독거 여자노인의 식품공급프로그램 실시 후 음식섭취빈도, 식태도 및 영양위험정도 변화 (The Changes of Dish Consumption Frequencies, Dietary Attitudes and Health-Nutrition Risk for Single Living Female Elderly on Food-Aid Program)

  • This study aimed to estimate the effect of the home based food supplying program in single living female elderly on the basis of depression, Health and Nutrition Risk Index, dietary attitude and dish consumption frequencies. The Food Supplying Program was carried out for 8 months for 27 single living female elderly from lower income status in Bucheon city. Main supplied foods were consisted with soymilk, vegetables, fruits and fish. The effect of the food supplying program were analyzed for 22 elderly who completed the program (group supplied with food : GSF) compared to the group not supplied with food (GNSF). The results of this study were as follows: Degree of depression estimated with depression score and Health-Nutrition Risk Index were decreased and the scores of dietary attitude and behaviors were increased for GSF after 8 months. However these improvements were not shown in the GNSF. GSF showed significantly increased consumption frequencies in soybean milk, tangerine, stir fried anchovy and yogurt, where as GNSF was observed with the decreasing trend in most of the dishes. In conclusion, home based food supplying program for single living female elderly not only increased the consumption frequencies of some dishes but also improved depression rate, Health and Nutrition Risk Index and dietary behavior concomitantly.

학교급식 메뉴에 대한 고등학생들의 기호도와 만족도에 관한 연구 -경주지역을 중심으로- (A Study on the Preference and Satisfaction on the Menu of School Lunch Service of High School Students in Gyeongju Area)

  • This study was performed by questionnaire to investigate the preference and satisfaction on the menu of school foodservice of high school students. This study aims at providing useful information to establish subdivided menu developing direction. The subjects were consisted of 637 high school students(435 males and 202 females, 5 direct type schools and 5 trust type schools) in Gyeongju area. The results of this study were: The preferred school foodservice menu of subjects was 'seasoned roast chicken', 'steamed pork rib', 'beef rib soup', 'yogurt', 'sandwiches', 'boiled rice with assorted mixtures', 'boiled rice', 'watermelon', 'spaghetti' in that other. On the other hand, the preference for 'spinach soybean soup', 'steamed Mideodeok', 'boiled lotus root', 'roasted sweetpotato stalk', 'chopped and seasoned cucumber' was very low. Males favoured rice and meats, while females liked better noodles and vegetables. Direct type foodservice students' preference scores were higher than those of type foodservice students in side dish menu categories. The preferred and satisfied menu of subjects was meats and sweet foods, and but the preference and satisfaction for vegetables and tough foods was very low.

홍삼 추출물 첨가 혼합 발효유의 특성 (Properties of the Mixed Fermentation Milk Added with Red Ginseng Extract)

  • 우유와 두유를 2:1로 혼합하고 홍삼 추출물을 첨가하여 발효유를 제조하였고 2종류의 스타터를 사용하여 발효 특성을 시험하였다. 2종류의 스타터를 사용한 모든 처리구에서 배양 15시간 후 pH는 $3.90{\sim}3.94$ 사이로 나타나 산 생성 촉진 효과가 있었고, 산 생성은 홍삼 추출물 첨가량이 증가함에 따라 조금씩 증가되는 것으로 나타났다. 홍삼 추출물 첨가량이 증가할수록 생균수는 증가하여 Lactobacillus acidophilus KCTC 3150를 스타터로 사용한 균에서 1.0% 홍삼 추출물 첨가량은 $6.26{\times}10^8\;cfu/mL$로서 최대 균수를 나타내었으며, 배양 12시간 이후에 대조구에서는 감소하는 반면 홍삼 추출물 첨가구에서는 젖산균수는 계속해서 최대균수를 유지하고 있었다. 유기산 생성은 lactic acid인 경우 Lactobacillus acidophilus KCTC3150에서 1.0% 홍삼 추출물 첨가구에서 332.22 mM로 가장 높았으며 홍삼 추출물 첨가량이 증가됨에 따라 lactic acid의 생성량도 증가되었다. 당 분해율은 두 균주 모두 홍삼 추출물 첨가량이 증가함에 따라 stachylose의 분해율이 증가하였고, Lactobacillus acidophilus KCTC3150 균주의 경우 stachylose의 분해율이 최대 19%인 반면, Lactobacillus salivarius subsp. salivarius CNU27의 경우 stachylose의 최대 분해율은 54%로서 분해율이 월등히 높았다. 점도는 홍삼추출물 첨가량이 1.0% 첨가구에서 Lactobacillus acidophilus KCTC3150, Lactobacillus salivarius subsp. salivarius CNU27 각각 780 cP로 가장 높게 나타났다. 관능검사 결과는 0.2% 홍삼 추출물을 첨가하고 Lactobacillus salivarius subsp. salivarius CNU27를 스타터로 사용한 발효유가 $4.14{\pm}0.64$로 기호도가 가장 좋게 나타났다.

