미국 일간지의 한국음식 관련기사 내용분석연구 - "뉴욕타임즈"기사를 중심으로(1980${\sim}$2005) - (Content Analysis of the New York Times on Korean Food from 1980 to 2005)

  • The purpose of this study is to examine the Americans' perception on Korean food by analyzing the articles of the New York Times which is the best quality newspaper in America. The number of articles of the New York Times on Korean food were 111 from 1980 to 2005. The average yearly articles was 1.3 form 1980 to 1989, 4.1 from 1990 to 1999, and 9.5 from 2000 to 2005. A large number of articles(54.1%) concerning Korean foods were restaurant reviews based on the experiences in dining at Korean restaurant in America. Main authors of restaurant reviews were Eric Asimo(14), Florence Fabricant(11), and Mark Bittman(8). The kinds of Korean foods reported in the New York Times were 111 which included staple food(21), subsidiary food(82) dessert(4) and Japanese Food(4). There were 15 recipes on Korean food reported in the New York Times including 3 items on Kimchi and 3 items on Bulgogi. The New York Times said Kimchi, Buigogi, Galbi, Pajeon, and Bibimbop were popular among Americans. The New York Times described Korean foods as exhilarating, robust, bold, rustic, healthful, incendiary, assertive, lusty, and exuberant. There were many favorable comments on Korean foods in the New York Times.

부산.경남 지역 주부들의 전통혼례음식 인식 정도에 관한 연구 (A Study of the Housewives' Perception Level on Wedding Food in Busan & Kyungnam Area)

  • This study was carried out to survey the degree of the perception and necessity of wedding food prepared by housewives. The participants of the survey were 331 housewives lived in Busan and Kyungnam area. The findings could be summarized as follows: The housewives lived in Busan and Kyungnam area had evaluated the necessity of wedding foods, Paebaek foods or Yedan foods. The respondents of 36.6% answered that they will order wedding foods from specialists, whereas 28.7% said that they will prepare them by themselves. More than half of the respondents(56.2%) thought that current wedding foods were prodigal and have to be done in thrifty manner. Broadly 46.8% of the respondents considered that the ritual practices of wedding foods will decrease steadily. A conclusion was that lots of participants had a negative view of wedding foods and pointed out the necessity of developing them to reflect traditional wedding customs with economic costs.

향토음식점 이용고객의 구전정보 이용 특성 분석: 전북지역을 중심으로 (A Study on the use of Word-of-Mouth(WOM) Information in the Customers of Korean Local Food Restaurants: Focused on Jeonbuk Area)

  • 본 연구는 향토음식점에 대한 구전정보에 대한 고객행동을 규명하기 위하여 수행하였다. 설문조사는 전북지역 거주자 500명을 대상으로 총 455부(회수율 91.0%)를 분석에 이용하였다. 자료는 SPSS 12.0 프로그램을 이용하여 분석하였다. 연구결과 향토음식점에 대한 구전정보 중 가장 많이 활용하고 있는 정보원에 있어서는 '직접 경험해 본 주위사람들의 추천'$(M=3.57{\pm}1.24$)과 '주변사람들을 통한 구전'($M=3.52{\pm}1.20$)이 높게 나타났고, 향토음식점에 대한 구전정보를 구할 때 소비자들이 중요시하는 속성에 대해 분석한 결과에서는 '음식의 맛'($M=4.16{\pm}1.15$), '음식점의 종사원 서비스'($M=3.79{\pm}1.11$)를 가장 중요시하는 것으로 나타났다. 향토음식점을 주위사람들에게 추천을 하는 동기에 대해 분석한 결과 '맛, 영양, 품질 모두 현지에서만이 유지할 수 있으므로'($M=3.53{\pm}1.10$)가 가장 높게 나타났고, '향토음식을 통해 지역 방문 기약을 오래도록 남기기 위하여'($M=3.52{\pm}1.03$), '향토음식을 구전을 통해 적극적으로 알릴 필요가 있으므로'($M=3.51{\pm}1.06$)순으로 나타났다. 이는 소비자의 향토음식점에 대한 추천이 음식 자체의 품질과 방문지역의 특성에 있음 보여준다. 연구결과 향토음식점에 대한 고객행동에 있어 구전정보의 중요성을 시사해 주고 있다.

