가열 양념돈육의 품질 및 기호성에 미치는 적포도주 숙성효과 (Aging Effect of Red Wine on the Quality Properties and Sensory Score of Cooked Seasoned Pork)

  • This study was conducted to investigate the effect of red wine on the quality properties and sensory score of seasoned pork meat. Pork meat was treated with 25% water (control), 20% water and 5% red wine (RW5), 15% water and 10% red wine (RW10), or 10% water and 15% red wine (RW15). The moisture, crude protein, crude fat, $L^*$ value, springiness, cohesiveness, gumminess, chewiness, and VBN content were not significantly different among the samples. Cooking yield, moisture retention, and fat retention were significantly higher in the RW5, RW10, and RW15 (p < 0.05) compared to those in the control. The $a^*$ value of RW5 was the highest among the samples, and the $b^*$ value increased significantly in the control and RW5 (p < 0.05). The hardness of the control was the highest among all samples (p < 0.05). The pH was significantly lower in RW5, RW10 and RW15 (p < 0.05) compared to that in the control. The TBARS value and total bacteria were significantly lower in RW5, RW10, and RW15 (p < 0.05) compared to those in the control. Adding red wine altered the fatty acid and free amino acid of cooked seasoned pork. These results suggest the possibility that red wine could be used an additive to improve the quality of cooked seasoned pork.

The effect of citrus and onion peel extracts, calcium lactate, and phosvitin on microbial quality of seasoned chicken breast meat

  • The inhibitory effect of citrus peel extract, onion peel extract, calcium lactate and phosvitin on microbial growth was investigated in seasoned chicken breast meat during aerobic storage at $4^{\circ}C$, $10^{\circ}C$ and $20^{\circ}C$. Citrus peel and onion peel extract significantly improved (p<0.05) the microbial quality of the sample by reducing the initial counts of the microbial flora compared to control and other two treatments. Data clearly revealed that the counts of the total aerobic bacteria significantly increased with the increase in storage temperature. The shelf life of all samples stored under $20^{\circ}C$ was less than 6 days, while the shelf life of citrus and onion treatment can be extended more than 9 days at $4^{\circ}C$ and more than 6 days at $10^{\circ}C$ in aerobic storage condition. These results indicated that citrus and onion peel extracts are efficient treatment methods to prevent microbial spoilage of seasoned chicken products during storage at $4^{\circ}C$. However, there was an adverse effect of addition of citrus and onion peel extract on several sensory attributes which need to be improved by reformulation of seasoning.

우육지방질의 변화에 미치는 불고기 조미료의 항산화작용에 관한 연구 (Antioxidative Effect of Seasoning on the Lipid Oxidation of BULGOGI Cooked Meat)

  • The study was observed that anti oxidation effect of each and mutual relation on BULGOGI seasoning in Fore shank and Ribs. Each antioxidation effect were appeared to higher in suger, pear juice, soya souce, clean wine, sesamed oil, green onion, toeasted sesamed powder, black pepper, garlic im seasoned immidiately. Soya souce was revealed to higher effect anti oxidation in storaged beef among 30 minuit after seasoned. In storaged sample among 9 hour after seasoned was showed to higher effect in soya souce & galic. Mutual relation of two seasoning in BULGOGI seasoning were revealed to higher effect in mixture of green onion & galic.

  • The following, Chung, Am, Chun, Seo, Rok, Shin, Oh, Cho, Po, listed in [Che Min Yo Sul] are as follows; 1. Chung means polutry and meat like pork and beef cooked with Ja. Am is flavoring meat in a seasoned broth, which is seasoned with Yeom Shi, green onion and pepper. Chun is stir-fryed fish, beef or pork in a small amount of broth and Apchunbup, a kind of Chun, is stir-fryed with Yeom Shi Juice. 2. Cheo, Rok stands for boiled meat pickled in vinegar. 3. There are twenty kinds of Chuk, which is broiled polutry, fish, shellfish and meat like pork and beef together with vegetables and spices. 4. Shin, Oh, Po, are a type of meat preservation method by using Nurook, salt, alchol or broiling it in Bong Chuk way and then preserving it.