한국노인의 식습관 및 식사행동에 관한 조사 연구 (A Study on the Food Habits and Dietary Behaviors among the Korean Elderly)

  • As the elderly population has increased in the advanced countries, food intake, relationship of nutrient intake and disease has become major problem in the aged. To investigate the dietary behaviors and the preference of food of the elderly for developing meal planning, the study was conducted through survey questionnaires including 24-hr dietary recall, dietary behaviors, food preference and frequency of food intake to 352 elderly (104 male and 248 female) who were more than 60 years old and living in Seoul. Most of subjects ate three meals regulary and the most preferred taste was sweet and the less preferred taste was sour. Dietary behaviors according to educational level were shown that the skipping meal time and duration time of one meal were significant difference in educational level. Most of the elderly subjects like kimchi and soybean paste soup. The more educated elderly were preferred milk. The reason of dislike of milk was bad flavor and diarrhea. Most of them who graduated from university and high school selected fishes because of good for health primary, otherwise no educated, elementary school and middle school graduated elderly selected vegetables primary. Meats, fishes, seaweeds, mushrooms, fruits, milk and milk products, eggs and vegetables intakes of total elderly subjects were significantly positively related to educational level. With respect to milk and milk products intakes, cheese, yogurt (curd) and milk intake of elderly was significantly negatively related to age. Therefore education for developing desirable dietary behaviors and improving the meal patterns should be in forced to elderly, especially who had poor educational background in order to manage the meal planning and to care for their health in the later life.

식이유형과 대장암 위험도와의 관련성 분석 (Analyses on the Associations of Dietary Patterns with Colon Cancer Risk)

  • Dietary pattern analysis is important complementary approach for identifying associations between diet and chronic disease. A case-control study was conducted in order to examine dietary patterns and the risk of colon cancer in Korea. Data were collected from both 137 cases with either colorectal cancer or large bowl adenomatous polyps and 134 controls regarding social-demographic characteristics and food intake using a semi-quantitative food frequency questionnaire. We conducted factor analysis and identified 6 major dietary patterns: 'Well-being diet' characterized by higher intakes of potatoes, yogurt, soybean paste and vegetables, 'Meat & fish', 'Milk & juice', 'Pork & alcohol', 'Rice & kimchi', and 'Coffee & cake'. We calculated factor scores for each participant and examined the associations between dietary patterns and colon cancer risk. After adjusting for potential confounders, there was a relative risk for colon cancer of 0.16 (95% confidence interval, 0.07 - 0.34) when comparing the highest with the lowest tertile of the 'Well-being' pattern. Significant trends of decreasing risk of colon cancer also emerged with the 'Milk & juice' (OR = 0.40, 95% CI = 0.20 - 0.79). In contrast, inverse associations of the risk were found for 'Pork & alcohol' (OR = 1.92, 95% CI = 0.93 - 3.97), 'Coffee & cake' (OR = 2.18, 95% CI = 1.07 - 4.46). For the 'Meat & fish' pattern, the decreased risk of colon cancer was observed in the second tertile, but not in the highest tertile when comparing to the lowest. The 'Rice & kimchi' pattern had a nonsignificant association with the risk. These data suggest that major dietary patterns derived from the FFQ associated with the risk of colon cancer in Korea. Since foods are not consumed in isolation, dietary pattern research in natural eating behavior may be useful for understanding dietary causes of colon cancer.

