여대생의 아연, 구리, 망간, 셀레늄 섭취 상태 평가 (Evaluation of Dietary Zinc, Copper, Manganese and Selenium Intake in Female University Students)

  • This study aimed to measure and evaluate the intakes of four antioxidant trace elements, namely, Zn, Cu, Mn, and Se in 19-29y-old female university students in Korea. Diet data were collected by 3-day dietary records in 644 subjects. The mean age, height, weight and body mass index of the subjects were 20.08 years, 161.77 cm, 54.26 kg and $20.82kg/m^2$, respectively. The mean, median and 25th-75th percentile intakes of Zn, Cu, Mn, and Se in the subjects were 12.83 mg (12.40 mg, 9.59 to 15.34), 1.30 mg (1.27 mg, 1.00 to 1.57), 3.19 mg (3.12 mg, 2.45 to 3.86), and $50.90{\mu}g$ ($50.17{\mu}g$, 37.59 to 64.35), respectively. The proportion of subjects whose Mn intake was adequate or less was 62.89%, and the proportions of subjects whose Zn, Cu and Se intakes were at the estimated average requirements or less were 10.09, 4.97, and 39.60%, respectively. The major food group for dietary intakes of Zn, Cu, Mn, and Se was cereal, providing 8.55 mg (66.60%), 0.78 mg (59.93%), 2.09 mg (65.50%), and $16.83{\mu}g$ (32.43%), respectively. Many female university students were deficient in Mn and Se compared with the dietary reference intakes. Therefore, except for cereal, it is required to consume a diet consisted of various food sources for increasing the intakes of antioxidant trace minerals, especially animal food groups.

중년기의 비타민ㆍ무기질 보충제 사용량과 건강관련 생활습관 조사 (Supplement Dose and Health-Related Life Style of Vitamin-Mineral Supplement User among Korean Middle-Aged)

  • We studied daily micronutrient intake from vitamin-mineral supplements, health-related life style, clinical case of diseases and food frequency of the Korean middle-aged (40-59 yr, n = 404) to compare the characteristics of non-user (n = 270) and user (n = 134) of vitamin-mineral supplements. Rate of supplement use of the middle-aged was 33.2% and there was significant difference in education level (p = 0.0084) and family income (p = 0.0476) of user and nonuser. Smoking habit (p = 0.0844) and drinking frequency (p = 0.0606) tended to be lower in a supplement user than a non-user. The medical history of a case was significantly higher in users (67.9%) than in non-users (44.4%) (p = 0.001), which suggests that medical history is one of the important motivations of supplement use. Supplement users had the medical history of digestive disease (34.1%), anemia (11.0%) and hypertension (9.9%) in order. Vitamin C was the most frequently supplemented nutrient (81.3%) among vitamin-mineral supplement, and the next orders were vitamins E (73.1%), B$_2$(68.7%) and B$_{6}$ (60.4%). Mean intakes of vitamin B$_1$, iron, selenium, vitamin E, and vitamin C from supplement was 4,260%, 4,030%, 1,660% and 1,330% of RDA, respectively. The supplement users tended to consume most food items including milk & milk products (p < 0.01), rice (p < 0.01), grains (p < 0.05) and cookies (p < 0.01) less frequently than non-users. Conclusively, nutrient intake of vitamin B$_1$, iron, selenium, vitamin E, and vitamin C from supplement was excessively high compared to RDA. We suggest that the toxic effect of excessive supplementation should he informed to supplement user and nutritional education should be focused on the optimal supplement dose.e.

계란의 영양적 특성 및 건강에 미치는 영향 (Nutritional roles and health effects of eggs)

