Effects of carbonized rice hull and wood vinegar on the improvement of cultivation condition and grain quality of rice

  • The effects of environment-friendly materials carbonized rice hull and wood vinegar on the improvement of rice quality and soil fertility were investigated. Combined application of carbonized rice hull and chemical fertilizer resulted in lower protein in rice, similar amylose content and generally higher palatability values. Combined application of wood vinegar and chemical fertilizer obtained high protein and amylose contents, and palatability values. However, both carbonized rice hull and wood vinegar did not exhibit weed control. In the carbonized rice hull treatments, soil K was high during heading stage while soil pH during harvest stage was low. In the case of wood vinegar treatments, clear distinction between total K and Ca was observed. K was high during tillering stage while Ca was high until harvest stage.

Cooking Properties of Rice with Pigmented Rice Bran Extract (유색미 미강 추출물 첨가가 밥의 취반 특성에 미치는 영향)

  • This study was perform to examine the feasibility of cooking processing using the rice added the 70% ethanol extract of pigmented rice bran layer. Four rice samples, including normal rice, glutinous rice, pigmented-normal rice, and pigmented-glutinous rice were compared the properties of physico-chemical, texture, and sensory evaluation. Pigmented rice varieties had a higher amylose content, but shorter length in glucose chains than non-pigmented rice varieties. The enthalpy for gelatinization was found to increase in pigmented rice, which need more energy for gelatinization of starch in cooking. The hydrolysis rate by glucoamylase in rice added pigmented bran extract was higher than pigmented rice. Rice with pigmented bran extract had higher glutamine content, but lower asparagine content and no difference in fatty acid composition, which affect palatability. Cooked rice added pigmented bran extract was less retrograded than pigmented rice during the storage period. Moreover, cooked rice added pigmented bran extract was more acceptable in sensory evaluation. Based on the results, the use of rice added pigmented bran extract instead of pigmented rice in grain processed food have advantageous effects in palatability of polished rice and phytochemicals of pigmented non-polished rice. This study will help develop new health-promoting rice products.

Varietal and Locational Variation of Grain Quality Components of Rice Produced n Middle and Southern Plain Areas in Korea (중ㆍ남부 평야지산 발 형태 및 이화학적 특성의 품종 및 산지간 변이)

  • To understand the relative contribution of varietal and environmental variation on various grain quality components in rice, grain appearance, milling recovery, several physicochemical properties of rice grain and texture or palatability of cooked rice for milled rice materials of seven cultivars(five japonica & two Tongil-type), produced at six locations of the middle and southern plain area of Korea in 1989, were evaluated and analyzed the obtained data. Highly significant varietal variations were detected in all grain quality components of the rice materials and marked locational variations with about 14-54% portion of total variation were recognized in grain appearance, milling recovery, alkali digestibility, protein content, K /Mg ratio, gelatinization temperature, breakdown and setback viscosities. Variations of variety x location interaction were especially large in overall palatability score of cooked rice and consistency or set- back viscosities of amylograph. Tongil-type cultivars showed poor marketing quality, lower milling recovery, slightly lower alkali digestibility and amylose content, a little higher protein content and K /Mg ratio, relatively higher peak, breakdown and consistency viscosities, significantly lower setback viscosity, and more undesirable palatability of cooked rice compared with japonica rices. The japonica rice varieties possessing good palatability of cooked rice were slightly low in protein content and a little high in K /Mg ratio and stickiness /hardness ratio of cooked rice. Rice 1000-kernel weight was significantly heavier in rice materials produced in Iri lowland compared with other locations. Milling recovery from rough to brown rice and ripening quality were lowest in Milyang late-planted rice while highest in Iri lowland and Gyehwa reclaimed-land rice. Amylose content of milled rice was about 1% lower in Gyehwa rice compared with other locations. Protein content of polished rice was about 1% lower in rice materials of middle plain area than those of southern plain regions. K/Mg ratio of milled rice was lowest in Iri rice while highest in Milyang rice. Alkali digestibility was highest in Milyang rice while lowest in Honam plain rice, but the temperature of gelatinization initiation of rice flour in amylograph was lowest in Suwon and Iri rices while highest in Milyang rice. Breakdown viscosity was lowest in Milyang rice and next lower in Ichon lowland rice while highest in Gyehwa and Iri rices, and setback viscosity was the contrary tendency. The stickiness/hardness ratio of cooked rice was slightly lower in southern-plain rices than in middle-plain ones, and the palatability of cooked rice was best in Namyang reclaimed-land rice and next better with the order of Suwon$\geq$Iri$\geq$Ichon$\geq$Gyehwa$\geq$Milyang rices. The rice materials can be classified genotypically into two ecotypes of japonica and Tongil-type rice groups, and environmentally into three regions of Milyang, middle and Honam lowland by the distribution on the plane of 1st and 2nd principal components contracted from eleven grain quality properties closely associated with palatability of cooked rice by principal component analysis.

