A study on eating habits of the Buddhist Priesthood in Seoul and Kyongnam -II. Staple food and side dish- (서울, 경남지역 승가(僧家)의 식생활(食生活)에 관한 조사연구 -II. 주식(主食)과 부식(副食) 중심으로-)

  • The purpose of this study was to understand dietary culture of the Buddhist priesthood in Seoul and Kyongnam. This survey was carried out through questionnaries for menu, pretreatment, seasoning and recipe and the subjects were 26 temples and hermitages. Foods of the Buddhist priesthood were divided into staple food and side dish. The results of this study can be summarized as follow: 1. Staple foods of the Buddhist priesthood divided into cooked rice, gruel, noodle and Sujebi. Main materials of cooked rice and gruel were rice, noodle and Sujebi were wheat flour. Menues of staple foods were used white cooked rice, white gruel, wheat noodle and wheat Sujebi, respectively. Soups of noodle and Sujebi were used mushroom and seaweed. 2. Side dishes of the Buddhist priesthood divided into soup(국), stew(찌게), hard-boiled food(조림), steaming food(찜), raw vegetables(생채), cooked vegetables(나물), roast vegetables(볶음), pan fried food(전), baked(구이), wrapped rice(쌈), raw fish(회), Mook(묵). Vegetables divided into green-steam vegetables, edible roots, fruit vegetables, edible mountain herbs and seaweeds. A great difference of used for vegetables had been observed kinds of side dishes. Main materials of wrapped rice, raw fish and Mook was lettuce, raw mushroom and acorn, respectively. Seasonings were red pepper, garlic, green onion and sesame oil.

Analysis of the seed metabolite profiles and antioxidant activity of perilla varieties (대사체분석 기술을 이용한 들깨 종자의 품질 특성 및 항산화 효과)

  • Perilla seed oil is considered to be a rich source of omega-3 fatty acids and phenolic compounds, which have various health benefits. To improve its oil content and nutritional quality, 29 varieties of perilla have been bred, but their nutritional qualities, including the fatty acid and phenolic compound contents, have not been investigated. Therefore, in this study, the seed metabolite profiles, including the fatty acids, of these 29 perilla varieties were analyzed. Palmitic acid, stearic acid, linoleic acid, linolenic acid, rosmarinyl glucoside, and rosmarinic acid were identified as the major metabolites of perilla. The fatty acid contents were higher in the Okdong, Deulsaem, Daesil, Joim, Yeupsil, Danjo, and Joongmo5103 varieties (in order). However, the total phenolic compounds and antioxidative activities of Okdong and Deulsaem were relatively low, whereas the fatty acid and total phenol contents of Joim, Yeupsil, and Danjo were relatively high. These results may be useful for comparing the nutritional quality of the 29 perilla varieties.

Quality Characteristics of Perilla frutescens Cultivars According to Different Sowing Dates (파종 시기에 따른 들깨 품종별 품질 특성 변화)

  • The present study investigated the quality characteristics of Perilla frutescens Britt. seed compounds according to the cultivar and sowing dates. In the present experiment, five Perilla cultivars, namely 'Dayu', 'Deulsaem', 'Deulhyang', 'Baekjin', 'Sodam', were planted on three different dates, including May 30, June 20, and July 10. The contents of key compounds and phenols varied depending on the cultivar and sowing date. With the delayed sowing time, the days to flowering and maturity of the culitvar decreased, while the seed weight and hardness increased. Crude protein content increased but crude lipid content decreased with the delay in the sowing time. However, there was no interaction of different sowing dates with the fatty acid content, which remained stable compared with the other values. Overall, the total polyphenol content was higher in Perilla seeds sown on May 30.

Analysis of nutrients and antioxidants of sterilized and non-heat-pressed perilla oil (살균 및 비가열압착한 들깨오일의 영양성분 및 항산화 분석)

  • In this study, the nutritional properties of sterilized and non-heat-pressed raw perilla oil (SRPO) were studied and its potential as a functional food was evaluated. The copper, cobalt, and calcium levels were high in sterilized and SRPO. The total polyphenol content and ABTS radical scavenging activity were the highest in SRPO, whereas nitrite scavenging activity was the highest in 45℃ cold pressed perilla oil (CPPO). The above results confirmed that sterilized and non-heat-pressed perilla oil had high mineral and total polyphenol contents, as well as ABTS radical scavenging activity and nitrite scavenging ability. The peroxide value of SRPO decreased as the storage period increased, and the acid value of low-temperature pressed perilla oil over 65℃ (LPPO) significantly increased. This work also provided an opportunity to develop a new method for manufacturing perilla oil, and it is hoped that these experiments will form a basis for the commercialization of perilla oil.

