A Survey on Customers' Perceptions of Nutrition Labeling for Processed Food and Restaurant Meal (가공식품 및 외식 영양표시에 대한 소비자인식조사)

  • Consumer perception of processed food and restaurant food's nutrient labelling was surveyed. The subjects of this survey consisted of 1,507 parents, whose ages were 20-59 years old. The ratio of the respondents that have known nutrition labelling on processed foods was 89.8% and the ratio of whom have checked the nutrition labelling at their point of purchase was 72.3%. The nutrients which were considered important for nutrition labelling were fat (57.1%), calorie (56.3%) and sodium (49.0%). Also nutrient which were able to be recognized at a glance by the subjects were in the order of trans fat (62.1%), cholesterol (26.9%), calorie (23.9%) and sodium (21.0%). If restaurant menu's nutrient labelling be enacted, the answer rate that the menu's nutrition labelling may affect their menu choice is 90.6% of the respondents. Besides of the Fastfoods that are enforcement, restaurants of that customers want the menu to be labeled were 'pizza and chicken restaurants'. Nutrients that customers preferred to be labelled were calorie (62.0%), fat (60.3%) and sodium (50.9%).

  • This study is to set up a hypothesis and a research model based on how much the relational benefits can affect customer satisfaction and long-term relationship with the theoretical and practical results of established precedent researches, to analyze the structural equation model on casual dining restaurant diners, to evaluate the research model and subsequently to provide marketing implications. First of all, social and psychological factors prove to be influential among relational benefits felt by diners-out. Secondly, customer satisfaction has influence on long-term commitment for a restaurant. In other words, the higher customer satisfaction level for a restaurant is, the stronger willingness a customer has to recommend or revisit the restaurant, as several precedent studies support. As demonstrated in indirect advantages, these social and psychological benefits felt by diners-out have mighty effects on long-term relationship orientation, and satisfaction levels prove to be an important medium which can make these influences. As a result, restaurant employees' attitude toward customers is the most important factor rather than economic benefits such as reduced price, free gifts and coupons are, since customers put social and psychological benefits forward like intimate terms with restaurant workers, a sense of stability, and a relief from uneasiness. Therefore, constant service education should be done from the start to cope with customers' demands fast and flexibly and increase customer satisfaction.

Korean and Chinese Consumers' Preferences for Sous-Vide Cooked Jabchae according to Sauce Mixing Proportion (Sous-Vide 잡채의 앙념 배합 비율에 따른 한국과 중국 소비자 기호도)

  • This study aimed to investigate preferences for sous-vide cooked jabchae between Korean and Chinese consumers according to sauce mixing proportion. To commercialize sous-vide cooked jabchae and localize it for overseas circumstances in the Korean and Chinese markets, consumers' subjective preferences for sous-vide cooked jabchae were investigated especially in 119 Korean consumers (55 males and 64 females) and 136 Chinese consumers (70 males and 66 females). For jabchae samples, this study set up three different mixture rates of soy sauce and sugar, 8% (LSS), 13% (MSS), and 18% (HSS), and three different salad oil rates, 0% (LO), 12% (MO), and 24% (HO), to propose nine kinds of samples. As a result of consumer preferences, for Koreans, MSS and HSS regardless of oil content were significantly high in overall, appearance, saltiness, sweetness preferences, and purchase intention (P<0.001). In addition, for oiliness preference, LSS, MSS, LO, and MO were significantly high (P<0.001). For Chinese, HSS, MO, and HO were significantly high in overall, flavor preference, and purchase intention (P<0.001). For saltiness and sweetness preference, regardless of oil content, saltiness preference was significantly high in HSS and sweetness in MSS and HSS (P<0.001). For oiliness preference, regardless of content of soy sauce and sugar mixture, LO and MO were significantly higher, and for appearance preference, there was no significant difference among all samples (P<0.01). In general, both Korean and Chinese tended to prefer MS and HO, irrespective of oil content. Especially for Koreans, LSS was the least favorite sample in almost all preference questionnaires. For Chinese, preference scores for LSS and HSS were higher than for Koreans. On the other hand, oil content did not have much effect on consumer preference as compared with contents of soy sauce and sugar mixture.

  • Socially responsible activities done by the food-service companies increase corporate their competitiveness and can be used as a marketing strategy for the preparation for their future corporate image through positive word of consumer mouth. Food-service companies will lose competitiveness if they overlook socially responsible activities, which risks their long term sustainability. For one month, June 1 to June 30, 2014, after explaining the purpose and validity to staff and customers, the researcher asked them to complete a questionnaire via Self-administered Questionnaire Survey Method and gathered it.532 questionnaires out of 540 were returned and, excluding 22 insincerely replied questionnaires, 510 questionnaires were used for empirical analysis of the research material. he summary analysis for the research hypotheses are as follows :First, socially responsible activities(economic, charity and environmnetal responsibility) had a positive(+) effect on corporate image. Second, socially responsible activities had a positive(+) effect on long-term orientation. Third, socially responsible activities had a positive (+) effect on word of mouth. This study is worthwhile because it empirically confirms that food-service companies carry out socially responsible activities. his study confirms that socially responsible activities and business operations that fulfill this responsibility can be used as a marketing strategy, which reveals consumers' value of social responsibility.

