Influence of Japanese Restaurant Menu Select Attribute on Consumer Preferences and Satisfaction - Focused on Mediating Effects of Customer Preferences - (일식 레스토랑 이용 소비자들의 메뉴선택속성이 소비자 선호도 및 만족도에 미치는 영향에 관한 연구)

  • This study was conducted to find the influence of menu select attribute on consumer preferences and satisfaction as perceived by Japanese restaurant consumers. Survey method was employed and distributed during January 1 to January 31, 2016 from who have an experience in Japanese restaurants located in Busan and Gyeongnam. First, the quality of the menu (${\beta}=.444$, p<.001), menu design(${\beta}=.425$, p<.001), select menu motivation (${\beta}=.147$, p<.001) positively impact on consumer preferences. Second, consumer preference significantly and positively influence on customer satisfaction. Third, the quality of the menu (${\beta}=.650$, p<.001), menu design(${\beta}=.120$, p<.001), select menu motivation (${\beta}=.263$, p<.001) positively impact on consumer satisfaction. Finally, partial mediating effect of consumer preference was identified between select attributes and consumer satisfaction.

A Study on the Menu Selection Factors of an Italian Restaurant on Satisfaction (이태리 레스토랑의 메뉴선택 속성요인이 만족도에 미치는 영향 연구)

  • The purpose of this study is to examine the menu selection attributes in Italian restaurants located in Jeonju area and analyze their customers' using patterns and favorite menu items in each menu section. The results are as follows. First, in terms of significance of choosing a menu item in Italian restaurants, the most important factors are defined as health management factors, service management factors, food management factors, and menu management factors. After the verification of satisfaction, there are significant differences in the health management factors. Second, in terms of Italian restaurant visiting patterns, the recognition level of Italian food was positive, number of visits per month was averagely once or twice a month, major companions were family members, main purpose was to having meals, and information of the food was acquired by word of mouth. Third, in each menu section, the most popular dishes were the one using mozzarella cheese in the antipasto, asparagus cream soup in the soup, carbonara in the pasta, the pizza topped with mozzarella cheese, salami, black olive, and tomato sauce in the pizza, fresh mozzarella cheese tomato salad in the salad, beef tenderloin steak and pan-fried halibut in the main dish, fresh fruits and tiramisu in the dessert. For future studies, there should be various researches and analyses for significant factors when selecting menu by each segment and group from the entire sample.

  • The objective of this study is to find out how well-being influences consumer behavior of dining-out. Based on this objective, this study covers plans for improving marketing strategies, which contributes to menu development and purchase behavior of consumers. This study consists of two parts : a research based on the review of the literature and empirical study methods. The finding of the study would also be valuable for the development of management of advertising strategies to be implemented in the foodservice industry. Based on the survey statistics, Program SPSS 12.0 and Amos 5.0 were used in order to look into a casual relationship among group units. The findings of the demonstration analysis are as follows. Most of previous research regarding well-being in local study is psychological well-being dealt with individual health and psychological satisfaction. On the other hand, social well-being is likely to focus on public relation rather than private concerns. The fact that the term 'well-being' have not been definitely defined yet was a problem in research. Also, well-being should not be recognized as a temporary trend but as a general trend. Therefore, it is necessary to understand consumer behavior which is changeable as the circumstance of the foodservice industry changes.

  • This study analyzed the priority of decision-making attributes considered as the customers select the family restaurant with Analytic Hierarchy Process, which is the method for quantitative analysis. The result of analysis revealed that the food factor in the first stage of evaluation attributes was the most important and in the second stage, an atmosphere factor of place, an affiliated card factor of promotion, a taste factor of food and a kind attitude factor of employee were important respectively.

Effects of Service-environment and Waiting Time on Customers' Quality Perception in Fast-food Type Restaurants (패스트푸드 레스토랑의 서비스 환경과 대기시간이 고객의 품질인지에 미치는 영향)

  • Service environments are known to have effects on quality recognition in fine-dining and family type restaurants. The current study explores that the effects are also likely in the fast-food type ones. To verify the research method factor and reliability analysis of SPSS version 18.0 are applied. The program is also used to test the influences among variables. With multiple regression analysis the study finds that there is a significant effect of service environment on quality recognition in fast-food type restaurants. The study also finds that employees' uniform and cleanliness are more influential than waiting time which is generally known as a key factor in fast food service restaurants.