키토산 첨가 양념돈육의 저장성 및 품질 개선에 관한 연구 (Studies on the Improvement of Shelf-life and Quality of Vacuum-Pckaged Seasoned Pork Meat by Added Chitosan During Storage)

  • 본 연구는 양념돈육에 분자량 약 120 kDa의 키토산을 0.05 에 서 1. 0 %까지 첨가하여, 양념돈육의 보존성 및 품질에 미치는 영향에 대해 알아보기 위하여 생균수, 지질 산화도, pH, 색도와 보수력을 측정하였다. 저장기간이 경과함에 따라 양념돈육의 생균수는 증가하였으나, 키토산을 첨가한 양념돈육은 첨가하지 않은 것에 비해 생균수가 효과적으로 억제되었으며 키토산을 0.10 %. 0.50 %, 1.00 % 비율로 첨가했을 때는 저장 10일 동안 저장성이 상당히 유지되었다. 또한 키토산의 첨가량이 증가함에 따라 저장성도 향상되었다. 키토산을 첨가하지 않은 양념돈육 은 저장기간이 경과함에 따라 TBARS의 함량이 점차 증가하였으며, 키토산을 첨가한 경우는 첨가하지 않은 것에 비해 TBARS의 함량이 대체로 낮게 나타나 지질 산화를 억제하는 것으로 나타났다. 또한 키토산의 첨가 농도가 증가할수록 지질산화 억제효과가 큰 것으로 나타났다. 양념돈육의 pH 변화를 측정한 결과 키토산을 첨가한 것이 pH가 낮았으나 저장기간 동안 거의 일정하게 유지되었다. 저장기간에 따른 양념 돈육의 색의 변화를 살펴보면 키토산을 첨가한 구의 명도.(L^*), 적색도(a^*) 황색도(b^*)가 키토산을 첨가하지 않은 것에 비해 모두 높은 수치를 나타냈다. 보수력은 키토산을 첨가한 양념돈육에 있어 초기에는 낮았으나 저장 10일까지 보수력 이 비교적 안정한 것으로 나타났다.

고기구이에서 발생하는 입자상물질의 배출특성에 관한 연구 (The Study on the Emission Characteristics of Particulate Matters from Meat Cooking)

  • 본 연구는 최근 들어 대도시 대기오염물질의 주요 배출원 중 하나로 대두되고 있는 음식점 고기구이로부터 배출되는 미세먼지의 배출 특성에 대하여 연구한 것이다. 본 연구에서는 돼지고기와 소고기의 구이 시 발생되는 미세 입자상물질의 배출특성을 파악하기 위해 고기구이 시 발생되는 미세먼지를 효과적으로 채취할 수 있는 고기구이 챔버를 제작하였으며, 다단충돌식 입경분립기와 광산란식의 미세먼지 측정기를 사용하였다. 연구 결과 다단충돌식 입경분립기를 사용하여 측정한 미세먼지 농도 결과에서는 전반적으로 돼지고기의 경우가 소고기보다 높게 나타났다. 미세먼지의 입경분포 특성을 살펴본 결과 돼지고기와 소고기 모두 $1.95{\sim}3.2{\mu}m$의 입경에서 가장 높은 농도를 나타냈다. 고기 1 kg당 배출되는 미세먼지의 배출계수는 돼지생고기, 돼지양념고기, 소생고기, 소양념고기에서 각각 1.36 g/kg, 1.03 g/kg, 1.23 g/kg과 0.92 g/kg으로 나타났다. 광산란식 측정기를 사용하여 측정한 결과에서는 돼지고기와 소고기 모두 $1.6{\sim}2.5{\mu}m$$2.5{\sim}3.5{\mu}m$ 입경에서 가장 높은 농도로 나타나 $2.5{\mu}m$를 중심으로 높은 농도로 나타난 다단충돌식 결과와 유사한 특성을 보였다. 광산란식에 의해 측정된 배출계수는 돼지생고기, 돼지양념고기, 소생고기, 소양념고기에서 각각 3.37 g/kg, 2.76 g/kg, 2.93 g/kg과 2.77 g/kg으로 나타나 다단충돌식 결과보다 2배에서 3배 이상 높게 측정되었다. 또한 $PM_{2.5}/PM_{10}$의 비는 돼지생고기, 돼지양념, 소생고기, 소양념고기에서 각각 0.56, 0.58, 0.56 그리고 0.58로 나타나 중량농도에서도 $PM_{2.5}$가 많음을 알 수 있었다. 중량농도를 입자의 비중을 1로 가정하여 산출한 개수농도로 환산한 결과를 보면 다단충돌식 입경분립기로 측정한 결과는 $10^{19}$개로 나타났고, 광산란식으로 측정한 결과에서는 $10^{16}$개 수준으로 나타나 다단충돌식 입경분립기의 경우에서 보다 높은 것으로 나타났다.

