The Structural Relationship of Job Stress, Job Burnout, and Turnover Intention of School Dietitians, School Nutrition Teachers and School Foodservice Employees (학교급식 영양(교)사와 조리종사원의 직무스트레스, 직무소진, 이직의도 간의 구조적 관계)

  • This research was conducted to analyze structural relationships comparatively between job stress, job burnout and turnover intention that school dietitians, school nutrition teachers and school foodservice employees have. The target group is school dietitians and nutrition teachers who work in 180 elementary, middle and high schools and foodservice employees in 50 schools. The survey is limited to the schools which operate school meals directly or indirectly in Seoul and Gyeonggi province. As a result, job demand and lack of rewards were found the most significant factors in the dimensions of job stress. The quantitative expansion of school meals is important; however, it is necessary to reduce stress in the work environment for dietitians, nutrition teachers and employees in school foodservices to perform their duties with dignity and satisfaction.

A Study on the Recognition and the Ways of Consuming Mushrooms by Elementary and Middle School Students and School Dietitian (초, 중학생 및 급식 담당 영양사를 대상으로 한 버섯의 인식 및 이용형태에 관한 연구)

  • A study on the recognition on the mushrooms by elementary school pupils, middle school students and school dietitians were-carried out. The ways of cooking mushrooms by school dietitians were also investigated. Most students and dietitians highly recognized mushrooms as good food. The most favorite mushroom was Flammulina velutipes, the cooking of mushrooms with meat and the hot mushroom soup with meat(Jungol) being the most preferred cooking methods. School ditetitians like to use mushrooms in school lunch and generally use medium or high duality mushrooms. Students, however, do not tend to prefer mushrooms compared to other vegetables. Mushroom dishes that can promote the consumption by students are mushroom bulgogi, mushroom pizza, sweet and sour mushroom in the order.

The Status of Foodservice Operations and Perceived Performance of Management for School Dietitians in the Kyunggi Area (학교 급식 영양사들의 급식 관리 현황 및 직무 수행도 -경기 지역을 중심으로-)

  • This study investigated the status of foodservice operations and perceived performance of management for school dietitians in the Kyunggi area. According to the results, the perceived performance of dietitians for cooking management presented an overall average of $3.90{\pm}0.61$, and carrying out examination and preservation of food was the highest among all sectors with $4.83{\pm}0.49$. The area of cross contamination marked a total average of $4.15{\pm}0.67$, and the perceived performance of serving management was lower than the sanitary management of cooking and cross contamination with $3.64{\pm}0.75$. The most recognized cause on foodborne illness was food materials (44.6%). Sanitary level, the temperature of most foods, and the personal hygiene of workers were also important causes of foodborne illness.

Study on Foodservice and Nutrition Management for Elementary Schools in Kyungnam and Ulsan - Nutrition Management - (경상남도와 울산광역시 초등학교의 급식 및 영양관리 실태조사 II - 영양관리 -)

  • The purpose of this survey was to investigate the status of dietitians' nutrition management and nutrition education in the elementary school lunch program. 386 dietitians in Kyungsangnamdo and Ulsan that participated in this survey, 350 dietitians were selected for analysis. The main results of this study are as follows. 80.6% don't survey the nutrition of home food, the reason is that 'too much work' 60.2%, - The more it increases the longer they have career record - 'botheration' 21.9%, 'no idea about process' 9.5%, 'no idea about way of survey' 8.4%. 23.5% don't survey the student's preferences, the reason is that firstly 'too much work' 55.1% ,secondly 'botheration' 34.7%, as well as the case of nutrition survey. The rate of nutrition education working is about 94%. The subject of education is mostly about 'advisable diet habit'(62.6%), then importance of nutrition(19.5%), elementary knowledge about food(10.0%), table manners (5.5%), sanitary and environment(24.6%). All(100%) of them who manage over 1501 works nutrition teachig while 83.0% do but 17.0% don't in a case of 401-800 at the relationship between whether they work education or not and how many students they manage.

