발아약콩가루를 첨가한 생면의 제조 및 특성연구 (Preparation and Characterization of Wet Noodle Containing Germinated Small Black Bean Flour)

  • 약콩을 재료로 가장 높은 이소플라본 함량을 갖는 발아조건을 찾고(본 연구에서는 48시간), 발아시킨 약콩을 열처리 하지 않은 군과 20분 끓이기 처리를 한 군으로 나누어 밀가루양의 각 15%, 20%를 대체하여 면을 제조하고 그 특성을 평가하였다. 대조군은 수분흡수량이나 부피증가율 및 조리 후 당용출이 가장 높게 측정되었으나 발아콩가루 첨가량이 많을수록 수치가 낮아지는 결과를 보았다. 특히 끓인 발아콩가루 15% 첨가군은 당용출이 가장 낮게 측정되었다. 조직감 특성에 있어서, 대조군은 가장 높은 견고성을 나타내었으며 조리 후 1시간 까지 크게 증가함을 보였다. 발아콩 분말의 함량이 증가할수록 경도가 감소하는 경향을 보였으며, 끓인 콩의 경우 동일비율의 열처리 하지 않은 콩에 비해 상대적으로 견고성의 감소폭이 크게 나타났다. 특히 열처리한 발아콩가루를 15% 수준으로 첨가했을 때 경도는 대조군보다 낮았으나, 탄력성은 대조군보다 높게, 점착성은 대조군보다 낮게 측정되어 바람직한 제면의 특성을 보였다. 관능검사 결과 15% 발아콩가루 첨가면은 외관상에서 높은 점수를 얻었으나, 20% 첨가 면은 색이 짙고 열처리하지 않은 콩가루 첨가면은 콩비린내가 감지되었기 때문에 appearance 와 flavor면에서 낮게 측정되었다. 건강에 관한 관심이 높아지면서 밀가루만으로 만든 국수보다는 발아콩가루를 넣은 면이 외관, 조직감을 비롯하여 전체적인 선호도에서도 높은 점수를 얻었으며, 특히 열처리한 콩가루 15% 첨가면이 가장 높은 선호도를 보였다.

GABA 함량이 높은 갈색 유색미를 이용한 차 개발 (Development of Brown Colored Rice Tea with High GABA Content)

  • 갈색 유색미의 생산증대와 소비증진을 위한 방편으로 GABA 함량이 높은 갈색 유색미차를 개발하기 위한 기초연구를 행하였다. 이를 위해 볶음온도와 시간을 달리하여 갈색 유색미를 볶은 후 색도와 GABA 함량을 측정하였고, 이들의 분쇄물을 열수로 침출한 후 갈색도, 탁도, 환원당, 가용성 고형분, 총 polyphenol, pH와 같은 이화학적 특성을 측정하였다. 또한 $170^{\circ}C$에서 10, 20, 30분간 볶은 갈색 유색미의 차의 관능적 특성을 알아보았다. 볶음온도와 시간이 증가함에 따라 갈색 유색미의 L값, a값, b값의 색도는 모두 감소하였고, GABA 함량도 낮아졌다. $170^{\circ}C$에서 10분간 볶은 경우의 GABA 함량이 6.83 mg/100 g으로 가장 높았고, $220^{\circ}C$에서 11분간 볶은 경우가 가장 함량이 낮았다. 갈색유색미 차의 갈색도, 탁도, 환원당, 가용성 고형분, 총 polyphenol 함량은 갈색 유색미의 볶음온도와 시간이 증가함에 따라 증가하였으며, pH는 이와는 반대로 감소하였다. 30분간 볶아 만든 갈색 유색미 차의 색, 향, 맛, 종합적 기호도가 가장 높았는데, 이는 다른 차보다 색, 향, 맛이 가장 강하였기 때문이었다. 이에 GABA 함량도 높고 소비자의 기호도를 만족하는 차를 개발하기 위해서는 GABA 함량이 높은 10분간 볶은 갈색 유색미와 30분간 볶은 갈색 유색미를 적절히 혼합하여 제조할 필요가 있을 것으로 생각되었다.

