Blister blight was occurred on tea (Thea sinensis) in a farmer's tea garden located in Sicheon-myon, Sancheong-gun, Gyeongnam province, Korea. The typical symptoms of the disease were appeared on the leaves and bud. The early symptom were started with small yellowish spots then infected area became upheave and covered with white blister which the hymenium de.veloped from under neath of epidermis. Generally, the infected leaves and buds were appeared like rice cake. Colonies formed on PDA were developed white, later turned milk white. Basidia were 2 sterigma, and 30${\sim}$53 ${\times}$ 3.1${\sim}$5.8 ${\mu}m$ in size. Basidiospores were ellipsoid curved, coloriess, 1-celled and 11${\sim}$14.7 ${\times}$ 4${\sim}$5.4 ${\mu}m$ in size. The optimum temperature for growth of the fungus was about $25^{\circ}C$ on PDA and PSA. This is the first report on the blister blight of tea caused by Exobasidium vexans in Korea.
A bacterial disease of tea plants(Camellia sinensis L.) was found in the graftage nursery grown under vinyl house conditions in Suncheon city, Korea, in spring of 2002. The primary symptoms of the disease include small, water-soaked and dark brown spot development on the young leaves. This spot gradually increases in size, especially taking on elongate shape along the midrib or vein of the leaf, and then turns black. The diseased leaves were defoliated easily. Ten strains were isolated from the infected leaf. Inoculation on tea leaf with these isolates produced the same symptoms of naturally infected plants. On the basis of stain reactions, morphological characterization, colony pattern, physiological and biochemical reactions, the bacterium was identified as Pseudomonas syringae pv. theae. This is the first report of brown blight of tea plant in Korea.
Korean tea leaves (Camellia sinensis var. sinensis,), which were harvested in April, were fermented for various times, and then the changes in free amino acids (glutamic acid, GABA, arginine, theanine), pH, color values, and sensory qualities were evaluated. The pH in every sample became lower as fermentation time increased. Lightness also decreased as tea fermentation increased. Furthermore, glutamic acid, GABA, and arginine contents increased, while theanine content decreased, where it presented as 69% of the non-fermented tea leaves. GABA, a hypotensive compound, increased in the fermented tea leaves according to the degree of fermentation and hand rolling times. In terms of the theanine relaxation effect as well as taste, a shorter fermentation time is required, and for a hypotensive effect of GABA, fermentation needs to be increased. For the sensory evaluation, the preferred blend of taste and flavor was highest in the S8 tea sample.

Tea is the most popular beverage in the world. In fact, there are mainly three different kinds of tea (Green tea, black tea, and post-fermented tea). Post-fermented tea is produced by the microbial fermentation process using sun-dried green tea leaves (Camellia sinensis) as the raw material. Chungtaejeon was a traditional tea introduced in the age of the ancient three states and is the only "Ddeok-cha or Don-cha" culture in the world that survived on the southwestern shore of Republic of Korea. In this study, the structures of the bacterial community involved in the production of oriental traditional post-fermented tea (Chungtaejeon) were investigated using 16S rRNA gene analysis. The 16S rRNA gene analysis of dominant microbial bacteria in post-fermented tea confirmed the presence of Pantoea sp., and Klebsiella oxytoca. Phylogenetic analysis suggested that the taxonomic affiliation of the dominant species in the post-fermented tea was ${\gamma}$-proteobacteria. Hot water extract from mugwort (Artemisia asiatica nakai) leaves and tea inhibited the growth of Bacillus subtilis by adding to the nutrient broth 1.0% and 0.5% concentration, respectively. Among the important compounds that contributing mugwort like flavor to the mugwort leaves and tea were considered, authenic compound of thujone, caryophyllene and farnesol showed bactericidal effect for Escherichia coli, Enterobacter aerogenes, Vibrio paraheaemolyticus, Psudomonas aeruginosa, Bacillus subtilis and Staphylococcus aureus when teste by paper disc method ( 8 mm diameter). The mixture of caryophyllene and farnesol was more bactericidal effect for various bacteria than the mixture of thujone, caryophyllene and farnesol was more bactericidal effect for various bacteria that the mixture of thujone, caryophyllene and farnesol or each compounds . Especially, the mixture of caryophyllene and farnesol showed strong bactericidal effect (diameter of inhibition zone>40mm) for Vibrio parahaemolyticus , Enterobacter aerogenes and BAcillus subtilis.
