Performance of Imported Sweet Corn Hybrids in Korea

  • The performance of 7 sugary (su) and 12 shrunken-2 (sh2) sweet com hybrids which are commercially grown in the United States was tested in Korea. The 100-seed weight of su hybrids (16.5-23.6 g) was much heavier compared to that of sh2 hybrids (10.9-17.5 g). The germination rate of su and sh2 hybrids at $25^{\circ}C$ ranged 93.3-100% and 86.7-98.9%, the emergence rate of su and sh2 hybrids in cold test ranged 78.9-97.8% and 62.2-97.8%, and field emergence rate of su and sh2 hybrids ranged 74.4-100.0% and 79.9-98.2%, respectively. In su hybrids, there was a significantly positive correlation between germination rate at $25^{\circ}C$ and emergence rate in cold test or early growth. In contrast, in sh2 hybrids seed weight was positively correlated with early plant growth, while not with the germination rate at $25^{\circ}C$ or emergence rate in cold test and field. Most sh2 hybrids produced larger and more marketable ears compared to su hybrids although there were significant differences among the hybrids in the same genotype. At harvest (24 days after pollination) soluble solids content of su hybrids (24.3-27.1 Brix %) was much higher than that of sh2 hybrids (13.8-18.0 Brix %), while total sugars of sh2 hybrids (21.4-28.6% on the dry weight basis) was much higher compared to su hybrids (2.4-15.9%). Considering germination and emergence rates, marketable ear production, and total sugar content, 'GCB 70' and 'Sweet Satin' in su hybrids and 'Ice Queen', 'Aspen', 'Sweet Magic', 'Bandit', 'Xtrasweet 82', 'Aspen', and 'Cambella 90' in sh2 hybrids performed better than other hybrids.

  • This study was measured weight loss, total ascorbic acids, titratable acidity and soluble solids contents to investigate the effect of EPS(expended polystrene foam) box, double wall corrugated paperboard box and LDPE film pouches during storage at 25oC. The rate of weight loss was 5.9% in corrugated paperboard box after 7 days, but those of 20LD, 40LD film and EPS box were 1.1, 1.0, and 1.1% , respectively. Total ascorbic acid content of EPS box was 20% higher than that in corrugated paperboard box, but the obvious differents were not observed among the LDPE film pouches and EPS box. The titratable acidity was decrease during storage, but total soluble solids content was increase. Overall appearences of LDPE pouches and EPS box were better than those of corrugated paperboard box.

Freshness Extension of Table Grape 'Sheridan' by Packaging Methods (포장방법에 따른 'Sheridan' 포도의 신선도 유지 효과)

Physicochemical properties of kombucha with fruit peels during fermentation (과일 껍질을 첨가한 콤부차의 발효 중 이화학적 특성)

  • The study investigated the pH, acidity, soluble solids, total sugar, polyphenol, flavonoid, anthocyanin content, 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging, and color of kombucha with a variety of added fruit peels during the fermentation process. Pear, grape, plum, orange, apple, and golden kiwi peels were added during fermentation. The pH showed a decrease, while an increase in acidity was observed. An increase in soluble solids, which was higher in most experimental groups than the control group, was also observed. A decrease in total sugar was observed over time. However, an increase was observed in reducing sugar. On Day 0, higher total sugar and reducing sugar were detected in the peel addition group compared with the control group. The antioxidant capacity of polyphenol, flavonoid, anthocyanins, and DPPH radicals scavenging increased with fermentation and was higher in all addition groups, except for pear, compared with the control group. Except for grapes and plums containing high levels of anthocyanins, an increase in the L-value was observed over time, and an increase in the a-value of grapes and plums was also observed (p<0.05). The possible utilization of inedible fruit peel in kombucha was shown. Applying inedible fruit peels to kombucha is proposed to increase antioxidant content and modulate color and pH.

