Comparison of Fat Content and Fatty Acid Composition in Different Parts of Korean Beef and Pork (한우육 및 돈육의 부위별 지방 함량 및 지방산 조성 비교)

  • In this study, the fat contents and fatty acid compositions of Korean beef (tenderloin, loin, strip loin, chuck roll, foreshank, top blade, top round, brisket point, center of heel, and ribs) and pork (tenderloin, loin, shoulder loin, foreshank, jowls, ham, eye of round, belly, skirt meat, and ribs) parts were investigated. The fat contents of Korean beef ranged from 5.25% (top round) to 35.94% (brisket point). The major fatty acids were palmitic acid (C16:0), stearic acid (C18:0), and oleic acid (C18:1, n-9); especially, oleic acid was the most abundant. Loin had similar fat content as ribs, but there were some differences in fatty acid composition. Linolenic acid (C18:3, n-3) and linoleic acid (C18:2, n-6) were the most abundant fatty acids in strip loin and ribs (38.63 mg/100 g and 564.71 mg/100 g, respectively). Arachidonic acid (C20:4, n-6) was only found in strip loin, top blade, and ribs, and its amounts were in the following order: ribs (2.50 mg/100 g)> strip loin (1.33 mg/100 g)> top blade (1.19 mg/100 g). Total trans-fatty acid (TFA) content of top round was the lowest among all parts, and the ratio of unsaturated fatty acid (UFA) was the highest in foreshank. The fat contents of pork ranged from 4.16% (tenderloin) to 18.47% (belly), but there was no significant difference in fat content between tenderloin, loin, foreshank, ham, and eye of round. The major fatty acids were palmitic acid, stearic acid, oleic acid, and linoleic acid, and their amounts were in the following order: oleic> palmitic> linoleic> stearic acid. Docosahexaenoic acid (C22:6, n-3) was only detected in belly, and the TFA content of belly was the highest. The ratio of UFA was highest in ham. These findings will be useful in the development of standardization data on fatty acid composition in different parts of Korean beef and pork.

Physical Characteristics of Seasoning Pork during Aging 8t Cold Temperature (저온 숙성에 의한 양념 돈육의 물리적 특성)

  • This study was carried out to evaluate the physical characteristics of seasoned pork using low fat loin portion. The samples, pork loins were cut by the shape of cube $(5\times15\times5cm)$ and seasoned pork with Korean traditional sauces such as soy sauce base (T1), red pepper sauce base (T2), and soybean sauce base (T3) in the same proportion of meat seasonings, respectively. The seasoned samples were aging at $1\pm1^{\circ}C$ for 28 days. pH of seasoned pork with soybean sauce and red pepper sauce were higher compared to seasoned pork with soy sauce at 1 day of aging and pH of all treatments were not much changed during aging periods. Shear force was decreased in seasoned pore with soybean sauce and red pepper sauce, however seasoned pork with soy sauce was increased during aging periods. Water holding capacity (WHC) was decreased in seasoned pork with soy sauce and red pepper sauce, but seasoned pork with soybean sauce was maintained during aging periods. Cooking loss of seasoned pork with soy sauce was higher than other treatment. Myofibrillar fragmentation index (MFI) or all treatment was increased during in Periods (T3>T2>T1). Tenderness or seasoned pork could be improved by the soybean sauce and red pepper sauce. Both soybean and red pepper sauce were decreased shear lone and increased MFI and WHC of seasoned pork Tenderness of seasoned pork were improved by the soybean sauce and red pepper sauce.

Effects of Floor Type and Increasing Market Weight on Performance and Pork Quality of Finishing Pigs (돈방바닥과 출하체중 증가가 비육돈의 생산효율과 돈육품질에 미치는 영향)

  • This study was conducted to determine the effect of floor type of finishing building and increasing market weight of finishing Pigs on Performance, carcass traits and pork quality. Four hundred and forty-four finishing pigs were confined and administered with different floor type(concrete slat and bedded with sawdust) and increasing market weight(110kg to 130kg) of finishing building. The result obtained from this study were summarized as follows; 1. There was no significant difference between the floor type of finishing building in the body weight gain, feed intake and gain per feed. And also increasing market weight of finishing pigs was not affected the performance of finishing pigs. 2. Increasing market weight of finishing pigs affect the carcass yield. The market weight at 130kg showed more amount of each cut of carcass, especially the belly portion was higher, but backfat thickness was not different. 3. Carcass traits did not show any significant difference due to the difference of market weight of finishing pig and floor type of finishing building. 4. There was no significant difference in the chemical compositions and meat color of pork loin between the floor type of finishing building and increasing market weight of finishing pigs.

Effect of Heating Rates on the Thermal Denaturation of Pork Loin Muscle (가열속도가 돈육 등심 근육의 열변성에 미치는 영향)

  • The objective of this study was to evaluate the effect of different heating rates on the thermal properties of pork loin muscle by DSC. Pork loin muscle was subjected to programmed heating at the following heating rate: 5, 10, 20, 30 and $40^{\circ}C/min$. Peaks were progressively shifted to right side as the heating rate was increased. $T_0$ was $50.39^{\circ}C$ at $5^{\circ}C/min$ and it was increased to $57.45^{\circ}C$ at $40^{\circ}C/min$ (p<0.05). Total enthalpy was 3.52 J/g at $5^{\circ}C/min$ and total enthalpy was increased to 3.60, 4.14, 4.54 and 4.61 J/g by degrees at heating rate 10, 20, 30 and $40^{\circ}C/min$ respectively.

