The Effects of the Five Senses Educational Activity Using Food Materials on the Dietary Behavior of Infants - Focuse on Infants in an Area in Seoul - (식재료 오감교육활동이 유아의 식행동에 미치는 영향 - 서울 일부 지역 유아를 대상으로 -)

  • This study aimed to investigate the effect of the five senses activities involving food ingredients on the eating behavior of infants. The study was carried out four times over 6 months. We surveyed 65 nursery school infants and teachers who were registered at the 2020 Guro-gu Center for Children's Food Service Management in Seoul. They participated in the five senses education specialization project. The results of the study showed that the scores relating to unbalanced diet, hygiene management, dietary attitude, and dietary manners were visibly higher than those before participating in the five senses educational activities. In addition, there was a significant difference in the perception of the food ingredients used in the five senses education activities. Finally, as a result of investigating the types of education used before, during, and after the five senses education activities, and the need for education by type, cooking activities were observed to rank higher than other activities in all questions. Based on this, if dietary guidance is provided through a variety of five senses education activities over a long period rather than as a one-time event, it will be beneficial to the children's healthy eating habits.

Analysis of the factors influencing customer satisfaction of delivery food (배달음식 이용고객의 만족도에 영향을 미치는 요인 분석)

  • Purpose: This study was performed to evaluate the importance and satisfaction of the selective attributes of delivery food and to analyze the factors affecting customer satisfaction. Methods: A total of 574 responses were collected from customers who had ordered delivery food for data analysis. Statistical analyses were conducted using the SPSS program (ver. 25.0) for frequency analysis, χ2 tests, t-test, factor analysis, Pearson correlation, multiple regression analysis, and Importance-Performance Analysis (IPA). Results: The importance of delivery food selection attributes was higher in the order of 'hygiene control level (4.72)', 'taste of food (4.64)', and 'delivery accuracy (4.40)'. Satisfaction assessment was higher in the order of 'taste of food (4.32)', 'delivery accuracy (4.26)', and 'convenience of using the delivery app (4.21)'. According to the results of IPA, items that were priorities for improvement were charges for delivery, discount offers, sufficient description of the menu, and rapid handling of customer complaints. On an average, overall customer satisfaction score of delivery food was 4.01 out of 5 points. Additionally, five satisfaction factors were extracted by exploratory factor analysis. According to the results of multiple regression analysis, quality of delivery platform (p < 0.001), quality of delivery service (p < 0.001), convenience and diversity (p < 0.001), quality of delivery food (p < 0.001), and health and safety (p < 0.001) had significant positive effects on overall customer satisfaction. Conclusion: To increase customer satisfaction among delivery food customers, restaurant or delivery platform managers should consistently improve not only the quality of the delivery platform but also the quality of the delivery food and service.

Prevalence of cryptosporidiosis and giardiasis in Korean native calves in Gimje area (김제 지역 한우 송아지의 크립토스포리듐, 지알디아 발생 현황)

  • This study was performed to identify the prevalence of cryptosporidiosis and giardiasis in diarrhea feces of Korean native calves raised in Gimje, Jeollabuk-do, with a rapid diagnostic kit. The prevalence of both diseases were classified according to the age of calf, season of sampling period, and sampled farm where diarrheic calf is commonly observed. In diarrhea feces of 431 calves, cryptosporidiosis had a high incidence rate between 1 and 3 weeks of age, whereas giardiasis showed a high incidence between 4 and 6 weeks of age. It is thought that the incidence of protozoan diseases is markedly influenced by the calf's postnatal age. Regarding with the sampling season, the prevalence of cryptosporidiosis and giardiasis in calves was significantly higher in spring and summer than in autumn and winter (P<0.05). Among the sampled farms where both diseases are commonly observed, cryptosporidiosis was more frequently detected than giardiasis in calves. Particularly, in farms where cryptosporidiosis is common, it tends to be a disease that is difficult to eradicate as it occurs continuously throughout the year. Hygiene management such as regular cleaning and disinfection of the livestock and the surrounding environments is considered necessary to reduce and prevent damage from these protozoal diseases.

