This research was conducted to evaluate the general dietary quality(the balance and diversity of food intake, nutrient intake and adequacy) of 12 to 36-month-old toddler, through examining their actual food intake. It was conducted for 664(male-357, female-307) healthy toddler who were outpatients from Mar. to Aug., 1999 at university hospitals and private hospitals in Seoul and kyunggi province. The anthropometric parameters were measured. The 24-hr recall method were utilized to analyze the nutrient intake by months, based on the classification of The Korea Child Gorwth Standard. As for the subjects of this research, we found that the younger the age, the more frequent the pattern of intake of only 3 kinds of food groups. The results are that 1) the group with 1 point of the DDS(Dietary Diversity Score) mostly took only foods from the milk group, 2) the group with 2 points only took foods from the grain and milk group, 3) the group with 3 points did not take foods from the fruit and vegetable group, and 4) the group with 4 points took just about all kinds of food groups except for the vegetable group. This means that most of them were not taking various kinds of food even after the age of 12 months, and that they took more than twice the recommended amount of foods from the milk group until the age of 20 months. Thus, one could find a tendency of dependance on the milk group for food intake. Food intake for the vegetable group was severely under the recommended allowance, regardless of the age. The intake of iron was less than two thirds of the recommended allowance, except for the group of 12 to 14-month-olds who had been fed with infant formula. The Nutrient Adequacy Ratio(NAR) of major nutrients(protein, calcium, phosphorous, iron, vitamin A, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C) and the Mean Adequacy Ratio(MAR, shows the general quality of dietary intake) was 0.86$\pm$0.12, but the NAR of iron was 0.62$\pm$0.27, which was extremely low compared to those of other nutrients. Therefore, concerning the subjects of this research, the MAR value alone does not provide enough ground to conclude that the subjects dietary quality is satisfactory. The purpose of this study was to evaluate the relationship between the diversity of food intake and nutrient intake among Korean college students participating in a nutrition education class via the internet. The subjects were 796 college students throughout South Korea (278 males, 518 females). A 3 days dietary recall survey was conducted and results were analyzed using the Computer-aided Nutritional Analysis Program. Dietary variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). Dietary quality was assessed by NAR (nutrient adequacy ratio), and MAR (mean adequacy ratio). As the DDS, MBS and DVS increased, the NAR and MAR improved. The subjects with a DDS of above 4 or a MBS of above 10 or a DVS of above 11 met two-thirds of the Korean recommended dietary allowance for most nutrients. The DDS, MBS and DVS correlated positively and significantly with the NAR and MAR. Associations between the NAR and high levels of DVS were more positive than those between the NAR and the DDS. Based on these results, the food intake of these subjects was not adequate. Specially, the dietary intake of calcium and iron were not adequate. Therefore, dietary guidelines should be made considering nutritional characteristics so as to improve the intake from all of the major food groups and provide a variety of foods in their diets.
The purpose of this study was to develop a software system for supporting nutritioal counseling. This study provides basic information on the assessment of nutritional status for individual. Software programs developed for this study were as follows: 1) Program for calculating the nutritional recommended daily allowance based on individual needs and for assessing obesity by Broca index. 2) Program for the analysis of nutritional daily intake(comparison between the amounts intake and the recommended dietary daily allowance) 3) Program for the analysis of nutrient intakes from each food group and their composition rates for the nutrients. A super-16T /XT (16bit personal computer) campatible with IBM-PC / XT was used and all the files and programs were created by using COBOL.

To assess the food intake and diet quality of preschool children in Pusan, dietary survey was conducted with 176 subjects using 24hr recall method. Diet quality was assessed by food group pattern, dietary diversity score(DDS), dietary variety score(DVS), and dietary frequency score(DFS). The total number of food items consumed was 307. The foods consumed most frequently were rice, Korean cabbage kimchi, milk and green onion. When investigating the consumption pattern of major six food groups, 38.1% of subjects consumed all six groups. Food group was missed in order of fruit(41.5%), sweet(19.9%), dairy(16.5), vegetable(4.5%) and meat(1.7%). The mean values of DDS, DVS, and DFS were 5.16, 13.82, and 16.07 re spectively. Persons who had higher DDSs also had higher DVSs(p<0.001). DDS, DVS and DFS correlated positively with NAR(nutrient adequacy ratio) and MAR(mean adequacy ratio) significantly. Associations between the NAR of most nutrients and MAR with DVS and DFS were higher than those between the NAR of most nutrients and MAR with DDS. People with DDS of above 6 or DVS of above 16 or DFS of above 21 met two thirds of recommended dietary allowance for nutrients. Based on the result of the food group intake, the food intake of subjects was not adequate, especially the fruit and dairy groups. When assessing the dietary quality of subjects using DDS, DVS and DFS, many people appeared not to have a desirable food intake.