To develop a beverage indigenous to Korea, leaves of Doojoong tree (Eucommia ulmoides) were investigated for their chemical composition, extraction conditions and processing methods. It was concluded that Doojoong-tea from the leaves possesses sufficiently acceptable qualities as a favorite beverage.
Antifungal activity of compost teas was evaluated in vitro and in vivo experiments. In vitro test, fourteen compost teas were produced using five different composts and through six different methods for compost tea production. Eleven pathogenic fungi were used as indicators of antifungal activity of compost teas. In vivo test, one of the compost teas used in vitro test was sprayed to cucumber leaves which were infected with powdery mildew in order to evaluate antifungal activity of compost tea. From the results of the tests, it was found that all compost teas used this study showed antifungal activity and the proper application of compost teas against pathogenic fungi for obtaining optimal effects was important to know.
Theaflavins (TF) and thearubigins (TR) were separated from Korean microbially fermented tea leaves. Contents of TF (74.4 $\mu$M/g) and TR (37.2%) were higher than reported for black tea fermented by oxidase. Antioxidant activities of TF, TR and EGCG were analyzed and protective effects of COS-7 cells against copper and cadmium-induced toxicity were investigated. TF and TR exhibited good inhibition rates of about 85$\sim$90% for antioxidant and scavenging activities of free radicals and protected COS-7 cells against apoptosis or damage caused by stress, such as cadmium and copper-oxidative injury, free radicals etc. These results indicate that TF, TR and EGCG have antioxidant and scavenging activities against free radicals and protect COS-7 cells from Cu, Cd induced injury.
A study aimed at identifying putative drought responsive genes that confer tolerance to water stress deficit in tea plants was conducted in a 'rain-out shelter' using potted plants. Eighteen months old drought tolerant and susceptible tea cultivars were each separately exposed to water stress or control conditions of 18 or 34% soil moisture content, respectively, for three months. After the treatment period, leaves were harvested from each treatment for isolation of RNA and cDNA synthesis. The cDNA libraries were sequenced on Roche 454 high-throughput pyrosequencing platform to produce 232,853 reads. After quality control, the reads were assembled into 460 long transcripts (contigs). The annotated contigs showed similarity with proteins in the Arabidopsis thaliana proteome. Heat shock proteins (HSP70), superoxide dismutase (SOD), catalase (cat), peroxidase (PoX), calmodulinelike protein (Cam7) and galactinol synthase (Gols4) droughtrelated genes were shown to be regulated differently in tea plants exposed to water stress. HSP70 and SOD were highly expressed in the drought tolerant cultivar relative to the susceptible cultivar under drought conditions. The genes and pathways identified suggest efficient regulation leading to active adaptation as a basal defense response against water stress deficit by tea. The knowledge generated can be further utilized to better understand molecular mechanisms underlying stress tolerance in tea.

These studies were carried out to investigate the quality of green tea processed by different pan-firing hand rolling and to select the best conditions during the procedure of green tea processing the results were as follows. At harvestion tea plant leaf, tea plants had 4 leaves. each leaf size was 7.5 cm'$\square$2.6 cm, and weight of 100 buds 46.6 g. The increase of pan-fired time decreased in the moisture content and yield of green tea. After processing green tea, 5 times pan-fired one had much more contents of total nitrogen (T-N:5.31%), caffeine (2.00%) and total amino acid (T.A.A. : 3,046 mg%) and less content of tannin (13.41%) than the other treatments. but 3 times pan-fired one had the highest contents of vitamin C (204.3 mg%) and chlorophyll (365.0 mg%) among three kinds pan-firing method. Sixteen kinds of free amino acid including theanine as a good taste component of pan-fired green tea were isolated and measured by HPLC. Free amino acid (FAA) contents were in the range of $2,683{\sim}2,925$ mg% and among various pan-firing methods, 5 tims pan-fired one had the highest content of F.A.A. Among these free amino acids, theanine occupied as much as $56.4{\sim}61.3%$ of F.A.A. Lightness, yellowness and redness of 5 times pan-fired green tea were middle value among three different treatments. Besides, it gained the highest score of sensory evaluation among them. These above results suggested that 5 times pan-fired green tea was considered to be the best level as pan-firing times of green tea processing.