A Study on Personal hygiene of Primary School Students (초등학교 아동의 개인위생에 대한 조사)

  • The study was designed to gain necessary basic data, in order to grasp the actual condition on personal hygiene of primary school students and to help school health education and child health education data development of parents of students, the survery was carried out through this reporter's interview for mothers who have primary school pupil in KyungBug area during the period of a month from 14 the April to 30 the April 1994. The results of this study can be summarized as follows. 1. As for general characteristics, the percent of answer mothers with 30~34 years 44.9%, and the percent of answer mothers with 35~39 years was 37.6%, 14.6% of answer mother was 40 years and over. The most house types was apartment house, that is 64.8% and independence house was 18.9%, 13.7% of answer mothers was multivalent house residents. As for level of school career, the percent of high school was 64.2% and the percent of university was 20.5%, 10.1% of answer mothers was finishment of middle school. As for religion a lack of religion was 38.4% and a Buddhist was 36.8%, a christian was 13.4%, 10.4% of answer mothers was a catholic. As for jobs, the percent of office was 33.9%, specialist and expert skiller was 17.3%, self-management was 16.0%, fishing and agrarian villiages was 11.6%, public service personnel and shool personnel was 9.1%. As for the number of sons and daughters, the percent of two was 70.5%, the percent of one was 16.0%, and the percent of male students was 54.1%. As for level of economic life middle level was 59.9%. 2. The percentage of washing hand after school hours was 66.8% and not washing hand after school hours was 33.2%. In washing hand after school hours family of independence house, mothers that have schoolcareer of university, female students, three and over of sons and daughters was high individually (p<0.05). 3. As for paring one's nails, once a ten days was 52.9% once a five days was 22.5% once a fifteen days was 19.0%, once a twenty and over was 5.6%. 4. 54.7% of primary school students of answer mother's take a bath once a few days and 31.6% take a bath once a week, 10.1% take a bath once a tendays. 5. The percentage of changing of underwear once a day was 60.9%, once a few days was 37.1%, once a week was 2.0%, as for changing of underwear, sons and daughters that has mothers with 29 years and downward, one number of sons and daughters, females students was high individually (p<0.01). 6. The percentage of haircut once a 20~30 days was 59.9%, once a 31~40 days was 17.9%, once a 40 days and over was 16.6%. As for the percentage of haircut once a 20~30 days apartment house residents, male students was high (p<0.01). 7. The percentage of experience in taking nutrition was 79.8% and the percentage of experience in taking restorative was 72.3%. As for taking nutrition, apartment house residents, one number of sons and daughters, male students was high individually (p<0.01). As for taking restorative apartment house residents, on number of sons and daughters, male students was high individually (p<0.05). 8. The percentage of habit of unbalanced diet was 44.0%, sons and daughters that have mother with 40 years and over apartment house residents, male students, one number of sons and daughters was high indivdually (p<0.05). 9. As for hygiene condition of sons and daughters, the percentage of good state of health was 65.2%, middle state of health was 3.5% bad state of health was 11.4%. In good state of health sons and daughters that have mothers with 29 years and downward, multivalent house residents, three numbers of sons and daughters, female students, high birth was high individually. 10. As for fattness of sons and daughters, existence was 18.2%. No existence was 81.8%. in existence sons and daughters who have mothers with 40 years and downward, independence house resident, special job and expert skill job, three and over number of sons and daughters, female students, low birth was high individually. 11. As for use aspect of medical facilities of sons and daughters, hospital doctors was 53.1%, drugstore was 42.3%, chinese medicine hospitals or health organization was 4.6%. In usage of drugstore, sons and daughters of mothers with 29 years, 40 years and over was 55.6%, 61.4% individully, inusage of hospital doctors 30~34 years, 34~39 tears was 64.5%, 49.1% individully (p<0.01), apartment house residents, one or two numbers of sons and daughters, male students was high individually. In the percentage of using drugstore, school career of middle school and downward, in occupation, three and over numbers of sons and daughters, low birth was high individually (p<0.05). According to the results mentioned above. An actual condition and a related matters on personal hygiene of primary school students must be used as the basis data of a health education program and a health data of a health education program and a health data related, a teaching materials development and must be helped to the health life education of parents of students and childs.