  • Purpose: The aim of this study is to examine the effects of egg consumption and suggest proper guidelines for consumption of eggs by determining the relationship between eggs and cholesterol. Methods: Literature review was conducted on the relationship between nutritional, functional properties of eggs and serum cholesterol, as well as cardiovascular disease. Results: Eggs, which are a good protein food with complete amino acid composition, contain vitamin A, riboflavin, vitamin $B1_2$, folic acid, vitamin D, vitamin E, vitamin K, calcium, iron, choline, selenium, ${\beta}$-carotene, lutein, zeaxanthin, etc. However the egg yolk has a high cholesterol content, which is associated with chronic diseases, including heart disease and hypertension. As a result, its intake is subject to regulation. Outbreak of heart disease by yolk intake can show different results depending on the characteristics of the subjects, amount of egg intake, and the implications of other foods eaten. It is difficult to determine whether eggs are beneficial, as they are the main supplying source for other major nutritive elements as well. Several research studies insist that when cholesterol intake increases by 100 mg, the level of serum cholesterol increases by 2.2~4.5 mg/dL and when serum cholesterol increases by 1%, the risk of heart disease increases by 2%. This indicates that a large intake of eggs can increase the risk of heart disease. Although the cholesterol of egg yolk and serum cholesterol are correlated, it is insufficient to conclude that only cholesterol and not other components are related to heart disease. In fact, other components in egg such as various unsaturated fatty acids and phospholipids could be related as well. Rather than concluding egg as a 'good' or 'bad' food according to its cholesterol content, it is important to define egg as a part of dietary patterns. Conclusion: Generalizing an indiscriminate and uniform amount of egg intake for all seems inadequate. However, patients with diabetes or heart disease should pay particular attention to the amount of egg intake. As for the norm, eating egg with vegetables as a substitute for other animal products seems beneficial.

Effects of Soil Selenium Supplementation Level on Selenium Contents of Green Tea Leaves and Milk Vetch

  • This study was conducted to investigate the effects of soil selenium (Se) supplementation level on Se contents of green tea and milk vetch. Four different concentrations of sodium selenite ($Na_2SeO_3$) solutions (0.0, 3.3, 33.0 and 165.0${\mu}g/mL$) were prepared and one liter of each solution was well mixed with 10 kg of compost (cowpea soil) to give four different levels of Se-containing soil: $T_1$, 0; $T_2$, 33; $T_3$, 330; $T_4$, and 1,650${\mu}g$/100 g soil. Green tea plants and milk vetch were individually cultivated in those soils for 60 days. Se contents of freeze-dried green tea leaves were 6.87, 10.40, 12.04, and 20.19 ${\mu}g/g$, respectively; all of which were significantly different (p<0.05) from the others except for $T_2$ and $T_3$. The results showed that Se-contents of green tea leaves were increased 1.5$\sim$2.9 times as the Se level in the soil increased. Regression equation between Se contents in green tea (Y) and soil Se supplementation level (X) was: Y=0.007X+8.857. However, Se contents in the milk vetch were increased significantly (p<0.05) more with the same treatments $T_3$ (74 ${\mu}g/g$) and $T_4$ (187$\mu$g/g) in comparison to those at $T_1$ (5.0 ${\mu}g/g$) and $T_2$ (12.0$\mu$g/g). The increases ranged from approximately between 2.4 to 37.4 times that of the control group. Regression equation between Se contents in milk vetch (Y) and soil Se supplementation level (X) was: Y=0.1063X+15.989. The large difference of Se contents between green tea leaves and milk vetch would be attributed by the difference of protein contents between the 30% or higher protein-content of legumes and 15$\sim$20% protein of shrubs. The present study clearly indicates that green tea leaves and milk vetch can be enriched in selenium by supplementing the soil with Se. Therefore, Se-enriched green tea or milk vetch powder could be utilized as functional foods in Se-fortified green tea drinks or salads, or as food additives to enhance the daily intake of Se.

사료내 아마종실과 사료첨가물질의 조합첨가가 난황내 지방산 함량과 산란능력에 미치는 영향

  • 본 연구결과로 $\omega$-3 지방산을 포함한 지방산의 계란내 이행정도는 flaxseed의 첨가와 지방산대사에 영향을 미치는 미량 사료 첨가물질의 병용첨가로 변화되는 것으로 나타났으며, 특히 생균물질과 lecithin의 생리적 기능에 의한 계란내 $\omega$-3 지방산의 급증이 특이적인 것으로 나타났다. 그러나 미량 사료 첨가물질의 지방대사 조절기전에 관해서는 추가연구가 필요한 것으로 판단된다.

Effects of dietary methyl sulfonyl methane and selenium on laying performance, egg quality, gut health indicators, and antioxidant capacity of laying hens