Flowering Response to Light Intensity and Night Interruption in Perilla (광강도와 야간조명에 따른 들깨의 개화 반응)

  • This study was conducted to light intensity and night interruption on leaf production in perilla. Using two cultivars ; og-dong and Yeup-sil. The present studies were conducted to investigate effect of the light intensity and night interruption for prolongation of vegetative growth by flowering inhibition in the National Honam Crop Experiment Station, R. D. A, Iri, Korea. The results are summarized as followes, varietal differences of days to flower initiation were not significant by the light intensity and night interruption, however differences of days to flower initiation light intensity or night interruption treatment were higly significant. Flowering of perilla was prolongated in high light intensity and in long night interruption. Between the factors treated flowering of perilla was more influenced by light intensity than night interruption. Days to flower initiation of perilla were light intensity(0.5∼1 Lux) in 30 mins night interruption, however 3∼10 light intensity in 60 mins night interruption and 30∼100 Lux light intensity in 10, 30, 60 mins night interruption treatment were not flowering. Plant height, leaf area and dry weight of perilla were the highest in 30∼100 Lux light intensity treatment than in the other treatments. The results would be avaliable establish year-round production methods for low cost of perilla leaf.

Antioxidant and Anti-aging Activities of Ethanol Extracts from Defatted Perilla frutescens (들깨박 추출물의 항산화 및 항노화 효과)

  • Purpose: This study was conducted to investigate the antioxidative, collagenase and elastase activities of defatted perilla ethanol extracts. In addition, the possibility of its use as a functional cosmetic material has been studied. Methods: In order to investigate the antioxidant function of the perilla extract, electron spin resonance (ESR) was measured with a spectrometer by analyzing the scavenging ability of diphenyl-β-picrylhydrazyl (DPPH) free radicals. Results: The antioxidant activity of DPPH free radical scavenging activity of the perilla extract was about 68% at 85 ㎍/ml, 85% at 20 ㎍/ml, 90% at 40-100 ㎍/ml, and showed antioxidant ability. The inhibitory activity of collagenase was increased to 4.1% at 20 mg/ml, 12% at 40 mg/ml and 26.7% at 100 mg/ml. The inhibitory activity increased in proportion to the concentration. The inhibitory activity of elastase was increased to 3.8% at 20 mg/ml, 15% at 40 mg/ml, 28% at 80 mg/ml and 35.7% at 100 mg/ml. Conclusions: These results suggest that the ethanol extract of perilla may inhibit the antioxidant activity and the activity of collagenase and elastase to improve the skin aging and wrinkles.

Growth and Grain Yield of Winter Wheat (Triticum aestivum L. 'Jokyung', 'Keumkang') under Long-term Multi-cropping Systems on the Paddy Fields (논 이용 밭작물 중심 다모작 작부체계에서 밀 품종별 생육 특성과 수확량 변화)

  • 최근 밀(Triticum aestivum L.) 소비량이 꾸준히 증가하고 있어 국내 밀 자급률 증대를 위한 노력이 필요하다. 그러나 우리나라는 작물을 재배할 수 있는 농경지가 한정되어 있어 벼 수확 후 휴경 논을 이용하여 겨울철에 밀을 재배하거나, 하계 소득 작물과 연계하여 겨울철에 밀을 생산할 수 있는 방안을 모색할 필요가 있다. 본 연구에서는 남부지역 평야지 논을 이용하여 밭작물 중심 다모작 작부체계를 제시함과 동시에 밀을 재배하여 생육 특성과 수확량 변화를 살펴보았다. 단위면적당 수수 및 종실 수량은 작부이력에 밭작물이 포함된 다년 다모작 작형(들깨-IRG-참깨-밀, 콩-IRG-참깨-밀)이 다년 벼-밀 이모작이나 벼-IRG-참깨-밀 다모작에 비해 많았으며, 특히 들깨와 콩이 포함된 작부체계에서 많았다. 밀 품종 간 비교에서는 금강밀이 조경밀에 비해 출수기와 성숙기가 2~3일 빨랐지만 종실 수량은 100 kg/10a 이상 적어, 동일한 환경조건에서 조경밀이 금강밀에 비해 곡물 생산성 측면에서 유리할 것으로 보인다. 더군다나 조경밀은 조숙 다수성 경질밀로 전국에 재배가 가능하고, 단백질 함량이 높고 강력분의 특성을 보여 제빵용으로 많이 활용되고 있다. 본 연구에서 조경밀은 단백질이 10% 이하로 낮고 아밀로스는 28.4%로 높은데 반해, 금강밀은 단백질이 11.0%로 높고 아밀로스는 26.6%로 낮아 제과·제빵에 있어서, 금강밀이 좀 더 유용할 것으로 보인다. 밀가루의 Falling number는 조경밀과 금강밀 모두 350초 이상으로 높아 수발아로 인해 전분의 분해가 일어나지 않은 건전한 상태의 곡립임을 알 수 있다. 그리고 gluten 함량도 조경밀과 금강밀 모두 유사하게 높았으며, gluten 지수는 금강밀이 좀 더 높았다. 이상의 결과를 토대로 밀 수확량을 증가시키기 위해서는 기존의 벼-밀 이모작 보다 들깨-IRG-참깨-밀이나 콩-IRG-참깨-밀 등의 다년 다모작 작형이 좀 더 유리할 것으로 보인다.