  • The growth in social media, blogs and restaurant listing directories have led to increasing customer reviews about restaurants, their quality of food items and services available on the internet. These user reviews offer a massive amount of valuable information that can be used for various decision-making purposes. Currently, most food recommendation sites provide recommendation scores about restaurants rather than food items of the restaurant and the provided recommendation scores may be biased since they are calculated only from user reviews listed only in their sites. Usually, people wants a reliable recommendation about foods, not restaurant. In this paper, we present a reliable Korean food items rating method; we first extract food items by applying NER technique to restaurant reviews collected from many Korean restaurant recommendation web sites, blogs and web data. Then, we apply lexicon-based sentiment analysis on collected user reviews and predict people's opinions as sentiment polarity scores (+1 for positive; -1 for negative; 0 for neutral). Finally, by taking average of all calculated polarity scores about a food item, we obtain a rating to individual menu items of the restaurant. The proposed food item rating is more reliable since it does not depend on reviews of only one site.

한국인이 선호하는 음식점 한식 및 간편식품과 빵류의 비타민 $B_{12}$ 함량분석 연구 (Vitamin $B_{12}$ content analysis of favorite Korean restaurant foods, convenient foods and bakery products)

  • There is a limitation to estimate vitamin $B_{12}$ intake due to the lack of data on vitamin $B_{12}$ content of Korean commercial foods. In this study, vitamin $B_{12}$ content was determined in favorite Korean restaurant foods, convenient or instant foods, fast foods and bakery products through a modified microbioassay using Lactobacillus delbrueckii ATCC 7830. Bulgogi and seafood & green pepper griddle had high vitamin $B_{12}$ content, 3.50 and $2.96{\mu}g$/100 g, respectively. Pork suyook, pork griddle and pollack griddle had 0.48, 0.31 and $0.32{\mu}g$/100 g of vitamin $B_{12}$, respectively. In stew, soft-tofu stew with seafood and doenjang stew with seafood had relatively high vitamin $B_{12}$ content, 1.93 and $1.44{\mu}g$/100 g, respectively. Bibimbap and 4 different types of rice porridge, beef & mushroom, chicken & ginseng, seafood or abalone, had 0.36, 0.08, 0.09, 1.64 and $0.13{\mu}g$/100 g of vitamin $B_{12}$, respectively. One serving of haejanggguk, yookejang, chuotang and galbitang had 5.97, 2.04, 2.63 and $1.91{\mu}g$ of vitamin $B_{12}$, respectively. One serving of samgetang and sulongtang had $2.89{\mu}g$ and $6.64{\mu}g$ of vitamin $B_{12}$. In noodles, one serving of cram noodle soup, bibim-nangmyeon, and mul-nangmyeon had 18.8, 1.21 and $0.38{\mu}g$ of vitamin $B_{12}$, respectively. One regular gimbap and one triangle gimbap contained 1.09-2.53 and $0.54-1.11{\mu}g$ of vitamin $B_{12}$, respectively. One cheese-burger, chicken-burger and bulgogi-burger had 0.76, 0.62 and $0.54{\mu}g$ of vitamin $B_{12}$, respectively. A plain bagel and a waffle contained 0.13 and $0.17{\mu}g$/100 g of vitamin $B_{12}$, respectively. Ready-made tomato sauce or cream sauce for spaghetti in a retort pouch contained only a trace of vitamin $B_{12}$. In conclusion, these results should contribute to improving the present food vitamin $B_{12}$ content database, most of which were cited from foreign data, thereby it could be helpful to estimate the vitamin $B_{12}$ intake of Koreans more accurately than before. It will also provide new information for dietary education related to vitamin $B_{12}$ and health.