  • Objective: This study investigated the effects of dietary methyl sulfonyl methane (MSM) and selenium (Se) on the laying performance, egg quality, gut health indicators, egg yolk Se content, and antioxidant markers in laying hens. Methods: One hundred ninety-two 73-wk-old laying hens were randomly divided into four groups with eight replicates of six hens each. Four diets were prepared in a 2×2 factorial arrangement with or without MSM and Se. The trial lasted for 12 wk. Results: There were no interaction effects or main effects (p>0.05) on laying performance and egg quality. However, feed intake increased in Se-fed hens (p = 0.051) and decreased in MSM-fed hens (p = 0.067) compared with that of hens in the control group. Dietary MSM increased (p<0.05) the ileal villus height and villus height:crypt ratio in hens compared with those receiving the non-supplemented control diet. Dietary MSM and Se did not affect the percentage of short-chain fatty acids in the ileal contents. Dietary Se enriched the Se content in egg yolk compared with that of the non-supplemented control diet (p<0.05). Dietary Se increased (p<0.05) glutathione peroxidase levels in the liver and serum samples compared to the control diet. The total antioxidant capacity in the liver increased (p<0.05) in laying hens that were fed MSM-supplemented diets than in hens fed the control diet. Dietary MSM significantly increased the relative superoxide dismutase levels in serum samples (p<0.05). Conclusion: Supplementation with either MSM or Se independently improved the antioxidant capacity of laying hens. Furthermore, dietary Se produced Se-enriched eggs, but this effect was neither additive nor synergistic with dietary MSM.

건조수산물의 중금속 및 셀레늄 함량 (A Study on Heavy Metal and Selenium Levels in Dried Seafoods)

  • 경기도에서 유통되고 있는 건조수산물 95건에 대하여 유해중금속인 납, 카드뮴, 수은 및 미량영양소인 셀레늄 함량을 조사하였다. 금아말감법의 수은분석기, 유도결합플라즈마 질량분석기를 사용하여 측정하였으며, 각 항목별 평균함량은 납 0.062±0.071(0.002-0.428) mg/kg[평균값±표준편차(최소값-최대값) mg/kg], 카드뮴 0.083±0.100(0.004-0.540) mg/kg, 수은 0.012±0.012(N.D-0.054) mg/kg, 셀레늄 0.839±0.371(0.362-2.124) mg/kg으로 나타났으며, 유해중금속인 납, 카드뮴, 수은 모두 기준규격 이하로 나타났다. 멸치 크기에 따른 중금속 및 셀레늄 함량은 수은이 대멸치에서 통계적으로 유의하게 높게 나타났으며(P<0.05), 셀레늄은 잔멸치와 대멸치의 크기에 따른 유의적인 함량 차이를 나타냈다(P<0.05). 새우 종류에 따른 중금속 및 셀레늄 함량을 비교한 결과 보리새우가 납, 카드뮴, 수은에서 유의적으로 높게 나타났다(P<0.05). 대멸치, 밴댕이의 부위별 중금속 및 셀레늄 함량은 내장부위가 가장 높았고, 새우는 머리부위가 중금속 및 셀레늄 함량이 높게 나타났다. 건조수산물을 통해 섭취하는 수은, 카드뮴의 주간 및 월간섭취량은 JECFA에서 설정한 PTW(M)I의 0.712%와 2.978%로 조사된 건조수산물 내 중금속 함량은 안전한 농도수준으로 판단된다.

비타민 무기질 임의영양강화 최대허용수준 추정 (Estimation of Safe Maximum Levels of Vitamins and Minerals to Foods)

  • The voluntary addition of vitamins and minerals to the appropriate foods may help reduce the risks associated with low intakes of these micronutrients, yet the potential of excessive intake, particularly for persons consuming very large amount of foods needs to be addressed. Using the Flynn's model to estimate the level of each vitamins and minerals that can be added safely to foods, maximum levels of fortification to conventional foods per 100 kcal portion were estimated. Critical factors in the Flynn's model included tolerable upper intake level (UL), each micronutrient intake at the $95^{th}$ percentile, the proportion of fortified foods in the diets of individuals, the proportion of foods to which micronutrients could be practically added, and a range of estimates for fractions of foods which might be actually fortified in each nutrient. Food vehicles included all foods except for fresh foods and alcoholic beverages, in general. With fortification of 50% of all potentially fortifiable foods, micrornutrients could be added safely to foods at levels per 100 kcal 1) > 100% Recommended Intake (RI) for vitamin $B_12$, 2) 1,200% RI for vitamin $B_1$ and niacin, 3) 1,000% $B_1$ for vitamins $B_2$ and $B_6$, 4) 400% RI for vitamin E, 5) 30% RI for calcium, 6) 20% RI for folic acid, iron and zinc, 7) 10% RI for manganese, 8) no fortification for magnesium, phosphorous and vitamin A, and 8) further consideration of vitamin D, copper and selenium due to insufficient evidence. Results of this study suggests a wide range of vitamins and minerals that can be added safely to foods in current diets of Koreans.

