대형 외식업소 조리종사자 위생인지도와 수행도 및 고객 위생만족도 (Foodservice Employees' Awareness and Performance in Sanitation and Customers' Satisfaction with Sanitation at Large-Sized Restaurants)

  • The purpose of this study was to investigate the foodservice employees' awareness and performance in sanitation and customers' satisfaction with sanitation in large sized restaurants in Korea. Sanitation inspections were carried out in 200 large Korean, Western, Chinese, and Japanese style restaurants, and in buffet-style restaurants in Daegu and Gyeongbuk province. Foodservice employees' awareness of sanitation and customers' satisfaction with sanitation were investigated by interviewing 317 foodservice employees and 205 customers. Results of the inspection of restaurants showed low performance in food handling, employees' hygiene (hygienic) practices, and in cleaning food processing equipment. Scores of the foodservice employees' awareness in Chinese style restaurants were significantly lower than scores of workers in western restaurants. Foodservice employees had low awareness of sanitation procedures used for food storage and cleaning of equipment in Korean, Chinese, and Japanese style restaurants. Foodservice employees had low awareness of equipment cleaning, inspection and food distribution in western style restaurants and of equipment cleaning and food handling in buffet-style restaurants. Foodservice employees at all restaurants had the lowest performance in terms of HACCP. This shows that HACCP application and recording have not yet been properly carried out at restaurants in Korea. Foodservice employees had low performance scores in food handling, vegetable disinfection and disinfection after hand washing. Research on customers' satisfaction with sanitation revealed a low rating of kitchens and foodservice employees at all restaurants. Customers had low satisfaction with servers and kitchen environments in Korean style restaurants with food, tableware, utensils and servers in western style restaurants; with food and kitchen environments in Chinese style restaurants with servers, tableware, and utensils in Japanese style restaurants and with kitchen environments and servers in buffet-style restaurants. Therefore, cleanliness of kitchen facilities and equipment, and hygienic food handling procedures by workers in restaurants are urgently needed.

  • 본 연구는 외식업계 패밀리 레스토랑의 이용고객이 서비스 품질 향상 노력의 결과와 만족에 따라 재방문에 어떻게 나타나는지에 대하여 알아보고 패밀리 레스토랑 이용 고객의 서비스 품질이 선택 속성과 재방문에 미치는 영향을 연구하여 봄으로써 서비스 품질이 선택 속성의 영향을 미치고, 선택에 만족한 고객이 그 레스토랑에 재방문에 미치는 영향 변수들 간의 인과관계 구성과 서비스 품질은 선택 속성과 고객 만족 사이에서 서비스 가치 여부를 부여하고, 고객 만족을 통하여 재방문에 미치는 영향을 연구하고, 서비스 품질은 고객 만족을 통하여 재방문에 미치는 영향과 연구의 조사는 SPSS12.0 프로그램을 분도 분석, 요인분석, 신뢰도분석, 회귀성형분석을 실시하였다. 실증연구의 모형은 연구의 초점을 패밀리 레스토랑 이용 고객은 서비스 품질의 선택 속성이 고객 만족과 재방문 의도에 영향을 미치는가에 중점을 두고 이를 이론적 배경에서 분류하고 실증분석을 통하여 검증하였다. 서비스 품질의 결과변수는 선택 속성, 고객 만족, 재방문 의도로 보고 서비스 품질은 외부 영향 요인으로 패밀리 레스토랑 이용객의 특성에 따라 서비스 품질 만족도의 차이가 재방문에 어떠한 영향을 미치는지 검증하였다.

약선 요리의 구매동기, 선택속성, 구매태도의 구조적 관계 연구 (The Effect of Purchasing Motives and Selective Attributes of Medicinal food on Customer Attitude)

  • 본 연구에서는 약선 요리의 문제점을 도출하여 향후 약선 음식이 나아가야 할 방향을 제시하고, 약선 전문식당의 고객유지 및 고객확보를 위한 마케팅 전략을 수립하여 외식산업의 한 축으로 성장할 수 있는 효율적인 운영방향을 제시하는데 본 연구의 목적이 있다. 영향요인인 구매동기의 성인병예방, 지방함유량, 무공해식품, 식품균형이 재구매의도와 추천의도에 미치는 영향에 관한 가정을 검증한 결과, 약선 요리의 구매동기는 성인병, 지방, 무공해식품 등 건강에 대한 소비자의 욕구를 충족할 수 있는 약선 요리의 수준이 높을수록 재구매의도와 추천의도에 유의적인 영향을 미친다는 검증결과가 나타났다. 영향요인인 구매동기의 성인병예방, 지방함유량, 무공해식품, 식품균형이 매개요인인 만족도에 미치는 영향에 관한 가설을 검증한 결과, 지방함유량을 제외한 성인병예방, 무공해식품, 식품균형이 유의적인 영향을 미치는 것으로 밝혀졌다. 따라서 이러한 연구의 분석결과를 바탕으로, 약선요리와 약선 전문식당 운영에 대한 유용한 정보를 제시하고자 하였다.

