Changes of Physicochemical Compositions in Domestic Broiler Chickens of Different Marketing Standard (국내산 닭고기의 유통규격별 이화학적 조성의 변화)

  • Changes of Physicochemical compositions in domestic broiler chickens of different marketing standard range from 5ho (Korean traditional weight unite for chicken) to 16ho were assessed. The moisture contents of chicken breast were 74.00 ∼ 76.15% and there were no significant trend with weight difference. The chicken breasts of the light weight range(5ho∼8ho) contained high fat contents of 2.35∼2.78%. The chicken breasts of the heavy weight range(12ho∼16ho) contained low fat contents of 0.47 ∼0.66%. The chicken breasts of the heavy weight range had more protein contents than those of the light weight range. The chicken breast of the light weight range showed low Warner Braztler shear force (WBS) values when compared to those taken from chicken of the heavy weight range. However. there was no significant differences in water ho1ding capacity (WHC ) and cooking loss(p>0.05). In meat color the L* values (lightness) were 61.83∼71.33 and there were no significant differences for samples in different weight range except 5ho and 13ho. The b* valuers (yellowness) were 1.73 ∼6.79 and the values decreased with increasing chicken weight. In mineral composition. calcium and iron contents were decreased with increasing chicken weight. Phosphate, potassium and magnesium contents increased as weight ranges increased. The thigh meat separated from 11ho to 16ho had a similar tendency. In chemical composition(%). WBS, WBC. cooking loss, meat colors and mineral contents, compacted to breast in the same weight ranges. The results from this study would provide a basic information for establishment of marketing standard of chicken.

농산물포장상자 중량 허용오차 제안

  • 골판지조합은 지난 7월13일 농산물품질관리원장에게 "농산물포장용 골판지상자 중량 허용오차 기준 제안"을 하였다. 이번 제안은 농림수산식품부 산하 농산물품질관리원원에서 운영하고 있는 농산물포장 표준규격에서 중량 표시규격은 있으나, 이에 대한 허용오차에 대한 명확한 기준이 없어 실제 거래관계에서 혼선이 야기되고 있으며, 골판지포장은 수분함량 및 평량 허용오차 등으로 인해 동일한 원지배합이라 할지라도 다소의 중량차이가 발생할 수 있고, 또한 KS 표준규격상 라이너, 골심지에 대한 평량 허용차가 ${\pm}4%$, 외부포장용골판지의 수분함량 허용오차가 $10{\pm}2%$임을 감안해서, 현재 명확치 않은 중량 허용오차 기준을 ${\pm}5%$로 개정하는 것이 상당하다는 판단을 골판지포장기업 35개사를 대상으로 설문조사한 자료를 바탕으로 보고서를 작성하여 함께 제출하였다.

Comparison of Principle Components and Internal Quality of Eggs by Age of Laying Hens and Weight Standard (산란 주령 및 중량 규격에 따른 계란의 주요 성분 및 내부 품질 비교)

  • The objective of this study was to compare the principle components and internal quality of eggs by age of laying hens and weight standard. The eggs (2,140 in total) used were from Hy-Line Brown reared from 18 to 63 weeks of ages and all were higher than appearance grade B by animal grading standard of Korea. Eggs were investigated their principle components, internal quality index, and their relationship. The weights of whole egg, shell, yolk, and albumen were increased while albumen height and Haugh unit were decreased by age of laying hens. When the composition of egg was investigated after sorting by ages, the ratio of egg yolk increased while that of albumen decreased. Egg shell composition was not shown significant difference by age. Age of laying hens had positive correlation with the weights of whole egg, shell, yolk, and albumen while albumen height and Haugh unit showed negative correlation. Also, the albumen height and Haugh unit were decreased by increase of weight of whole egg or principle components of egg.

  • 선별은 청과물을 포장하기 이전에 크기, 중량, 색깔등 정해진 규격에 따라 고르는 과정을 말하고, 크게 인력선별과 기계선별, 개별선별과 공동선별로 구분한다. 국내의 경우 아직까지도 수확된 청과물은 농가단위로 개별선별하고 있으며, 중량식 선별기를 이용하여 등급선별 한 후 15kg, 10kg 상자에 포장하는 것이 가장 일반적이다. 근래에 청과물의 부가가치를 높이기 위해서 중량에 색깔을 선별할 수 있는 기능을 추가한 기계시스템이 개발되어 산업화된 바 있다(최 등, 1997). 또한 근적외선 분광분석법을 이용하여 과일의 당도를 비파괴적으로 측정 선별할 수 있는 시스템이 개발 실용화 단계에 있다(이 등, 1998).   • Changes of the fatty acid, amino acids and collagen contents in domestic broiler chickens of different marketing standard range from 5ho to 16ho were assessed. There were no significant trend in total ratios of saturated fatty acids and unsaturated fatty acids between breast samples taken from chicken in different weight ranges. The n6 fatty acids/n3 fatty acids decreased as weight ranges decreased and the ratio was decreased down to 5:1. Eicosapentaenoic acids(EPA) were detected from chicken in 10ho and tended to increase thereafter. The contents of EPA were 0.43% in 15ho. Docosahexaenoic acid(DHA) were detected from chicken in 14ho and DHA contents of breast taken from 15ho chicken were 0.94%. The contents of glutamic acids were 2.94∼3.59% and they increased as chicken weight increased. The collagen contents were higher in thigh than breast or wings. The results from this experiments will provide a basic information for establishment of marketing standard of chicken.

  • 본 연구는 경북에 소재한 식품회사인 S사의 햄 생산공정의 개선을 위하여 통계적 공정관리기법을 적용한 것이다. 햄의 중량은 햄의 품질에 대한 소비자의 신뢰와 기업의 수익성에 영향을 미치는 풍요한 요소이다. 연구의 목적은 햄 생산공정의 경제적 규격한계 확보를 통하여 기업의 이익을 극대화하는데 있나. 기본적인 통계적 공정관리 기법인 평균-범위 관리도, 공정능력분석, 측정시스템 평가분석 등을 이용하여 햄 공정을 분석하고, 최적 규격한계를 설정하였다.

  • The analysis of the cost optimization and the total demand weight of 9% Ni-steel plates for installing shell stiffeners in the side wall of the large capacity LNG storage tank are carried out in order to reduce the costs of the plates for stiffeners. This study can be possible for developing the calculation program which evaluates the bill-of-material for stiffeners to reduce the manual calculation time of tank designer, and to enable the estimation of weight and cost for various plate width. The results show that the demand weight and cost are reduced as the plate width is wider. Nevertheless, both the weight and the cost with plate width for stiffeners should be compared and evaluated to obtain the optimum cost time to time because of various cost incremental factors of plates such as transportation and handling cost, etc.