Preparation of Fig Jam and its Quality Characteristics (무화과잼의 제조와 그 품질특성)

  • Chemical analysis and optimum preparation conditions for fig jam were investigated. Soluble solids, acid content and vitamin C of fig was 12.20。Brix, 0.14% and 2.27 mg/100g, respectively. Carbohydrate in fig juice was consisted of 54.43% glucose and 44.53% fructose. Potassium content of fig was 178.0 mg/100g. Moisture content and total sugar of fig fruit was 88.35% and 9.47%. In preparation of fig jam, the addition of 0.2% Citrus natsudaidai juice and 0.5% C. lemon juice as acid source was the best in regard with color and flavor determined by sensory evaluation. The ratio of sucrose : honey : oligo sugar(70:20:10) was also the best in addition of sugar source 60%(w/w) in total. Fig jam prepared in this experiment was better than that of commercial products in sensory evaluation, and microbial growth of this product was not recognized for one month at 30$\^{C}$.

Fruit Characteristics Based on Leaf to Fruit Ratio in 'Pione' Grapevine (Vitis vinifera × V. labrusca) during Cultivation with Heating (가온 재배 시 '피오네' 포도(Vitis vinifera × V. labrusca)의 엽과비에 따른 과실 특성)

  • BACKGROUND: Defoliation in grapevine cultivation is practically used to improve light environment within the canopy and thereby fruit quality. Effects of defoliation in five-year-old 'Pione' grapevine during cultivation with heating were investigated to find out optimum ratio of leaf area to fruit cluster weight (L/F). METHODS AND RESULTS: The grapevines were defoliated with berry-thinning 20 days after full bloom to provide various levels of L/F. At harvest, total leaf area values of fruit bearing branches were between 0.23 and $0.60m^2$. With increasing L/F, soluble solids and anthocyanin contents curvilinearly increased ($R^2=0.76^{**}$). At L/F over $0.6m^2/kg$, soluble solids content (SSC) leveled off. With increasing L/F, titratable acidity (TA) linearly decreased ($R^2=0.87^{**}$), but the ratio of SSC to TA linearly increased ($R^2=0.86^{**}$). Anthocyanin content was significantly correlated with SSC and the ratio of SSC to TA ($R^2=0.80^{**}$ and $0.82^{**}$, respectively). When total leaf area per fruit bearing branch was maintained $0.40m^2$, soluble solids and anthocyanin contents linearly decreased ($R^2=0.79^{**}$ and $0.85^{**}$, respectively), but TA linearly increased with increasing fruit cluster weight ($R^2=0.70^{**}$). Fruit was low in quality when the L/F was below $0.6m^2/kg$. CONCLUSION: L/F is recommended to be maintained at least $0.6m^2/kg$ in 'Pione' grapevine during cultivation with heating to produce higher-quality fruits.

The influences of extraction time and pressure on the chemical characteristics of Gyejibokryeong-hwan decoctions

  • Objectives : This study was aimed to compare Gyejibokryeong-hwan (GBH) decoctions produced using different pressure levels for various extraction times to find the optimal extraction conditions through extraction yield, total soluble solids content (TSSC), hydrogen ion concentration (pH), and the contents of chemical compounds. Methods : Decoctions of GBH were prepared under the pressure levels of 0 or $1kgf/cm^2$ for 30-180 min using water as extraction solvent. The extraction yield, TSSC, and pH were measured, and the amounts of the chemical compounds were determined using high performance liquid chromatography-photodiode array detector. Results : The higher pressure and longer extraction time increased the values of TSSC and extraction yield, while decreased the pH value. The decoctions produced in 180 min by pressurized method and produced in 150 min by non-pressurized method showed maximum values of extraction yield and TSSC with minimum value of pH. The amounts of chemical compounds showed variations in pressurized and non-pressurized decoction during overall extraction times. The influences of pressure and extraction time on extraction yield, TSSC, pH, and the contents of chemical compounds were confirmed by regression analysis, which showed that all extraction values were significantly affected by at least one of two extraction factors, pressure and extraction time. Conclusions : This study suggests that the pressure and extraction time can significantly affect the extraction efficiency of components from GBH decoctions. However, optimal extraction conditions could not be chosen due to the variation of the amounts of chemical compounds.