Quality Characteristics of Korean Domestic Wheat Flours Produced Under Double Cropping System on the Paddy Fields (남부지역의 논에서 이모작 작부체계를 통하여 생산한 국산밀의 품질 특성)

  • 본 연구에서는 남부지역 논의 이모작 작부체계로부터 생산한 국산밀의 품질 특성을 살펴보았다. 벼 및 이의 대체작물(검정콩, 참깨, 들깨)과 연계한 작부체계별로 생산된 국산밀의 제분율은 모든 토양에서 70% 이상으로 높았으며, 밀가루의 색상은 전작 작물의 종류에 따라 색도(L*, a*, b*) 값과 백색도 지수가 변화하였다. 특히, 흰색의 정도를 나타내는 L*값과 백색도는 벼 전작 토양에서 수확한 밀에서 높았다. 그러나 다량 및 미량 영양소 함량은 벼 전작물 토양에서 수확된 밀에서 낮았고 대체 작물을 전작한 토양에서 생산한 밀에서 대체로 높았다. 다량 영양소 중 P와 Mg의 함량과 미량 영양소 중 Zn와 Cu의 함량은 검정콩을 전작한 토양에서 수확한 밀에서 특히 높았다. 국산밀의 회분, 단백질, 아밀로스와 손상전분 함량은 각각 0.45-0.59%, 7.7-9.5%, 22.3-24.0%와 5.0-5.9%이다. 국산밀 중에 조경밀은 단백질 함량이 다른 품종에 비해 높고 질이 우수하여 제빵용으로 이용되고 있는데, 본 연구에서는 작부체계에 관계없이 전체적으로 10% 이하로 낮은 특성을 보였다. 그나마 검정콩을 전작한 토양에서 수확한 밀에서 9.45%이며, 벼를 전작한 토양에서는 8.0% 이하로 극히 낮았다. 또한 SDS-침전가도 검정콩 전작 토양에서 수확한 밀에서 높았으며, 회분 함량은 0.6% 이하로 1등급에 해당되었다. 논토양에서 참깨나 콩, 들깨 등의 벼 대체 작물들의 전작은 토양의 물리화학적 특성을 개선하고 제빵공정에 좀 더 유리한 고품질의 밀을 생산하는 데 이바지할 수 있음을 보여준다. 그러나 검정콩-밀 작부체계의 생육일수(344일)가 벼-밀(331일), 들깨-밀(337일), 참깨-밀(310일) 보다 길어 앞뒤 작물의 작기 연결성에 있어서 여유가 없었으며, 기상환경의 변화에 따라 검정콩의 수확시기가 늦어지게 되면 밀 파종 시기와 겹칠 수 있는 우려가 있다. 차후에 시비 기준을 달리한 조건에서 밀의 생산성 증대와 더불어 최고 품질의 밀을 생산할 수 있는 체계를 확립하고자 한다.

Comparison of Extraction Efficacy for Endoparasitic Nematodes Pratylenchus vulnus from Roots (내부기생성선충 Pratylenchus vulnus 분리 효율 비교)

  • To speed up the extract of endoparasitic nematodes from roots, four extraction methods with or without root-grinding were compared; 1) immersion, 2) immersion + Air, 3) Oostenbrink dish, and 4) Mistifier. The experiments were conducted for nine days by using perilla roots infested with Pratylenchus vulnus. Root-lesion nematodes continuously extracted from perilla roots during the experiments and as much as 3-10% in 9th days. The total number of nematodes extracted from 2 g of perilla root in nine days were varied among methods (379-1,824 nematodes); the most nematodes were extracted by root grinding + immersion + air (1,824) and the root-grinding + mistifier method (1,349) (p = 0.05). In the first two days of extraction, root-grinding + mistifier extracted the most nematodes (725 nematodes), followed by root-grinding + immersion + Air (555 nematodes), and root-grinding + Oostenbrink dish (421 nematodes). Root-grinding effected as much as 16-108% more nematodes extraction when compared to without root-grinding (p = 0.01).