This study was conducted to investigate nutrient and food choices in gastric cancer patients receiving Cisplatin after surgery. Ten patients were followed from the fist day of the first cycle to the last date of the 6th the cycle of the chemotherapy. The subjects kept daily self record of dietary intake and the period of nausea/vomiting during 6 cycles. Using Computer Aided Nutritional Analysis Program, the degree of Calorie, carbohydrate, protein, fat and fluid intakes according the chemotherapy period. The reseacher developed food intake rating scale, and then three dietitians analysed the oral intakes according to the type of foods. As the results of this study, during the chemotherapy cancer patients are intakes much fewer calorie, protein and fluids than recommended dietary allowance. Oral intake was worsen as treatment proceed. During the chemotherapy periods most of the patients choose fruits, vegitables, steam rice, porridge, yogurt and the beam soup to overcome nausea and vomiting. In order to promote oral intake for chemotherapy patients, the researcher strongly suggest that indiviual food preform should be considered.
The purpose of this study is to develop a computer-assisted nutrition counseling program for dietitians in elementary school foodservice. The program consists of four menus. The first menu is to assess the general status of the body, such as ideal body weight, obesity index, and physical development based on age, sex, height, and weight. The second menu is a dietary analysis program with respect to the Korean recommended dietary allowance. The third menu can be used for nutrition counseling to give suggestions about food habits and physical activities. The fourth menu is the data printing function to give consultations for clients which can be used for monitoring. This program can help dietitiants to provide nutrition counseling in the practice of elementary school food service.
Objectives: The valid assessment of food and nutrients intakes using appropriate dietary intake method is necessary to improve the nutritional status of the hemodialysis (HD) patients. This study was conducted to compare the method between newly developed, semi-quantitative food frequency questionnaire (Semi-FFQ) and 7-day dietary records (7-DRs) for hemodialysis patients. Methods: We conducted both methods on 53 maintenance HD patients in two university hospitals. We calibrated the frequency, portion size and daily intake of 47 food items reported in Semi-FFQ. The food and nutrients intake was compared and the correlation of the two methods was analyzed. Also each nutrient intake was compared to recommended dietary allowance for Korean (KDRIs) and recommended nutrient reference value for HD patients. Results: Energy and energy-yielding nutrients intakes were significantly higher in the two methods (p<0.01). These support the possible reliability between Semi-FFQ and 7-DRs that is similar with regard to most mineral and vitamin intakes. Thus, the Semi-FFQ used in this study for the assessment of nutrient intakes of HD patients can be reliable for the assessment of the nutrient intake along with the 7-DRs. The correlation coefficients were higher for foods consumed daily, such as steamed rice, meat and chicken, bean, egg, milk, coffee and alcohol than for those of foods eaten rarely (p<0.01). Conclusions: The Semi-FFQ used in this study can be a reliable tool for the assessment of the HD patients' nutrient intake along with the 7-DRs, despite its limitations.
