  • Arrhenius plots are useful in predicting long-term use temperatures of organic materials and in choosing parameters for accelerated aging. The effects of antioxidant on the heat resistance and temperature index of EPDM rubber used for electrical insulation were investigated. The short-time points were obtained by 50% retention of elongation at break.

쌀 배아와 흑미 미강 색소 첨가 배아젤리가 고콜레스테를 식이 흰쥐의 지질대사와 항산화효소 활성에 미치는 영향 (Effects of Rice Embryo and Embryo Jelly with Black Rice Bran Pigment on Lipid Metabolism and Antioxidant Enzyme Activity in High Cholesterol-Fed Rats)

  • 본 연구는 쌀 배아를 활용한 만성 대사성질환 예방용 제품 및 건강기능성 식품 개발의 일환으로써 고콜레스테롤 식이를 급여하여 고지혈증을 유발시킨 흰쥐에서 15%의 배아와 25%의 흑미 미강색소 배아젤리의 첨가가 혈장과 간 조직의 지질 대사와 항산화효소의 환성에 미치는 영향을 살펴보았다. 실험 식이를 6주 간 급여한 결과, 배아와 흑미 미강색소 배아젤리 첨가는 실험동물의 식이섭취에 영향을 미치지 않았다. 배아군과 흑미 미강색소 배아젤리군은 고콜레스테롤 급여 대조군에 비해 혈장의 총 콜레스테롤과 LDL-콜레스테롤 및 간의 중성지방과 총 콜레스테롤 농도를 감소시키고, HDL-콜레스테롤 농도와 HDL-C/TC 비는 증가시켰으며, 동맥경화지수는 감소시켜 체내 지질대사의 개선 효과가 있었다. 혈장 GOT와 GPT 수치는 배아와 흑미 미강색소 배아젤리를 첨가하였을 때 감소하여 고콜레스테롤혈증 상태에서 간 기능 보호에 긍정적인 효과가 있었다. 또한 배아와 흑미 미강색소 배아젤리는 고콜레스테롤 급여로 인해 증가된 혈장과 간 내의 지질과산화를 억제시키는 효과가 있었다. 반면, 항산화 효소인 간 조직의 SOD와 CAT활성은 배아와 배아젤리 첨가에 따라 증가하였다. 이상의 결과로 볼 때 배아와 흑미 미강색소 배아젤리는 고콜레스테롤 식이 흰쥐의 간 조직에서의 항산화 활성을 강화시키고 산화적 손상을 억제시키는 자용이 있으며 현장과 간조직의 지질대사를 개선하여 심혈관계 질환을 예방 및 감소시킬 수 있을 것으로 사료된다.

열처리에 따른 야콘의 항산화 활성 변화 (Effect of Heat Treatment on the Antioxidant Properties of Yacon (Smallanthus sonchifolius))

  • 본 연구에서는 열처리가 야콘의 항산화 활성에 미치는 영향을 살펴보기 위하여 열처리 온도(100 및 $121^{\circ}C$)와 시간(15, 30 및 60분)에 따른 항산화 성분 및 항산화 활성 변화를 조사하였다. 열처리 후 야콘의 갈변도, 유리형 및 결합형 폴리페놀 함량, 유리형 및 결합형 플라보노이드 함량, DPPH radical 소거 활성 및 ABTS radical 소거 활성을 측정하였다. 열처리 후 야콘의 갈변도, 유리형 폴리페놀 및 플라보노이드 함량과 항산화 활성은 열처리 온도와 시간에 따라 유의적(p<0.05)으로 증가하였고, 결합형 폴리페놀 및 플라보노이드 함량은 감소하였다. 야콘의 유리형 폴리페놀 및 플라보노이드 함량은 $121^{\circ}C$, 60분 열처리 시 생야콘에 비해 각각 1.2배 및 1.1배로 유의적(p<0.05)으로 증가하였다. 또한, 야콘의 DPPH radical 소거 활성 및 ABTS Radical 소거 활성도 $121^{\circ}C$, 60분 열처리 시 생야콘에 비해 각각 1.7배 및 2.0배로 유의적(p<0.05)으로 증가였다. 야콘의 갈변도, 폴리페놀 및 플라보노이드 함량과 DPPH radical 및 ABTS radical 소거 활성 간의 상관관계를 분석한 결과, 높은 상관관계(p<0.01)가 있는 것으로 나타났다. 본 연구결과, 열처리 방법을 통해 야콘의 항산화 성분과 항산화 활성을 강화시킬 수 있으며, 이를 활용한 기능성 식품 소재 개발이 가능할 것으로 생각된다.

