Foodservice management practices in 52 educare centers in Jeonbuk province were evaluated in order to provide basic informations and guidelines for the standardization of foodservice management and facilities in the educare centers. The survey was conducted using the structured questionnaire. The results are summarized as follows: 1. Only 10% of the centers investigated had the stationed dietitian, therefore most of foodservice management was not conducted by a professional personnel. The average number of kitchen employees was 1.3 and significantly different with type(p<0.05) and size(p<0.001) of the centers, which was not enough to meet the regulation. 2. Menu planning was performed mostly(59.6%) by managers and teachers of educare centers. Food items were purchased(94.7%) and recieved(91.6%) by kitchen employees or center managers and teachers. Produced foods were also evaluated(97.7%) and distributed(100%) by kitchen employees or center managers and teachers depending on their experience without any supervision of the professional personnel for the mass production. 3. Among the centers studied, 84.6% of them conducted nutrition education programs regularly by teachers. About 77.3% of them evaluated that these programs did not accomplish the proper training for good food habit because of the lack of nutritional knowledge(54.5%) and educational media(27.3%). 4. In general, the hygienic maintenance was evaluated as fair state to need the improvement. 5. Kitchen facilities and equipments were similar to those of home cooking and did not meet the standards for institutional practices. Besides, automated machinery and tools for safety, sanitation and improvement of work efficiency were far short. 6. Log book for the foodservice management was not prepared properly, which made the systematic planning and operation of the foodservice facilities difficult.
Objectives : This study carried out the agreement of old people who visited senior citizens' centers in section area from January 5to 15, 2010. This study aimed to arrange basic data for the development in oral health and for the elderly oral health program, by surveying on regular level and food habit in the eating habits of the elderly. Methods : The regular level of dietary life, meal volume, meal time, kinds of meal preference, the appearance of snack intake, and kinds in snack preference were analyzed by using the statistical processing SPSS WIN 18 targeting totally 140 subjects, by preparing 1:1 questionnaire through direct interview. Results : The regular level of dietary life in the elderly was surveyed to be regular in 76.4% of the whole and to be irregular in 23.6%. As for the daily meal volume of the elderly, it was indicated to be 36.4% for 'eating proper volume' and to be 51.4% for 'eating a little.' As for the meal time of the elderly, it was indicated to be 52.1% for under 10 minutes and to be 25% for having a meal for 16~20 minutes. In the results of having surveyed on kinds of meal preference in the elderly, it was indicated to be 57.7% for having a meal 'centering on vegetables.' In the survey on snack intake of the elderly, it was indicated to be 62.1% for 'enjoying eating snack.' As for snack kinds of being preferred, 69.3% of the elderly were indicated to be the highest in 'fruits.' Conclusions : The elderly meals on a regular basis as needed by vegetarian diet, however showed thar eating a very short time. I consider it is necessary that study on connection between old people meal time, eating habits and oral physical condition.
This study was conducted to evaluate the overall dietary habits and nutritional status of 294 elementary school students located in Gwangju using the NUTRILITE nutrition quotient (NQ). The NQ score of the subjects was 59.5 out of 100, which corresponds to the level requiring "monitoring". Compared to the 64.4 score of students in the 5th and 6th grades of six metropolitan cities, the scores of the present subjects were lower. The NQ components were 57.4 for balance factors, 52.4 for moderation factors, 55.0 for diversification factors, 57.6 for practice factors, and 80.1 for environmental factors. Regarding the characteristics according to the NQ level, the score (61.5 in 7 times/wk vs. 55.3 in 1-2 or none times/wk) tended to be higher in subjects who frequently eat with their families (p<0.001). In conclusion, nutrition education should be provided to students to increase the frequency of meals with their families, to develop a habit of exercising regularly, and reduce the consumption of ramen, cookies, and processed drinks that are frequently consumed. These results can be used as basic data to develop nutrition education programs to improve the dietary habits and nutritional status of students in Gwangju.

