메밀의 생리활성 물질에 대한 여러 가지 비료의 효과 (The Effect of Several Fertilizers on Physiological Active Compounds of Buckwheat(Fagopyrum esculentum Moench))

  • 메밀의 지방산 및 페놀화합물 생합성과 tyrosinase 저해 활성에 대한 몇가지 비료의 영향을 조사한 결과 다음과 같다. 메밀 식물체중의 지방산 함량은 곡류중의 지방산 함량 보다 작으며 메밀 식물체와 곡류중의 지방산은 포화지방산과 불포화지방산으로 구성되어 있으며 불포화지방산이 포화지방산보다 많은 것으로 나타났다. 메밀중의 페놀화합물은 $682.6{\sim}1822.0mg\;kg^{-1}$이며 석회 시용구의 메밀중 페놀화합물이 $1822.0mg\;kg^{-1}$로 다른 비료 시용구보다 높았다. 한편 석회가 시용된 메밀 곡류중의 sediment c의 tyrosinase 저해활성은 92.8%로 같은 처리내의 sediment c의 compound A, B, C 보다 높았다. 그러나 붕사가 처리된 메밀 곡류중의 compound C의 tyrosinase의 저해활성은 80.9%로 같은 처리구 내의 sediment나 다른 compound보다 높은 것으로 나타났다.

Polyunsaturated Fatty Acids in Male Ruminant Reproduction - A Review

  • Fatty acids such as n-3 and n-6 polyunsaturated fatty acids (PUFA) are critical nutrients, used to improve male reproductive performance through modification of fatty acid profile and maintenance of sperm membrane integrity, especially under cold shock or cryopreservation condition. Also, PUFA provide the precursors for prostaglandin synthesis and can modulate the expression patterns of many key enzymes involved in both prostaglandin and steroid metabolism. Many studies carried out on diets supplemented with PUFA have demonstrated their capability to sustain sperm motility, viability and fertility during chilling and freezing as well as improving testis development and spermatogenesis in a variety of livestock species. In addition to the type and quantity of dietary fatty acids, ways of addition of PUFA to diet or semen extender is very crucial as it has different effects on semen quality in male ruminants. Limitation of PUFA added to ruminant ration is due to biohydrogenation by rumen microorganisms, which causes conversion of unsaturated fatty acids to saturated fatty acids, leading to loss of PUFA quantity. Thus, many strategies for protecting PUFA from biohydrogenation in rumen have been developed over the years. This paper reviews four aspects of PUFA in light of previous research including rumen metabolism, biological roles, influence on reproduction, and strategies to use in male ruminants.

국내산과 수입산 시판 홍어회의 이화학적 및 미생물학적 품질 특성에 관한 연구 (Quality Characteristics of Commercial Slices of Skate Raja kenojei)

  • 향토전통식품에 대한 체계적인 위생적 품질을 평가하기 위한 기초 연구로, 국내에서 시판되는 홍어회의 품질 특성을 조사하였다. 홍어회의 pH는 국내산이 9.0, 수입산은 8.9${\sim}$9.1이었다. 홍어회의 휘발성 염기질소는 국내산은 46.3 4mg%, 칠레산은 45.43 mg%, 아르헨티나산은 51.61 mg% 및 중국산은 52.14 mg%로 나타났다. 아미노태 질소는 칠레산이 가장 많았고, 중국산이 가장 적게 나타났다. TMAO 함량은 국내산이 수입산보다 더 많았다. 국내산 홍어회의 총균수는 6.6 log CFU/g 수준이었고, 수입산의 경우에는 5.1${\sim}$6.5 log CFU/g 수준이었다. 홍어회의 대장균은 모든 시료에서 검출되지 않았다. 국내산, 칠레산, 아르헨티나산 및 중국산은 각각 25종, 24종, 23종 및 24종의 유리아미노산이 검출되었으며, 총 함량은 579.7 mg, 398.1 mg, 387.6 mg 및 496.3 mg이었다. Taurine의 함량이 가장 많이 검출되었고, 그 다음으로는 anserine, lysine, alanine, glycine, proline, ${\beta}$-alanine, histidine 순 이었다. 국내산 홍어회에서 포화지방산 11종, 불포화지방산 16종이 분석되어, 총27종이 분석되었다. 칠레산은 총 18종이 분석되었으며, 아르헨티나산은 총 25종이 분석되었고, 중국산에서는 총 18종이 분석되었다. 한편, 불포화지방산 중 특히 $C_{18:1}$의 경우는 아르헨티나산이 국내산보다 훨씬 많이 들어있었다. Trienoic unsaturated fatty acid는 국내산 홍어회에 더 많이 함유되었으며, penta, hexa unsaturated fatty acid에서는 아르헨티나산의 함량이 가장 많았다. 필수지방산의 경우는 국내산 홍어회가 더 우수한 것으로 나타났다. 이상의 연구 결과로 미루어 볼때 국내산이 수입산에 비하여 총 균수 및 유리아미노산의 함량이 많고, 지방산의 경우도 n-3와 n-6지방산이 많이 함유되어 있는 것으로 미루어 좋은 단백질과 지방 공급식품임을 알 수 있었다.

