참먹거리에 대한 지역사회접근 (Community Approach to the True Food)

  • Food is very important for human being. It is not easy for us to enjoy good life because the situation of food is not good in Korea. The self-sufficient food rate is very low and most of food which we take was produced by industrial agriculture. Food of this kind has some problems with respect to the health of consumer, agriculture, environment and community. In order to secure the true food which is safe and environmentally sound, producers, consumers and community have to work together. Producers must engage in environmental agriculture. They must produce the true food and need to know regional consumers. Consumers must pay attention to the regional agriculture and must participate the production of true food. Local government must open farmers' markets for direct marketing between farmers and consumers. NGOs should educate and organize the producers and consumers.

조리방법에 따른 채소류의 수용성 비타민 및 기능성 성분의 함량과 잔존율 변화 (Alterations in the Content and True Retention of Water-soluble Vitamins and Bioactive Compounds in Vegetables, according to Different Cooking Methods)

  • This study examines the effects of different cooking methods (stir-frying, steaming, superheated-steaming) on the contents and the true retention of moisture, water-soluble vitamins, and bioactive compounds of ten selected vegetables: broccoli, brussels sprout, cabbage, eggplant, green bean, onion, red cabbage, red onion, squash, and tomato. The total color difference (𝚫E) values were decreased after stir-frying the samples, except for eggplant, green bean, and tomato. The true retention of water-soluble vitamins (B1, B2, B3, and C) was increased in most vegetables after superheated-steaming, as compared to steaming and stir-frying. Moreover, compared to the uncooked vegetables, a higher true retention of total polyphenol and flavonoid was obtained for most vegetables subsequent to superheated-steaming. Total anthocyanin content was detected only in eggplant, red cabbage, and red onion, and a smaller loss of anthocyanin was determined after subjecting red cabbage to superheated-steaming. Also, the free radical scavenging activities were higher in superheated-steaming vegetables, except in eggplant and squash. These results indicate that superheated-steaming induces a positive effect for retaining water-soluble vitamins and functional components of vegetables.

국내 다소비 채소류의 조리에 따른 비타민 B5 함량 및 잔존율 비교 (Comparison of Vitamin B5 Content and True Retention in Commonly Consumed Vegetables by Different Cooking Methods)

  • This study aimed to determine the changes in the vitamin B5 content of raw and cooked vegetables. The nineteen vegetables were subjected to different cooking methods, viz. blanching, boiling, pan-broiling, and steaming. Vitamin B5 was quantified by reversed-phase high-performance liquid chromatography (HPLC) using photodiode-array (PDA) detection (200 nm). The standard reference materials (SRM) were used to validate the accuracy of vitamin B5 measurement method used in this study. The cooking yields ranged from 82.63 to 107.62% and decreased in most of the vegetables except bitter melon, curled mallow, and eggplant. The raw kabocha squash, Danhobak, had the highest vitamin B5 content (0.671 mg/100 g) among the samples. All cooked vegetables showed lower vitamin B5 content compared to the raw samples. The true retention ranged from 0% (crown daisy, blanching) to 84.49% (kabocha squash, steaming). These results indicate that vitamin B5 is degraded after cooking. Pan-broiling and steaming are better cooking methods than the others for retaining vitamin B5. The true retention of vitamin B5 in the samples markedly depends on the cooking method and food matrix. These results can be used as important basic data for nutritional evaluation of meals.

돈육으로 제조한 정제단백질과 Oligopeptide의 영양평가 : 소화율, 생물가, 단백질 실이용률 (Purified Protein and Oligopeptide Mixture Preparation from Pork Meat and Evaluation of their Nutritive Value: True Digestibility, Biological Value, and Net Protein Utilization)

  • In this study a purified protein was prepared from pork meat. The product consisted of 0.5% moisture, 3.0% ash, 5.5% ether extract and 88.7% crude protein. Also, a meat oligopeptide mixture was prepared from a pepsin digest of the protein preparation. The two preparations were colorless and odorless powders with low fat contents. The nutritive values of the pork meat protein and oligopeptide mixture were estimated by two methods, one using biological value(BV) and the other employing net protein utilization(NPU) by the nitrogen balance method. The meat oligopeptide mixture showed an excellent nutritive value by both methods. The true digestibilites of both the pork meat protein and the oligopeptide mixture were more than 98%. The above results indicate that the oligopeptide mixture is an excellent material as a dietary nitrogen source for many purposes.

