble protein content in male thigh meat increased in the group fed 2% natto from days 28 to 80. Free peptides increased in male thigh meat by feeding 2% natto from days 0 to 80. The supplementation of natto increased free glutamic acid in thigh meat regardless of sex. Moreover, the supplementation of natto specifically decreased meat cholesterol in female chickens though the effect was not shown in male chickens.

Increasing Dietary Phosphorus Level for Finishing Yearling Holstein Steers

  • The need for refining dietary nutrient levels and limited information regarding Holstein steer and phosphorus supplementation led to the objective of examining the response of removing supplemental dietary phosphorus from a corn-based finishing diet offered to yearling Holstein steers. Two groups of yearling Holstein steers were utilized to study responses of increasing dietary phosphorus level during the finishing period. In Exp. 1, 96 Holstein steers (419 kg) were blocked into four weight groups. Dietary treatments included no additional phosphorus (NDC) or the inclusion of dicalcium phosphate (DCP) to achieve 0.30% phosphorus (P) in the complete diet. Daily gain, DMI and carcass traits were not different (p>0.05). Overall gain efficiency was slightly lower for NDC (p<0.05). Exp. 2 consisted of 78 Holstein steers (491 kg) blocked into two weight groups. Steers were harvested on d 84 and 112 d on test with carcass data collected following a 48-h chill. No differences (p>0.05) were detected for DMI, ADG, or gain efficiency. No differences (p>0.05) were detected in carcass characteristics in this experiment. Percent bone ash, calcium, P, and bending moment also did not differ among treatments (p>0.05). Removing supplemental phosphorus in the feedlot diet did not produce adverse effects on steer performance, carcass, or rib bone characteristics for yearling Holstein steers.

Quality Improvement of Heat-Induced Surimi Gel using Calcium Powder of Cuttle, Sepia esculents Bone Treated with Acetic Acid (아세트산 처리 갑오징어(Sepia esculenta)갑을 이용한 어묵의 품질 개선)

  • Heat-induced surimi gels were prepared using various concentration of ATC as a additives and calcium agent. Regardless of various concentration of ATC, there were no difference the moisture $(80.4-81.2\%)\;and\;crude\;ash\;(1.4-1.\5%)$ contents. The pH of heat-induced surimi gels were decreased 7.16 to 7.04 depend on increasing ATC concentration. The whiteness, breaking force and gel strength of $0.09\%$surimi gel were improved significantly difference (p<0.05). Sensory evaluation on texture and whiteness were also similar to determination by color and texture meters. In mineral content of heat-induced surimi gel calcium content was increased 26 to 54 mg/100g depend on increasing ATC concentration, while phosphorus content was not change. The optimal concentration of ATC for preparation of high quality heat-induced surimi gel was $0.09\%$. The shelf-life of heat-induced surimi gel did not extend by addition of $0.09\%$ ATC.

Effects of the Herbal-Acupuncture with Acanthopanacis cortex extract at KI10 (Eumgok) on osteoporosis in ovariectomized DDY mice (음곡(陰谷)(KI10)에 시술한 오가피(五加皮) 약침(藥鍼)이 난소적출 생쥐의 골다공증(骨多孔症)에 미치는 영향)

  • Objective : The purpose of this study is to observe the effects of herbal-acupuncture with Acanthopanacis cortex extract (AC-HA) at KI10 (Eumgok) on osteoporosis in ovariectomized (OVX) ddy mice. Methods : We carried out several experimental items to analyze the changes in body weight, uterine weight, uterus index, tibial length, the ash bone weight, tibial BMD, serum ALP, serum creatinine, serum osteocalcin, serum Ca, and the levels of Ca, P, Ca/P ratio in tibia, and we performed histological and histomorphological analysis as well. Results : Tibial BMD was significantly decreased by OVX, while significantly increased by AC-HA at KI10. Serum creatinine level was significantly increased by OVX, while significantly decreased by AC-HA at KI10. Serum osteocalcin level was significantly increased by OVX, while significantly decreased by AC-HA at KI10. Tibial TBV(trabecular bone volume) was significantly decreased by OVX, while significantly increased by AC-HA at KI10. AC-HA at KI10 significantly suppressed the OVX-induced increase of GPL(growth plate length) of tibia in mice. Conclusion : These results suggest that AC-HA at KI10 has a therapeutic effect on osteoporosis in OVX mice.

Effect of Korean Carthami Semen and Estradiol-Carthami Semen On Osteoporosis In Ovariectomized Rats (국산홍화자(國産紅花子) 및 국산홍화자(國産紅花子)와 estradiol 병용투여가 난소적출로 유발된 흰쥐의 골다공증에 미치는 영향)

  • Objective: The present study has been undertaken to investigate the effects of Korean Carthami Semen and Estradiol-Carthami Semen co-treatment on osteoporosis in ovariectomized rats. Method: In this experiment, the rats were ovariectomized. Rats were administered 3 kinds of medicine, Korean Carthami Semen, Estradiol, and Estradiol-Carthami Semen, which were taken orally. The levels of bone mineral density, osteocalcin, estradiol, ALP, phosphorus, calcium in serum, deoxypyridinoline in urine, calcium, phosphorus, ash weight of bone, body weight and uterus weight were measured. Results: These experimetal results, it appears that the only Carthami Semen have more less efficacy on osteoporosis but $E_2$-Carthami Semen co-treated group showed more effective on osteoporosis. Conclusions: Further west-east medicine combination study should be conducted to illustrate in depth the curing osteoporosis.
