Effects of Die Temperature and CO2 Injection on Physical Properties and Antioxidant Activity of Extruded Rice with Tomato Flour (사출구 온도와 CO2 주입이 쌀·토마토 압출성형물의 물리적 특성 및 항산화 활성에 미치는 영향)

  • The study was designed to investigate the effects of die temperature and $CO_2$ injection on the physical and antioxidant properties of extruded rice with tomato flour. Moisture content and screw speed were fixed at 25% and 150 rpm, respectively. Die temperatures and $CO_2$ injection were adjusted to 80, 110, and $140^{\circ}C$ and 0, and 300 mL/min, respectively. Specific mechanical energy input decreased as die temperature increased from 80 to $140^{\circ}C$. The expansion index increased, while bulk density decreased with $CO_2$ injection. All extrudates showed increased water soluble index (WSI) and water absorption index through the extrusion process. WSI increased as die temperature increased. 1,1-Diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging activity and total phenolic compounds increased as die temperature increased from 80 to $140^{\circ}C$. Total carotenoid and lycopene contents decreased through the extrusion process. Total carotenoid and lycopene contents upon 0 mL/min $CO_2$ injection and $140^{\circ}C$ die temperature were highest at $6.65{\mu}g/g$ and 2.69 mg/kg, respectively. In conclusion, $CO_2$ injection affects expansion properties while an increased die temperature leads to increased DPPH radical scavenging activity and total phenols.

Naked Waxy Barley Cultivar "Jinjuchal" with High Whiteness after Cooking and High β-glucan Content (취반 후 백도가 좋고 베타글루칸 함량이 높은 찰성 쌀보리 "진주찰")

  • A new six-rowed naked barley cultivar "Jinjuchal" with high whiteness after cooking and high $\beta$-glucan content was developed from the cross between 'Jinmichapssalbori' with high winter hardiness, lodging tolerance, grain whiteness and pearling yield, and 'Suwon 333' with waxy endosperm by the Honam Agricultural Research Institute (HARI), NICS, RDA in 2007. An elite line, SB962002G-B-B-B-84-4 was selected in 2002 and designated as 'Iksan 79' It showed good agronomic performance in the regional yield trials (RYT) from 2005 to 2007 and was released with the name of "Jinjuchal" possessing high whiteness and low proanthocyanidin waxy endosperm. The average heading and maturing dates of "Jinjuchal" were April 27 and June 1 in paddy field, which were same and one day later than those of the check cultivar 'Saechalssalbori' respectively. The new cultivar, "Jinjuchal" had 81 cm of culm length that was 1cm longer than that of 'Saechalssalbori' and 4.9 cm of spike length. It showed 673 spikes per $m^2$, 56 grains per spike, 27.0 g of 1,000-grain weight, and 752 g of test weight. "Jinjuchal" showed stronger hardiness and better resistance to powdery mildew and BaYMV (Barley yellow mosaic virus) than those of the check cultivar, 'Saechalssalbori' It showed higher $\beta$-glucan content(8.4%) and water absorption rate than those of the check cultivar, 'Saechalssalbori' Its average yield of the pearled grain in the regional yield trial was 3.79 MT/ha in upland, and 3.73 MT/ha in paddy field, which were 1% lower and 3% higher than those of the check cultivar, respectively. Total phenol and proanthocyanidin contents were 4.2 and 0.2 mg/g, respectively. This cultivar is suitable for the area of the daily minimum temperature above $-6^{\circ}C$ in January in Korean peninsula.

Monitoring the Coastal Waters of the Yellow Sea Using Ferry Box and SeaWiFS Data (정기여객선 현장관측 시스템과 SeaWiFS 자료를 이용한 서해 연안 해수환경 모니터링)

  • We analyzed the ocean environmental data from water sample and automatic measurement instruments with the Incheon-Jeju passenger ship for 18 times during 4 years from 2001 to 2004. The objectives of this study are to monitor the spatial and temporal variations of ocean environmental parameters in coastal waters of the Yellow Sea using water sample analysis, and to compare and analyze the reliability of automatic measurement sensors for chlorophyll and turbidity using in situ measurements. The chlorophyll concentration showed the ranges between 0.1 to $6.0mg/m^3$. High concentrations occurred in the Gyeonggi Bay through all the cruises. The maximum value of chlorophyll concentration was $16.5mg/m^3$ in this area during September 2004. The absorption coefficients of dissolve organic matter at 400 nm showed below $0.5m^{-1}$ except those in August 2001 During 2002-2003, it did not distinctly change the seasonal variations with the ranges 0.1 to $0.4m^{-1}$. In the case of suspended sediment (SS) concentration, most of the area showed below $20g/m^3$ through all seasons except the Gyeonggi Bay and around Mokpo area. In general SS concentration of autumn and winter season was higher than that of summer. The central area of the Yellow Sea appeared to have lower value $10g/m^3$. The YSI fluorometer for chlorophyll concentration had a very low reliability and turbidity sensor had a $R^2$ value of 0.77 through the 4 times measurements comparing with water sampling method. For the automatic measurement using instruments for chlorphlyll and suspended sediment concentration, McVan and Choses sensor was greater than YSI multisensor. The SeaWiFS SS distribution map was well spatially matched with in situ measurement, however, there was a little difference in quantitative concentration.

