일부 초등학교 결식학생의 영양실태 (Nutritional Status of School Lunch Supported Students in an Elementary School)

  • The purpose of this study was to investigate the nutritional status of school lunch supported students and to provide fundamental data for improving their health. In order to do that, we collected the data for 59 school lunch supported students and 71 not supported students in an elementary school in the Taegu Metropolitan city area. The survey was conducted from February 10 to April 30, 2000. The results are as follows; In relation to their body composition(BMI, Fatmass, Percent Body Fat, Mid-upper Arm Muscle Circumference, Mid-upper Arm Circumference), the school lunch supported students' value was lower than that of the not supported students. In relation to food intake according to the food groups, the school lunch supported students' intake of animal food(p<0.05) and total food(p<0.01)was significantly lower than that of the other students. The average intake of energy for both school lunch supported students and not supported students was below the RDA. Also, it was significantly lower than that of the school lunch supported students in relation to the other students(p<0.05). For protein, calcium, phosphorous, and riboflavin, the school lunch supported students' intake was significantly lower than that of the students who were not supported(p<0.05, p<0.05, p<0.05, p<0.05). There are the classification in relation to the nutrient intake in relation to the RDA standards for that of the school lunch supported students. The criteria used for this study was calorie intake, protein, and niacin. The classifications are for groups below 75%, between 75%~100%, and 100%. The nutrients for which the students were deficient( below 75%) of the RDA were iron, calcium, riboflavin, vitamin C, thiamin, calorie, niacin, vitamin A, protein, and phosphorous in the above order.

경북농촌지역 중식지원 초등생의 영양상태에 관한 연구 (Nutritional Status of School Lunch-Supported Elementary School Children in Gyeongbuk Rural Area)

  • The number of school lunch-supported children who belong to low-income families has been rapidly increased in Korea. This study was aimed at evaluation of nutritional status of school lunch-supported elementary school children. One hundred school lunch-supported children and 119 non-supported children of fourth to sixth year class in 3 elementary schools in Gyeongbuk rural area were selected, and surveys were conducted twice, i.e., once during school term and once during summer vacation in 2006. Food consumption survey during school term was carried out through an interview by dieticians at school-lunch time using a 24-hour recall method, and the survey during summer vacation conducted by recording food intakes for three days by children. Nutrient intakes were calculated using CAN-Pro 3.0 program. School lunch-supported children showed higher rate of skipping breakfast and rather irregular meal time as compared to non-supported students. Eating alone was more frequent in school lunch-supported children than in nonsupported children. The average nutrient intakes and nutrient adequacy ratios were lower in supported children than in non-supported children. During term, percentages of nutrient intakes provided by school-lunch were higher in supported children than in non-supported children. Intakes of energy nutrients were within acceptable macronutrient distribution ranges, but proportion of carbohydrate intake increased during vacation. Analysis of patterns of food intakes based on major food groups (dairy, meat, grain, fruit, vegetable) indicated that meals during term were more balanced as compared to meals during vacation. In conclusion, food behaviors and nutrient intakes of school lunchsupported children were inferior to those of non-supported children during term and during summer vacation. They were provided with more nutrient intakes from school lunch during term as compared to non-supported children. Therefore, it is necessary not only to keep meal support program during vacation but also to provide a proper nutrition education as a part of school lunch program to improve nutritional status and food behaviors of school lunch-supported children.

인천지역 초등학교 교사의 영양교육 실태 및 인식에 관한 연구 (A Study on Elementary School Teacher's Status and Recognition of Nutrition Education in Incheon)