서울·경기지역 외식·조리전공 대학생의 중요 대학서비스에 대한 만족도(IPA) 분석 (The Importance-Performance Analysis (IPA) on the University Services of Students Who Majored in Catering Cooling in Seoul and Gyeonggi Provinces)

  • The purpose of this study is to measure the priority items according to attributes and analyze the differences between the importance and satisfaction rates through the IPA for the university service. The results in the study are as follow: First, from the result of the factorial analysis, 5 factors are included First, the possibilities for development of universities, universities' physical environment, Universities' administrative (employee) services, majors' educational services, and majors' laboratory environment. Second, as the total average value for important attributes of the universities is 3.50 and the average value of satisfaction is 2.91, there were significant differences (p<0.001). Third, in the analytical result of IPA, the 1st quadrant includes faster developments than other universities, departments' characterization, etc. The 2nd quadrant includes the convenience to issue all kinds of certificates, kindness of administrative staffs, etc. The 3rd quadrant includes convenience of the procedure to improve unsatisfactory services, development efforts to benchmark advanced universities, etc. Finally, the 4th quadrant includes heavy investments in education and environment, efforts to reflect students' demands, and needs, etc. Even though the importance of research subjects related to university services for these attributes is high, they are not fully satisfied, and there are plenty of dissatisfied students. Therefore, urgent supplementations to increase students' satisfaction rates are important. Form the results of the study, it has been found that urgent efforts to improve satisfaction rates of university students who major in catering cooking in the university services are essential and special plans to build competitive systems which can provide high-quality services are also necessary.

외식업 경영주의 직업만족도 및 경영의식 조사연구 - 경남지 역을 중심으로 - (Job Satisfaction and Business Attitude of Restaurant Owners - Focused Mainly in the Gyeone-nam Area -)

  • The purpose of this research was to analyze the job satisfaction and business attitudes of restaurant owners in order to explore solutions for improving restaurant management. The results were as follows : 1) The motive for starting a restaurant business was vocational aptitude \longrightarrow possibilities \longrightarrow good income : 2) In terms of job satisfaction, most respondents were satisfied with both the work itself and the income. It was also observed that the younger owners were more satisfied with their jobs than the older owners : 3) Increased costs, including labor and food costs, was indicated as the biggest problem in restaurant management. Respondents also perceived labor shortage as one of the most difficult problems. Men were more likely than women to consider the following problems as being more serious: rent, financial problems, taxes, regulation restrictions, menu development and customer complaints. It was found that as the size of the restaurants grew, the respondents perceived the shortage of labor as the hardest part of running a business : 4) Respondents agreed that employing good foodservice workers was the most important part of foodservice management. Owners also believed that they needed more research time for menu and service development 5) To be successful, the restaurant owners paid the most careful attention to food taste. Service, sanitation, and menu development were also emphasized. Respondents stressed the focus on service, good relationships, diligence, and faithfulness in order to be a good restaurant owner. The results of this research suggest that restaurant owners should have more professional conscientiousness to succeed in their own businesses, as well as improve the quality of the foodservice industry. Other important aspects related to the overall improved quality of the foodservice industry are: the continuation of government support, the enlargement of educational opportunities and greater respect for foodservice employees. 조리외식 전공만족도, 진로탐색효율 및 진로탐색행동에 미치는 전공선택동기와 직업가치관 효과 (Effects of Culinary and Foodservice Major Selection Motive and Work Value on the Major Satisfaction, Career Search Efficacy and Career Exploration Behavior)

  • Purpose: This study was investigated the effects of culinary and foodservice major selection motive and work value on the major satisfaction, career search efficacy and career exploration behavior of college students. Methods: Survey comprising total 53 questions including 8 for major selection motive, 8 for work value, 6 for major satisfaction, 20 for career search efficacy, 5 for career exploration was distributed to 400 college students majoring in culinary or foodservice. Frequency analysis, factor analysis, correlation analysis, and multiple regression were conducted using SPSS Statistics (ver. 21.0). Organization of concept and analyses of the relationship between variables based on the advanced study and database is essential. Research model based on the theory and analysis of the extracted data was established; and subsequently, the proof relations between the variables were analysed. Results: The study results indicated that, only intrinsic work values among personal motivation and work values were significant. This is because personal motivation and intrinsic work values are related to subjects' aptitudes, interests, talents, and future professions when students choose their majors. Therefore, interest, abilities, achievement, high understanding, and satisfactory schooling are important factors. Conclusion: This study has newly expanded the research on career search behavior to include psychological factors and cognitive and attitudinal factors. We also determined competitive operations that enhance students' major satisfaction, career search efficiency, and career search behavior.