A Study on the Influencing Factors of Smoking and Oral Health in Adult Males, and Necessity of Supporting Smoking Cessation in Dental clinics (성인 남성의 구강건강 흡연영향요인과 치과의료기관의 금연지원 필요성에 관한 연구)

  • The purpose of the study was to analyze smoking impact factors, knowledge about effects of smoking and effects of oral health-related quality of life. The subjects were 165 male dental clinic visitors. The survey was conducted from November to December 2018. The examinations were smoking impact factors, knowledge about effects of smoking on oral health, oral health-related quality of life, and recognition of smoking cessation support in dentistry. Survey data were analyzed using statistical programs of PASW Statistics ver. 18.0. Smoking groups were more stressful than non-smoking groups(13.0, 9.97) and drinking frequency was higher(2/week, 0.96/week)(p<0.05). Smoking had a significant correlation with stress(r= .283, p<0.001) and stress with OHIP(r= -.263, p<0.001). Regression results show that stress and frequency of drinking are significant factors(p<0.05). Smoking cessation support service was recognized by 32.9 %, but experience of service was only 19.4 %. Smoking cessation support of dentistry was answered positively by 65.5 %. The above results reveal the need for stress and drinking control, oral health education, and active support of oral health professionals for smoking cessation.

Distribution status survey of livestock Products Sold via Online Websites (온라인 축산물 유통 실태 조사)

  • This study is aimed to find out distribution status of online-market livestock products by purchasing and examining 120 cases of livestock products (seasoned meat: 17, 33 cases of packaged meat, 23 cases of ground meat, 19 cases of ham, 11 cases of sausage, 4 cases of bacon, 1 case of meat processing, 8 cases of Meat extract processed, and 4 cased of Dry storage of meat) at 17 On-line markets from April to August. 2015. We checked the weight of them first, and carried out ingredients test for each of processed meats. And we performed gene screening test on the products which were labelled 'Hanwoo' to investigate that the products were made of Korean native cattle. we also carried out test of identifying domestic animal species on ham, sausage and ground processed products. After weighing all products, we could know that all of them were delivered more than labelled weight or in allowable error. The result values of test which measured level of preservatives, Nitrite, Volatile Basic Nitrite (VBN), and tar Color by the type of processed meat products were in permissible range or not detected. Also, 17 beefs inspected Korean native cattle gene test were confirmed that they were made by real korean native cattle. But 2 cases of Ham, sausage, and ground processed products had difference between label and goods. In this study, we could make a decision that livestock products, distributed in On-line markets, were safe and expect to make higher degrees of hygiene for livestock products seller. Futhermore, we hoped result of this study could be used by basic data for progressive national policy decisions.

A Study on the Development of Convergence Education Program for workers in Health and Medical Industry in preparation for the forth industrial revolution (4차 산업혁명 대비 보건의료 산업분야종사자를 위한 융합교육 프로그램에 관한 연구)

  • The purpose of this study is to conduct a survey on awareness of the fourth industrial revolution being much debated recently and suggest the educational program for adult learner in order to create a new demand of university according to the social change. Based on earlier researches, the survey was conducted on employees working in the health and medical industry with questionnaire including the relevant educational field, areas of turnover and educational needs from July 1 to July 31, 2017. As a result, the bio-medical device, senior-friendly industry, environment and safety, clinical counselor and food service industry(coffee industry) were identified as necessary education areas. To enhance the validity of research results, in-depth interviews of relevant experts in each field were conducted from August 19 to September 22, 2017, and presented necessary education programs driven by the advent of the fourth industrial revolution and changes in each areas.