Recent Progress in Air Conditioning and Refrigeration Research: A Review of Papers Published in the Korean Journal of Air-Conditioning and Refrigeration Engineering in 2006 (공기조화, 냉동 분야의 최근 연구 동향: 2006년 학회지 논문에 대한 종합적 고찰)

  • A review on the papers published in the Korean Journal of Air-Conditioning and Refrigeration Engineering in 2006 has been accomplished. Focus has been put on current status of research in the aspect of heating, cooling, ventilation, sanitation and building environments. The conclusions are as follows. (1) The research trends of fluid engineering have been surveyed as groups of general fluid flow, fluid machinery and piping, etc. New research topics include micro heat exchanger and siphon cooling device using nano-fluid. Traditional CFD and flow visualization methods were still popular and widely used in research and development. Studies about diffusers and compressors were performed in fluid machinery. Characteristics of flow and heat transfer and piping optimization were studied in piping systems. (2) The papers on heat transfer have been categorized into heat transfer characteristics, heat exchangers, heat pipes, and two-phase heat transfer. The topics on heat transfer characteristics in general include thermal transport in a cryo-chamber, a LCD panel, a dryer, and heat generating electronics. Heat exchangers investigated include pin-tube type, plate type, ventilation air-to-air type, and heat transfer enhancing tubes. The research on a reversible loop heat pipe, the influence of NCG charging mass on heat transport capacity, and the chilling start-up characteristics in a heat pipe were reported. In two-phase heat transfer area, the studies on frost growth, ice slurry formation and liquid spray cooling were presented. The studies on the boiling of R-290 and the application of carbon nanotubes to enhance boiling were noticeable in this research area. (3) Many studies on refrigeration and air conditioning systems were presented on the practical issues of the performance and reliability enhancement. The air conditioning system with multi indoor units caught attention in several research works. The issues on the refrigerant charge and the control algorithm were treated. The systems with alternative refrigerants were also studied. Carbon dioxide, hydrocarbons and their mixtures were considered and the heat transfer correlations were proposed. (4) Due to high oil prices, energy consumption have been attentioned in mechanical building systems. Research works have been reviewed in this field by grouping into the research on heat and cold sources, air conditioning and cleaning research, ventilation and fire research including tunnel ventilation, and piping system research. The papers involve the promotion of efficient or effective use of energy, which helps to save energy and results in reduced environmental pollution and operating cost. (5) Studies on indoor air quality took a great portion in the field of building environments. Various other subjects such as indoor thermal comfort were also investigated through computer simulation, case study, and field experiment. Studies on energy include not only optimization study and economic analysis of building equipments but also usability of renewable energy in geothermal and solar systems.

The Comparative Understanding between Red Ginseng and White Ginsengs, Processed Ginsengs (Panax ginseng C. A. Meyer) (홍삼과 백삼의 비교 고찰)

  • Ginseng Radix, the root of Panax ginseng C. A. Meyer has been used in Eastern Asia for 2000 years as a tonic and restorative, promoting health and longevity. Two varieties are commercially available: white ginseng(Ginseng Radix Alba) is produced by air-drying the root, while red ginseng(Ginseng Radix Rubra) is produced by steaming the root followed by drying. These two varieties of different processing have somewhat differences by heat processing between them. During the heat processing for preparing red ginseng, it has been found to exhibit inactivation of catabolic enzymes, thereby preventing deterioration of ginseng quality and the increased antioxidant-like substances which inhibit lipid peroxide formation, and also good gastro-intestinal absorption by gelatinization of starch. Moreover, studies of changes in ginsenosides composition due to different processing of ginseng roots have been undertaken. The results obtained showed that red ginseng differ from white ginseng due to the lack of acidic malonyl-ginsenosides. The heating procedure in red ginseng was proved to degrade the thermally unstable malonyl-ginsenoside into corresponding netural ginsenosides. Also the steaming process of red ginseng causes degradation or transformation of neutral ginsenosides. Ginsenosides $Rh_2,\;Rh_4,\;Rs_3,\;Rs_4\;and\;Rg_5$, found only in red ginseng, have been known to be hydrolyzed products derived from original saponin by heat processing, responsible for inhibitory effects on the growth of cancer cells through the induction of apoptosis. 20(S)-ginsenoside $Rg_3$ was also formed in red ginseng and was shown to exhibit vasorelaxation properties, antimetastatic activities, and anti-platelet aggregation activity. Recently, steamed red ginseng at high temperature was shown to provide enhance the yield of ginsenosides $Rg_3\;and\;Rg_5$ characteristic of red ginseng Additionally, one of non-saponin constituents, panaxytriol, was found to be structually transformed from polyacetylenic alcohol(panaxydol) showing cytotoxicity during the preparation of red ginseng and also maltol, antioxidant maillard product, from maltose and arginyl-fructosyl-glucose, amino acid derivative, from arginine and maltose. In regard to the in vitro and in vivo comparative biological activities, red ginseng was reported to show more potent activities on the antioxidant effect, anticarcinogenic effect and ameliorative effect on blood circulation than those of white ginseng. In oriental medicine, the ability of red ginseng to supplement the vacancy(허) was known to be relatively stronger than that of white ginseng, but very few are known on its comparative clinical studies. Further investigation on the preclinical and clinical experiments are needed to show the differences of indications and efficacies between red and white ginsengs on the basis of oriental medicines.