이륜형 압출기의 체류시간 분포에 대한 역피치 스크류의 효과 (Effect of Reverse Screw Elements on the Residence Time Distribution in Twin-Screw Extruder)

  • 이륜형 식품 압출기에서 체류시간의 분포에 대한 reverse screw element의 효과를 보기 위하여 여러가지 screw 조합에 따른 체류시간의 분포를 실험적으로 평가 하였다. Forwarding screw에서 형성된 C. chamber의 수를 평가하기 위해 아래와 같은 model equation을 도출 하였다. $T=T_x+\frac{1}{x}(\sum\frac{l}{a}+\frac{V{\cdot}\rho}{F/x})$ Reverse screw element를 사용함으로써 체류시간 분포 곡선은 넓게 퍼지는 경향이 있었고 최대 peak에 도달하는 시간이 증가 하였다. True residence time은 die 바로 앞에 있는 reverse screw element에 의해 주로 영향을 받았다. Filled C-chamber의 수는 같은 형태의 screw조합에서는 screw 회전수가 증가함에 따라 감소하였다.

데치기(Blanching)로 조리된 22가지 채소류의 베타카로틴 함량의 변화와 영양소 보존율(True Retention) (True Retention and β-Carotene Contents in 22 Blanched Vegetables)

  • 본 연구는 채소류 22종을 대상으로 데치기 후의 베타카로틴 함량의 변화를 조사하였다. 또한, 조리 중 발생하는 시료의 중량 변화와 베타카로틴 함량 변화를 고려하여 영양소 보존율(true retention, TR)을 나타내었다. 실험대상 채소류 중에서 시금치를 예로 들면, 데친 후 품종이나 재배방식에 따라 베타카로틴 함량이 8.78에서 24.65%까지 증가하였다. 따라서 데친 후 베타카로틴 함량의 증가 때문에 데치기 전보다 높은 인체 이용률을 기대할 수 있다. 이를 데치기 과정 중 변화된 시금치 중량을 함께 고려하여 영양소 보존율로 나타내었을 때 시설 재배된 일반 품종의 시금치는 100.52%를 나타냈지만 다른 시금치(포항초, 섬초, 노지 재배된 일반 품종)는 80.13~86.69%를 나타내었다. 다른 채소들의 경우 %TR이 100% 이상인 경우는 아욱(109.24%), 고사리(160.59%), 양배추(164.46%), 냉이(153.80%), 미나리(100.02%) 그리고 도라지(123.02%)에서 나타났는데 이는 데치기 후에 베타카로틴 함량이 증가하였거나 중량이 상대적으로 크게 감소하였기 때문이다. 이들 중 고사리와 양배추의 경우 중량의 감소보다는 베타카로틴 함량의 증가가 주된 요인이었고, 냉이의 경우 중량이 상대적으로 크게 감소하였지만 베타카로틴의 함량이 크게 증가하였기 때문이었다. 나머지 다른 시료들의 TR은 59.35%(곰취)에서 96.42%(유채 어린 잎)의 범위로 나타났다.

위(胃)의 생리특성 및 위기(胃氣)와 진장맥(眞藏脈)과의 상관관계에 대한 연구 (Study on Physiological Character of Stomach, and Correlation of Stomach Qi(胃氣) and True Visceral Pulse(眞藏脈))

  • By examining the relationship between physiological character of stomach and true viscera pulse(眞臟脈) with "Huangdinejing(黃帝內經)", the study shows these fallowing results. Stomach is not only one of the six bowels(六腑), it represents them. It is called as yang brightness of foot(足陽明) because it has relation with function of earth among five phases(五行), great storage(倉廩) and root of five visceras and six bowels(五臟六腑), has close relationship with triple energizers(三焦). Stomach is an important organ that feeds acquired qi(後天之氣) based on food and stomach qi (胃氣) which is a transformed form by going through digestion, is significant for life conservation. In human body, the activation of stomach qi can be known by pulse. The true viscera pulse is a pulse which predicts the period of death. If stomach qi exsits, viscera qi can be led to greater yin of hand(手太陰), however, when it does not exist, five viscera qi can not be led to greater yin of hand and this kind of situation appears the true viscera pulse. Hence, by knowing the relation between stomach qi and five viscera qi, the condition of normality, disease, and death can be known. In "Hwangdineijing" it says, stomach qi, shortly string like pulse(微弦), shortly surging pulse(微鉤), shortly floating pulse(微毛), and shortly sunken pulse(微毛) shown in four seasons are normal pulse. And also it emphasizes, normal pulse is made when four seasons, five viscera pulse, and stomach qi are in harmony. In conclusion, stomach qi is based on food for well being, and a standard of judging people whether they are living in a healthy life or not.