아위버섯(Pleurotus ferulea) 영양성분 분석 (Analysis of Nutritional Components in Pleurotus ferulea)

  • 본 연구에서는 아위버섯의 일반성분 및 탄수화물, 섬유질, 무기질, 아미노산, 비타민, 유리당, 지방산조성 등을 조사하여 건강식품개발을 위한 기초자료로 활용하고자 실시하였다. 아위버섯의 경우 느타리버섯과 새송이버섯에 비해 수분은 적고 조단백질과 식이섬유가 많음을 보였다. 총 아미노산 함량과 무기질의 함량은 높게 나타났으며, 이는 아위버섯이 우수한 무기질 공급원의 식품이 될 수 있음을 보여주고 있다. 또한 아위버섯의 경우 느타리버섯, 새송이버섯에 비하여 수용성 비타민뿐만 아니라 지용성비타민의 경우도 많았으며 특히 비타민 C함량은 6배정도 많았고 특이하게 높은 glucose 함량을 보여주었으며 myristic acid등 포화지방산의 함량은 적은 반면, 불포화 지방산인 linoleic acid의 함량은 다소 높게 나타났다. 따라서 아위버섯은 풍부한 영양소를 가지고 있어 다양한 생리활성을 기대할 수 있으며 향후 기능성식품의 좋은 재료로 사용될 수 있는 가능성을 보였다.

조릿대(Sasa borealis Makino) 추출물 첨가가 배추김치의 품질에 미치는 영향 (Changes in Kimchi Quality as Affected by the Addition of Sasa borealis Makino Extract)

  • This study was focused on finding the potential of hot water extract of bamboo shoot (Sasa borealis Makino) on the fermentation of Kimchi made with Chinese cabbage. The properties of Kimchi were examined up to 28 days of storage. The pH and acidity decreased regardless of treatments and showed no significant difference between treatments. There was a decreasing tendency of both total and reducing sugars in kimchi but the addition of bamboo extract did not affect the soluble sugar levels. Interestingly, bamboo extracts affected the lactic acid fermentation and ripening, resulting in the increase of lactic acid in bamboo extract treatment. Number of total bacterial cell of additive group is higher than control one, probably due to the stimulative effect of bamboo extract on bacterial growth. Level of lactic acid bacteria was also higher in the additive group, thus, it is considered that bamboo extract appeared to enhance the proliferation of lactic acid bacteria. The acceptability of treated Kimchi was higher in general. And results of intensity evaluation in color and texture were higher as well by addition of bamboo extract.

고구마 가수분해물을 기본으로 한 아침식사용 혼합음료 제조 및 품질특성 (Preparation of mixed beverages for breakfast made primarily with the hydrolysate of sweet potato and its quality characteristics)

  • As an attempt to develop new functional beverages for breakfast, sweet potato based beverages were prepared with hydrolyzed sweet potato, potato, and carrot products (sample : water = 1 : 1), and their chemical and sensory properties were evaluated. The content of reducing sugar and soluble solid of the sweet potato, potato, and carrot increased with enzyme treatment, while their viscosity decreased without significant change of color. The hunter color test showed that the beverages with 10% carrot content were high in redness leading to a decrease in their acceptability for sensory evaluation. The sensory score of the mixture containing 5% carrot was good, but beverage with 0% carrot reduced the sensory properties. The results showed that the final ratio of sweet potato to potato to carrot for the new functional beverage was 5 : 4.5 : 0.5. The pH of the beverage was adjusted to 5.0, 4.5, and 4.0 using an organic acid mixture. In the sensory test of the new functional beverage, the best sensory score(color, taste, smell, and texture) was the mixture of sweet potato : potato : carrot equaling 5 : 4.5 : 0.5 with a pH of 4.5.

Ruminal Degradation of Sugarcane Stalk

  • The number of protozoa and VFA content in the rumen fluid, in situ disappearance and turnover rate were examined with four rumen-fistulated cattle given either sugarcane stalk or Ruzi grass hay in order to clarify the manner of rumen digestion of sugarcane stalk. Cattle were given either sugarcane stalk or Ruzi grass hay at 1.0% of body weight level with commercial concentrate feed. Feeding sugarcane stalk reduced acetate content and increased propionate and butyrate contents in rumen fluid. While rapidlysoluble fraction of sugarcane stalk was 42%, the insoluble but potentially degradable fraction was only 17%. This clearly showed that sugarcane stalk mainly consisted of water soluble fraction (i.e. sugar) and tough fiber (i.e. bagasse). The ruminal degradation rate of both Ruzi grass hay and sugarcane stalk was lower in the animal given sugarcane stalk in comparison with those given Ruzi grass hay. While the turnover rate of liquid phase was about 50% higher in the animals given sugarcane stalk than in the animals given Ruzi grass hay, that of the solid phase was about 40% lower in the animals given sugarcane stalk. The effective degradability of DM of sugarcane stalk was higher than that of Ruzi grass hay. Sugarcane would be a promising roughage for ruminants in the tropics especially, in the dry season.

