Characteristics of Processed Food for Improvement Utilization of Sweet Persimmon (단감의 이용성 증진을 위한 특성 검토)

  • 단감은 우리나라가 세계에서 가장 많은 양을 생산하는 대표 과일로 과잉생산과 수확기에 일시적인 홍수출하로 인한 가격이 하락하고, 기상이변에 의한 비상품 과일의 생산이 많아지나 전량 폐기되고 있으며, 유통 및 저장 중에 연화현상과 생리적장애로 품질이 저하되어 경제적 손실이 발생되므로 안정적 생산과 소비를 위하여 다양한 형태의 식품개발이 절실히 요구된다. 국내 감 생산량은 352,822톤이며 이 중 떫은감은 146,233톤(41.45%), 단감은 206,589톤(58.55%)으로 단감 생산량이 떫은감에 비하여 많으며 국내 단감 생산지는 진영, 순천, 문산, 담양, 장성 등 집단화 되어 있고, 원료확보가 유리하나 저장은 수확기인 10월 중순, PE필름 봉지에 넣고 밀봉하여 박스 등에 넣어 $0{\sim}1^{\circ}C$의 저온저장고에 이듬해 4월 중순까지 6개월 정도 저장 가능하나 저장비용이 많이 들고, 4월 이후에는 생리적 장해로 보관이 어렵다. 단감은 다른 과일에 비하여 높은 감미와 비타민 A, 비타민 B1, 비타민 C, 식이섬유 및 리코핀 성분이 다량 함유되어 있고, 노화와 암 발생을 억제하는 폴리페놀물질이 풍부하여 건강 기능성 과일로 알려져 있다. 본 연구에서는 시중에서 구입한 단감의 저온저장 중 감모율 및 이용성 구명을 위하여 관련특성을 검토하였다. 단감을 3월에 구입하여 $5^{\circ}C$에 저온저장하여 보관기간별 감모율을 조사하였고, 단감의 전 처리 후 당도, pH, 색도, 수분함량 등을 조사하였다. 3월에 시중에서 구입하여 PE필름에 봉한 채 종이박스 넣어 $5^{\circ}C{\pm}2$ 저온저장고에 저장하여 1개월 후에 조사한 결과 정상과가 75.47%, 25%미만 장해과가 14.37%, 50%이상 장해과가 10.16% 이었고, 2개월 후는 정상과가 41.52%, 25%미만 장해과가 42.88%, 50%이상 장해과가 15.61%이었다. 단감을 꼭지제거, 박피, 제핵 후 절단하여 파쇄 후의 당도는 14.8 $^{\circ}Brix$, pH는 6.0, 수분은 56.7%, 색도 L값은 39.8, a값이 12.6, b값이 22.7이었다. 파쇄한 단감을 $-20^{\circ}C$에 1차 냉동하여 해동 후 당도는 냉동 전 $14.8^{\circ}Brix$에서 $14.2^{\circ}Brix$로, 2차 냉동 해동 후는 $12.6^{\circ}Brix$로 감소하였으며, 색도 L값과 a값 및 b값은 냉동 전에 비하여 감소하였고, 수분함량은 냉동 전 64.4%, 1차 냉동 해동 후에 82.78%, 2차 냉동 해동 후에는 84.09%로 증가하였다.

Effect of Several Treatments on Chilling Injury of Paprika Fruits during Low Temperature Storage (몇 가지 처리가 파프리카 과실의 저온장해에 미치는 영향)

