Characterization of Formation of Fructose during Acid Hydrolysis and Enzyme Treatment of Fructose Saccharides (과당 탄수화물의 산가수 및 효소적 분해 특성연구)

  • Acid- and enzymatic hydrolysis properties of two fructans(inulin and levan) and their oligofructoses has been investigated. At pH 1, the initial fructose release rate differs and is rapidly hydrolyzed in the order of levan oligosaccharide and inulin oligosaccharide, levan, inulin. At pH 4.5, 7 and 14, no or little amount of fructose are found from four samples. At the presence of inulinase in the reaction mixture, the fructose is rapidly produced from all samples, whilst invertase treatments show low activities. The results allow the estimation of the fructose release rate in many foodstuff processing conditions.

  • Changes in chemical composition of the ethanolic extract of roasted Asparagi Tuber were investigated by HPLC. One dramatically increased peak $(t_R\;14.85 min)$ was isolated by silica gel column chromatograph and identified as 5-hydroxymethyl furfural (HMF) by comparing its $1^H-NMR$ data with that of a commercial standard. HMF content reached its maximum level at $190^{\circ}C$ for 60 minutes. Under these conditions, HMF contents in the roasted Asparagi Tuber was increased about thirteen times (9.26mg/g) over the not-roasted control (0.71 mg/g). No significant differences were found in macrophage-activating, prolyl endopeptidase-inhibiting, antioxidative (DPPH), anti-coagulating (activated partial thromboplastin times), and ACE-inhibiting activities between roasted and not-roasted Asparagi Tuber.

Antimicrobial Resistance Characteristics of Gram-Negative Bacteria Isolated from Inland Pollution Sources in the Drainage Basin of Iwon-myeon (Taean-gun), South Korea (태안군 이원면 육상오염원 배출수에서 분리한 그람음성균의 항생제 내성 특성)

  • Fecal contamination levels of discharge water from inland pollution sources were investigated in Iwon-myeon (Taean-gun), South Korea. Gram-negative bacteria were isolated during the investigation and the antimicrobial resistance patterns of the isolates were examined to estimate their impact on the coastal environment. The ranges of total coliform and fecal coliform of 12 samples from four major inland pollution sources were 79-490,000 MPN/100 mL and 2.0-490,000 MPN/100 mL, respectively, with the highest level of fecal contamination at Station No. 3. A total of 137 strains (14 genus) were isolated, of which 86 strains (62.8%) were Enterobacteriaceae. The identified isolates were as follows: Pseudomonas spp. (35 strains), Klebsiella spp. (20 strains), Serratia spp. (20 strains), and Escherichia spp. (19 strains). The isolated Gram-negative bacteria showed the highest antimicrobial resistance to ampicillin (81.8%), followed by amoxicillin/clavulanic acid (64.2%), ceftiofur (61.3%), and cefoxitin (59.1%). Antimicrobials in which less than 10% of isolates showed antimicrobial resistance were ciprofloxacin (3.6%) and gentamicin (2.2%). Resistance to one or more antimicrobials was observed in 121 strains (88.3%) and 84 strains (61.3%) showed a tendency for multiple antimicrobial resistance.

Comparison of Antimicrobial Resistance and Multi-Drug Resistance Patterns of Escherichia coli Isolated from Aquatic Organisms Off the West Coast of South Korea (서해안 수산생물에서 분리한 대장균(Escherichia coli)의 항생제 내성 및 다제 내성 양상 비교)