현행 식품접객업소 조리식품 위생관리 기준 보완에 관한 전문가 의견 (Expert opinions on improvement of current food code related to hygiene management standards for cooked foods in restaurants)

  • Purpose: Needs for reevaluation of food code standards and regulations for cooked foods produced in restaurants and institutional foodservice to minimize risk factors leading to foodborne outbreaks are on the rise. The purpose of the study was to propose updated standards for cooked foods of restaurants by testing whether or not experts agree to include them as a standard. Methods: Qualitative and quantitative research methods were applied via a survey by email and workshop hold for experts panel discussions. Results: Seven newly proposed standards were selected as follows: (1) sanitizing vegetables and fruits with no heating process after washing, (2) rapid cooling of cooked foods after heating process, (3) monitoring cooking temperatures, (4) minimum 2 hours holding after cooking for temperature control of safety (TCS) foods without temperature control, (5) banning practices for workers such as bare hands handling of ready-to-eat foods, (6) maintaining cleanliness of food contact surfaces for disposable products, and (7) cold holding standards for sushi. Conclusion: The proposed proposal can be utilized as control measures for preventing foodborne illness in restaurants. However, a feasibility study should be conducted to test whether they are applicable to the field of restaurant operation.

성남 지역 외식업소의 나트륨 저감화 현황과 종사자의 저감화 실행에 대한 인식 및 실천용이도 (Current status, perception and practicability of restaurant staffs related to reducing sodium use in Seongnam, Korea)

  • 본 연구는 외식업 종사자를 대상으로 나트륨 저감화에 대한 인식 및 업소의 나트륨 저감화와 관련된 현황, 나트륨 저감화 방법에 대한 실천용이도, 실행을 위한 지원방법 등을 조사하여 외식의 나트륨 저감화 정책과 사업에 기초적인 자료를 마련하고자 진행되었다. 성남지역 외식업소의 관리자 및 조리종사자 312명의 설문조사를 분석한 결과, 나트륨 저감화 실행을 위한 행동변화는 고려전단계, 고려단계, 준비단계를 합한 행동전단계에 속하는 비율이 79.7%로 나타났고, 조리 시 소금 및 장류를 거의 계량하지 않는다고 답한 비율이 38.5%, 조리 시 염도를 거의 측정하지 않는다고 답한 비율이 79.2%에 달하였으며 업소 메뉴의 염도정보를 제공하는 비율은 10.4%에 불과하였다. 로지스틱회귀분석 결과 조리 시 소금 및 장류계량 가능성은 나트륨 저감화 교육이나 캠페인 경험에 의해 증가되고, 조리 시 염도측정은 조리 시 소금 및 장류계량, 나트륨 저감화 행동변화단계 중 행동 및 유지단계, 업소 메뉴의 염도 제공과 유의적인 상관관계가 있었다. 나트륨 저감화 실행의 주요 장애요인은 '맛이 없음'과 '다른 방법으로 맛을 내려면 번거로움'으로 나타났다. 외식업소의 나트륨 저감화 실행방법 중 '영양표시의 나트륨 양 비교하여 식재료 선택하기'가 실천이 가장 어렵고, '장아찌, 젓갈 등의 짠 음식을 반찬으로 내는 것 피하기', '김치의 제공량 줄이기', '덜 짠 김치제공하기', '식당 내 나트륨 저감화 홍보자료게시' 등은 실행하기 쉬운 항목으로 응답하였다. 또한 조리 시 소금 및 장류 계량, 염도측정을 하는 업소 종사자는 하지 않는 업소 종사자에 비해 나트륨 저감화 방법에 대한 평균 실천용이도가 유의적으로 높았다. 외식업 종사자의 대부분 (82%)이 지자체의 지원이 이루어진다면 나트륨 저감화에 참여할 의향이 있다고 응답하였고, 참여음식점에 대한 인증 팻말 등의 홍보와 나트륨 저감화 조리법 기술지원을 희망하였다. 결론적으로 조리 시 소금 및 장류계량, 염도측정은 나트륨 저감화 실행의 행동변화단계 및 저감화 방법에 대한 실천용이도와 유의적인 연관성이 있으므로 외식업소의 나트륨 저감화를 위한 구체적인 실행지침으로 유효하며, 외식업소 종사자들에 대한 단계적인 지원과 교육이 필요할 것으로 생각된다.