  • Attempts were made to investigate on the fatty acids of Lentinus lepideus Fr. Fats were extracted from its carpophores and saponified with alcoholic potassium hydroxide. Isolated fatty acids were methylated and were subjected to column chromatography and GLC. Six saturated fatty acids, i.e., dodecanoic, tridecanoic, tetradecanoic, pentadecanoic, hexadecanoic and octadecanoic acids were identified. Especially myristic acid was abundant. Four unsaturated fatty acids, i.e., hexadecadienoic, oleic, linoleic, linolenic acids, were identified. Especially oleic and linoleic acid were abundant.

  • 누에유래 불포화지방산의 분리법을 확립하여 특허출원 하였다(출원번호 :2004-76364호). 분리 정제된 누에유래 불포화지방산의 비율은 70% 이상이었다. 누에유래 불포화지방산의 기능성을 시험해본 결과, 고지혈증 개선의 효과를 보였고, 피부단백질인 콜라겐 생성을 유의적으로 증가시키며, 콜라겐 분해효소 활성을 유의적으로 억제하였다. 또한, 피부건조증 개선에 빠르고 탁월한 효과가 있었다.

Biogas Production Performance Based on Carbon Number and Double Bond Count of Long-chain Fatty Acids

  • Purpose: The objective of this study was to investigate the high-efficiency anaerobic digestion of organic wastes with high fat content. Specifically, the analysis focused on biogas production performance with a focus on carbon number and the double bond count of the long-chain fatty acids (LCFAs), which are hydrolysis products of triglycerides. Methods: Experiments were performed under mesophilic anaerobic conditions with a feed-to-microorganism ratio (F/M) of 1.0. Biogas production performance was analyzed through biogas production patterns, lag-phase, and the time required for 90% biogas production (T90). Results: Biogas production increased when the content of unsaturated LCFAs (containing relatively large numbers of carbon atoms) increased. In substrate containing LCFAs with four or more double bonds, although the initial lag-phase in biogas production was shortened, development of a three-step lag-phase resulted in decreased biogas production. These results suggest that high rates of anaerobic digestion are possible when the LCFAs have high unsaturated fatty acid content with three or fewer double bonds. Conclusions: When various types of LCFAs are digested anaerobically, biogas production performance can be improved if the unsaturated fatty acid content and number of double bonds are optimized for maximum production.

Comparison of the Fatty Acid Composition and Small Molecular Metabolites between Yanjin Blackbone Chicken and Piao Chicken Meat

  • The fatty acid composition and small molecular metabolites in breast and leg meat of Yanjin blackbone chickens (YBC) and Piao chickens (PC) were detected by gas chromatography-mass spectrometry and liquid chromatography-quadrupole static field orbital trap mass spectrometry. Thirty-two fatty acids were detected, and the total fatty acid content of PC was significantly higher than that of YBC (p<0.05). Oleic acid, linoleic acid, palmitic acid, stearic acid, and arachidonic acid were the main fatty acids in the two chicken varieties, and the composition of fatty acids in the two varieties were mainly unsaturated fatty acids, being more than 61.10% of the total fatty acids. Meanwhile, 12 and 16 compounds were screened out from chicken legs and chicken breasts of YBC and PC, respectively, which had important contributions to the differences between groups.