Analysis of job characteristics by the Dietitian's Job description for dietitians in different practice areas (영양사 직무기술서 (2000년)의 영양사 근무 영역별 직무특성 비교 분석)

  • The purpose of this study was to compare the dietitian’s job in dietitian’ s practice area using the dietitians job description(2000). To do this the survey was carried out for the frequency, criticality and difficulty of each job discription with 3 point scales. Questionaires sent to 521 dietitians. The number of returened questionnaires was 252. The number of dietitians working at each area was 125 at the school foodservice, 39 at the institutional foodservice, 62 at the hospital, 13 at the public health center and 13 at the catering company. The results of this study can be summarized as followed ; Experiences, level of education and age were significantly different by dietitian’s practice areas.(p<0.001) For frequency, duties of nutrition services had lower score than that of food services in all practice area. Frequency of each job description was significantly differences duties of all.(p<0.05) For criticality, duties except of meal services, financial managements, life cycle nutrition managements were significantly different by dietitian’ s practice areas.(p<0.05) For difficulty, duties except of self promotions were significantly different by dietitian’s practice areas .(p<0.05)

A Survey of Food Purchasing Management at Schools in the Chonbuk Area of Korea (전북 지역 학교 급식소의 식품 구매 관리 실태 조사)

  • This study was conducted to investigate food purchasing management and the perception of school dietitians regarding food quality standards in the Chonbuk area of Korea. Self-administered questionnaires were collected from a total 205 dietitians and then evaluated using SPSS v. 11.5. The results are summarized as follows. Among the 205 school foodservice systems evaluated, 63.4% used a conventional system, while 36.6% were operated in a commissary manner. In addition, 64.9% of the schools had a menu cycle of 1 week (p<0.05) and 72.2% of the dietitians were responsible for the entire purchasing process (p<0.05). Moreover, a dietitian, school staff, foodservice staff, and parents participated in receiving and inspection of the food at 95.6% of the schools. Additionally, wholesalers and informal purchasing were preferred for purchasing food supplies. Moreover, 33.3% of dietitians in the commissary systems responded that they made Kimchi themselves instead of purchasing it (p<0.01). When the dietician's perception of food quality was evaluated, the average score was 3.33 based on a 5-point scale, although the scores differed significantly between dieticians working in conventional systems and those working in commissary systems (p<0.05). The scores for the quality standards related to the GMO agricultural and pesticide residues were the lowest. These findings indicate that it is necessary to develop standardized food quality and purchasing criteria and to provide education regarding these criteria to school dietitians to enable them to improve their knowledge regarding food quality standards and to implement effective purchasing programs.

Current Status and Dietitians' Perception of Rice Bread in the Noncommercial Foodservice Menu (단체급식 식단의 쌀빵 이용 현황 및 영양사의 인식 분석)

  • The purpose of this study was to survey the current status of bread menus at school, business and industry (B & I), and military foodservice operations and to analyze dietitians' perceptions of applying rice bread in foodservice menus. A questionnaire, which was developed by content analysis, situation analysis, and in-depth interview, was distributed to 183 schools, 31 B & I operations, and 26 air force dietitians. In the school and B & I foodservices, wheat bread was used much more than rice bread and serving frequencies of morning rolls and sliced bread were higher. The military foodservices, however, served much more rice bread as burger buns than the other groups. For the school and B&I operations, consumer preference for wheat bread was perceived as high. In contrast, soldiers preferred rice bread to wheat bread in the military foodservices. The recognized advantages of using rice bread were different among the three groups. The military dietitians perceived the main advantage of using rice bread as an increase of rice consumption, while the school and B & I dietitians viewed it as promoting a healthy image. In all groups, the primary difficulties for using rice bread were the higher cost of rice bread as compared to wheat bread and a lack of facilities (e.g. oven). The military dietitians had the highest levels of positive and active interest as well as intention and opinions toward using rice bread. On the other hand, the school and B & I dietitians had very positive perceptions of rice bread but did not actually apply it in their foodservice menus. Overall, the results of this study suggest that the development of diverse menus using rice bread along with government support of its use, including facilities with ovens as well as rice bread subsidies, should be carried out for on-going expansion of the rice bread supply.