Effects of Cold Water Irrigation on Quality Properties of Rice (냉수처리에 따른 쌀의 품질특성 변화)

  • This study was carried out at the Chuncheon Substation, National Institute of Crop Science to determine the effect of cold water irrigation on the milling and polished quality of rice, as well as its physicochemical and amylogram characteristics, and palatability Chilling by Irrigation of cold water $(17^{\circ}C)$ induced delay of days to heading, reduction of culm length, inferiority of panicle exsertion and high sterility of panicle. Head rice ratio was decreased, while the percentage of chalky and creak rice increased with increasing sterility over from 20%. Protein content was gained 0.9-2.0% more than, while whiteness and palatability of the milled grain were reduced under cold water irrigation treatment. Significant decrease in maximum viscosity and breakdown viscosity of rice flour was investigated under cold water treatment by amylogram analysis, while the initial gelatinization temperature and setback viscosity were increased. Sensory panel test showed that the palatability of cooked rice was unfavorable and its stickiness was lower compared with that under normal condition. Differences in the aroma of cold-treated and untreated cooked rice were not performed significantly.

Effect of Low Radiation During Grain Filling Stage on Rice Yield and Grain Quality (등숙기 일사 저하가 쌀 수량 및 품질에 미치는 영향)

  • This study was conducted to know the effect of low radiation during grain filling stage of rice on its grain yield, components, physicochemical properties and palatability, compared to the effect of natural light. Ripened grain ratio, 1000 grain weight of brown rice, milled rice yield of Mipum, Hopum, and Sindongjin were reduced as the shading treatments become higher. After harvest, physicochemical properties of rice influencing eating quality were investigated. Protein content of milled rice was increased, but palatability was decreased by shading treatments. Change of milled rice proteins and palatability due to shading treatments were found to be less in Mipum than that in Hopum and Sindongjin. With regard to amylogram properties, shading treatments resulted in a significant decrease in peak trough final breakdown viscosities of rice flour, though it increased pasting temperature and setback viscosity. The degree of the 55% shading effect was more intensive than the 35% shading effect in changes of ripened grain ratio, 1000 grain weight of brown rice, milled rice yield and milled rice protein.

Effect of Nitrogen Fertilizer Rates on Rice Quality in Mid-mountainous Area (질소시비량이 중산간지 고품질 쌀 생산에 미치는 영향)

  • In order to find out better cultivation practices in mid-mountainous area to produce high quality rice, an experiment involving seven nitrogen fertilizer rates and three varieties was carried out, during past two years$(2003\~2004)$. There was an interaction effect on palatability of milled rice between nitrogen fertilizer rate and variety. The palatability of Junambyeo grown by the treatment of nitrogen fertilizer yale wasn't different across the rates significantly, but Hwayongbyeo's palatability grown by 0 kg/ha nitrogen treatment was better than 50, 70,170 kg/ha, and Sangmibyeo's palatability grown by 70 kg/ha nitrogen treatment was better than 90, 110, 140, 170 kg/ha. Amylose content of milled rice was showed without a significant difference between nitrogen fertilizer rate, but in between variety, the amylose content of Sangmibyeo was lower than Hwayongbyeo's, also Hwayongbyeo's amylose content was lower than Junambyeo's. Protein content of milled rice was showed an interaction effect between nitrogen fertilizer rate and variety. The protein content of Hwayongbyeo and Junambyeo grown by the treatment of nitrogen fertilizer rate wasn't different across the fertilizer yale significantly, but Sangmibyeo's protein content grown by 0 kg/ha nitrogen treatment was lower than the rest of treatments, and it's protein content grown by 50, 70, 90 and 110 kg/ha nitrogen treatment was lower than 140 and 170 kg/ha. Bead rice yield of milled rice grown by lower nitrogen fertilizer rate, was lower than that grown by higher nitrogen fertilizer rate. In a conclusion gathering all above the results to produce high quality rice in Mid-mountainous area, the applicative nitrogen fertilizer rate was 70 kg per ha for Sangmibyeo, 110 kg/ha for Hwayongbyeo and 140 kg/ha for Junambyeo, in considering with head rice yield, palatability, amylose${\cdot}$protein content and productivity.

Evaluation of Organic Sudangrass for Feed Value, Silage Quality and Palatability in Korea (유기 수단그라스의 사료가치, 사일리지 품질 및 기호성 평가)

  • The main nutritional problem of sorghum${\times}$sudangrass hybrid (Sorghum bicolor${\times}$Sorghum sudanese) silage is low quality and palatability. This experiment was conducted to evaluate whether organic com grain and crushed rice addition of sorghum${\times}$sudangrass hybrid silage increases forage quality of the silage. The sorghum${\times}$sudangrass hybrid silages with added com grain and crushed rice were similar to conventional com silage in moisture content. However organic sorghum${\times}$sudangrass hybrid silage had low pH values. Silage added with gain and byproduct had higher crude ash, acid detergent fiber (ADF) and neutral detergent fiber (NDF) contents than control com silages, while its non-fiber carbohydrate (NFC) and total digestible nutrients (TDN) showed the opposite results. Lactic acid, butyric acid and lactic percentage of total organic acid (L/T) of sorghum${\times}$sudangrass hybrid silages were higher than those of com silage, but acetic acid was higher than control. In vitro dry matter digestibility (IVDMD) of com silage was higher than other sorghum silages. Feed intake of sorghum${\times}$sudangrass hybrid silage added with crushed rice was highest among silages. Therefore, these data indicate that crushed rice and com grain added sorghum${\times}$sudangrass hybrid silage could be recommended as the most effective treatment for increasing silage quality and palatability.