향토음식점의 운영 형태와 음식관광 활성화 방안 - 전주 지역을 중심으로 - (A Study on the Types of Local Restaurant Management and the Activation of Food Tourism - Focused on Jeonju Area -)

  • 최근 생활수준의 상승에 따라 여행관광객들은 지역음식 문화에 대한 관심을 보이고 있는 추세이다. 이러한 이유로 지방자치단체에서는 지역 활성화 측면에서 향토음식을 관광 상품으로 개발하고자 하는 움직임이 활발하게 이루어지고 있다. 본 연구는 전주지역 향토음식을 음식관광으로서 활성화할 수 있는 방안을 모색하여, 지역경제 발전에 기여하도록 하는데 있다. 이를 위해 전주지역에서 향토음식점을 운영하고 있는 경영자들에 대한 향토음식점 운영 실태 분석하고자 한다. 결과는 10만원 미만의 일별 매출액과 음식점의 홍보는 팜플랫과 브로셔 등의 통해 홍보를 하였다. 음식점의 음식개발은 대부분 음식점의 경영자가 하고, 음식점의 경영형태는 단독경영으로 나타났다. 전주지역 음식관광 활성화 방안으로는 명소로서의 전주지역 대표 향토음식점 개발, 전문적인 음식체험시설 조성, 테마를 가진 음식관광 마을과 농가 레스토랑 조성, 새로운 음식축제 개발, 지역별 음식관광 코스 개발, 각종 음식재료 및 양념장 패키지 상품 개발이 필요하겠다.

한국 전통음식에 대한 외국운동선수들의 기호도 조사 (Food Preferences of Foreign Athletes in Korean Traditional Foods)

  • The purpose of this study was to investigate preferences of foreign athletes staying in the Athletic Village for '86 Asian Olympic Games for Korean traditional foods as served in the restaurant. A survey was conducted to 762 foreign athletes that selected Korean traditional foods in Athletic Village restaurants, from September 16 to 24, 1986. Most people preferred Korean traditional foods for its taste. Yachae Bokkum (Sauted Vegetable), Jonbok Juk (Rice Porridge of Abalone), Kimchi, Usol Chim (Tongue Stew), Dak Juk (Rice Porridge of Chicken) were preferred by most foreign athletes. Chongpo Muk (Mung Bean Starch Jelly), Toran Guk (Taro Soup) were not preferred. They proposed improvement of salty, hot and strong spicy taste in Korean traditional foods.

SNS 구전정보 특성이 외식상품 태도와 구매의도에 미치는 영향 - SNS 수신자 특성의 조절역할을 중심으로 - (Effects of SNS WOM Information Characteristics on Attitude and Purchase Intention in Restaurant Food - Focused on the SNS WOM Receivers Characteristics as Moderator -)

  • Present study was performed to identify the effects of SNS WOM characteristics on attitude and purchase intention as perceived in restaurant participants and to confirm the moderating effect according to SNS receivers' characteristics on formulated model. Survey method was employed to consumers who are using SNS to find restaurant foods through convenience sampling method in Seoul area. A total of 250 surveys were distributed and 230 were used for analysis, after excluding missing and unusual data. The results from this study are as follows. First, vividness of SNS WOM characteristics had a greater effect on attitude of restaurant food than timeliness, but the consensus and neutrality of SNS WOM characteristics have no significant effect on attitude of restaurant food. Second, SNS receivers characteristics found to moderate the relationships between vividness and timeliness of SNS WOM characteristics and attitude. However, SNS receivers characteristics did not have a moderating role relationships between consensus and neutrality of SNS WOM characteristics and attitude. Third, attitude of restaurant food had a significant effect on purchase intention.