  • Paprika fruits should be stored and distributed at above $7^{\circ}C$ to prevent chilling injury but the small amount of paprika that transports with other horticultural products in refrigerated container by ship usually stored less than $5^{\circ}C$ for other products. In this case, paprika fruits cannot help exposing chilling temperature, so that the paprika must be lost marketable value during a long period of transfer. This study was conducted to compare the alleviated effects of high $CO_2$ treatment (passive MAP), heat (hot water dipping), and UVc treatment on chilling injury of paprika fruits due to low temperature storage, and also to decide if these treatments can be used for transporting under $5^{\circ}C$. After each treatment the paprika were put in the low temperature storage ($4^{\circ}C$) for 20 days and afterwards change the in room temperature ($20^{\circ}C$) for 5 days. The fresh weight loss of all the treatments except the high $CO_2$ treatment showed around 7~12% after 25 days of storage and the ethylene concentration showed periodical increases and decreases as around 3 ${\mu}l/l$. The $CO_2$ concentration was rapidly increased 33% carbon dioxide in high $CO_2$ treatment during room temperature storage after cold storage for 20 days. The firmness which is key quality characteristics during storage and is decreasing caused by chilling injury was not significantly different among all treatments. However, the firmness of stored paprika was maintained highest in the treated with hot water dipping. Therefore, HWD and UVc treatment that showed 60% of electrolyte leakage in the $4^{\circ}C$ control (chilling injury control) and similar level with the $7^{\circ}C$ control (non-chilling injury control) would be effective to alleviate chilling injury in the stored paprika.

  • The research was conducted to provide basic information for store temperature which were low and room temperature and packing methods which were vacuum, packing and nitrogen of 3 year-old Platycodon grandiflorum. We investigated hardness and content of saponins, 1) platycodin D3, 2) polygalacin D and 3) deapioplatycodin D, in Platycodon grandiflorum and hardness of Platycodon grandiflorum, which were reduced by increasing storage period and decreased with increasing storing temperature, respectively. The packed storing method was better than others storing methods in low temperature. The high root hardness was significantly related with storing temperature and methods. The content of saponins in Platycodon grandiflorum, i.e., platycodin D3 and polygalacin D were reduced during storing period, however, the content of deapioplatycodin D was increased during storing period.

Temperature and length of cold storage affect the Quality Maintenance of fresh kiwifruit (Actinidia chinensis Planch) (저온저장 온도 및 저장기간이 키위 "골드"의 품질 유지에 미치는 효과)

  • The effects of temperature and length of cold storage on the quality maintenance of fresh "Gold" kiwifruit were investigated. Physio-chemical properties were analyzed in kiwifruit held at $2^{\circ}C$ and $6^{\circ}C$ temperatures compared to fruit at room temperature ($20{\sim}28^{\circ}C$) during 8 weeks of storage. Low temperatures ($2^{\circ}C$ and $6^{\circ}C$) significantly delayed softening and soluble solids content (SSC) accumulation compared to higher temperature ($20{\sim}28^{\circ}C$). Physico-chemical properties of fruits, including weight losses, firmness, SSC, titratable acidity (TA), SSC/TA ratio, and flesh color properties were monitored during storage. Fast firmness loss was detected in fruit stored at higher temperatures compared to low temperature ($2^{\circ}C$). Similar results were observed for acidity according to storage temperature and length of cold storage, whereas SSC increased to the limited values (%Brix) during storage. The soluble solids content (SSC) increased markedly during the first 60 days of storage and remained almost constant thereafter for all treatments. SSC accumulation rates decreased from 5 weeks after storage probably due to differences between initial and ripe kiwifruits, and SSC decreased with each passing week due to natural starch conversion over time. The SSC/acid ratio increased from 18 to 27 until 5 weeks after storage and then slowly declined in all kiwifruit stored at different low temperatures. Sensory evaluation results showed no differences in kiwifruit flesh color stored at two storage temperatures of $2^{\circ}C$ and $6^{\circ}C$.