Impact of Interactions Between Self-Reported Psychological Stress and Habitual Exercise on the Dietary Intake of Japanese Men and Women: a Large-Scale Cross-Sectional Study

  • Background: Modifying lifestyle factors such as diet and exercise can reduce the risk of cancer. Psychological stress (PS) might be indirectly associated with cancer because it alters lifestyle factors. However, the relationship among these variables has not been fully investigated. Thus, we examined interactions between self-reported PS (SRPS) and habitual exercise on diet. Materials and Methods: In all, 5,587 men and 2,718 women were divided into "exerciser" and :non-exerciser" groips, based on whether they exercised reguarly, and classified into three SRPS levels: low, moderate and high. Diet was estimated using a validated food frequency questionnaire. Using a general linear model, food and nutrient consumption was estimated for each SRPS level in the 2 exercise groups, and the interactions between SRPS levels and exercise were calculated. Results: In women, the intake of pork and beef, low fat milk and yogurt, natto (fermented soybean), carrots and squash, other root vegetables, mushrooms, seaweeds, and wine along with the nutrients vegetable protein, soluble, insoluble and total dietary fiber, daidzein, genistein, carotene, retinol equivalents, vitamin B2, pantothenic acid, potassium, calcium, magnesium, phosphorus and iron demonstrated significant interaction with SRPS and habitual exercise (p for interaction <0.05). In men, raw and green leafy vegetable and fruit and vegetable juice significantly interacted with SRPS and habitual exercise (p for interaction <0.05). Conclusions: We suggest that certain foods and nutrients, which are thought to have a protective effect against cancer, interact with SRPS and habitual exercise, especially in women. This information is valuable for understanding and improving interventions for cancer prevention.

부산지역 청소년의 칼슘에 대한 인식 및 섭취실태 (Calcium Intake and Cognition on Calcium of Adolescents in Busan Area)

  • 청소년들의 칼슘에 대한 인식 및 섭취실태를 파악하기 위하여 부산시내 초등학교 6학년 145명, 고등학교 2학년 140명, 총 295명을 대상으로 이들의 칼슘에 대한 인식 및 섭취실태를 설문 및 식이섭취조사 방법을 통하여 조사하였다. 연구결과, 청소년들은 칼슘과 우유의 기능, 골다공증과 칼슘과의 관계는 잘 인식하고 있었으나, 칼슘의 흡수와 관련이 있는 영양소에 대해서는 인식이 낮은 것으로 나타났다. 칼슘에 대한 인식의 정도는 여학생들이 높은 점수를 얻었으며 초등학교 남학생에서 가장 낮은 점수를 나타내었다. 칼슘식품에 대한 기호도는 아이스크림, 김, 요구르트 순으로 높았으나 콩 및 뱅어포 등은 낮은 것으로 나타났으며, 연령 및 성별에 따라 좋아하는 정도가 달랐다. 청소년들의 하루 평균 칼슘 섭취량은 여학생에서 491.51~530.5 mg, 남학생이 554.5~636.7 mg이었으며 이는 한국인 영양권장량의 각각61.4~66.3%, 69.3~70.7%의 범위를 나타내었다 칼슘 섭취량이 RDA 66.7% 미만의 경우가 고등학교 여학생에서 54.9%로 다른 집단보다 높게 나타났으며 특히 여고생들이 운동의 횟수나 운동량이 적다는 사실도 함께 나타나 이 집단에 대한 영양교육의 필요성이 절실하였다. 또한 청소년들의 칼슘급원 식품군은 우유 및 유제품, 채소류, 어패류 및 곡류 순이었으며, 칼슘섭취량은 칼슘에 대한 영양지식과 양의 상관관계를 보여 인식이 높을수록 칼슘섭취량이 많은 것으로 나타났다.