Quality Characteristic of the Korean Wheat meju according to Milling Degree of Wheat and Fermenting Strains (밀의 도정 및 발효 균주에 따른 우리밀 메주의 품질특성)

  • In this research, the soaking and steaming conditions of Korean wheat meju according to the degree of milling were investigated, and the quality characteristic was analyzed, for the manufacture of the standardized Korean wheat meju. As a result of the changes in weight, volume, moisture content, and moisture absorption amount, which indicate the physical properties of Korean wheat meju using 20% polished wheat, 50% polished wheat, whole wheat, and whole wheat flour, most of the wheat materials reached the equilibrium state after 4 hours of soaking. Also, the appropriate steaming time to complete the cooking of the wheat materials was found to be 10 min at $100^{\circ}C$, except for whole wheat. The 20 and 50% polished wheat materials were selected for Korean wheat meju based on the soaking and steaming results. The selected wheat materials were fermented using Aspergillus oryzae and Bacillus subtilis M1, respectively, and the quality properties and enzyme activities showed that A. oryzae would be effective for the manufacture of Korean wheat meju. Also, the 50% polished wheat showed higher total sugar content, reducing sugar content, and ${\alpha}$-amylase activity than the 20% polished wheat. Therefore, it is supposed that the fermentation of 50% polished wheat by A. oryzae would be appropriate for manufacturing superior Korean wheat meju.

Seed Dormancy Type and Germination Characteristics in Tiarella polyphylla D. Don Native to Korea (한반도 자생식물 헐떡이풀 종자의 휴면유형과 발아특성)

  • Tiarella polyphylla D. Don is a native plant distributed only in Ulleung Island in Korea and has been traditionally used for medicinal purposes, although it is also used ornamentally. This study was conducted to determine the requirements for dormancy break and germination and to classify the type of seed dormancy. The experiments were performed with cold stratification (0 or 12 weeks at $5^{\circ}C$), warm stratification (0, 4, 8, or 12 weeks at $23^{\circ}C$, followed by 8 weeks at $5^{\circ}C$, and then incubation at $23^{\circ}C$), and $GA_3$ treatments (0, 10, 100, or 1000 mg/L). The treated seeds were incubated on aseptic media at room chamber ($23^{\circ}C$, a 16h photoperiod of fluorescent lamps with $40{\mu}mol{\cdot}m^{-2}{\cdot}s^{-1}$). The seeds were dispersed in nature as underdeveloped embryos with no physical barrier to absorb water to prevent water absorption. However, the seeds did not germinate for 30 days after sowing without any pre-treatments. Thus, the seeds had morphological dormancy (MD) and physiological dormancy (PD). The final germination percentage following cold stratification (0 or 12 weeks) was 66.7% and 45.6%, respectively. The cold stratification delayed seed germination by about 3 weeks. In the warm stratification experiment (0, 4, 8, or 12 weeks), the final germination percentage was 21.1%, 27.8%, 41.1%, and 57.8%, respectively, 20 weeks after sowing. The embryos of the T. polyphylla seed grew in relatively warm temperatures ($23^{\circ}C$). $GA_3$ application overcame seed dormancy and promoted germination. Following $GA_3$ treatment (0, 10, 100, or 1000 mg/L), the final germination percentage was 33.3%, 45.0%, 42.5%, and 72.5%, respectively. These results suggest that the T. polyphylla seeds had non-deep simple morphophysiological dormancy (MPD) and $GA_3$ treatment could be used as a substitute for warm stratification for breaking seed dormancy. To our knowledge, this is the first report of seed dormancy characteristics of the genus Tiarella native to Korea.