School Dietitians′ Use of Processed and Package Foods in Incheon (인천지역 학교급식 영양사의 가공포장식품 이용 실태)

  • The purpose of this study was to investigate school dietitians' use of processed and packaged foods in Incheon. This study was carried out through a questionnaire and the subjects were 203 school dietitians in Incheon. The results are summarized as follows. Dairy product was the processed and packaged food used most frequently by the subjects for school lunch. Most subjects used processed and packaged foods for school lunch once or twice per week. The first criteria for their choosing processed and packaged foods was manufacturing company. Also major reason for their using processed and packaged foods for school lunch was saving cooking time, easy purchase, hygienical packing and less garbage. The most common information source on processed and packaged foods for school lunch was promotion of food company. The subjects checked labelling of processed and packaged foods in order of open-date, manufacturer, origin of product, nutrition facts, ingredients and food additives. Some results were significantly different among the subjects by employment school, type of meal management and cost per meal. For children and adolescents' nutrition and well-being through school lunch, it is necessary to prepare a database of the processed and packaged foods and education program concerning nutrition labelling and food safety.

Evaluation of Dietitians' Perception of Importance about Prerequisite Program in Foodservice Facilities (급식소 선행요건프로그램에 대한 영양사의 중요성 인지도 평가)

  • The purpose of the study was to evaluate the perception of importance about prerequisite program(PRP) of dietitians. A questionnaire was developed to achieve research objectives and sent to random samples of 450 dietitians by a mail from July to August in 2000 ; 242(54%) responses were analyzed. The respondents used three-point-scale to rate their perception of importance about PRP from 1-"will be necessary" to 3-"very important". All statistical analyses were conducted using SAS package(version 8.12) in order to have means, standard deviations, One-way analysis of variance, Duncan’s multiple range test and t-test. The study results were summarized as follows. The rates of perception of importance about PRP were significantly different from 21 of the 37 contents among business and industry, health care and school foodservice and were significantly different from 16 of the 37 contents among direct and contract management(p<.05 or p<.01 or p<.001). Dietitians in business and industry had lowest perception of importance about PRP of other respondents. Generally, the item related to ‘‘employee hygiene practice’ had the highest perception level score among PRP in foodservice facilities. Results indicate that there is a need for increased education of dietitians about PRP and appropriate practices.

Job Analysis of School and Hospital Dietitians : Factor Analysis of Human Attributes (학교 및 병원 영양사의 직무분석 : 인적특성의 요인구조 비교)

  • This study was mainly done by factors analyzing to find out the structure and the dimension of the results of a previous study; analyzing the school and hospital dietitians'human attributes needed for successful job performance(Song 1998). The results were as follows: 1) Through factor analysis, the 12 knowledge items were categorized into 4 groups ; ‘basic knowledge of food and nutrition’, ‘knowledge of clinical nutrition and diet therapy’, ‘knowledge of medial science’, and ‘knowledge from experience and common sense’. These 4 knowledge factors were more frequently used and importantly recognized by hospital dietians compared with school dietitians. 2) The 38 skill and ability items were categorized into 7 groups ; ‘ability of program development and research’, ‘ability of counseling and nutrition education’, ‘ability of production control and facility management’, ‘ability to use computer’, ‘ability to cooperate with others’, ‘ability to manage consignment marketing’, and ‘ability of managing situations and informations’. Different skills and abilities were required for each group. 3) The 11 personality items were categorized as 3 groups ; ‘respoinsibility and sincerity’, ‘positive personality’, and ‘affirmative and inquisitive personality’.