  • The purpose of this study was to investigate the elementary school teacher's status and recognition of nutrition education (NE) in Incheon. A cross-sectional study was carried out using a self-administered questionnaire and subjects were 147 elementary school teachers. The results are as follows. Only 9.5% of the teachers had training in NE and 71.4% of the teachers with training increased concern about NE after training. As for experience of NE, 61.6% of the teachers experienced NE and more than half of them gave NE less than twice per month. There was a significant difference in reason for not giving NE between subgroups by teaching career; 57.7% of the teachers with career more than 10 years did not give NE due to too much other work. As for existence of nutrition educator in school, 48.9% of the teachers recognized its existence and 91.3% of them answered that dietitians have done NE. For correction of unbalanced diet, good table manner, and nutrition and growth, 97.9% of the teachers answered that NE is necessary in elementary school. As for proper time to start NE, 57.5% of the teachers answered kindergarten and 39,7% answered lower grade of elementary school. As for effective type for NE, 47.3% of the teachers answered NE as a part of other subject and 28.1 % answered NE as a separate subject. Also 69.8% of the teachers answered dietitian as suitable person for NE. As for newly establishing a NE subject, 37.9% of the teachers disagreed and as for most effective method for NE, 73.3% answered NE linked with school lunch program. Most of teachers recognized elementary school students' eating habit problem severe and change of their eating habit such as various food choice, no plate waste and good table manner after school lunch program. Therefore, it should be nationally supported that a standardized NE program is developed and coordinated among teachers, school lunch dietitian as NE specialist, family and community for elementary students' health and well-being.

Diet of children under the government-funded meal support program in Korea

  • The purpose of this study was to investigate the diet of children under the government-funded meal support program. The 143 children (67 boys and 76 girls) participated in this study among $4^{th}-6^{th}$ elementary school students receiving free lunches during the summer vacation of 2007 and living in Gwanak-gu, Seoul, Korea. The subjects consisted of four groups supported by Meal Box Delivery (n = 26), Institutional Foodservice (n = 53), Restaurant Foodservice (n = 27), or Food Delivery (n = 37). A three-day 24-hour dietary recall and a self-administered survey were conducted. In addition, the children's heights and weights were measured. The average energy intake of the children was 1,400 kcal per day, much lower than the Estimated Energy Requirements of the pertinent age groups. The results also showed inadequate intake of all examined nutrients; of particular concern was the extremely low intake of calcium. On average, the children consumed eight dishes and 25 food items per day. The children supported by Meal Box Delivery consumed more various dishes and food items than the other groups. The percentage of children preferring their current meal support method was the highest in those supported by Meal Box Delivery and the lowest in those supported by Food Delivery. We requested 15 children among the 143 children participating in the survey to draw the scene of their lunch time. The drawings of the children supported by Institutional Foodservice showed more positive scenes than the other groups, especially in terms of human aspects. In conclusion, the overall diet of children under the government-funded meal support program was nutritionally inadequate, although the magnitude of the problems tended to differ by the meal support method. The results could be utilized as basic data for policy and programs regarding the government-funded meal support program for children from low-income families.

학교 구장보건실 운영이 초등학생들의 구강보건지식, 행태 및 건강상태에 미치는 영향 (The Effect of School Dental Service on Dental Health Knowledge, Beheaviors and Dental Health Status Among Elementary School Students)

  • Objective: In this study, the dental health care knowledge, dental health behaviors and dental health status of elementary school students were compared and analyzed in the cases of their schools having dental health care center or not one. Methods: The target groups were 167 students of A school (experimental group) where pit-and-fissure sealants, fluoride mouthrinsing, and fluoride gel application were carried out with all grades of students by school dental health care center and 158 students of B school (control group) where fluoride mouthrinsing, for all grades students and pit-and-fissure sealants for the first grade students are carried out but have no the school dental health care center. Results: This study was carried out through the answer sheets and recordings of dental inspection. The findings of this study are as follows: 1. The dental health care knowledge was compared and the results showed that on average 14.2$\pm$2.1 in experimental group and 14.0$\pm$1.9 in the control group were no significantly different (p>0.05). 2. The dental health behaviors were compared and the results showed that the experimental group was significantly different(p<0.05) in terms of the number of times of dental brushing a day, the method of tooth brushing, the time of tooth brushing, the experience of tooth brushing with fluorine, the kinds of snacks and tooth brushing in school after lunch. But there was no significant difference(p>0.05) in the time of tooth brushing and the tooth brushing after eating snacks. 3. The DMF rate was compared and the results showed the significantly difference between the average experimental group and 53.8$\pm$5.0 in the control group(p<0.05). 4. The DMFT index was compared and the results showed the significantly difference between the average 0.6$\pm$2 in the experimental group and 1.4$\pm$1.6 in the control group(p<0.05). 5. The DMFI rate was compared and the results showed the significantly difference between the average 4.2$\pm$8.3 in the experimental group and 9.5$\pm$11.0 in the control group. (p<0.05). 6. The DT rate were compared and the results showed the significantly difference between the average 10.2$\pm$29.5 in the experimental group and 32.4$\pm$44.0 in the control group(p<0.05). 7. The FT rate were compared and the results showed the significantly difference between the average 88.5$\pm$31.0 in the experimental group and 67.5$\pm$44.0 in the control group(p<0.05). Conclusions: Based on the results, above there was no significant difference in dental health care knowledge between both the experimental and the control group. But we discovered that the experimental group is better than the other one in dental health care behaviors and dental health status. Therefore, we could conclude that the school dental health care center efficiently carried out the dental care and treatment. As school dental health care centers did not work out efficiently in terms of their educating on the dental health acre knowledge, the related programs to be developed and supported.

