Processed meat products play a vital role in our daily dietary intake due to their rich protein content and the inherent convenience they offer. However, they often contain synthetic additives and ingredients that may pose health risks when taken excessively. This review explores strategies to improve meat product quality, focusing on three key approaches: substituting synthetic additives, reducing the ingredients potentially harmful when overconsumed like salt and animal fat, and boosting nutritional value. To replace synthetic additives, natural sources like celery and beet powders, as well as atmospheric cold plasma treatment, have been considered. However, for phosphates, the use of organic alternatives is limited due to the low phosphate content in natural substances. Thus, dietary fiber has been used to replicate phosphate functions by enhancing water retention and emulsion stability in meat products. Reducing the excessive salt and animal fat has garnered attention. Plant polysaccharides interact with water, fat, and proteins, improving gel formation and water retention, and enabling the development of low-salt and low-fat products. Replacing saturated fats with vegetable oils is also an option, but it requires techniques like Pickering emulsion or encapsulation to maintain product quality. These strategies aim to reduce or replace synthetic additives and ingredients that can potentially harm health. Dietary fiber offers numerous health benefits, including gut health improvement, calorie reduction, and blood glucose and lipid level regulation. Natural plant extracts not only enhance oxidative stability but also reduce potential carcinogens as antioxidants. Controlling protein and lipid bioavailability is also considered, especially for specific consumer groups like infants, the elderly, and individuals engaged in physical training with dietary management. Future research should explore the full potential of dietary fiber, encompassing synthetic additive substitution, salt and animal fat reduction, and nutritional enhancement. Additionally, optimal sources and dosages of polysaccharides should be determined, considering their distinct properties in interactions with water, proteins, and fats. This holistic approach holds promise for improving meat product quality with minimal processing.

Familial hypokalemic periodic paralysis (hypoPP) is a rare inherited channelopathy that often presents with episodic weakness accompanied by hypokalemia. Thus far, mutations in the gene encoding two ion channels (CACNL1A3, L-type calcium channel alpha-1 subunit and SCN4A, a sodium channel type IV alpha subunit) have been identified. Several cases of familial hypoPP in children have been reported in Koreans, but there are only a few cases with identified mutations. We report a 12-year-old boy and his affected mother with hypoPP who has a heterozygous G to A substitution at codon 1239 in exon 30 of the CACNL1A3 gene that causes a change from arginine to histidine (Arg1239His, CACNL1A3). This mutation is common among Caucasians; however, it has not yet been reported in Koreans. The patients were treated with oral acetazolamide and potassium replacement and were instructed to avoid precipitating factors. After the medication and lifestyle modification, the paralytic attacks significantly decreased.
Glycosynthase is an active site nucleophile mutant enzyme, prepared from glycosidase, which is capable of synthesizing oligosaccharide derivatives without the hydrolysis of the product. Thermoacidophilic ${\alpha}$-glucosidase of Thermoplasma acidophilum (AglA) exhibits a transglycosylating activity yielding various glycosides. AglA was converted to glycosynthase by the substitution of the catalytic nucleophile Asp-408 residue into non-nucleophile glycine in order to increase its ability to synthesize various glycosides by transglycosylation. The glycosynthase mutant was purified by Ni-NTA chromatography and its glycoside-synthesizing activity was measured by using an external nucleophile, sodium formate buffer, providing maltose as a donor and p-nitrophenyl-${\alpha}$-D-glucopyranoside ($pNP{\alpha}G$) as an acceptor, respectively. In addition, $pNP{\alpha}G$ was examined for its feasibility to act as both a donor and an acceptor, and products were compared with those of the wildtype enzyme. The mutant enzyme was found to catalyze the formation of a specific product from $pNP{\alpha}G$ with a yield of 42.5% without further hydrolysis, while the wild-type enzyme produced two $pNP{\alpha}G$ products at low yields. The results demonstrate the possibility of satisfactory yields for the reactions in the presence of small amounts of acceptor, and demonstrate that the high activity of the mutant, at pHs below neutrality, was applicable in the transfer of glucose from the natural donor.

Starch phosphates were prepared from the corn starch mixed with 2% sodium tripolyphosphate by twin-screw extruder with a feed rate of 20 kg/hr and an extrusion temperature of $130^{\circ}C$, and the effects of extrusion variables on the physicochemical properties (target parameters) of starch phosphates were investigated. Interrelations of system parameters (specific mechanical energy and extrudate moisture) and rheological properities of starch was analyzed by using the response surface analysis. Degree of substitution (DS) was increased with increasing the feed moisture, and showed the maximum value at the screw of near 250 rpm, Degree of gelatinization was proportionally increased with increasing the screw speed and decreasing the feed moisture. Apparent viscosity of the paste was increased with increasing the feed moisture, but it was not significantly affected by the screw speed. It was found by scanning electron microscopy that the starch microgranules were much more degradaded, and as consequent result, the intrinsic viscosity was decreased, whereas, water solubility index was increased. The rate of retrogradation of the gels was retarded with increasing DS and decreasing viscosity.