An Analysis of Perception Gap on the Interior Space and Foodservice Quality of Italian Restaurants between Customers and Personnel (이태리 레스토랑의 실내공간과 음식서비스 품질에 대한 고객과 종사자의 인식차이 분석)

  • The purposes of this study are to analyze the gap between foodservice personnel and customers, to urge foodservice providers to reconsider by identifying the problems in service delivery for customer satisfaction, and to deduce the recognition for foodservice quality improvement. The results of this study can be summarized as follows: the average perception score of personnel(3.78 out of 5) was higher than that of customers(3.79). In particular, the customers' perception of 16 attributes, which included 'overall lighting in the restaurant', 'creativity of the food', 'freshness of the ingredients' and so on, was significantly lower than personnel's. Both service providers and customers perceived that 'meal quality' was the highest and 'table setting' was the lowest among the 4 factors, but there was significant difference on 'interior space(p<.001)', 'meal quality (p<.01)', 'convenience(p<.01)' between the two groups. As a results of the quadrant analysis, 'Q3. dishes and bowls', 'Q6. cleanliness of the tables', 'Q12. display of the food', 'Q17. comfort of the interior space', 'Q18, room temperature', 'Q23. overall lighting in the restaurant', 'Q30. arrangement of the furniture and accessaries' were categorized into Quadrant A, all of which showed dissatisfaction of the customers due to the personnel's lower perception. Therefore, service providers have to perceive the gap between the two viewpoints and grant priority to these attributes to improve foodservice quality.

A Study on Wine Selection Attributes by Western Food Menu - Based on Western Cooking Methods - (서양요리 메뉴에 따른 와인 선택속성에 관한 연구 - 서양조리방법을 중심으로 -)

  • As the living standards are improving, the interest in wine is getting higher and its consumption is increasing. Accordingly, this study is designed to find out how wine is selected depending on cooking methods when a customer selects wine by Western menu. For the purpose of this study, the customers who have used Western restaurants in hotels in Seoul area were selected for the survey from November 1 to November 30, 2011, and 177 copies of the questionnaire were used for analysis. As a result of analysis regarding the difference in satisfaction with wine selection by sex, women were analyzed to have a higher intention than men. In the satisfaction of customers by age, the older people responded to generally have a higher degree of satisfaction. In the satisfaction of customers by monthly income, the ones who earn more than 11 million won a month were identified to have a higher degree of satisfaction than those who earn 3 million won a month.

Effect of Restaurant Meal Replacement Product Selection Attributes on Brand Image and Satisfaction (RMR(레스토랑간편식) 상품의 선택속성이 브랜드이미지, 만족도에 미치는 영향)

  • This study aims to investigate the relationship between the factors of RMR product selection attributes, brand image, and satisfaction as the interest and frequency of use of RMR products of dining out consumers increase recently. Convenience sampling was used for consumers with experience in using RMR products launched in catering companies and restaurants. The investigation period was conducted for about 20 days from August 10, 2020. The final 291 copies were used for research analysis, and the SPSS 21.0 statistical package program was used for hypothesis verification. As a result of the analysis, the hygiene (��=.160), menu (��=.203), and packaging (��=.291) of Hypothesis 1 had a significant effect on reliability. Hypothesis 2's menu (��=.270), convenience (��=.201), and packaging (��=.195) were found to have a significant effect on differentiation. The reliability (��=.328) and differentiation (��=.443) of the brand image of Hypothesis 3 were found to have a significant effect on satisfaction (��=.428). Hygiene (��=.388), menu (��=.229), and convenience (��=.243) of Hypothesis 4 were analyzed to have a significant effect on satisfaction. Lastly, this study is expected to be provided as basic research data related to RMR products, and is intended to be presented as a theoretical basis for the use of marketing and direction in RMR product development of food service companies and restaurants.

The Antecedents of Consumer's Perceived Value and Repurchase Intention in the O2O Food Delivery Service Value Chain (O2O 음식배달서비스에서 있어서의 소비자의 지각된 가치와 재구매 의도에 대한 선행요인 연구)

  • In this study, we try to discover some success factors, for the entire value chain of the O2O food delivery industry in China, from ordering to delivery. We study the influence of three aspects of the value chain, namely, (1) the mobile platform, (2) the restaurant and food and (3) the delivery service, on the perceived value and repurchase intention of customers. Using structural equation modeling, we develop a structural research model with seven sets of hypotheses relating various independent variable constructs (platform, restaurant, and delivery) and dependent constructs (perceived value and repurchase intention). We find that usefulness of mobile app, the food condition and the availability of offline restaurants were significant antecedents for perceived value and repurchase intention. In addition, fair pricing was a significant antecedent for repurchase intention.

Brand Positioning Strategy of Franchise Family Restaurant (프랜차이즈 패밀리레스토랑의 브랜드 포지셔닝에 관한 연구)

  • The purpose of this study is to suggest positioning strategy according to franchising family restaurant brands. Discriminant Analysis was utilized to suggest methodological framework that seeks to find their relative positions in the family restaurant brands. As a result, the results show that five factors (employee service, physical environment, marketing, accessibility, and food quality) were extracted from Exploratory Factor Analysis that contains twenty three questions related to service quality of family restaurant. Second, Discriminant Analysis revealed that three factors out of five including employee service, physical environment, and accessibility showed the highest discriminant power. Based on the three factors, positioning maps were made and the location of four brands were identified. Third, service quality, satisfaction, and willingness had a significant influence on revisit intention.