  • Antimicrobial resistance patterns of Escherichia coli were investigated. Strains were isolated from 310 shellfish, 36 crustaceans, and 12 fish collected off the West Coast of Korea from April 2019 to October 2020. Two hundred and ninety-five E. coli strains were isolated from shellfish, 100 from crustaceans, and 54 from fish. Strains isolated from shellfish showed the highest resistance to ampicillin (27.5%), whereas those from crustaceans were resistant to sulfisoxazole (30.0%) and those from fish were resistant to ampicillin (59.3%) and sulfisoxazole (59.3%). Ceftazidime resistance was observed in strains isolated from short neck and hard clams, whereas gentamicin resistance was observed in strains from fish. Multi-drug resistance was observed in 56 strains (48.7%) isolated from shellfish, 11 (28.2%) from crustaceans and 27 (73.0%) from fish. Depending on the source of isolation, the strains showed specific antimicrobial resistance tendency. Strains isolated from shellfish showed 12 different multi-drug resistance patterns, whereas those from crustaceans showed high resistance (59%) to a single antimicrobial agent and those from fish showed a broad trend of multi-drug resistance to more than eight antimicrobials.

  • 'Morningpurple' is a new sweetpotato variety developed by Mokpo Experiment Station, National Institute of Crop Science (NICS), RDA in 2007, for flowering. This variety was selected from the cross between Sinchunmi and Hi-dry in 2004, seedling and line selections were practiced from 2005 to 2006. 'Morningpurple' has morning glory type flowers with purple color. It has triangular leaf, green with purple vine and petiole, elliptic storage root, red skin and yellow flesh color of storage root. The average yield of storage root was 15.0 ton/ha. Number of storage roots over 50 gram per plant was 2.6, and the average weight of storage root was 143 gram.

Antimicrobial Resistance in Escherichia coli Isolated from Oyster Crassostrea gigas and Inland Pollution Sources in the Yongnam-Gwangdo Area, Korea (용남광도 해역의 굴(Crassostrea gigas) 및 육상오염원에서 분리한 대장균(Escherichia coli)의 항생제 내성)

  • We isolated and characterized Escherichia coli (E. coli) from oyster Crassostrea gigas and inland pollution sources on Yongnam-Gwangdo island and neighboring areas on the southern coast of Korea in 2014-2015. A total of 222 strains of E. coli were isolated from 132 oysters and 88 samples from inland pollution sources. These 222 isolates were tested for their susceptibility to 24 antimicrobial agents, and 221 isolates were found resistant to the tested antibiotics. Of these 99.5% and 70.7% of the isolates showed very high resistance to rifampin and cephalothin respectively, followed by tobramycin (23.4%), streptomycin (20.2%), tetracycline (19.4%), cefepime (18.9%), ceftazidime (18.9%) and nalidixic acid (16.7%). The resistance rate of E. coli isolated from oysters was higher than that from inland pollution sources. In addition, multiple resistance to at least four antibiotics were present in 73.2% and 26.5% of E. coli isolates from oysters and inland pollution source samples, respectively.

  • Nanofiltration (NF) membranes are more popular than reverse osmosis (RO) membranes as they can be operated at much lower pressures for applications in treatment of wastewater from industries like food processing and pharmaceutical as well as municipal sewage water. The separation mechanism in case of NF membranes is based on solution diffusion as well as sieving, for which the crosslinking density of the thin film of the composite membrane is less then RO membrane. Unlike ceramic membranes, membrane fouling is one of the chronic problems that occur during the nanofiltration process in polymeric membranes. Membrane cleaning is done to get rid of reversible as well as irreversible fouling by treatment with sodium hypochlorite. Compared to polymeric membranes, ceramic membranes show higher stability against these agents. In this review different types of ceramic membrane applied wastewater treatment by NF process are discussed.

Studies on the Improvement in Quality of Rice Candy by adding Red Ginseng Marc. (홍삼박 첨가에 의한 엿의 품질향상에 관한 연구)

  • To improve the quality of rice candy, We studied on manufacturng method and characteristic of rice candy by adding ratio of red ginseng marc. The results obtained were as follows: The boiled rice was added with 15 % malt extract to 1.2 times. After it was saccharified for 12 hours to 70℃, we concentrated it and made black rice candy. Then red ginseng marc was dried at 18% of moisture content and disrupted to 30 mesh below for manufacturing red ginseng marc's powder. Maintained at about 100℃, black rice candy added red ginseng marc's powder. These were mixed evenly and dried. Finally, rice candy adding red ginseng marc was completed. According to the characteristics of rice candy by adding red ginseng marc, the more amounts of red ginseng marc was increased, the less hardness and adhesiveness of rice candy was decreased. Also the brightness of the color difference was decreased. but yellowness and redness was increased. When adding red ginseng marc at 17.5%, it was evaluated to the good score in sensory evaluation.