양대구강병 관리에 대한 간호과 학생의 구강보건 지식 및 태도에 관한 연구 (A Study on Nursing Students' Dental-Health Knowledge on and Attitude to the Major Oral Diseases Management)

  • 저자는 졸업 후 초등학교 양호실에서 학교보건의 유일한 전임보건요원으로 아동들의 구강보건교육과 관리 업무를 수행하게 될 간호학과 학생들을 대상으로 우리 국민의 양대 구강병인 치아우식증과 치주병에 대한 구강보건 지식 및 태도를 평가하여 향후 학교구강보건교육의 방향을 제공하고자 경기도 일원의 간호과 학생들을 대상으로 양대구강병에 대한 지식과 태도를 분석한 결과 다음과 같은 결론을 얻었다. 1. 조사대상자들은 뜨겁고 찬 음식에 자각증상을 가지고 있으면서도 자신의 구강이 건강한 편이거나(36.8%), 보통(36.3%)이라고 인지하고 있었다. 2. 치아우식증의 원인을 불량한 구강위생관리(90.4%)라고 응답하였고 이중 94.1%가 잇솔질이 치아우식증 예방에 효과적이라고 응답하였으며, 잇솔의 모양이 직선이어야 한다는 것에는 40.2% 만이 옳다고 응답하였다. 3. 치아우식증 예방법을 위해 불소 이용이라고 응답한 조사 대상자들은, 불소 이용법 효과에 대한 평균 순위를 불소 첨가 수돗물 섭취(2.00), 불소 용액 양치(2.40), 전문가 불소도포(2.70), 불소 치약 사용(3.60), 불소 복용(4.30) 순으로 효과적이라고 응답하였다. 4. 치아우식증 예방법에 대한 지시기은 정기적 검진과 잇솔질이라고 응답하였으나, 구강건강을 위한 행위로는 잇솔질만 하고 있어 지식과 태도의 차이를 보였다. 5. 자신의 구강건강을 위해 잇솔질(94.3%)을 시행하고 있었으며, 아침 식사 후(71.9%)와 잠자기 전(65.8%)에 실시하고 점심 식사 후는 40.3% 만이 실시하고 있었으며, 1일 2회(35.7%)와 3회(37.6%)의 잇솔질을 실시하고 있었다. 6. 잇솔질(84.7%)이 치주질환 예방법이라고 응답한 조사대상자들 중 잇솔질은 치주병에 예방효과가 있는가에 대해 교직과목 이수자의 7.1%, 미이수자의 17.0%가 아니라고 응답하여 두 그룹간에 차이가 보였다. 이상의 결과들로 살펴볼 때 아동들의 구강보건관리를 책임지기에는 간호과 학생들은 치학적 지식이 부족하였고, 특히 지식과 태도에서의 차이가 있는 것으로 조사되었다. 그러므로 날로 악화되는 아동 구강건강을 증진하여 건강을 보장하기 위해 현재 시범 실시중인 학교 구강보건실 운영을 활성화하고, 구강보건전문인력으로 교육받은 치과 위생사를 아동들의 구강보건관리를 위해 적극 활용하여야 한다고 사료된다.