Evaluation of the microbial contamination status and sanitation practice level in butcher's shops in Seoul (서울지역 식육판매업소의 미생물학적 오염도 및 위생관리수준 평가)

  • This study was performed to evaluate the microbial contamination level of meat processing in butcher's shops in Seoul from January to November in 2010. A total of 695 samples (112 cotton work gloves, 342 utensils and equipments, 241 meat samples) were collected and the environmental hygiene of 89 butcher's shops was investigated. The aerobic plate count (APC), E. coli and pathogenic bacteria such as Staphylococcus aureus, Salmonella spp. were tested in the samples. As a result, the level of count on APC ranged $0{\sim}2.2{\times}10^6\;CFU/cm^2$ from the utensils & equipments, $1{\times}10^2{\sim}2.7{\times}10^8$ CFU/glove from the cotton work gloves and $1{\times}10^2{\sim}9.3{\times}10^6$ CFU/g from the meat samples. The level of count on E. coli ranged $0{\sim}2.5{\times}10^3\;CFU/cm^2$ from the utensils, $0{\sim}8.6{\times}10^4$ CFU/glove from the cotton work gloves and $0{\sim}1.4{\times}10^5$ CFU/g from the meat samples, respectively. Staphylococcus aureus and Salmonella spp. were detected in 11 samples and 2 samples from the cotton work gloves, utensils & equipments, respectively. The sanitation standard operating procedure (SSOP) was applicated at 49 butcher's shops. In order to improve sanitation of meat in butcher's shops, in this study, applications of SSOP, systemic sanitation education for employees, hygenic control of utensils & equipments, and continuous monitoring for microorganisms will be required.

The convergence study of scaling insurance coverage in socioeconomic, oral health behaviors -Medical consumer (의료 소비자의 사회경제학적 특성, 구강보건행태에 따른 치석제거보험급여화의 융합 연구-의료소비자를 중심으로)

  • The purpose of the study is to investigate dental health insurance coverage the awareness and dental health insurance coverage extension to scaling in service consumers. There were significant differences according to education level, age on the appropriateness of the age of yearly scaling benefit, and to married, regions, self-oral health of the frequency of yearly scaling benefit, who their teeth brushed frequence a day on the appropriateness of the fee of yearly scaling benefit. It implies that should be added to the coverage list national health insurance every age group after increasing periodontal disease. It is to be more extension as to age, frequency and fee health insurance coverage of scaling, the effort to improve dental health insurance coverage policy must be continue for oral health in the future.

Development of patient-based patient safety questionnaire in dentistry (환자기반 치과의료 환자안전에 대한 연구)

  • The Primary Care Patient Measure of Safety (PC-PMOS) is a measure of safety that allows patients to evaluate contributing factors related to patient safety in primary care. This study aimed to examine which questionnaire items of the PC-PMOS could be used in Korean dental institutions. A survey of the Korean translation of the PC-PMOS, a self-reported questionnaire, was conducted in August 2022 by 400 adults who had used dental-care services within the last three years. Of the 77 items, 34 were selected using principal component analysis and two experts' evaluations based on face validity. Five domains were identified from factor analysis: patient centeredness, patient information update, complaint processing, communication, and information about the complaint process. The Cronbach's alpha of the data was 0.913, indicating high reliability. As a result of the generalized multiple regression analysis, regression coefficients were not statistically significant, except for household income. This indicated that there was no bias in the patient safety scores of dental institutions evaluated by patients within the range of independent variables used in this study. The five domains with 34 items identified in this study suggested the factors that contribute to the safety of patients who used dental care services in Korea. However, validation of this study result is still important to refine questionnaires suitable for dental institutions in Korea so as to further improve the quality of dental care.