Potential use of dried persimmon (Diospyros kaki) byproducts as feed sources for ruminants

  • The aim of this study was to evaluate the chemical composition, in vitro digestibility, and palatability of dried persimmon byproducts (persimmon peel [PP] and damaged whole persimmons [WP]) ensiled with rice straw in different mixing ratios. PP and WP were ensiled with rice straw at ratios of 3:7 (PP3R7, WP3R7), 5:5 (PP5R5, WP5R5), 7:3 (PP7R3, WP7R3), and 8:2 (PP8R2, WP8R2) for 70 d. WP3R7 had the highest (p < 0.05) crude protein and lactate contents compared to the other combinations. On the other hand, PP3R7 and PP8R2 had lower concentrations of neutral and acid-detergent fibers (p < 0.05) and produced lower amounts of ammonia-N (p < 0.05). The silages were compared to rice straw silage (RS), maize silage (MS), whole-crop rye silage (WCRS), and sorghum-sudangrass silage (SSGS) during an in vitro study. The results showed that PP8R2 and WP7R3 had higher (p < 0.05) dry matter digestibility values than RS, MS, WCRS, and SSGS in a 6 h incubation period. In addition, a palatability test of the silages was conducted on Hanwoo cattle, goats, and deer, using the cafeteria method. The palatability index rate of PP7R3 was the highest (p < 0.05) for the goats and the Hanwoo cattle, whereas PP8R2 had the highest (p < 0.05) rate for the deer and the Hanwoo cattle. In conclusion, dried persimmon byproducts in the form of PP and WPs can be used as ruminant feed when ensiled with RS at ratios of 7:3 and 8:2.

Palatability and Physicochemical Properties in 2001 Yield Increased by 10% than Normal Level in 2000 (쌀 수량이 평년수준인 2000년 대비 10% 증가한 2001년의 식미 및 이화학특성 비교)

  • In this study, we examine the palatability and physicochemical properties of rice in the year, when there was 10% increase in yield compared to normal year due to daily temperature range and sunshine hours. The results of the analysis of rice yield over the last 20 years (1993-2012) showed 10% difference between the yield in 2000, which was normal, and that in 2001. With regard to the crop weather condition during the ripening period in 2001 compared to 2000, the daily range and sunshine hours were higher, but the mean temperature was similar. The rice yield in 2001 was 9.8% higher than that in 2000 due to the increased number of spikelets per panicles and ratio of ripened grain. In terms of chemical traits, protein, Mg, and K contents decreased in 2001 compared to 2000, but amylose content increased. Trough and final viscosity assessed with a Rapid Visco Analyser were significantly higher in 2001 than 2000. The quality of cooked rice was measured through the Toyo Mido Meter Glossiness Value (TGV) instead of a palatability score because a sensory test produces relative comparison values rather than absolute values. The correlation coefficients between the sensory evaluation parameters and the TGV in several rice materials harvested in two years showed a highly significant positive correlation ($r=0.81^{**}-0.89^{**}$, n=27-47). TGV was also significantly higher in 2001 than in 2000. The results suggested that the palatability of cooked rice was good in 2001 with about 10% increase in rice yield compared to normal year in 2000 due to daily temperature range and sunshine hours.

Grain Quality of Imported Steamed-Rice (수입 찐쌀의 품질 특성)

  • The grain quality of imported steamed-rice was investigated to improve the competitiveness of domestic .ice (Oryza sativa L.) in low price market. Eight samples of imported steamed-rice were collected during 2004 and 2005, and they were examined in appearances, physicochemical, pasting, cooking qualities and palatability. In the appearance of grain, there were many cracks, which were easily classified, on the surface of steamed-rice. And they had high protein contents, low moisture contents and very low glossiness. We could certain that there was often decolorization process after boiling according to the wide range of whiteness in steamed-rice samples. Amylograms and thermo-grams of the steamed-rice represented that they were at-ready gelatinized. Thus, we could concluded that the steamed-rice absorbed water with meager endothermic reaction and eluted more soluble solid with many breaks of the grain than milled rice during cooking process. From the sensory preference evaluation, the steamed-rice had the lowest scores among milled rice, long stored rice, and broken rice samples on all evaluation items.