Influence of lime and phosphorus application on nutrient uptake by corn in newly reclaimed acidic soils -I. With special reference to P sources and distribution of Zn among leaves (산성신개간토양(酸性新開墾土壤)에서 석회(石灰) 및 인산(燐酸)이 옥수수의 양분(養分) 흡수(吸收)에 미치는 영향(影響) -I. 인산비종(燐酸肥種)과 아연(亞鉛)의 흡수(吸收) 및 엽위별분포(葉位別分布))

  • On a newly reclaimed acidic soil, investigation was made to find out the influence of lime and P application at a largeg uantity on the uptake of Zn by corn and its distribution among the leaves, under afactorial combination with two levels of Zn, lime, and P. The results are summarized as following. 1. The application of lime for neutralization of soil significantly reduced the uptake of Zn by corn. 2. Liberal doses of P (5% of P absorption coefficient of soil; 500ppm) applied before sowing did not influence the uptake of Zn. 3. The concentration of Zn in bottom leaves better reflected the Zn uptake status of corn than the upper leaves. The concentration of Zn in bottom leaves responded clearly to the treatments of lime and Zn, while those of upper leaves tended to be constant unresponding to application of lime and Zn. 4. On the present experimental condition, the yield of corn was increased with the increase of P application. But the concentration of P in plant tissue remained constant under different P levels. 5. Application of lime (calcium hydroxide) on low P plots, depressed the yield of corn significantly. It was speculated that the lime applied at large dose made the applied P less available to corn.

Response of Soil Properties to Land Application of Pig Manure Liquid Fertilizer in a Rice Paddy (돈분뇨 액비가 시용된 논토양 특성 변화)

  • A wide diversity of liquid fertilizers and composts produced from the livestock manure in Korea is commonly applied to agricultural lands as an alternative of chemical fertilizers. However, their effects on the crop production and environmental impacts are still vague. The current study was investigated the property changes of paddy soils in sandy loam and silty loam treated with 1) control (no treatment), 2) chemicals, 3) storage liquid fertilizer and 4) SCB liquid fertilizer located in Gyeong-gi province, Korea. The chemical properties of soils in sandy loam and silty loam before the treatment were similar with the ones in the average paddy fields in Korea. Contrary to this, the amount of available phosphorus in sandy loam was higher than the one in the average paddy fields. The number of living organisms in sandy loam and silty loam treated with storage liquid fertilizer and SCB liquid fertilizer were higher than the ones in sandy loam and silty loam with no-treatment and chemicals. Significant difference (P<0.05) among the treatments and no-treatment was observed in sandy loam rather than in silty loam. The amounts of heavy metals were the highest in both sandy loam and silty loam treated with storage liquid fertilizer and SCB liquid fertilizer. The comparison of heavy metals showed that the ones in silty loam were little bit higher than sandy loam. The leaf lengths and dry weights of rices were increased over time, however, no significant difference was observed among each treament. In addition, the rice yield in sandy loam treated with SCB liquid fertilizer was higher than the ones in sandy loam. The highest rice yield was obtained from sandy loam treated with chemicals, but there was no significant difference between storage liquid fertilizer and SCB liquid fertilizer. While the rate of nutrient absorption by rices was the highest in sandy loam and silty loam treated with chemicals, there was no significant difference in sandy loam and silty loam treated with livestock liquid manure.

Physicochemical Properties and Hot Air-Dried and Spray-Dried Powders Process of Sweet Potato and Steamed Sweet Potato (열풍건조 및 분무건조 공정을 이용한 생 고구마와 찐 고구마 분말제조 및 물리화학적 품질특성)

  • This study was conducted to examine the physicochemical properties and hot air-dried and spray-dried powders process of sweet potato and steamed sweet potato. The moisture and the total starch contents were 1.66~2.19% and 52.65~57.42%, respectively. The total starch contents increased during process steaming. The water absorption index of the spray-dried powders (0.97 and 2.03) was lower than that of the hot air-dried powders (2.12 and 4.71), and the water solubility index of the spray-dried powders (83.83 and 86.95%) was higher than that of the hot air-dried powders (68.40 and 81.21%). The particle size and outer topology of the spray-dried powders were 46.18 and $65.53{\mu}m$, and its shape was generally globular. In the DSC analysis of this study, the $T_o$ of the spray-dried powders (64.40 and $67.80^{\circ}C$), $T_p$ of the spray-dried powders (74.40 and $78.20^{\circ}C$), and $T_c$ of the spray-dried powders (81.10 and $81.60^{\circ}C$) was higher than that of the hot air-dried powders. The solubility contents of the spray-dried powders (68.21 and 80.73%) was lower than that of the hot air-dried powders, and the swelling power contents of the spray-dried powders (14.79 and 15.35%) was higher than that of the hot air-dried powders. The amylose contents of spray-dried powders (11.67 and 12.51%) was lower than that of the hot air-dried powders. The soluble dietary fiber contents of spray-dried powders (1.34 and 2.02%) was higher than that of the hot air-dried powders.