Changes in soluble neutral carbohydrates composition of jerusalem artichoke (Helianthus tuberosus L.) tubers according to harvest date and storage temperature (수확시기 및 저장온도에 따른 돼지감자 괴경의 가용성당 조성변화)

  • The composition of soluble neutral carbohydrates in jerusalem artichoke tubers was measured and compared according to harvest dates and storage temperatures using HPLC. The breakdown of inulin $({\ge}GF8)$ into sucrose and fructo-oligosaccharides (GF2-GF7) was highest on November just after cold-shock. The composition of sucrose and fructo-oligosaccharides on March was much higher than that on September of previous year. Inulin $({\ge}GF8)$ proportion decreased from 66.4% to 33.1% but the proportion of fructo-oligosaccharides (GF2-GF7) and sucrose increased from 25% to 61% and from 3.4% to 13.6%, respectively. The storage at a low temperature $(4^{\circ}C)$ for 34 days increased the composition as well. However, the amount of fructo-oligosaccharides was decreased when the tubers harvested in March were stored at high temperature $(25^{\circ}C{\sim}40^{\circ}C)$. For the maximam yield of fructo-oligosaccharides in jerusalem artichoke, it is concluded that the tubers be harvested in March and/or stored at the low temperature.

Long-Term Cold Storage and Plant Regeneration of Suspension Cultured Somatic Embryos of Eleutherococcus senticosus Maxim (가시오갈피 현탁배양 체세포배의 저온장기저장 및 식물체 재분화)

  • A method for long-term conservation of somatic embryos of Eleutherococcus senticosos was described. Suspension cultured globular somatic embryos were successfully conservated for 36 months at $4^{\circ}C$. The embryos resumed growth within two weeks when returned to MS liquid medium containing $0.2\;mg/{\ell}$. 2,4-dichlorophenoxy acetic acid. The optimal condition for cell proliferation was achieved when somatic embryos cultured at $32^{\circ}C$ in 1/3 MS liquid medium, and about 1.2 g of embryogenic cell was induced from 150 globular embryos after 6 weeks of suspension culture. The embryogenic cells produced from these somatic embryos exhibited normal plant regeneration on auxin-free medium.

Extractive Optimization of Functional Components for Processing of Onion Health Promotion Drink (양파 음료 제조를 위한 기능성 성분 추출 최적화)

  • Onion, licorice, abgelia root, Chinese date, pine needle, and mulberry leaf were used to extract functional components far onion complex drink. No differences were observed between water extraction at room temperature and methanol extraction in electron-donating ability (EDA), thiosulfinate content (TSC), and ascorbic acid content (AAC), whereas water extraction resulted in higher nitrite-scavenging ability at pH 1.2 and 3.0, and lower superoxide dismutase-like ability than methanol extraction. Level of water extracts prepared by hard-boiling for 3 hr at above $100^{\circ}C$ was higher in all functional abilities except TSC than those prepared at room temperature. Optimal conditions for water extraction and storage were $100-120^{\circ}C$ for 6 hr and low-temperature storage, respectively.

The Quality of Salted and Semi-Dried Mackerel Processed by Cold Osmotic Dehydration during Storage (저온삼투압탈수법으로 제조(製造)한 반염건(半鹽乾)고등어의 저장안정성(貯藏安定性))

  • The quality of salted and semi-dried mackerel prepared by cold osmotic dehydration using a high osmotic pressure resin during storage at $5{\pm}1^{\circ}C$ was evaluated. The moisture contents in salted and semi-dried mackerel decreased in. range of 4 during storage. The brown pigment formation content and peroxide value of salted and semi-dried mackerel prepared by osmotic dehydration were more lower than those of salted and semi-dried mackerel prepared by traditional drying methods such as sun-drying, hot-air drying and cold air drying. The viable cell count and histamine contents of cold osmotic dried products were much lower and revealed a tendency to increase during storage, but even these values after storage of 15 days showed that the salted and semi-dried mackerel was safety in respect of food sanitation. The ratio of saline soluble nitrogen to total nitrogen in cold osmotic dried products were higher than that of traditional dried products during storage. Judging from the results of chemical and sensory evaluation, shelf-life of salted and semi-dried mackerel by cold osmotic drying were more longer than that of salted and semi-dried mackerel prepared by traditional drying.
