포장과 법률-수산물표준규격

  • 국립수산물품질검사원은 수산물의 전근대적인 유통관행을 개선하기 위해 포장을 표준∙규격화하는 '수산물 표준규격 고시를 만들어 최근 고시했다. 이로 인해 1백 여종 이상의 포장규격이사용되는 등 천차만별이었던 수산물의 포장규격이 종류별로 통일될 것으로 보인다. 검사원은 고시에서 수산물의 표준거래 단위를 3kg, 5kg, 10kg, 15kg, 20kg으로 구분해 규정했고, 포장재질은 골판지 상자나 발포폴리에스틸렌 상자, 그물망 등을 사용하도록 했다. 해양수산부도 앞으로 수산물 규격상자를 만드는 업자들에게 표준규격을 따르도록 권장하고 수산물 표준 규격집을 만들어 어업인, 유통업자들에게 배포하는 한편 고등어 등 일부어종에 시범적으로 표준규격을 도입함으로써 표준규격이 확산될 수 있도록 할 방침이다. 본 고에서는 주요 내용을 살펴보도록 한다.

  • 삼면이 바다인 우리나라의 지리학적 측면에서 수산업의 형성은 자연발생적이라 할 수 있다. 이러한 수산업의 형성과 더불어 수산물을 이용하기 위한 수산물의 가공기술의 발전도 동시에 형성되기 마련이다. 일본과 같은 외국의 경우는 1960년대 부터 수산물의 가공기술이 본격적으로 개발되어 현재 수산물 가공기계 전문업체만 하더라도 수십업체가 되고 종업원의 수도 수십에서 수백명에 이르는 전문업체로 성장하면서 자국의 수산물 가공뿐 아니라 세계의 수산물 가공기계분야에 선두를 선점하고 있다. (중략)

  • 협회 최주섭 부회장은 5월 26일부터 3박4일간 일본 츠키지 농수산물도매시장, 환경박람회 등을 한국해양수산개발원, 수산신문, 자원순환사회연대, 구리농수산물도매시장관리공사, 스티로폴 재활용사업자 등과 함께 민산관 합동으로 수산물상자 사용 및 재활용기술에 대한 현지견학을 다녀왔다. 이번 행사는 선진국의 수산물상자 사용 및 재활용실태를 기초로 하여 귀국 후 관련 전문가 간담회를 개최하여 최근 시설 현대화계획 중인 가락동, 노량진, 구리 농수산물도매시장 등 수도권 농수산물도매시장의 수산물 포장상자의 사용 및 재활용방법에 개선방안을 제시함으로서, 수산물의 유통의 청결 유지, 시장 환경 개선 및 포장상자의 자원화에 기여하고자 하였다.

  • 국립수산물품질검사원은 수산물의 상품성 향상과 유통효율 제고 및 공정한 거래 실현을 위한 수산물표준규격을 지난 1월 22일 고시한 바 있다. 고시는 어종의 표준거래단위, 수산물의 포장치수, 포장재료 및 포장재료의 시험방법 등을 규정하고 있다. 고시에 따르면 포장재료는 식품위생법에 따른 용기.포장의 제조방법에 관한 기준과 그 원재료에 관한 규격에 적합하여야 한다. 고시 된 표준포장규격과 포장재료 중 P.S.대(폴리스티렌대)의 규격은 아래와 같다

School Dieticians' Perception of Seafood Ingredient Pricing in School Food-Service in Seoul (학교급식 수산물 가격 결정에 대한 서울 지역 학교영양(교)사의 인식)

  • The purpose of this research was to scrutinize dieticians' perspective of seafood ingredients prices in school food-service. Suppliers' contract status, seafood ingredient usage and satisfaction, expectations regarding prices of seafood ingredients, and willingness to pay when HACCP is taken into account were studied. Through random sampling, the survey was conducted on 231 dieticians in 11 different educational districts and 12 elementary, six middle, and three high schools. Ultimately, 142 survey responses were taken into account. Data analysis was performed using SPSS v15.0 by descriptive analysis, ${\chi}^2$-test, and t-test. For contracts regarding seafood ingredients, competitive contracts composed 79.7%. Exactly 42.1% responded that contracts were breached, and 60.1% testified that product returns were due to excessive glazing of ingredients. The satisfaction rate of 'hygiene & sanitation of product' was the highest, whereas 'price of product' was the lowest. For 'recontracting intention', 'informal purchasing' showed higher rates compared to 'competitive bidding'. Reflecting upon the six main price factors, 'designation and maintenance of HACCP', 'price of raw seafood ingredients', 'processing costs', 'margin', 'logistic costs', and 'cost of standardizing seafood ingredients', dieticians' perceived 'impact on the anticipated price' on total cost was lower than present counterparts. This implicates that 'impact on the present price' of the six price factors is too excessive, suggesting that many dieticians are unsatisfied with the current prices of seafood ingredients. Furthermore, 52.8% of dieticians stated that the maximum additional payment of HACCP seafood ingredients should be less than 5%. Consequently, this research serves as basic information for reasonable pricing of seafood ingredients and contributes to increased seafood usage by school food-services.