Comparison of the Fruit Qualities, the Free Radical Scavenging Activities and Mangiferin Content of the Mango, cv. Irwin Cultivated in Jeju and Okinawa (제주와 오키나와에서 재배된 망고 'Irwin' 과실의 품질, 활성산소 소거활성 및 망기페린(mangiferin) 함량 비교)

  • In this study, we compare the quality of the mango cv. Irwin cultivated in Jeju and Okinawa by evaluating the total soluble solids (TSS) and antioxidant activity (AA) from ethanol extracts of the fruit. TSS and AA were higher in fruit cultivated at the Research Institute of Climate Change and Agriculture in Jeju (RICA) and Okinawa farm, where the low tree height cultivation method is used, than in fruit cultivated on farm in Jeju. Also, the mangiferin content of the Okinawa farm was higher than those produced on the RICA and Jeju farm house. These results suggest that the lowering tree height cultivation method improves the quality of the mango cv. Irwin.

Effects of pruning intensity and diameter of bearing mother branches on the growth and berry quality in 'Kyoho' grapevines ('거봉' 포도의 전정강도와 결과모지 굵기가 생육 및 과실품질에 미치는 영향)

  • This study was carried out to investigate suitable pruning methods to avoid poor berry setting of 'Kyoho' grapevine in Suwon and Anseong areas. Light pruning increased percentage of bud bursts and number of shoots per bearing mother branches(BMB), cluster weight and percentage of berry sating but it decreased shoot length, number of leaves and, leaf area and leaf weight. There was little difference in soluble solids, titratable acidity, and anthocyanin contents of berries by the treatment of either light or heavy pruning. Shoot length became longer as diameter of BMB thickened, leaf area and chlorophyll content also became larger and diameter of BMB. Total carbohydrate and N, P, K, Ca, and Mg contents showed significantly little difference, but total carbohydrate and Ca contents showed a tendency of continuous increase as diameter of BMB thinned. Number of seeded berries per cluster became fewer as BMB thinned but percentage of berry setting showed an increasing tendency. Cluster weight, berry weight, berry number per cluster, soluble solids, anthocyanin content were higher in case of around 1cm of diameters of BMB.

Assessment of Phytochemicals, Quality Attributes, and Antioxidant Activities in Commercial Tomato Cultivars

  • To assess South Korean commercial tomato cultivars, regular and cherry tomato cultivars were grown in the greenhouse and evaluated for color attributes, titratable acidity, pH, total soluble solids, carotenoids (lycopene and ${\beta}$-carotene), total phenols, flavonoids, vitamin C, and antioxidant activity. Significant differences (p < 0.05 using Duncan's multiple range test (DMRT)) were observed in the levels of most phytochemicals, quality parameters, and antioxidant activity among the twenty South Korean tomato cultivars tested. Lycopene and ${\beta}$-carotene contents varied significantly (p < 0.05 using DMRT), from $0.95mg{\cdot}100g^{-1}$ to $5.12mg{\cdot}100g^{-1}$ and $0.65mg{\cdot}100g^{-1}$ to $3.56mg{\cdot}100g^{-1}$ of fresh weight, respectively. ${\beta}$-carotene contents exhibited the highest genetic variation (59.2%), followed by naringenin (52.8%) and other phytochemicals. Most of the cherry tomato cultivars had statistically higher levels (p < 0.05 using DMRT) of carotenoids, phenols, flavonoids, vitamin C, and antioxidant activity compared to the regular tomato varieties, suggesting their higher nutritional value. Lycopene content was highest in the cultivars YoYo, Jicored, Titi-Chal, TY-Endorphin, and Rubyking. Cultivars Rubyking, TY-Endorphin, and Titi-Chal also showed relatively higher antioxidant activities in three assays: 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), and ferric ion reducing antioxidant power (FRAP) assays. All the antioxidants, except luteolin, were positively correlated with antioxidant activities; the highest correlation was observed between total phenol and antioxidant activities, followed by the correlation between rutin and vitamin C. Cultivars identified to have superior nutritional status would be useful in tomato breeding programs to further improve quality and health benefits of tomatoes for the fresh and processed markets.