송순차 제조를 위한 송순 및 솔잎의 화학적 조성 (Chemical Composition of Pine Sprouts and Pine Needles for the Production of Pine Sprout Tea)

  • As a basic study for preparing pine sprout tea, chemical components in pine sprouts and pine needles were analyzed as follows: In proximate composition the contents of most components except for crude fat were different between in pine sprouts and pine needles. Moisture content in pine sprouts was higher than that in pine needles. Calcium and potassium were major minerals contained in pine sprouts and needles, and their contents in pine needles picked in December were higher than those picked in June. Soluble tannin and vitamin C contents in leaf part of pine sprouts were much higher than those in stem part and their contents in pine needles were increased according to their growth. Free sugars like fructose, glucose and sucrose were contained in both pine sprouts and needles, and their contents in pine sprouts were higher in stem part as compared that in leaf part. Although fourteen kinds of amino acids were detected in pine sprouts and pine needles, their contents were extremely low. Amino acid composition between pine sprouts and pine needles was different each other, but major amino acids contained in them were same, those are acidic amino acids such as aspartic acid and glutamic acid. Amino acid contents in pine needles were increased according to the growth. In fatty acid composition in leaf part of pine sprouts, saturated fatty acid contents were higher than unsaturated fatty acid contents, but in stem part unsaturated fatty acid contents were higher. In pine needles the amount of saturated fatty acid was increased with the growth, but the amount of unsaturated fatty acid was rather decreased.

Identification of Quantitative Trait Loci for Fatty Acid Content in Brown Rice (Oryza sativa L.)

  • The rice bran oil contained in brown rice is composed of highly valued ingredient. Improving the content of unsaturated fatty acids in rice seed, such as oleic acid, linoleic acid, and ${\alpha}$-linolenic acid, would provide more benefit to human health. Fatty acid content is quantitative trait controlled by multiple genes. We have utilized high-density SNP data from highly advanced breeding populations to identify QTLs for fatty acid contents in brown rice. Here, we identified 51 major QTLs (M-QTLs) and 25 epistatic QTLs (EpQTLs) related to eleven fatty acid contents. Eight and four M-QTLs were pleiotropically associated with the content of different fatty acids in MT-RILs and DT-RILs, respectively. Total effect of M-QTLs for palmitic acid (16:0), oleic acid (18:1), and linoleic acid (18:2), could explain phenotypic variations of 36.7%, 63.7%, and 41% in MT-RILs, respectively. Alpha-linolenic acid which is important for a human's health could be explained phenotypic variation of 15.7% by six M-QTLs. These QTLs identified in this study can be used to improve nutritious content in rice breeding programs.

Effect of Different Cooking Methods on the Composition of Intramuscular Fatty Acids of Hyla Rabbit

  • The influence of three cooking methods (stewing, microwaving and Aluminium (Al) foil-baking) was evaluated on the content of intramuscular lipid and the composition of intramuscular fatty acids of Hyla rabbit. The percentage of intramuscular lipid in cooked-longissimus dorsi (LD) (dry weight %) were in the order mentioned below: microwaving > foil-baking > stewing. All treated samples showed decrease in the proportion of polyunsaturated fatty acids (PUFA) and monounsaturated fatty acids (MUFA), whilst increase in the proportion of saturated (SFA) and n-6/n-3 value during processing. All of the cooked samples had the n-6/n-3 ratio within the recommended range (5-10). By the analysis of partial least squares regression (PLSR), the microwaving treatment was better to keep the stability of unsaturated fatty acids (UFA), whilst the long-time Al foil-baking did the most serious damage to UFA, especially the PUFA. In addition, the heating method showed greater influence on the samples than the processing time. The shorter processing time was better to retain the intramuscular PUFA of Hyla rabbit, especially the LC-PUFAs (C20-22). Considering all the factors, microwaving showed the superiority in reserving the composition of intramuscular fatty acids of Hyla rabbit.