요양시설 거주 노인의 에너지와 영양소 섭취 실태 및 식품선호도 조사 (Study on Energy and Nutrient Intake and Food Preference of the Elderly in Care Facilities)

  • Objectives: The purpose of this study was to assess energy and nutritional intake and investigate the preference for food and cooking methods of the residents in elderly care facilities. Methods: Data were collected from 72 residents (10 males and 62 females) aged ${\geq}70$ years in elderly care facilities using questionnaires, food photographs for estimating dietary intake and records for daily physical activity. Results: Average age of the study participants was 85.0 years and 41, 36 and 8 had dementia, hypertension and diabetes mellitus, respectively. 15%, 65% and 19% of subjects were physically mobile, enervated, and immobile, respectively. Daily energy intake was 1360.2 kcal in men and 1378.0 kcal in women, which were 68.0% and 86.1% of the estimated energy requirement (EER) of dietary reference intake for Koreans (KDRI) for ${\geq}75$ year old individuals, respectively. Estimated energy expenditure (EEE) of subjects calculated using formula from KDRI was 1361.9 kcal and EER calculated using estimated daily physical activity (EDPA) was 1232.9 kcal. Energy intake and EEE from KDRI were higher than EER from EDPA. Dietary intake of dietary fiber, calcium, potassium, zinc, vitamin $B_2$, niacin, vitamin C were lower, and protein, phosphorous, iron, sodium, vitamin A, vitamin $B_1$, vitamin $B_6$, vitamin E were higher than the corresponding ones of KDRI. Subjects liked meats, fishes and shellfish, and fruits, while subjects disliked milk, seaweeds and salted fish and salted vegetables. Cooked rice, soybean paste soup, beef, cooked sliced radish strip, and yogurt were favorite foods, with steam being a favorite cooking method. Subjects considered nutrition as the most important factor for improving food service quality. Conclusions: Results of this study could be utilized for improving food-service for the residents in elderly care facilities, and provide a basis for setting reference intake of energy and nutrients of the elderly having very low activity levels.

발아 고단백 콩의 Lactobacillus brevis 젖산발효에 의한 가바와 이소플라본 함량 및 라디칼 소거활성의 비교 (Comparison of γ-aminobutyric acid and isoflavone aglycone contents, to radical scavenging activities of high-protein soybean sprouting by lactic acid fermentation with Lactobacillus brevis)

  • 본 연구는 발아된 고단백 콩(high protein soybeans, HPSs)으로부터 가바(GABA)와 비배당체 이소플라본(isoflavone aglycones)이 증가된 콩-분말 요구르트(SPY)를 제조하였다. 이를 위해 L. brevis로 발효 증자 고단백콩 발아체(FSHPS, 0-4 cm)를 72시간 발효하였다. 발효 고단백콩(FHPS), 0 cm 발효 증자 고단백콩 발아체(FSHPS-0), 1cm 발효 증자 고단백콩 발아체(FSHPS-1), 2cm 발효 증자 고단백콩 발아체(FSHPS-2) 및 4 cm 발효 증자 고단백콩 발아체(FSHPS-4)의 총 유리아미노산 함량은 각 79.53, 489.93, 877.55, 780.53 및 979.97 mg 이었다. 발효되지 않은 고단백콩 발아체(UFSHPS-1, 1 cm) 및 FSHPS-1의 글루탐산(GA) 및 GABA 함량이 각각 최고 100.31 mg/100 mL 및 101.60 mg/100 mL로 관찰되었다. 또한 FSHPS-1에서 가장 높은 DPPH(63.28%) 및 ABTS(73.28%) 라디칼 소거능을 보였다. 그러나 FSHPS-4에서 isoflavone aglycone 비율이 81.63%로 가장 높았다. 특히, FSHPS-1은 높은 가바 함량과 기능적 특성을 나타내어 두유 산업에 응용할 수 있을 것이다.