A deep understanding of the dietary patterns and nutrient intake is important for assessment of possilbe nutritional risk and for establishing nutrition improvement strategies. This study was conducted toexamine the dietary characteristics of a nutritionally poor elderly group compared to the middle-and highly-nourished group. Elderly participant was recruited from local elderly centers in Suwon city in 1998. Trained dietitians interviewed 119 elderly(35 males, 84 females) aged 60 years and over for collecting dietary data(24-hour recall) and related variables. Male and female subjects were grouped into high, middle, and low according to the mean nutrient adequancy ratio(MAR) tertiles. An analysisof the percentage of RDA(Recommended Daily Allowances of Korea) for each of the 10 nutrients showed that the male low-MAR group consumed below the RDA in all kinds of nutrients, and the female low-MAR group consumed nutrients below the RDA except vitamin C. An evaluation of nutrient density by Index of Nutritonal Quality(INQ) also showed a similar tendency. Thus, the INQ level of the male low-MAR group was significantly lower than the middle-or high-MAR group, especially in protein, vitamin A, thiamin, riboflavin, and phosphorus(p<0.05). Moreover, INQ level of female low-MAR group was significantly lower than that of the high group(p<0.05) in all nutrients. The female low-MAR group's daily food intake were also lower than those of the high-MARgroup in gains, fish, fruits, oil and beverages. The energy distribution from carbohydrates, fats and proteins showed that the male low-MAR group had significantly higher carbohydrate and lower fat proportions compared to each gender high-MAR group, respectively. The male and female low-MAR group had low scores about eating all side dishes. These findings indicate that a moderate increase of the meat/egg/fishes intake was needed by the male low-MAR group for improving nutrition adequacy, and an overall increase of the food quantity and quality was desired for the female low-MAR group. These data could be used for planning a community elderly nutrition program and establishing strategies for tailored guidelines for the individuals.
This study was conducted to abbess dietary intake and eating habits of low-income persons aged 60 years or elder. 212 persons were surveyed between July 10 and August 17, 1978 ; 105 from the farming village of Yang-ju, Kyunggi province; and 107 from Karakdong, an area of redevlopment in the suburbs of Seoul. Results were as follows : 1 ) Family environment 84% of elderly persons surveyed, lived with their children; 13.2%, together as a couple; and 1.9%, widowed, lived alone. More than half on the households had an average monthly income of \50,000 to \30,000. The average Engel index was 61.2%. As for pocket money, 56.4% of male subjects had \l,000 to \7,000 per month, whereas 74% of female had less than \1,000. 2) Anthropometric measurements 59.9% of subjects were $70{\sim}90%$ of standard weight, 93% had an arm circumference only $60{\sim}80%$ of the standard. 3) Food and nutrient intake Carbohydrate provided 73.4 to 79.4% of total energy intake, whereas protein and fat accounted for 10.4 to 10.5% and 8.3 to 7.8%, respectively. Those over 65 years of age showed a somewhat greater dependence on carbohydrates for energy, than those under 65. Protein intake was only $42{\sim}52%$ of the recommended allowance. and the proportion of animal protein to total protein was only $2.1{\sim}9.3%$ far below the recommended allowance. Thus the protein nutrition of the subjects was proven to be inadequate qualitatively as well as quantitatively. Intake of energy and of all nutrients except vitamin A and ascorbic acid, were lower than recommended. 4) Correlational assessment The correlation coefficient between poor dental health, clinical sign score, appetite index, dietary balance and nutrient intake, was significant (0<0.01). Poor teeth, illness, and poor appetite were always associated with inadequate intake of energy and nutrients. The results of this survey reveal that many of elderly of the rural and urban poor show evidence of general malnutrition, The authours hope that this study will provide a back. ground and indicate the direction that community health and welfare programs may take to assure proper nutrition for the elderly.
The osteoporosis is a disease characterized by lower bone mineral content, deterioration of bone tissue and a reduction in the protein and mineral matrix of the bone. The bone becomes more porous leading to increased bone fragility and risk of fracture, particularly of the hip, spine and wrist. Osteoporosis can result in disfigurement, lowered self·esteem, reduction or loss of mobility, and decreased independence. Adequate calcium intake through milk and milk products in childhood and adolescence is a decisive marker for obtaining a maximum bone mass (peak adult bone mass) and f3r the prevention of osteoporosis. Calcium is one of the most critical nutrients associated with the osteoporosis. Dietary calcium is of great significance for healthy skeletal growth and development. The bone mineral content and bone mineral density of young adults is directly related to the calcium intake through milk and dairy products. Milk and milk products are the important sources of calcium as the richness and bioavailability of this nutrient is very high as compared to other food products. If enough calcium is not supplemented through diet, calcium from the bone will be depleted to maintain the blood plasma calcium level. The article focuses on the various issues related to osteoporosis manifestation and the role of dietary calcium especially calcium derived from dairy products.