The Effect of Feeding Houttuynia cordata Thunb on Cholesterol and Cholesterol oxides of Pork Lion's (어성초 분말의 혼합 급이가 돈육의 cholesterol 및 산화물에 미치는 영향)

  • The study was designed to investigate the influence of feeding Eosungcho(houttutnia cordata Thunb) on the meat quality of porks. Experimental groups were divided into control group(C), 5%(T1) and 10%(T2) Eosungcho powder feeding group, and than administered for 12 weeks. And then pork's loins were storaged at $4^{\circ}C$, for 23 days after vaccum packed. TBARS was increased(P<0.05) during storage days in all samples, while it's contents were lower Eosungcho feding groups than control group. Total cholesterol contents of pork's loin, were $48.9{\pm}0.2\;mg/100\;g$ in control group, $39.1{\pm}0.2\;mg/100\;g$ in T1 group and $37.8{\pm}0.3\;mg/100\;g$ in T2 group. 4 kinds of cholesterol oxides($7{\beta}-hydroxycholesterol$, 19-hydroxycholesterol, ${\alpha}-$ and ${\beta}-epoxide$) detected in pork's loin. Cholesterol oxides concentration of pork's loin was increased during storage and lowest in T2 group.

Effects of Wrap and Vacuum Packaging on Shelf Life of Chilled Pork (랩포장과 진공포장이 냉장돈육의 저장성에 미치는 영향)

  • 랩포장 및 진공포장이 냉장 돈육이 저장성에 미치는 영향을 조사하기 위해 돈육의 등심부의를 랩포장 및 진공포장한 후 냉장저장하면서 저장기간에 따른 세균수,휘발성 염기질소, pH, 보수력 드립감량, 가열감량 및 경도의 변화를 측정하였다. 랩포장의 경우 일반세균수는 저장 10일에 2.0$\times$$10^{7}$ CGU/㎤의 수준에 달하였고, 휘발성 염기질소 함량은 저장 15d일에 26mg%로서 식육의 부패수준인 20mg%를 초과하였으며 , pH는 저장 7일 이후 급속하게 증가되어 저장 10일에 5.98의 수준이었다. 반면에 진공포장의 경우에는 일반세균수가 저장 30일에 7.7$\times$$10^{6}$ CGU/㎤의수준에 달하였고, 휘발성 염기질소 함량은 저장 30일에 19.8mg%로서 부패수준인 20mg%에 근접하였으며, pH는 저장기간이 경과됨에 따라 매우 완만하게 증가되어 저장 30일에 pH5.75의 수준이었다. 보수력은 저장 1일에는두 시험구가 75.0%의 수준으로 비슷하였으나, 저장기간이 경과됨에 따라 랩포장이 진공포장에 비해 급속하게 증가되었다. 드립감량과 가열감량은 저장초기인 저장 7일까지는 진공포장이 랩포장에 비해 다소 높은 수준이었으나 그 이후에는 랩 포장이 높은 수준이었다. 경도는 두 시험구 모두 저장 1일에 가장 높았고, 저장 기간이 경과됨에 따라 점차 저하되었으며, 랩포장에 비해 전공포장이 비교적 완만하게 저하되었다.

Effects of Acetic Acid on the Microbiological and Physicochemical Properties of Fresh Pork (초산용액 분무 처리가 신선돈육의 저장성에 미치는 영향)

  • This experiment was carried out to investigate the shelf life of fresh pork by spraying 2%(v/vf) acetic acid solution. Both treated with acetic acid and untreated pork were stored at $4^{\circ}C$. The spray of acetic acid solution was effective on growth inhibiton of aerobic and coliform bacteria. The pH, volatile basic nitrogen contents, and thiobarbituric acid value of fresh pork treated with acetic acid were lower than untreated pork during storage. Meat color was more darkened immediately after acetic acid treatment, but untreated pork was more darkened after 2 days storage.

  • 해동육은 신선육에 비해 냉장저장 중 지방산화와 관계없이 육색소 산화가 촉진된다. 그 이유는 냉동 및 해동이라는 외부 및 물리적인 충격에 의해 근육세포 내에 증가된 HADH가 MetMb 형성에 영향을 미친 결과로 사료된다.

Effect of Feeding of Unshiu Orange Byproducts on Nutritional Composition and Palatability of Crossbred Pork Loin (온주밀감 부산물 급여가 교잡종 돈육 등심의 영양성분 및 기호성에 미치는 영향)

  • These studies were carried out to investigate the possibility for utilization of waste articles and the production of function characteristics Pork by feeding unshiu orange byproducts. The samples consisted of the pork not fed with unshiu orange byproduct (TP-0), the pork fed with 3$\%$ and 5$\%$ unshiu orange byproduct during growing and finishing period, respectively (TP-1), and the pork fed with 6$\%$ and 10$\%$ unshiu orange byproduct growing and finishing period, respectively (TP-2). The moisture, crude protein, crude fat and crude ash were not significantly different among samples. It was found that TP-1 had the highest calorie. The cholesterol content was lowest in TP-2 (p < 0.05). It was found that TP-2 had the lowest Na among minerals. Vitamin $B_{1}$ and $B_{2}$ were not significantly different among samples. The total amino acid contents of TP-0, TP-1 and TP-2 were 18.86$\%$, 20.03$\%$ and 20.44$\%$, respectively. Total free amino acid and saturated fatty acid vs. unsaturated fatty acid of Pork loins were not significantly different mong samples. The sensory scores were not influenced by feeding of unshiu orange byproduct.