난황을 이용한 조미제품 제조에 관한 연구 (Studies on the Processing of Seasoned Product Containing Egg Yolk.)

  • 조미제품용으로 난황 이용가능성을 구명하기 위해 난황 첨가수준별 제품의 품질 및 건조특성 실험을 실시하였다. 난황 0 ,10 ,20 ,40%를 고기풀 (연육)과 향신료에 각각 섞어 갈은 다음 $90^{\circ}C$에서 1시간동안 가열하여 gel 화시키고 이어서 $55^{\circ}C$에서 5시간 동안 열풍 건조시켰다. 건조전 조미제품의 조직은 난황 10% 처리구에서 전단력 898g, 경도 415g으로 타처리구에 비해 월등히 높았다. 난황첨가량이 많은 조미제품일수록 건조가 지연되었고 수분 활성도도 서서히 감소되었다. 건조 완료된 조미제품(에그저키)의 수분, 지방, 콜레스테롤 함량은 난황 첨가에 따라 증가했으나 단백질함량은 감소하였다. Phenylalanine, leucine, isoleucine을 제외한 대부분의 아미노산은 난황 첨가량에 따라 감소하였다. 각 아미노산중 glutamic acid. aspartic acid, lysine 순으로 다량 함유되었고 proline은 거의 발견되지 않았다. 이화학 및 관능시험에 의하면 조미제품에 이용될 수 있는 최적 난황 첨가량은 20% 수준이었다.

경기와 경북지역의 제수 비교 연구 (Research on the comparison on the ritual food of Gyeonggi and Gyungsangbuk-do province)

  • The awareness of ritual foods in general rituals were surveyed and compared in the Gyeonggi and Gyungsangbuk-do areas in order to identify the characteristics of Korean rituals and establish desirable ritual foods. As materials for "Jeon" (fried pan cakes) in rituals, fish fillets, meat and vegetables were largely used in the Gyeonggi region. In the Gyeongbuk region, all three of these ingredients were the most highly used for "Jeon" also. In the case of rice cakes, "Songpyun" steamed on a layer of pine needles, "Jeolpyun" and "Sirudduk", with a red beans, were mostly used in Gyeonggi-do, while "Songpyun", "Jeolpyun" and "Ingelmi" were largely used in Gyeongsangbuk-do. As seasoned vegetables and herbs, fernbrakes, root of bell flowers, green bean sprouts and bean sprouts were largely used in Gyeonggi-do region, whereas, fernbrakes, bean sprouts, root of bell flowers and spinaches were mainly used in Gyeongbuk region. The use of fernbrakes was highest in both regions. With regard to the number of side dishes, 2∼3 kinds of seasoned herbs and 3∼4 kinds of fruits were mostly used, but with slightly higher numbers in the Gyeongsangbuk-do than the Gyeonggi-do region. With regard to liquor used for rituals, clear strained rice wine was used most in the Gyeonggi-do area, while more unrefined rice wine was used in the Gyeongbuk region. Meat was the most used ingredient in broth slices of dried meat and cod were highly used in the Gyeonggi region, but slices of dried squid were most widely used in the Gyeongbuk region. Most households in both regions tended not to use raw fish in the rituals, and as for the ingredients of Korean Kabobs, meat was the most widely used, then fish and finally vegetables were the most used ingredients. Beef soup was the most used, but more green vegetable soup was used in the Gyeongbuk than the Gyeonggi region. Sweet drink made from fermented rice (sikhe) was generally used in the rituals. It was the most widely used in the Chusok-Hangawi Ritual in the Gyeonggi region, while it was used in the New Year's Ritual in the Gyeongbuk region.