This paper aimed to provide the basic data on consumers' purchasing tendency required to start and operate online shopping malls on internet. The survey selected the female college students from 19 to 24 years old majoring fabric and fashion design in colleges in Gyeonggi-do. Total 283 questionnaires were selected for statistical analysis. The analysis results are presented below. The first online shopping was during the middle school times showing the highest responses as 63.54%, followed by high school times, college times and elementary school times in that sequence. Most female college students(97.88%) purchased goods from online shopping malls. The purposes of search in online shopping malls were 'need to purchase goods(47.18%)', 'habit/hobbies(27.57%)', 'need to collect data on goods(20.27%)' and 'to relieve stresses(4.98%)'. About 50% of respondents selected 'I visit mainly several online shopping malls. If there is no goods that I try to find, I search other sites and purchase what I want to buy(46.57%).' For the goods purchased from online shopping malls, everyday wears showed the highest ratio, 85.92%. About the time to purchase goods related to trends, most respondents selected 'purchase whenever it is necessary without respect to trends(87%).' Main considerations when the respondents purchased the goods from online shopping malls were 'design(64.98%)', 'price(18.41%)', 'quality(11.20%)', 'company recognition(2.53%)', 'color(1.44%)', and 'materials (1.44%)' in that sequence. 64.62% of respondents had the experience of returning goods after purchasing from online shopping malls. The reason why the respondents returned goods after purchasing from online shopping malls was mainly 'because of size(52.17%)', the response with the highest ratio. 42.24% responded that they experienced damage by washing the goods purchased from online shopping malls. It was found that the respondents didn't think about the country of manufacturing when purchasing goods from online shopping malls.
Objectives : The purpose of this study was to reveal the prevalence of Mibyeong and its symptoms including fatigue, pain, sleep disturbance, dyspepsia, depression, anxiety and anger by using the national survey. Methods : Questionnaires were collected by Gallup Korea. Participants were chosen through stratified sampling method based on area, gender and age. Questionnaire was designated to confirm the recognition, managing of Mibyeong, investigation of life habit, medical history, basic information, QoL questionnaires (Short Form-12, EuroQol-5D) and understanding of Mibyeong medical service conditions. Generally all questionnaires were used for survey the Mibyeong status in public except QoL questionnaires. Questionnaires were fulfilled by professional surveyor as face to face interview. Descriptives was used for data analysis and the results were expressed as percentage ratios (%) Results : 1,101 of people were acquired in this study. Eighty point two (80.2%) percent of participants did not know the concept of Mibyeong accurately even though 80.6% complained of Mibyeong related symptoms. Among them, fatigue was accounted for the highest response (70.7%)in this study. Sixty point four percent of participants identified non-smoking, stop drinking, eating habits and sleeping habits as a way to manage their Mibyeong related symptoms. In addition, exercising (60.8%), visiting medical institution (58.4%) and taking health functional food (52.7%) were presented. Only 23.1% among people with symptoms Mibyeong visited medical facilities. Moreover, the quality of life was found to be significantly correlated with health status. Conclusions : This study could contribute to express the importance of announcing the concept of Mibyeong and status to Korean public. Moreover, more Mibyeong studies should be conducted in the future to evaluate the Mibyeong status objectively.
In recent yearn, eating habit that is not right causes disease the dietary fiber (DF) intakes of Korean decreases. Occurrence of chronic disease such as constipation increased gradually. This study was performed to investigate of high fiber standard recipes for one day including major source of DF such as vegetables, cereals and grain products, seaweeds, fruits, fungi and mushrooms, and legumes and products for improving constipation through dietary treatment. Nutrient analysis per person marked energy, protein, fat and DF content. The food of high I : S ratio (Insoluble fibers: Soluble fibers) are soybean sprout salad, rice gruel with vegetables, pan fried mushroom with vegetables. The food of low I:S ratio are fermented soybean paste stew, fried rice with kimchi, fruits salad with yogurt dressing and seasoned noodle with vegetables. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yogurt dressing and seasoned noodle with vegetables. The menu developed in this study, contains fiber of at least 8.97 times of RDA and in point view of 1 day intake, that is similar to the scope of RDA, 20-25 g per day. This findings should be appliable to nutritional education and medical food for constipation. And also, the aim of study is constipation patients easily applicate that developed the food of high fiber using Korean common food. And the result of the study will be the basic data about clinical test of food developed in this study and the danger of high fiber diet. The representative high fiber diet menu is rice gruel with vegetable, rice with radish and oyster, fermented soybean paste stew, kimchi stew, assorted soybean sprout salad, three kinds of pancake roll, pan fried mushroom with vegetables, fruits salad with yoghurt dressing and seasoned noodle with vegetables. This findings should be applicable to nutritional education and medical food for constipation.