  • Oil-water separation is a critical process for several industrial applications, including oil production, wastewater treatment, food processing, and environmental area such as marine oil spills. The separation efficiency of oil-water mixtures can be influenced by various factors such as mixture composition, oil and water conditions, and the separation technology used. Over the years, various technologies have been developed to separate water and oil by physical, chemical and biological methods. This paper presents an overview of the various methods and technologies available for oil-water separation, including gravity separation, centrifugal separation, and separation using adsorbents, filters. The strengths and limitations of each method are discussed, along with recent research trends and future prospects. Furthermore, this paper aims to provide direction for future research and industrial application of sustainable and environmentally friendly oil-water separation technologies. In conclusion, we provide a comprehensive overview of recent oil-water separation technologies that will be beneficial to researchers and industrialists in the field of oil-water separation.

Current Situations of Domestic Cultivation and Cultivation Management Technology in Momordica charantia L. (여주(Momordica charantia L.)의 국내 재배현황 및 재배관리기술 실태)

  • 여주(Momordica charantia L.)는 인도 동부와 남중국 등 열대 아시아 지역이 원산지로, 열대 및 아열대를 비롯하여 온대 지역까지 널리 재배되며, 열매를 식용으로 하여 주로 채소로 재배되고 있는데, 쓴맛 때문에 '쓴오이' 라고도 부르지만 당뇨와 고혈압 등 성인병과 장 기능 개선 성분을 함유하고 있다고 알려지는 등 건강기능성 작물로 국내에서도 전국적으로 재배가 되고 있어서, 국내 재배현황과 재배농가의 실태를 조사하여 재배 애로사항 및 발전과제를 도출코져 하였다. 여주의 국내 재배는 2012년 재배면적이 10ha에서 빠르게 증가하여 2017년 606농가 107.9ha로 정점을 이루고, 점차 감소하여 2019년 232농가 59.9ha에서 재배 하였으며, 2019년 재배면적이 많았던 시군은 함양, 강진, 양주, 천안 등 이었다. 여주의 재배작형은 보통재배(육묘후 노지재배) 농가가 가장 많고, 노지재배(직파), 반촉성재배(조숙재배), 촉성재배 형태의 농가가 있는데, 보통재배(육묘후 노지재배)는 3월 하순~4월 상순에 파종 및 육묘한 후 5월상순 노지에 정식하여, 6월 하순부터 가을에 서리가 내리기 전까지 수확한다. 농가의 재배품종은 일본 등 외국도입종의 종자를 종자회사로 부터 구입하여 재배하고 있으며, 재식방법, 시비관리, 줄기유인 등 표준재배법이 정립되지 못하여 농가별로 다양한 방법으로 재배하고 있는 실정이다. 수확은 열매가 완전히 익기전에 생여주 상태에서 수확하고 있으며, 일반 재배농가는 생여주 판매가 10~20%, 건여주 판매가 80~90% 비율이며, 생여주로 100% 건조업체에 판매하기도 하고, 건여주로 100% 건조하여 판매하는 농가도 있다. 국내재배 안전성 향상을 위하여 필요시 되는 기술개발 과제는 용도별 품종육성 및 종자생산 보급, 고품질 여주 생산을 위한 재배관리 기술, 지역별 생산 여주과실의 성분 품질관리 및 건조 가공기술, 여주의 건강기능성 식품 지정 고시 방안 등으로 전문기관에서의 연구개발이 필요하다.