외식업체에서 제공되는 음식 및 서비스 품질에 대한 고객의 기대도와 만족도에 관한 연구 (A Study on the Customers' Expectation & Satisfaction for Food and Service Quality in Restaurants)

  • This study is to select food offered with higher frequency at restaurants such as hamburger, pizza, chicken, gimbap(boiled rice rolled in laver with seasonings stuffed), and calgooksu(Korean traditional noodles); identify customers' expectation and satisfaction levels on food and service quality and analyze correlation according to each food. The survey was conducted from March 1 to March 24, 2000, by distributing questionnaires. Statistical data analysis was completed using SPSS for t-test, ANOVA, Pearson's correlation analysis. The results of this study were as follows: 1) It is revealed that overall average satisfaction levels on food quality according to individuals' trait came out significantly low compared to their expectation levels, and that balance in nutrition and reasonable prices had problems in relation to food quality. 2) Customers' expectation levels on food quality came out the highest with calgooksu and gimbap, and their satisfaction levels came out the highest with pizza. 3) Customers' overall average expectation levels on service quality showed a very high point, while their satisfaction levels showed a low point with significance. 4) Hamburger was poor in hygiene; pizza showed the highest satisfaction levels over its quality with significance, and calgooksu and gimbap showed very low satisfaction levels over their service quality. 5) Correlation between customers' expectation and satisfaction levels over the nutritional balance and proper taste of the food quality came out significant. 6) Pizza and chicken showed significant correlation with regard to atmosphere, service, and hygiene variables (p<0.01).

교육서비스품질이 교육만족도와 직무유용성에 미치는 영향: 외식조리 관련 계약학과 학생을 중심으로 (The Effect of Educational Service Quality on Educational Satisfaction and Job Availability: Focused on Foodservice related Contract Department Students)

  • The purpose of this study is to investigate the effect of educational service quality on educational satisfaction and job usability. The results of the analysis are as follows. First, based on the theoretical background, factor analysis and reliability analysis were conducted. Five factors of tangibility, responsibility, reactivity, assurance, and empathy were found in the educational service quality. In addition, it was confirmed that there was no problem as a single factor in educational satisfaction and job availability, and these factors showed high reliability and validity. Second, in the relationship between educational service quality and educational satisfaction, all five factors which education service quality factors were found to affect educational satisfaction. The higher the factor of educational service quality, the students will be able to increase their satisfaction with education, which was a degree of satisfaction with the education of contract department. Third, in the effects of educational service quality factors on job availability, tangibility, responsibility, reactivity, and assurance have no effect and empathy affects job availability. In this study, although the factors of education service quality is high except empathy, it is not possible to increase the job availability that leads to successful business results. Fourth, job availability affects educational satisfaction. Therefore, the higher the level of job availability, educational satisfaction will also increase. The following are implications of this study. First, high-quality lectures, hands-on training, and educational programs are needed and values that students pursue must continuously increase. Second, there is a need for measures to improve job availability such as the formation of curriculum related to jobs and the demand for the training courses of restaurants.

  • By focusing on the consumers who have experienced ethnic restaurants in Korea for the last three months, this research intends to figure out relations among utility motivation, pleasure motivation, ostentation motivation and feeling of pleasure and how they effect consumers' emotions and level of satisfaction to find out about more desirable services and characteristics for the consumers in order for the ethnic restaurants to secure more competitiveness, and to inform how they should set their aims for more success. This research limited surveyees to online consumers who have experienced ethnic restaurants in the past three months. The period of survey was from April 25 2007 to May 10 2007. For basic analysis of actual research, SPSS program was used to analyze the Cronbach a and factor analysis. And structural equation modeling analysis was used to analyze correlations and grade of effectiveness of variables proposed in the research hypothesis utilizing Window AMOS 5.0. As a result of this research, utility motivation has effect on the happiness and the other motivation has effect on the enjoyment. Enjoyment effect on the happiness and only happiness effect on the satisfaction. Satisfaction has effect on the re-visit intention. Through this research, it could proposes a strategic direction to which the increasing ethnic restaurants should develop themselves.

외식광고로 인한 인지부조화가 소비자의 구매 만족도 및 구매 후 행동에 미치는 영향 (Effect of Cognitive Dissonance in Franchise Foodservice Advertisement on Customer Satisfaction and Post-purchase Behavior)

  • The purpose of this study was to analyze the post-purchase behavior of customers who experienced cognitive dissonance after exposure to a franchise foodservice advertisement. The study adopted cognitive dissonance theory to explain the dissonance resulting from the combination of advertisements and actual product that consumers received. In detail, the research hypothesized that cognitive dissonance will affect consumers' post-purchase behavior as well as their efforts to reduce dissonance. Exactly 274 questionnaires were used in the analysis. The results showed that more than 80% of respondents were influenced by advertisements when purchasing menus, and 50% were unsatisfied when the provided menu "was not the same as the advertisement shown". It was found that advertisement type did not significantly affect either group that experienced dissonance. In terms of satisfaction, however, the former group showed greater dissatisfaction when dissonance occurred (p<.001). Finally, there was a significant difference between the two groups regarding post-purchase behavior (p<.05). Customers with dissonance were likely to 'express dissatisfaction directly to the store', 'leave negative reviews', and 'participate in negative word-of-mouth'. Thus, the results revealed that cognitive dissonance could significantly influence customer satisfaction and consequently lead to negative post-purchasing behaviors.