Restaurateur's Willingness to Participate in the Healthy Restaurant Program in Seoul (서울시 외식경영자의 건강식당사업 참여의지)

  • This study examined the restaurateur's willingness to participate in the healthy restaurant program. Using a structured self-administered questionnaire, data on subjects' personal, business and management characteristics, willingness to participate in the healthy restaurant program and the perception of healthy restaurant program were collected from 145 restaurateurs in Seoul. Descriptive statistics, chi-square tests, and logistic regression were used in the analysis. Half of respondents (50.3%) were willing to participate in the healthy restaurant program. Years of business (OR = 2.584, 95% CI = 1.049-6.369), consideration of food quality (OR = 0.321, 95% CI = 0.147-0.702), and awareness of importance of nutrition or health information (OR = 2.416, 95% CI = 1.082-5.391) were significant indicators for restaurateur's willingness to participate in the healthy restaurant program. Hence, strategic activities to inform the benefit of healthy restaurant program for both restaurateurs and consumers are necessary.

Prediction of Food Franchise Success and Failure Based on Machine Learning (머신러닝 기반 외식업 프랜차이즈 가맹점 성패 예측)

  • In the restaurant industry, start-ups are active due to high demand from consumers and low entry barriers. However, the restaurant industry has a high closure rate, and in the case of franchises, there is a large deviation in sales within the same brand. Thus, research is needed to prevent the closure of food franchises. Therefore, this study examines the factors affecting franchise sales and uses machine learning techniques to predict the success and failure of franchises. Various factors that affect franchise sales are extracted by using Point of Sale (PoS) data of food franchise and public data in Gangnam-gu, Seoul. And for more valid variable selection, multicollinearity is removed by using Variance Inflation Factor (VIF). Finally, classification models are used to predict the success and failure of food franchise stores. Through this method, we propose success and failure prediction model for food franchise stores with the accuracy of 0.92.

A Comparative Study on Consumers' Perception of National Food Plan (국가 푸드플랜에 대한 소비자의 인식 수준 비교 연구)

  • The government is emphasizing for a National Food Plan with the aim of establishing a system that can supply healthy and high-quality food to the people. Since consumers' interest and participation are important in vitalizing local food plans, comparative studies on consumer perceptions of food plans are needed. Accordingly, the purpose of the study is to enhance consumers' awareness and understanding of food plans, and to investigate and analyze their perceptions of agriculture and rural areas, and agricultural food consumption behavior according to the level of consumer awareness. As a result of the analysis, consumers were classified into three groups based on the food plan-related awareness score. In terms of marital status unmarried people had a high proportion in the lower group, and married people had a high proportion in the upper group. The higher the perception of food plans, the higher the perception of the importance of eco-friendly or animal welfare foods and the importance of brands when purchasing agricultural and livestock products. The higher the awareness of food plans, the higher the interest of all aspects of food plans. In this study, it can be seen that there were differences in demographic characteristics according to the food plan recognition level groups, in awareness of food plan-related agriculture, and agricultural food product consumption behavior.

  • Marketing trend made change quickly to meet consumers' characteristics in the era of rapid change. This study examined characteristics of storytelling by using literature and material that was thought to be important, and inspected not only effects of storytelling upon brand images of enterprises but also success factors of storytelling marketing. And, the study investigated actual use of the factors by case study at home and abroad to give directions of storytelling marketing of successful catering franchise.

  • The purpose of this study is to identify the effect of the risk communication of the food service industry on consumers' psychological response and attitude. The result is as follows. First, as for the relation between risk communication and information reliance, when the recognition of risk communication stability gets higher, information reliance rose; when the recognition of risk gets higher, information reliance rose with higher recognition of morality. Second, as for the relation between risk communication and risk recognition, when the recognition of risk communication stability gets higher, risk recognition rose; when the recognition of risk gets higher, risk recognition rose with higher recognition of environment and the information reliance rose with higher recognition of morality. Third, as for the relation between the information reliance of risk communication and risk recognition, when the information reliance of risk communication gets higher, risk recognition rose.

A Study on Consumer Confidence, Satisfaction, and Repurchase Intention on Convenience Store Lunch Boxes by Food-related Lifestyle Type

  • This study was to analyze consumer confidence, satisfaction and repurchase intention after categorizing food-related lifestyle among 488 consumers who had experience purchasing convenience store lunch boxes. The data were analyzed with PASW 18.0 using frequency analysis, k-means cluster analysis, crosstabs analysis and one-way ANOVA. According to findings, first of all, types of food-related lifestyle are divided into 4 groups: a type of eating out(11.7%), a type of convenience seeking(18.3%), a type of food indifference(15%), a type of dietary interest(55%). Secondly, the types of food-related lifestyle showed statistically significant difference gender, age, marital status, education, monthly average household income, monthly average allowance, job, monthly average number of lunch box buying, lunch box purchase time zone and average one cost of lunch box buying of socio-economic variables. Thirdly, convenience seeking and dietary interest type showed the highest in consumer confidence and dietary interest type showed the highest level of satisfaction and repurchase intention.