대두단백가수분해물이 흰쥐의 지질대사와 항산화에 미치는 영향 (Effect of Soy Protein Hydrolyzate on Lipid Metabolism and Antioxidant Activity in the Rat)

  • 본 연구는 대두단백가수분해물의 섭취가 소화흡수율, 지질대사 및 항산화에 미치는 영향을 살펴보고자 흰쥐를 카제인, 분리대두단백 (ISP) 또는 대두단백가수분해물 (서리태단백분해물 (SH), 수용성단백분해물 (SS) 또는 불용성단백분해물 (IS)군으로 나누어 4주간 사육한 후 생리활성의 변화를 살펴보았으며, 그 결과를 요약하면 다음과 같다. 1) 지질소화흡수율은 실험 1주차에서 분리대두단백군 (ISP군)이 다른 군보다 유의적으로 낮았다. 불용성가수분해물군 (IS군)은 실험 4주차에서 다른 군들보다 콜레스테롤의 소화흡수율이 낮은 경향이었다. 2) 혈액 중성지방은 불용성가수분해물군 (IS군)이 카제인군보다 유의적으로 낮았고, 서리태가수분해물과 ISP군도 낮은 경향이었다. 총 콜레스테롤도 중성지방과 마찬가지로 불용성가수분해물군이 가장 낮았고 다른 대두가수분해물군들과ISP군도 카제인군보다 낮은 경향이었다. 대두가수분해물군들이 카제인군보다 HDL-cholesterol은 높이고, LDL-cholsterol은 낮추어서 동맥경화지수는 불용성, 수용성, 서리태가수분해물의 순으로 낮았다. 3) 총항산화력은 군 간에 유의적인 차이가 없었으나 서리태가수분해물군 (SH군)이 다른 군들에 비해 높은 경향이었다. 간의 항산화효소활성은 각 군 간에 유의적인 차이는 없었으나 서리태가수분해물군의 superoxide dismutase, glutathione peroxidase 및 catalase 활성이 카제인군과 다른 실험군들에 비해 높은 경향이었다. 결론적으로, 대두단백가수분해물군들은 카제인군보다 혈액 중성지질, 총콜레스테롤, LDL-cholesterol과 동백경화 지표 (AI)를 낮추어서 심혈관질환예방에 바람직한 것으로 나타났는데, 이러한 효과는 특히 불용성단백가수분해물군에서 뛰어났다. 한편, 항산화활성의 경우 총항산화력과 항산화효소활성이 서리태가수분해물군에서 높은 경향으로 나타나 앞으로 서리태의 항산화 효과의 원인물질을 규명하고 분리추출하는 등의 연구를 통해 우리나라의 전통 콩의 우수한 면모를 밝히는 연구가 더 필요하다고 사료된다.

HME (Hot-Melt Extrusion)를 이용한 오미자 씨 및 박의 수용성 및 항산화 효과 향상 (An Enhanced Water Solubility and Antioxidant Effects of Seed and Pamace of Schisandra chinensis (Turcz.) Baill Formulation by HME (Hot-Melt Extrusion))

  • Objectives : Schisandra chinensis (Turcz.) Baill contains many nutrients and exhibits high physiological functions. It has been shown that Schisandra seed and pamace contains more nutrients than fruits and thus have higher antioxidant efficacy. In this study, seed and pamace of Schisandra chinensis (Turcz.) Baill (SPSC) were treated with hot-melt extrudate (HME) extrusion to produce water-soluble nanoparticles. Methods : SPSC was treated with HME to prepare nanoparticles. In this process, excipients (hydroxypropyl methylcellulose, pullulan, 2-hydroxylpropyl-beta-cyclodextrin, lecithin) were added to prepare a hydrophilic polymer matrix. To compare and analyze the antioxidant effect and schizandrin content, total flavonoid content, total phenol content and ABTS assay were measured. To confirm the effect of increasing the water solubility of the particles, particle size and water solubility index measurements were performed. The molecular of the material was analyzed using Fourier transform infrared spectroscopy (FT-IR). Results : The particle size of HME extrudates decreased, while total phenols, flavonoids, schizandrin, antioxidant effect, and solubility increased. Through FT-IR, it was confirmed that the SPSC and the extrudate exhibit the same chemical properties. In addition, it was confirmed that when extracted with water, it exhibited a higher antioxidant effect than the ethanol extract. Conclusions : HME technology increased the solubility of SPSC, which are processing by-products, and improved their antioxidant effect to a higher degree. It was confirmed that SPSC could be used as an eco-friendly, high value-added material.

Performance, blood and antioxidant status in dual-purpose laying hens supplemented with aqueous extract of Christ's thorn jujube (Ziziphus spina-christi L.) leaves as phytogenic agent in subtropical conditions

  • Objective: The potential of aqueous extract of Christ's thorn jujube (Ziziphus spina-christi) leaves (SLAE) to reduce the negative impacts of heat stress on production performance and physiological traits was investigated in dual-purpose layers under subtropical farming. Methods: A total of 200, 25-week-old laying hens (Inshas strain) were randomly assigned to four dietary treatments including SLAE at 0, 2.5, 5.0, and 7.5 mL/kg, respectively. The average temperature-humidity index value was 26.69 during the experimental period. The SLAE contained saponin (0.045%), total flavonoid content of 17.9 mg of quercetin equivalent/100 g and overall antioxidant capacity concentration of 17.9 mg of ascorbic acid equivalent/100 g. Results: The maximum final body weight (BW), BW gain, egg weight, number, and mass occurred at the level of SLAE7.5 inclusion. The egg quality was significantly higher in SLAE groups than in control, and overall, SLAE7.5 had the most favorable influence at 28 and 32 weeks. Liver and kidney function, as well as lipids profile, improved significantly by SLAE inclusion; the lowest concentrations of these parameters were in SLAE7.5 hens. Treatment with SLAE7.5 increased total antioxidant capacity and endogenous antioxidant enzymes compared to control, whereas no effect on superoxide dismutase was noticed. Conclusion: The addition of SLAE at 7.5 mL/kg diet improved egg laying performance and quality, metabolic profiles, and antioxidant status during hyperthermia conditions.

