Quality Characteristics of Sponge Cake with Added Lotus Leaf and Lotus Root Powders (연잎과 연근분말을 첨가한 스펀지케이크의 품질 특성)

  • This study was conducted to evaluate the effect of lotus leaf and lotus root powder on the quality characteristics of sponge cake. Percentages of 4, 8 and 12% of two kinds of lotus powder were added to the batter based on flour content. Baking and cooling loss rate, volume and specific loaf volume, crumb color, texture, scanning electron microscopy (SEM) and sensory evaluation of the products were analyzed. The baking and cooling loss rate of the control was lower than cakes with added lotus leaf and lotus root powder. The volume of the control was the largest, and as the amount of lotus leaf and lotus root powder increased, volume and specific loaf volume became smaller. The lightness and yellowness values of the control were higher than those of the experimental cakes, and the loaves with 12% added lotus root powder showed the lowest value. Redness of the experimental cakes increased. In the textual property evaluation, hardness of the control and sponge cakes containing 4% lotus leaf, and lotus root powder appeared to have the lowest value. As the amount of lotus leaf and lotus root powder increased, hardness increased. Springiness showed the same tendency, but cohesiveness of the control revealed the lowest value. The structure of the cake crumb by SEM, revealed that the crumb cells and grains of the experimental cakes were opened and coarse, as the amount of lotus leaf and lotus root powders increased. In a sensory evaluation, sponge cakes containing lotus root powder were preferred rather than those with lotus leaf powder. As a result, good sponge cakes were prepared by adding 4% lotus leaf powder or 8% lotus root powder.

  • The quality characteristics of dough with lotus root powder were investigated. As the content of lotus root powder increased, doughs showed higher water absorption, lower stability and longer development time than control as measured with a farinograph. Extensibility decreased with the increase of lotus root powder. As the addition of lotus root powder increased, the doughs has higher gelatinization temperatures and maximum viscosities than control as measured by amylograph. And the pH of the dough also increased by the increase of lotus root powder.

An Investigation of Undescribed Black Root Rot Disease of Soybean Caused by Cylindrocladium(Calonectria) crotalariae in Korea (콩의 미기녹(未記錄) 병(病)인 Cylindrocladium(Calonectria) crotalaria에 의한 흑색(黑色) 뿌리썩음병)

  • An undescribed black root rot of soybean, caused by Cylindrocladium crotalariae, was observed in Suweon area. The diseased plants showed yellowing at the top and dry rot at the root. Lesions of roots and stems in the soil were red to brown and main roots were cracked. Although not observed the disease in the field, leaves of inoculated test plants in the greenhouse exhibited circular, brown lesion surrounded by chloratic halos. The fungus was recovered in culture from the infected stem and root, and the perithecia of Calonectria crotalariae were demonstrated to be present as well as the cylindrocladium state. The fungus was pathogenic to the root, stem, petioles and leaves of soybean. The probable source of primary inoculum was microsclerotia formed in infected soybean root and stem from the previous season's soybean debris. Black root rot by this fungus was considered to be one of detrimental factors to the maximum yield of soybean. From the morphological and physiological characteristics and pathogenic behaviors, this fungus was identified as Cylindrocladium(Calonectria) crotalariae.

A Comparative Anatomy of the Secondary Xylem in the Roots and Stems of Some Pinus Plants (수종 소나무속 식물에 있어서 뿌리와 줄기의 이기목부에 관한 비교해부)

  • Anatomical characteristics of the secondary xylem in the roots and the stems of genus Pinus including nine species growing naturally in Korea have been studied to elucidate the structural differences between two organs. The results, comparing the root woods with the stem woods, are as follows; The transition from the early-wood to the late-wood occurs more gradually in the root woods. In the root woods, the bordered pits on the radial wall of tracheid are frequent in the two rows. The spiral thickening on the radial and tangential wall of the tracheid can be seen in the only stem woods of four species such as P. koraiensis, P. rigida, P. rigitaeda and P. banksiana. In the majority of the species studied, the length of the tracheid is longer in the root woods, but in some species such as P. strobus, P. densiflora, P. rigida and P. sylvestris, this length is almost sam ein both organs. The diameter of the tracheid in the root woods is wider. The wall thickness of the tracheid in the early wood is thicker in the root woods, but vice versa in the late woods. More rays per unit area can be seen in the root woods.

  • A comparative anatomy between the secondary xylem in the root and stem of Korean Betulaceae, including 5 genera and 6 species, was carried out in this study. Anatomical characteristics of the secondary xylem in the root and stem are as follows: Diameter of vessel and fiber is wider in the root than the stem, while the number of vessel and fiber per unit area is fewer in the root than the stem. The length of vessel element is longer in the stem than the root, whereas length of the fiber is longer in the root than the stem. Number of bar in the perforation plate is more in the stem than the root, and the angle of perforation plate is broader in the root than the stem. Number of ray per unit area is more in the root than the stem.