닭고기와 계란의 소비에 대한 조사 연구 (The Study on Consummer Behaviour of Poultry meat and Egg)

  • 닭고기 및 계란에 대한 소비자의 일반적인 행태조사 결과는 다음과 같다. 1. 닭고기(1) 조사자의 88%이상이 월 1회 이상 닭고기를 구입하고 있으며 과반수가 1∼2마리를 구입하고 있다. (2) 가정소비는 대닭, 중닭이 주를 이루고 있다. (3) 조사자 67.1%가 무게를 달아서 닭고기를 구매하고 있으며 점차 공정한 거래가 이루어지고 있다. (4) 주로 닭집에서 구입하고 있으며 유통의 냉장화 (cold chain)가 이루어지고 있다. 열 가까운 곳. 단골, 위생적인 곳에서 주로 구입하고 있다. (6) 포장, 냉장화, 부위별 판매 등의 요구가 높아지고 있다. (7) 값이 싸서 보다는 좋아하거나 식성이 맞아서 잘먹는 것으로 나타나고 있어 소비확대 가능성은 크다. (8) 닭고기를 안 먹는 이유로 냄새, 영리불편을 꼽을 수 있는데 간편한 새로운 요리법개발(fast food 등)이 요구된다. (9) 부위별 선호도는 다리살, 날개, 가슴살의 순서이며 월등하게 다리살을 좋아한다. (10) 여름철 편중된 닭고기 소비는 계절소비성향이 크므로 산업발전에 저해요인으로 나타났다. (11) 집에서, 튀김집, 야외소풍 등의 순서로 많이 소비되고 있으며 가정소비는 점차 줄고있는 추세이다. (12) 영리방법은 튀김, 삼계탕이 주이고 자라나는 세대에서 닭고기 튀김요리에 대한 기호도가 높다(여고생 61, 1%). 2 계란 (1) 1인당 월간소비는_대다수가 10∼20개이다. (2) 계란구입액은 판떼기 (30개) 66.2%로 현저히 높으며 20개 단위 14.6%. 10개 단위 9.8%로 나타났다. (3) 소비자들은 앞으로 포장난 유통을 희망하며 유통단위는 소포장의 10개 단위를 바라고 있다. (4) 계란크기의 선호도는 중란, 대란, 특란, 왕란의 순으로 소비자의 선호도가 바뀌고 있다. (5) 거래시 계란등급은 거래상점을 믿고 있다. (6) 계란은 주로 계란 도ㆍ소매상에서 구입하고 계란 값이 싼곳 보다는 가깝고 편리한 곳에서 구입한다. (7) 계란품질에 대하여 대체로 믿고 구입하고 있으나 일부(24.8%)는 불결하거나 신선치 못하다는 느낌을 갖고 있다. (8) 난각색에 따라 영양적 차이가 없는데도 불구하고 갈색난을 선호하고 있으며 영양적 가치에 차이가 없다는 인식률이 높다. (9) 계란은 어린이들이 가장 좋아하고 중ㆍ고생, 청년, 미부, 노인의 순으로 선호하고 있다. (10) 소비는 대체로 일정하며 계절에 관계없이 소비되고 있다. (11) 계란기피 이유 중 Cholesterol 때문에 22.0%, 요리방법을 몰라서 12.1%,특이체질 등 몸에 맞지 않아 8.6%, 맛이 없어서 7.5%의 순으로 나타났다. (12) 가정에서는 55.4%가 식사반찬으로 다음이 도시락반찬으로 38.3%를 소비한다. (13) 후라이, 카스테라빵, 오무라이스덮밥, 샌드위치, 토스트, 반숙의 순으로 요리해 먹고있다. (14) 현행 가격이 대체로 적당하다 54.1 %, 싸다 25.6%, 비싸다 9.3%의 순으로 영양에 비해 싼 식품으로 인식되고 있다. (15) 가계소득이 더 증가해도 현재대로 구입하겠다 61.6 %, 더 많이 구입하겠다 29.9%로 나타났다.