Pharmacognostical Evaluation of Gymnema sylvestre R. Br.

  • In India, Gymnema sylvestre due to the unique property of the plant to antagonize the sweet taste is known as 'Gur-mar'. It has several ethnomedicinal values as various tribals/traditional communities and rural peoples of India find diverse medicinal uses viz. antidiabetic, stomachic, diuretic, and is useful in cough and throat troubles. Besides, it has strong effect on reducing blood sugar. The present communication deals with the detailed pharmacognostical evaluation of the aerial parts of G. sylvestre collected from three places of the country-Varanasi (U.P), Panchmarhi (M.P), Salem (Tami Nadu) and commercial sample procured from local market. The botanical and physico-chemical parameters of all the samples were quite similar though little variations were observed in foaming index, alcohol and water soluble extractives of local sample. The microscopic characteristics of the drug are horse shoe shaped petiole with 3 amphicribal vascular bundles, sieve tubes well developed; anomocytic stomata only on the abaxial surface of the leaf, the fan shaped amphicribal vascular bundle, presence of intraxylary phloem. The TLC fingerprint profile of all the samples was more or less similar only the quantity of some of the compounds varied.

국내산 퀴노아의 조리방법에 따른 영양성분 비교 (Comparison of the Nutritional Composition of Quinoa Seeds Cultivated in Korea Depending on Different Cooking Methods)

  • The purpose of this study was to compare differences in the main food components of quinoa (Chenopodium quinoa Willd.) cultivated in Hongcheon after steaming, boiling, and roasting. Among the general components, crude protein, fat, and ash content were the highest in raw quinoa. Dry matter and carbohydrate content was the highest in steamed quinoa, while total dietary fiber content was highest in roasted quinoa. Total amino acid contents were the highest in boiled quinoa and lowest in steamed quinoa. Fatty acid content was highest in raw quinoa and lowest in boiled quinoa. The mineral (calcium, potassium, and phosphorus) and vitamin content was most enriched in raw quinoa, while iron, magnesium, zinc, and manganese were highest in boiled quinoa. For free sugars, the fructose and sucrose levels were highest in raw quinoa, while glucose level was highest in roasted quinoa. The water-soluble vitamin and free sugar contents were lowest in boiled quinoa. In summary, nutritional levels of vitamins vulnerable to heat and unsaturated fatty acids decreased after cooking with heat, while those of amino acids and saturated fatty acids increased after cooking with heat, although there were variables based on different cooking methods.

Suppressive Effect of a Carbohydrate Fraction from Eclipta prostrata on the Apoptosis of the Mouse Splenocytes in Culture

  • Eclipta prostrata grows abundantly in the tropical and the sub-tropical parts of the world including most part of the Korean Peninsula. The plant has been traditionally used for the treatment of a number of inflammatory diseases including hepatitis and enteritis but the nature of its immuno-modulating activity needs more studies. In this study, water-soluble sugar-containing fractions were purified from the herb and their effects on the culture of mouse splenocytes were examined. One of the fractions significantly suppressed apoptosis of the splenocytes in culture, which involves the gene expression regulation of a number of cytokines and cytokine receptors including MIP1-$\beta$. This study could explain an immunological activity of Eclipta prostrata and would lead to identify an immuno-active compound from the plant.

Waterlogging induced oxidative stress and the mortality of the Antarctic plant, Deschampsia antarctica

  • We investigated the mortality and the oxidative damages of Deschampsia antarctica in response to waterlogging stress. In field, we compared the changes in the density of D. antarctica tuft at the two different sites over 3 years. The soil water content at site 2 was 6-fold higher than that of site 1, and the density of D. antarctica tuft decreased significantly by 55.4% at site 2 for 3 years, but there was no significant change at site 1. Experimental results in growth chamber showed that the $H_2O_2$ and malondialdehyde content increased under root-flooding treatment (hypoxic conditions-deficiency of $O_2$), but any significant change was not perceptible under the shoot-flooding treatment (anoxic condition-absence of $O_2$). However, total chlorophyll, soluble sugar, protein content, and phenolic compound decreased under the shoot-flooding treatment. In addition, the catalase activity increased significantly on the 1st day of flooding. These results indicate that hypoxic conditions may lead to the overproduction of reactive oxygen species, and anoxic conditions can deplete primary metabolites such as sugars and protein in the leaf tissues of D. antarctica. Under present warming trend in Antarctic Peninsula, D. antarctica tuft growing near the shoreline might more frequently experience flooding due to glacier melting and inundation of seawater, which can enhance the risk of this plant mortality.