In this paper, the recycling of waste Ni-MH battery by-products for electric vehicle is studied. Although rare earths elements still exist in waste Ni-MH battery by-products, they are not valuable as materials in the form of by-products (such as an insoluble substance). This study investigates the recovering of rare earth oxide for solvent extraction A/O ratio, substitution reaction, and reaction temperature, and scrubbing of the rare earth elements for high purity separation. The by-product (in the form of rare earth elements insoluble powder) is converted into hydroxide form using 30% sodium hydroxide solution. The remaining impurities are purified using the difference in solubility of oxalic acid. Subsequently, Yttrium is isolated by means of D2EHPA (Di-[2-ethylhexyl] phosphoric acid). After cerium is separated using potassium permanganate, lanthanum and neodymium are separated using PC88A (2-ethylhexylphosphonic acid mono-2-ethylhexyl ester) and it is calcinated at a temperature of 800 ℃. As a result of the physical and chemical measurement of the calcined lanthanum and neodymium powder, it is confirmed that the powder is a microsized porous powder in an oxide form of 99.9% or more. Rare earth oxides are recovered from Ni-MH battery by-products through two solvent extraction processes and one oxidation process. This study has regenerated lanthanum and neodymium oxide as a useful material.
Various metal ions (transition and base metals) incorporated MCM-41 catalysts can be synthesized using colloidal and soluble silica with non-sodium involved process. Transition metal ion-typically $V^{5+}$, $Co^{2+}$, and $Ni^{2+}$-incorporated MCM-41 catalysts were synthesized by isomorphous substitution of Si ions in the framework. Each incorporated metal ion created a single species in the silica framework, single-site solid catalyst, showing a substantial stability in reduction and catalytic activity. Radius of pore curvature effect was investigated with Co-MCM-41 by temperature programmed reduction (TPR). The size of metallic Co clusters, sub-nanometer, could be controlled by a proper reduction treatment of Co-MCM-41 having different pore size and the initial pH adjustment of the Co-MCM-41 synthesis solution. These small metallic clusters showed a high stability under a harsh reaction condition without serious migration, resulting from a direct anchoring of small metallic clusters to the partially or unreduced metal ions on the surface. After a complete reduction, partial occlusion of the metallic cluster surface by amorphous silica stabilized the particles against aggregations. As a probe reaction of particle size sensitivity, carbon single wall nanotubes (SWNT) were synthesized using Co-MCM-41. A metallic cluster stability test was performed by CO methanation using Co- and Ni-MCM-41. Methanol and methane partial oxidations were carried out with V-MCM-41, and the radius of pore curvature effect on the catalytic activity was investigated.

The purpose of the study was to improve quality of high volume fly ash concrete. The study evaluated on the possibility of early quality improvement of high volume fly ash concrete with early strength gain admixture ('GA' below) developed by the preceding research. The study regarded applying naphthalene admixture ('NA' below) to mix proportion substituting FA 15 % to be plain. In the event of substituting FA 20, 25 and 30 %, the study compared engineering properties of concrete with plain by applying GA. Because of features of fresh concrete, fluidity falls down when GA is applied. Therefore, its use amount shall be increased. Only, in W/B 60 %, it was beneficial since slump loss was reduced about 35~70 mm than plain. The study could see that AE use should be increased proportionally since air content was reduced by coming from AE absorption operation of unburned coal content included in FA according to an increase in the amount of FA use. Reduction effect of bleeding could be anticipated since the amount of bleeding appeared at least in FA 20 %. Because of hardened concrete, time of setting appeared in the same level as plain when GA was applied. Therefore, it is judged that delay of setting can be reduced. In compressive strength, the study could check the same strength development as plain when GA was applied, having nothing to do with W/B and curing temperature. However, it is thought that we shall pay attention to GA use in the event of FA 30 % substitution. Freezing and melting resistance had less early value than plain. However, it is judged that there will be no problem of frost resistance since there is no a large difference between freezing and melting resistance and plain in overall. In accelerated neutralization, it was analyzed that a problem of weakening in neutralization appointed as a demerit when FA was applied in mass in proportion with GA use could be settled to some extent.