The Additivity of True or Apparent Phosphorus Digestibility Values in Some Feed Ingredients for Growing Pigs

  • Two experiments were conducted to determine the additivity of apparent or true digestibility of phosphorus (P) in soybean meal (SBM), peas, faba beans, corn, oats, broken rice meal, rough rice meal, buckwheat, and sorghum for growing pigs. Chromic oxide (0.3%) was used as a digestion marker in both experiments. Each experiment lasted for 12 d, which consisted of a 7-d dietary adaptation period followed by a 5-d fecal collection period. Experiment 1 involved 6 diets: the SBM-based control diet; 4 diets with corn, oats, rough rice meal and broken rice meal substituted for SBM; and an additional diet with a representative mixture of the 5 ingredients. In Experiment 2, 6 diets were prepared similarly, except that the tested ingredients besides SBM were faba beans, peas, buckwheat, and sorghum. In each experiment, six barrows with an initial average individual BW of 20.5 kg were fed one of the six diets according to a $6{\times}6$ Latin square design. The apparent and true P digestibility values for the nine tested ingredients were determined by the substitution method. There were no differences (p>0.05) between the determined and the predicted true P digestibility values for the mixture of ingredients in Experiments 1 and 2. However, the determined and the predicted apparent P digestibility values for the mixture of ingredients differed (p = 0.059) in Experiment 1, but not in Experiment 2. These results indicate that true P digestibility values are additive in ingredients containing low levels of phytate phosphorus and anti-nutritional factors, whereas the apparent P digestibility values are not always additive in single feed ingredients for growing pigs.

과체중 여대생의 비만 관련 삶의 질 (Obesity-Related Quality of Life in Overweight and Obese Female College Students)

  • Purpose: The purpose of this study was to compare obesity-related quality of life according to obesity classification by BMI (body mass index) and self-assessment. Methods: The participants were 286 female college students in J City. Data were obtained by measuring height. weight and BMI, and using a questionnaire for self-assessment of obesity, weight control, and quality of life. The quality of life was measured using 14 items of the Korean version of obesity-related quality of life (KOQOL). Results: Thirty five percent of the students assessed themselves as overweight and obese despite their BMI <$23m^2/kg$(false overweight). True overweight students with BMI $\geq23m^2/kg$ who perceived themselves as overweight and obese were 23%. The total KOQOL score between true and false overweight students showed no significant difference. True overweight students had a lower total KOQOL score including psychosocial, physical, daily living, sex related. and food-related domains than true normal weight students. Conclusions: The quality of life was not different between true and false overweight students. These results indicate that self-assessment about obesity affects the quality of life like as actual BMI in female college students. Therefore, it is necessary to care students who distort themselves as obese.

Dietary Requirement of True Digestible Phosphorus and Total Calcium for Growing Pigs

  • Sixty healthy growing pigs ($Duroc{\times}Landrace{\times}Yorkshire$ with an average BW of 21.4 kg) were used to determine the true digestible phosphorus (TDP) requirement of growing pigs on the basis of growth performance and serum biochemical indices. Pigs were assigned randomly to one of five dietary treatments (12 pigs/diet), representing five levels of TDP (0.16%, 0.20%, 0.23%, 0.26% and 0.39%). There were three replications per treatment, with four pigs (2 barrows and 2 gilts) in each replication (2 pigs/pen) A randomized-block design was used, with pen as the experimental unit. Experimental diets were formulated to provide the 5 TDP levels with a total calcium (Ca) to TDP ratio of 2:1, and offered to pigs at 5% BW for 28 d. The total Ca contents of the five diets were 0.33, 0.38, 0.45, 0.51 and 0.79%, respectively. During the 28-d experimental period, the ADG of pigs was affected by dietary TDP levels as described by Equation 1: y = $-809,532x^4+788,079x^3-276,250x^2+42,114x-1$,759; ($R^2$ = 0.99; p<0.01; y = ADG, g/d; x = dietary TDP, %). The feed:gain ratio for pigs was affected by dietary TDP levels as described by Equation 2: y = $3,651.1x^4-3,480.4x^3+1,183.8x^2-172.5x+10.9$ ($R^2$ = 0.99; p<0.01; y = feed:gain ratio; x = dietary TDP, %). Total P concentrations in serum were affected by dietary TDP levels as described by Equation 3: y = $-3,311.7x^4+3,342.7x^3-1,224.6x^2+195.6x-8.7$ ($R^2$ = 0.99; p<0.01; y = total serum P concentration and x = dietary TDP, %). The highest ADG (782 g/d), the lowest feed:gain ratio (1.07), and the highest total serum P concentration (3.1 mmol/L) were obtained when dietary TDP level was 0.34%. Collectively, these results indicate that the optimal TDP requirement of growing pigs is 0.34% of the diet (e.g., 5.1 g/day for a 30-kg pig that consumed 1.5 kg feed daily) at a total Ca to TDP ratio of 2:1.