셀레늄함유 청보리 급여가 거세비육돈의 생산성, 혈액 및 도체특성, 조직 내 셀레늄 축적에 미치는 영향 (Influences of Feeding Seleniferous Whole Crop Barley on Growth Performance, Blood and Carcass Characteristics, and Tissue Selenium Deposition in Finishing Barrows)

  • 본 연구는 증가하는 수준의 셀레늄함유 청보리 사료를 비육돈에 급여 시 비육돈의 생산성, 혈액성상, 도체형질 및 조직 내 셀레늄함량에 미치는 영향을 조사하였다. 시험은 거세비육돈 40두를 공시하였고, 처리구는 셀레늄 수준에 따라 4처리구(0.1 ppm(대조구), 0.2 ppm, 0.4 ppm, 0.6 ppm)로 나누어 처리구당 5 pen씩, pen당 2두씩 배치하여, 6주간 사양시험을 실시하였다. 각 시험사료는 셀레늄 함유 및 셀레늄무시비 관행 청보리를 조합하여 배합비의 5%를 배합하였고, 조단백질 및 가소화에너지 함량은 처리구 간 유사하도록 배합하였다. 실험사료 내에 셀레늄함유 청보리의 수준증가는 사료섭취량과 증체에 영향을 미치지 않았고, 혈중 총지질 농도는 셀레늄 수준이 증가할수록 유의하게 낮아졌으며(p<0.05), 혈중 총콜레스테롤은 대조구가 0.4와 0.6 ppm 셀레늄 시험구보다 유의하게 높았다(p<0.05). 혈중 중성지방농도는 사료내 셀레늄수준이 증가함에 따라 유의하게 낮아졌고(p<0.05). 혈중 면역글로블린 G와 셀레늄 농도는 사료 내 셀레늄수준이 증가함에 따라 유의적으로 증가하였다(p<0.05). 도체율, 등지방 두께, 육량 및 육질등급은 셀레늄급여로 인한 효과가 나타나지 않았다. 신장, 간장 및 등심 내 셀레늄함량은 사료 내 셀레늄함유 청보리 급여수준이 증가함에 따라 유의하게 직선적으로 증가하였다. 이상의 결과에서 셀레늄함유 청보리급여는 비육돈의 지질대사관련 혈액성상을 개선시켰고, 셀레늄강화 돈육의 생산이 가능하였다. 본 연구에서 조직 내 셀레늄수준을 강화시키기 위한 사료내 적정셀레늄수준은 0.4 ppm인 것으로 나타났고, 생산된 돈육 등심 100 g이 소비자에게 제공되었을 때, 세계보건기구(WHO, 1996)에서 제안한 성인기준 1일 최소셀레늄권장량(40 ${\mu}g$)이 충족되는 것으로 나타났다.

손톱과 모발에서의 셀레노 화합물의 화학종 분석 (Speciation Analysis of Seleno-Compounds in Hair and Finger Nails)

  • 손톱과 모발에서 셀레늄을 추출하고 HPLC-ICP/MS로 셀레늄의 각 화학종을 분리한 뒤 분석하였다. 셀레노 화합물은 주로 SeCys으로 구성되어 있음을 알아내었고 이 들 시료의 분석을 통하여 인체에서의 셀레늄에 농도의 변화에 대한 정보를 얻을 수 있었다. 5명의 참가자들에 대한 손톱을 12개월간 모니터링한 결과, 농도는 평균 858.6 ± 201.2 ng g-1 이었는데 각 개인의 농도는 시간에 따라 변화가 크지 않고 일정하게 유지되었으며 개인간의 평균값차이도 심하지 않았다. 모발의 경우, 평균농도는 205.3 ng g-1으로서 손톱보다는 낮았다. 지원자들에게 셀레늄 보조제 22 ㎍ day-1를 3개월씩 투여하였을 때에 섭취 전후(각 3개월의 기간)의 농도는 크게 변화하지 않았지만 셀레늄보조제의 농도를 300 ㎍ day-1으로 증가시켜 2개월간 투여하였을 때에는 손톱에서의 셀레늄 농도가 1,230 ng g-1으로 현저히 증가하는 것으로 나타났다. 결론적으로 손톱은 인체가 장기간(수 개월 이상)동안 노출되었거나 또는 흡수한 셀레늄에 관한 정보를 반영하여 나타낼 수 있음을 본 연구를 통하여 알아낼 수 있었다.