  • This study examined the changes of side dishes in "Eumsikdimibang", "Gyuhapchongseo", "Chosunmusangsinsikyorijebub" over time. As food ingredients, seaweed, red pepper, salted fish, Korean hot pepper paste have been used in "Gyuhapchongseo". The use of cattle by parts, saltwater fish, Chinese cabbage, powdered red pepper, garlic have increased in"Chosunmusangsinsikyorijebub". Cooking techniques, such as the use of wheat flour, a double boiler by the use of steam, and boiling and then roasting cuisine were mostly used in"Eumsikdimibang", but reduced in"Gyuhapchongseo". In "Gyuhapchongseo", the cooking methods are primarily aimed at a positive visual effect, and slices of dried meat seasoned with spices have increased. In"Chosunmusangsinsikyorijebub", various Tang (Guk), the taste of food changed by controlling the gravy content (Gigimi, Chigye, Chorim), meat mixing oil, vegetable and mushroom together to cook and boiling down the main food ingredients to soak the seasoning were increased. Dog-meat steamed dish using the intestine of dog in "Eumsikdimibang" was changed to small intestine of cattle steamed dish in "Gyuhapchongseo". And seasoned dog meat with choncho in "Eumsikdimibang" influenced on beef tail soup with Korean hot pepper paste in "Gyuhapchongseo", and Yookgyejang soup using Korean hot pepper paste in"Chosunmusangsinsikyorijebub". In steamed young chicken, the stuffing such as soybean paste, choncho, welsh onion, leek and flour in "Eumsikdimibang" was changed to minced beef, welsh onion, dropwort and Shiitake mushroom in"Gyuhapchongseo". The steamed young chicken in "Chosunmusangsinsikyorijebub" with stuffing was added to chicken soup using glutinous rice, and ginseng powder. Now, the chicken soup was changed to Samgyetang with glutinous rice, and ginseng. In "Chosunmusangsinsikyorijebub", various vegetable dishes were cooked with beef.

축산식품중의 중금속 함량에 관한 조사연구 (A Study on the contents of the heavy metals in meat and meat products)

  • This study was performed to investigate the contents of the heavy metals such as cadmium(Cd), copper(Cu), iron(Fe), lead(Pb) and zinc(Zn) in meat and meat products. For this experiment, each 20 samples of beef and pork were collected at slaughterhouse in Seoul areas and 45 samples of meat products(ham, sausage, processed meat and seasoned meat) were purchased from commercial food markets. The contents of the heavy metals was determined by atomic absorption spectrophotometry from Jan. to Nov. In 1998. The results obtained were summarized as follows ; 1. In Korean native beef, mean values of the heavy metals(mg/kg) were Pb : 0.14$\pm$0.10, Cd : 0.07$\pm$0.02, Cu : 1.73$\pm$0.95, Zn : 42.82$\pm$8.17 and Fe : 67.43$\pm$24.18, respectively. 2. In imported beef, mean values of the heavy metals(mg/kg) were Pb : 0.03$\pm$0.08, Cd : 0.06$\pm$0.02, Cu : 1.41$\pm$0.62, Zn : 42.93$\pm$4.95 and Fe : 40.06$\pm$12.77, respectively. 3. In pork, mean values of the heavy metals(mg/kg) were Pb : not detected, Cd : 0.09$\pm$0.02, Cu : 1.08$\pm$0.23, Zn : 19.49$\pm$6.02 and Fe : 30.21$\pm$10.51, respectively. 4. In ham, mean values of the heavy metals(mg/kg) were Pb : trace, Cd : trace, Cu . 1.19$\pm$0.46, Zn : 13.58$\pm$4.99 and Fe : 31.43$\pm$11.74, respectively. 5. In sausage, mean values of the heavy metals(mg/kg) were Pb : 0.15$\pm$0.34, Cd : 0.08$\pm$0.05, Cu : 1.15$\pm$0.46, Zn : 13.70$\pm$7.13 and Fe . 27.28$\pm$15.05, respectively. 6. In processed meat, mean values of the heavy metals(mg/kg) were Pb : 0.08$\pm$0.13, Cd : 0.09$\pm$0.04, Cu : 1.28$\pm$0.60, Zn : 14.72$\pm$7.09 and Fe : 24.04$\pm$10.33, respectively. 7 In seasoned meat, mean values of the heavy metals(mg/kg) were Pb : 1.05$\pm$2.21, Cd : 0.13$\pm$0.03, Cu : 1.06$\pm$0.16, Zn : 17.53$\pm$8.72 and Fe : 26.76$\pm$9.02, respectively.