Antimicribial and Antioxidant Activities of Ethanol Extracts of Medicinal Plants

  • The objective of this study was to determine the radical scavenging activity, total phenolic content, antimicrobial activity, minimum inhibitory concentration (MIC) of ethanol extracts of 32 medical plant species that have been commonly used in medicinal plants. Total phenolic index of T. chebula exhibited the highest value (498.01㎎/g), followed by R. coreanus miquel (400.33㎎/g), Sanguisorba officinalis (368.25㎎/g), P. thumbergiana (259.74㎎/g) and Eugenia aromaticum (229.38㎎/g). Radical scavenging activity for the DPPH radical was highest in T. chebula (40.91%, p<0.01), followed by C. sappan (36.50%), S. officinalis (32.92%), R. coreanus miquel (26.54%) and P. thumbergiana (24.50%). The extracts from T. chebula, R. coreanus muquel, C. sappan, E. aromaticum, S. officinalis and C. japonica possessed outstanding antimicrobial activity against Escherichia coli, Salmonella Typhimurium, Pseudomonas aeruginosa, Staphylococcus aureus, Bacillus subtilis and Lactobacillus plantarum. MIC was determined on those extracts that showed high efficacy against the test organisms. The most potent MIC values were seen for T. chebula extract against P. aeruginosa, S. aurusa, E. coli, B. subtilis, L. plantarum and S. Typhimurium at 7.8, 7.8, 15.6, 7.8, 125 and 31.2㎍/mL, respectivley. Furthermore, the total phenolic content and radical scavenging activity were very closely correlated for all samples (r=0.78). The coefficient correlations between total phenolic index and antimicrobial activity were 0.91 (E. coli), 0.91 (B. subtillis), 0.79 (P. aeruginosa), 0.79 (S. Typhimurium) and 0.70 (L. plantarum).

Cancer Chemopreventive Effects of Korean Seaweed Extracts

  • Cancer chemopreventive effects can be exerted through the induction of phase II detoxification enzymes and the inhibition of inflammatory responses. In this study, the cancer chemopreventive effects and anti-inflammatory responses of 30 seaweed extracts were examined. The extracts of Dictyota coriacea and Cutleria cylindrica exhibited the high chemoprevention index, having 4.36 and 4.66, respectively. They also activated antioxidant response element at $100\;{\mu}g/mL$ by about 3-fold while did not activate xenobiotic response element. Seven seaweed extracts, Ishige okamurae, Desmarestia ligulata, Desmarestia viridis, Dictyopteris divaricata, D. coriacea, Sargassum horneri, and Sargassum yezoense, showed significant inhibition on nitric oxide (NO) and prostaglandin $E_2$ ($PGE_2$) production in a dose-dependant manner in $5-20\;{\mu}g/mL$. These seaweed extracts could be used as food materials for cancer chemoprevention. D. coriacea could contain potential chemopreventive agents not only that regulate genes via an ARE-dependent mechanism but also prevent the inflammation through inhibition of NO and $PGE_2$ production.

채소와 과일, 생선 섭취 강조 영양중재교육이 아토피 피부염 영유아의 중증도 변화에 미치는 효과 (Effects of Nutrition Education Promoting Vegetable, Fruit, and Fish Intake on the Severity of Atopic Dermatitis in Children: Results from a One-year Follow Up Study)

  • Atopic dermatitis (AD) is believed to be associated with the intake of antioxidant nutrients and fatty acids due to its immunological dysfunction. The purpose of this study was to examine the effects of nutrition education promoting vegetable, fruit, and fish intake on the severity of AD in children. Children with AD aged 6 months to 5 years were randomly assigned into education and control groups, and followed for 1 year. Seventy-six children completed the study (38 for control, 38 for education). The education group received education promoting the intakes of antioxidant-rich foods (vegetables, fruits) and n-3 fatty acid foods (fish). A 24-hour food recall was collected for the diet information. After education, all vegetables (p < 0.001), fruits (p < 0.01), and fish (p < 0.05) intakes per 1000 kcal increased significantly in the education group, whereas only vegetable intake increased in the control group (p < 0.001). The SCORAD index, the severity of atopic dermatitis, decreased significantly in the education group (p < 0.05). Increased consumption of dietary vitamin E was significantly associated with reduction in the SCORAD index, after adjusting for age and gender (p < 0.05). A nutritional education program to increase vegetable, fruit, and fish intake may be effective in reducing the severity of AD, and vitamin E intake may be associated with the decreased severity of AD. More controlled studies on the relationship between these intakes and severity of AD, with intensive diet and/or supplement intervention programs, are needed to obtain conclusive results.