This study is designed to furnish basic data for development of health -care program to promote health of the middle-aged adult by making the middle-aged adult an object who have radically increasing death rate because of chronic degenerative diaease, finding out the executive degree of health -promoting behaviors, and verifying the relation between self-efficacy/perceived health status and health -promoting behaviors. The results are as follows. 1) The hypothesis that 'the higher the self-efficacy, the better the health -promoting behaviors' was supported on a meaningful level(r=.30l, p=.000) 2) The hypothesis that 'The health-promoting behaviors will have differences according to the perceived health status' was supported on a meaningful level in the sections of the control of stress(p=.000), the self-achievement (p=.000), the exercise(p=.002), the control of interpersonal relation(p=.014) and the eating habit(p=.061) and was rejected in the sections of drinking' smoking(p=.787), heath-responsibility (p=.061). The fact that executive degree of health -promoting life-style have correlation with self-efficacy was found out and we need to develop health-education program to promote self-efficacy.

Purpose: The aim of this study was to investigate the effect of tongue cleaner-equipped manual toothbrush on tooth cleanness, tongue cleanness and malodor index. Materials and methods: 504 subjects were included in this study. At 1st visit, basic information such as age, sex, smoking amount and alcohol consumption was recorded. Self assessment by individual subjects was performed regarding satisfaction to old toothbrush and toothbrushing habit. Tooth cleanness, tongue cleanness and malodor index was assessed by professional researcher. Tongue cleaner-equipped manual toothbrush was given to each subject with proper toothbrushing instruction. After 1 month passed, self assessment and researcher assessment regarding the same index were performed and analyzed statistically by chi-square test. Results: At 1st visit subjects seem to ignore tongue cleansing and showed poor tooth cleanness index, tongue cleanness index and malodor index, however the same subjects were motivated to clean their tongue and teeth and presented statistically improved distribution pattern in tooth cleanness index, tongue cleanness index and malodor index after using tongue cleaner-equipped manual toothbrush(p<0.01). Satisfaction to tongue cleaner-equipped manual toothbrush was 98%. Conclusion: Tongue cleaner-equipped manual toothbrush would be an effective tool for maintaining good oral hygiene through improving tooth and tongue cleanness and preventing malodor formation.
The Easterlin Paradox is widely accepted as a pioneer of happiness study in social science disciplines including Economics, Psychology, and Sociology. Moreover, it should be noted, the paradox has abundant implications on many social issues such as 'economic growth or social equity', 'basic income' and so forth. It is in this regard that this paper purports to understand debates around the paradox. For this purpose, the chapter two examines the theoretical perspectives of the Easterlin Paradox, and accordingly the chapter three examines the Easterlin Paradox debates since the early 1990s. In the context of the Easterlin paradox debates, the chapter four scrutinizes the debates around satiation point in income-happiness nexus and duly concludes with some social welfare implications.
Rice is staple grain of our people and at the same time it is major source of income for Korean farmers. But recently various problems in connection with rice arose such as declining consumption etc. for this reason not only government but also related agencies are discussing about expanding vice consumption. This study is an attempt to provide basic data required for developing rice food and method of cooking it as a measure for increasing rice consumption and far this purpose survey has been conducted on primary school students in connection with their level of recognition, preference far rice food as well as their understanding and their consciousness on issues related to this topic. In terms of level of recognition of rice food majority of students which were subjected to this study stated that either they knew names of about 39 types of rice foods shown or had experience of eating them. They also stated in answers to question related to dietary habit that they prefer rice foods. Their reply on taste of rice food was plain and neat. But it was found their level of recognition on our traditional rice foods such as Ssal Dasik (rice cookies), Ssal Jinbyung (rice cakes) and Buggumi (fried rice cakes) etc. was very low. In connection with questions on their understanding of rice and consciousness of problems related to rice it was revealed that more than majority of primary school students in this research had erroneous idea on reason for the need of our effort for expanding rice consumption. Accordingly in order to expand rice consumption it is necessary to develop educational program addressing subjects of cultural and nutritional effect value of rice, effect of rice consumption upon rural economy and its application to school education concurrently with persistent study in order to diversify rice food restaurants and to improve method of cooking.