  • Form, increasing the income of fishermen and internationally competitive high value-added seafood merchandising consumers for the purpose of improving the reliability of the food as do Tongyeong Gyeongsangnam-piping of the high quality marine products traceability system for farm businesses. Real-time traceability of the seafood supply chain to manage RFID technologies and related IT technology was introduced in progress. In this study, real-time traceability of fish introduced to the features of RFID technology and to recognize its effects. And efficient distribution system of fish suggests ways to improve and execute simulation about supply chain.

Changes in the taste compounds of Kimchi with seafood added during its fermentation (수산물 김치의 발효과정 중 정미성분 변화)

  • This study was conducted to investigate changes in the physicochemical properties (proximate compounds, reducing sugar, organic acid, ATP and related compounds, and free amino acid) of beachu kimchi (BK) with octopus, abalone, squid and webfoot octopus added during its storage at $4^{\circ}C$ for 35 days. The crude protein content of the seafood Kimchi, 1.98~3.41%, was higher than that of the BK. The organic acid level did not significantly differ in the four kinds of seafood during their fermentation, and their malate and succinate contents decreased while their lactate content increased. The levels of the ATP and related compound substances of the hypoxanthine contents were high but decreased during their fermentation. However, $3.40{\mu}mol/g$ of IMP was detected in the Kimchi with octopus added; $0.67{\mu}mol/g$ in the Kimchi with abalone added; and $1.80{\mu}mol/g$ in the Kimchi with squid added after they were fermented for 21 days, but the same were not detected in the BK. The taurine and ${\gamma}$-amino-n-butyric acid contents of the free amino acids in the seafood Kimchi were approximately two to 10 times and 1.5 to three times higher than in the BK, respectively.

Consumption and Preference of Seafood, and Desires for the Seafood Utilization in School Lunch Program among Middle and High School Students in Korea (중.고등학생의 수산물 이용 음식에 대한 이용실태와 선호도 및 학교급식에서의 요구도 조사)

  • A study on the seafood consumption was conducted from 1902 adolescent students (1110 boys and 792 girls) attending middle or high school to assess the attitude and degree of satisfaction for seafood being served in the school lunch program and ultimately to promote greater seafood consumption. A self-administered questionnaire was used to record the results. The results were as follows: Sixty percent of the respondents appeared to like or not to be reluctant to seafood. The main reasons for favoring seafood were its nutritious effect and taste. On the other hand, the reason for disliking seafood was due to its peculiar smell. In terms of cooking methods, the subjects preferred raw, fried, and grilled seafdod, whereas they disliked salt-fermented, seasoned and stewed dishes. The highly preferred seafood were crab, shrimp, tuna and squid. Only 6.6% of middle school students (MS) and 3.7% of high school students (HS) liked the seafood served in school lunch program, whereas the others responded 'so so'or disliked it. The reasons for disliking seafood being served in school lunch program were poor taste (14.7% of MS, 23.5% of HS), lack of freshness(6.3% of MS, 13.9% of HS) and unattractable cooking methods(3.4% of MS, 11.1% of HS). To promote seafood consumption in school lunch program, subjects anticipated the taste improvement (37.7% of MS, 48.5% of HS), use of a variety of seafood (19.8% of MS, 24.0% of HS) and cooking methods(12.6% of MS, 22.4% of HS). Above results suggested that further efforts are needed to provide preferred cooking methods and seafood items as a way of increasing seafood acceptability.

Analysis on the Factors Influencing Risk Perception and Risk Taking Behavior to Japanese Fishery Products: Focused on Affect Factor (일본산 수입 수산물에 대한 위험인식, 섭취 행동에 영향을 미치는 요인 분석: 감정요인을 중심으로)

  • After Fukushima Daiichi nuclear disaster, Korean government banned to import of Japanese fishery products that comes from north region of Japan. As 'fishery product trade dispute' between Korea and Japan is still in progress, consumers have been threatened their food safety. This study is to examine the factors influencing consumer's risk perception to Japanese fishery products and risk taking behavior. Survey was conducted with 1,500 adult during sep-oct 2012. The result can represent the role of affect with risk perception of Japanese fishery product. People who have negative affect to Japanese fishery products have higher risk perception. Also negative affection can influence to risk taking behavior. However the degree of fatalism is not significant factor to risk taking behavior.

Estimation of the carryover effect of Japanese radiation-related news on domestic seafood consumption (일본 방사능 관련 보도가 국내 수산물 소비액에 미치는 이월효과 추정)

  • The Fukushima nuclear power plant water spill caused by the Great East Japan Earthquake in March 2011 raised fears about radiation exposure through consumption of radioactively contaminated seafood. The Korean government banned importing agricultural and fishery products from eight prefectures near Fukushima, but the related news were continuously reported partly due to the WTO dispute with Japan, which seems to have aggravated consumers' anxiety about seafood. In this study, data on daily purchases of products for three years (2018-2020) were collected and the effect of Japanese radiation-related news on domestic consumers' purchases of seafood was estimated using a polynomial lag distributed model. As a result of the analysis, it was found that radiation-related news had a statistically significant negative effect on the purchase of seafood on the 5th and 6th days after exposure to consumers through the media. It captures the carryover effect in which consumers' perceptions are reflected in the purchase of seafood after exposure to related news.