Gap junction is an ion channel forming between adjacent cells. It also acts as a membrane channel like sodium or potassium channels in a single cell. The amino acid residues up to the $10^{th}$ position in the amino (N)-terminus of gap junction hemichannel affect gating polarity as well as current-voltage (I-V) relation. While wild-type Cx32 channel shows negative gating polarity and inwardly rectifying I-V relation, T8D channel in which threonine residue at $8^{th}$ position is replaced with negatively charged aspartate residue shows reverse gating polarity and linear I-V relation. It is still unclear whether these changes are resulted from the charge effect or the conformational change of the N-terminus. To clarify this issue, we made a mutant channel harboring cysteine residue at the $8^{th}$ position (T8C) and characterized its biophysical properties using substituted-cysteine accessibility method (SCAM). T8C channel shows negative gating polarity and inwardly rectifying I-V relation as wild-type channel does. This result indicates that the substitution of cysteine residue dose not perturb the original conformation of wild-type channel. To elucidate the charge effect two types of methaenthiosulfonate (MTS) reagents (negatively charged $MTSES^-$ and positively charged $MTSET^+$) were used. When $MTSES^-$ was applied, T8C channel behaved as T8D channel, showing positive gating polarity and linear I-V relation. This result indicates that the addition of a negative charge changes the biophysical properties of T8C channel. However, positively charged $MTSET^+$ maintained the main features of T8C channel as expected. It is likely that the addition of a charge by small MTS reagents does not distort the conformation of the N-terminus. Therefore, the opposite effects of $MTSES^-$ and $MTSETT^+$ on T8C channel suggest that the addition of a charge itself rather than the conformational change of the N-terminus changes gating polarity and I-V relation. Furthermore, the accessibility of MTS reagents to amino acid residues at the $8^{th}$ position supports the idea that the N-terminus of gap junction channel forms or lies in the aqueous pore.
High sodium contents in food-waste compost(FWC) is the greatest limitation to recycle it to arable lands in Korea. The effects of the FWC application to paddy soil on the growth of rice plants, cationic balance in plants, and the sodicity of soil have been studied in pot trials. The effects of FWC application were compared with those of NaCl compound and swine manure compost(SMC) application. $Na_2O$ contents of FWC were high as 2.2%. Immediately after transplanting, rice plants in three treatments showed severe wilting in the order of 40Mg FWC $ha^{-1}$ > NPK+900kg $NaClha^{-1}$ > 20Mg FWC $ha^{-1}$. The high EC value and volatile acid contents of soil solution were regarded as the cause of severe wilting of young rice plants. Increase of NaCl application rate upto $900kgha^{-1}$ showed no significant reduction of dry matter yield at harvesting stage. Regardless of application rates FWC reduced the dry matter yield at harvesting stage, while SMC increased it with increase of application rates upto $40Mgha^{-1}$. In NPK+NaCl and FWC treatments, Na contents and equivalent ratio in plants increased linearly with increase of Na application rates. Between Na and K equivalent ratio negative correlation with high significance was shown. In contrast to much difference of Na, K, and Na/K equivalent ratio among treatments, little difference of Na+K indicated the physiological substitution of Na for K in rice plants. Na use efficiency in NPK+NaCl and FWC treatments showed 12-22%.

The nutrient-rich and climate-resilient finger millet (Eleusine coracana (L.) Gaertn.) is a relatively new crop on the agricultural landscape. The present study explores the agronomic characteristics and antioxidant activities of grains and cookies produced from 'Finger1ho,' which was the first finger millet variety developed in South Korea. With heightened calcium content (314 mg/100 g) and polyphenol levels, 'Finger1ho' exhibited superior radical scavenging activities compared to other millets. The investigation assessed the impact of whole finger millet flour at varying concentrations (0, 10, 30, 50, and 100%) on cookie properties. Increasing the substitution of finger millet flour in the cookie formulation resulted in a notable rise in calcium content, ranging from 1.8 times at 10% to an impressive 10.8 times at 100%, surpassing the levels found in conventional wheat cookies. Conversely, the sodium (Na) levels in finger millet cookies demonstrated minimal variations, presenting a potentially favorable aspect in addressing the high Na intake prevalent in the South Korean diet. Notably, the antioxidant activity, assessed through ABTS and DPPH radical scavenging assays, exhibited a significant elevation compared to the control. This increase in antioxidant activity was directly proportional to the quantity of finger millet incorporated (p<0.001), indicating the potential health benefits associated with higher levels of finger millet in the cookie formulation. This study highlights finger millet's potential as a beneficial ingredient, enhancing both consumer acceptability and the functional attributes of cookies. Notably, cookies with 10% to 50% added finger millet exhibited significantly superior quality characteristics compared to controls, suggesting promising avenues for health-functional cookie development.