Comparison of Growth Increment and Ginsenoside Content in Different Parts of Ginseng Cultivated by Direct Seeding and Transplanting (직파와 이식재배에 따른 인삼의 부위별 생육특성 및 진세노사이드 함량 비교)

  • This study was carried out to clarify the difference of growth characteristics and ginsenoside content in 5-year-old ginseng root grown by direct seeding and transplanting cultivation. Root weight per plant of direct seeding cultivation was lower than that of transplanting cultivation. Fresh and dry matter partitioning ratio of direct seeding cultivation was high in main root and low in lateral because direct seeding cultivation root elongated the length of main root, while it suppressed the growth of lateral root. Total amount of ginsenoside contents by direct seeding and transplanting cultivation were 362.8 and 320.3 mg in main root, 188.6 and 548.8 mg in lateral root, 170.7 and 273.8 mg in fine root. Its contents of whole root per plant were 722.1 and 1142.9 mg by direct seeding and transplanting, respectively.

Photosynthetic Characteristics and Growth Performances of Containerized Seedling and Bare Root Seedling of Quercus acutissima Growing at Different Fertilizing Schemes (시비 처리에 따른 상수리나무(Quercus acutissima) 용기묘와 노지묘의 광합성 및 생장특성)

  • This present study was conducted to investigate photosynthetic characteristics, chlorophyll fluorescence, chlorophyll contents, and growth performances of containerized seedling and bare root seedling of Quercus acutissima growing under different fertilizing schemes. Both of containerized seedling and bare root seedling of Quercus acutissima showed good photosynthetic capacity and apparent quantum yield in the seedlings applied with one gram refining fertilizer (each of N, P, and K is 19%) diluted in one liter water. And chlorophyll contents also showed higher in the seedlings applied with the above fertilization scheme. The seedlings also showed good relative growth performances of root collar diameter, seedling height, total biomass, and leaf area in the some treatment scheme. In most of the treatments, containerized seedlings showed better photosynthetic capacity, apparent quantum yield, chlorophyll contents, and growth performances than bare root seedlings.

Root Yield and Saikosaponin Content in Local Strains of Bupleurum falcatum L. (시호 수집종의 근 수량 및 Saikosaponin 함량)

  • Six local strains collected in Korea and one cultivar (Samdo) introduced from Japan were applied for comparative cultivation to investigate growth characteristics, root yield potentials and saikosaponin contents of root in Bupleurum falcatum L. The one and two year old plants of the native local strains flowered in August 2~3 and July 16~18, respectively, whereas Samdo was late flowering type, being delayed by 18~32days and sustained the growth of above ground parts to the end of November. All the native local strains have similiar characteristics but Samdo was completely different in plant and root type. Local strain collected from Chunchon showed better in growth and root characteristics, consequently resulting high yield of dry roots and saikosaponin contents in both one and two year old plants. The average yield of two year cultivation system was 2.6 times high as 105Kg /10a, compared with that of one year.

  • Chemical and microbial characteristics of root zone of neighboring large and small ginseng in a high yield field were investigated in relation to root growth. $NO_3-N$, $NH_4-N$, and available P contents were significantly low for large root but Ca high. The contents of $NO_3-N$ or $NH_4-N$ showed significant negative correlation with fine root development. Precipitation quotient of humic acid tended to be high for large roots. The population of one dominant bacteria was significantly high for large root. The ratios of bacteria to fungi or actinomycetes were positively correlated with fine root development.

Analyses on Environment-friendliness of Root Barrier Materials based on Fish Toxicity Test (어독성 실험에 따른 방근재 친환경 특성 분석)

  • The purpose of this study is to analyze the characteristics of environment-friendliness of Root Barrier materials based on comprehensive experiments on harmfulness of Root Barrier materials and fish toxicity of Oryzias latipes mortality to verify eco-toxicity of each method of construction and Root Barrier material, which are to be applied by taking eco-toxicity into account when building ecological flows in upper areas on natural and artificial grounds. As a result, the following conclusions have been reached in this study: 1. In regard of the harmfulness analyzed, each material showed a different result of analytical value in each lab tank. Compared to lab tank, pH (la), DO (lb), T-N (VI) and T-coli (la) were in the same grade, but COD, SS, T-P and F-coli were less than that of control, respectively increased or decreased by material were analyzed. 2. In the experiment of fish toxicity, Barrier sheet was found to have 66.7% of fish mortality, indicating strong fish toxicity. Synthetic rubber system root barrier sheet (20.0%) was analyzed to have medium fish toxicity, while Synthetic resin system root barrier-waterproof sheet (3.3%), Synthetic rubber system membrane root barrier sheet (3.3%) and Synthetic resin system root barrier sheet (0.0%) showed relatively lower mortality and fish toxicity. To sum up such results as found in the experiment mentioned so far, the values of harmfulness and root penetration resistance analyzed were different in each lab tank, but there was absolutely little correlation with the mortality gained from the experiment on fish toxicity. In the experiment of fish toxicity, environment-friendly root barrier materials were analyzed, and it was found that Synthetic resin system root barrier sheet, Synthetic resin system root barrier waterproof sheet and Synthetic rubber system membrane root barrier sheet are highly environment-friendly. In contrast, Synthetic rubber system root barrier sheet was found to have medium-level environment-friendliness. Also, Barrier sheet was analyzed to have low environment-friendliness.