농촌, 어촌, 도시 지역별 칼슘, 인, 철, 아연의 섭취상태 비교평가 (Comparative Evaluation of Dietary Intakes of Calcium, Phosphorus, Iron, and Zinc in Rural, Coastal, and Urban District)

  • 본 연구에서는 식생활 양상이 서로 다를 것으로 생각되는 농촌, 어촌, 도시 지역별 각각 137명, 100명, 117명을 대상으로 직접면담과 24시간 회상법에 의한 식사섭취 조사를 실시한 후 현재 우리나라에서 권장량이 설정되어 있는 칼슘, 인, 철, 아연을 중심으로한 무기질의 섭취 상태를 비교${\cdot}$ 평가함으로써 대상자 특성별 영양지도에 필요한 기초 자료를 제시하고자 하였다. 농촌, 어촌, 도시 지역 대상자들의 평균 연령은 긱각 55.5세, 57.0세, 47.9세였다. 지역별 1일 총 식품섭취량은 유의한 차이가 없었으나 곡류, 당류, 채소류, 버섯류, 어패류, 우유류, 유지류의 섭취량은 유의한 차이를 보여 곡류, 버섯류, 채소류는 농촌지역이, 어패류는 어촌지역이, 당류, 우유류, 유지류 섭취량은 도시지역이 높았다. 영양권장량 대비 에너지, 칼슘, 비타민 A, 비타민 $B_6$ 섭취 비율은 지역별 유의한 차이를 보여 에너지와 비타민 $B_6$는 농촌지역이, 칼슘과 비타민 A는 도시지역이 높았으며, 어촌지역은 칼슘, 비타민 A, 비타민 $B_6$ 섭취비율이 세 지역 중 가장 낮았다. 전체대상자의 권장량 대비 무기질 섭취비율은 칼슘 $60.1\%$, 인 $123.9\%$, 철 $95.2\%$, 아연 $73.1\%$로 칼슘과 아연 섭취가 낮았다. 지역별 비교에서 칼슘 섭취비율은 농촌과 어촌이 각각 $58.2\%$$53.5\%$로 도시 지역의 $67.9\%$보다 유의하게 (p<0.01) 낮았다. 칼슘은 채소류, 버섯류, 과일류, 육류, 어패류, 우유류를 통한 섭취량이 지역별 유의한 차이를 보여 채소류, 버섯류, 육류는 농촌지역이, 어패류는 어촌지역이, 과일류와 우유류는 도시지역이 가장 높았다. 권장량 대비 무기질 섭취비율을 $75\%$ 미만, $75\~125\%,\;125\%$ 이상으로 분류하여 지역별 분포 차이를 살펴보았을 때 아연은 권장량의 $75\%$ 미만을 섭취한 대상자가 어촌 및 도시가 농촌보다 유의(p<0.05)하게 많았으며, 전체대상자 중 권장량의 $75\%$ 미만을 섭취한 대상자는 칼슘 $74.9\%$, 아연 $63.8\%$로 높았다. 전체 대상자의 칼슘 섭취에 기여한 식품은 멸치, 배추김치, 우유, 두부, 쌀, 아이스크림, 미역, 요구르트, 미꾸라지, 파 순이었으며, 이상의 10가지 식품을 통해 전체 칼슘 섭취량의 $53.5\%$가 공급되었다. 인, 철, 아연은 쌀을 통한 공급량이 각각 무기 질 섭취량의 $15.5\%,\;22.1\%,\;35.9\%$로서 가장 높았다. 아연은 쌀 이외에 돼지고기, 쇠고기, 팥, 개고기, 닭고기, 우럭, 두부, 차조, 배추김치를 통해 총 아연 섭취량의 $64.4\%$를 섭취하였다. 이상의 연구결과를 종합할 때 어촌지역의 식품 및 영양소 섭취 수준이 가장 낮았으며, 세 지역 모두 칼슘과 아연의 섭취가 권장량에 미치지 못하였다. 칼슘은 농촌과 어촌의 섭취량이 도시지역보다 낮았으며, 권장량의 $75\%$ 미만의 아연을 섭취하고 있는 대상자는 어촌 및 도시가 농촌보다 유의 (p<0.05)하게 많았다. 따라서 칼슘과 아연 섭취를 증가시키기 위해서는 농촌지역은 어패류와 우유류, 어촌지역은 채소류와 우유류, 도시지역은 채소류와 같이 지역에 따라 각 무기질의 공급이 취약한 식품을 선택적이고 집중적으로 섭취할 수 있도록 영양지도를 차별화시켜야 할 것이다.
