Correlation between Sensory Quality and Instrumental Quality Attributes in 'Campbell Early' Grape (포도의 관능적 품질과 객관적 품질인자 상호간의 상관성)

  • In order to find correlations between the sensory evaluation and instrumental analysis in 'Campbell Early' grape, grapes were divided into three parts. One-half parts were used for the sensory evaluation and the other half were used as samples for instrumental analysis. Relationship between sensory evaluation and instrumental analysis were studied through correlation study using 48-paired data set obtained during storage. Soluble solid content analysis showed that instrumental quality attributes increased along the passage of storage time with increasing temperature. pH and titratable acidity decreased slightly at lower storage temperatures. Correlations between instrumental quality attributes in grapes were found to be very low. Positive correlation was found between pH and soluble solid content, and negative correlation was found between pH and titratable acidity. The relation of sourness and sweetness to sourness was higher than other sensory evaluation factors, and the shape of the grapes was found to have little relation to their sweetness. Texture ($r^2$=0.890) was found to be the most important factor in preference, followed next by sweetness with sourness ($r^2$=0.860). The correlations between the sensory evaluation and instrumental quality attributes were found to be very low, with overall acceptability given to a relatively high content of soluble solid content. Correlations between pH and titratable acidity in terms of overall acceptability were found to be very low.

A Study on Riparian Habitats for Amphibians Using Habitat Suitability Model (서식지적합성 모형을 이용한 수변지역 양서류 서식지 분석)

  • The objective of this study was to analyze characteristics of distribution of amphibian species and the affecting ecological factors. For the study, habitat environment factors were determined and applied to a habitat suitability model for the data collected from the Seom River in Hoengseong County and Wonju City, Gangwon Province, Korea between March 2013 to October 2013. The analyzed amphibian species were Rana nigromaculata, Hyla japonica, Rana dybowski, and Rana rugosa Temminck and Schlegel, and a logistic regression model was used with the pseudo-absence data. The result of the model analysis suggests that the major factors for Rana nigromaculata are distance to vegetation and rock and that for Hyla japonica is waterway. Rana dybowski and Rana rugosa Temminck and Schlegel have similar habitat characteristics, but the latter is shown to be dominant due to its wider habitat preference. According to the species richness model, the analyzed amphibian species are shown to have tendency to move between valleys or streams. This study quantitatively analyzed habitat environment characteristics using species distribution model, however, there is a limitation in terms of analysis on food factor and connectivity with other species. Combined with additional density or habitat analysis on birds or fish, this study can lead to more comprehensive analysis on biological environment factors.

Effect of Various Gluten-free Flours on Quality Characteristics and Antioxidant Activities of Cookies (전분의 종류를 달리하여 제조한 Gluten-free 쿠키의 품질특성 및 항산화 활성 비교)

  • Purpose: This study examined the effect of different gluten-free flours on the properties of cookies. Methods: Each gluten-free cookie was made from wheat, brown rice, buckwheat, corn, sorghum, teff, or black rice. Results: Baking loss was highest on sorghum (18.85%) and the lowest on teff (12.73%). The spread factor was highest on brown rice (8.20) and lowest on corn (7.60). The density was similar in all samples (1 g/mL). pH was the highest on buckwheat (6.45) and lowest on wheat (5.96). While L-value, a-value and b-value were lowest on black rice, the ${\Delta}E-value$ was the highest on black rice (35.57). The hardness was highest on wheat (30.28 N) and lowest on teff (14.87 N). The polyphenol and flavonoid content was the highest on buckwheat ($25.97{\mu}g\;GAE/mg$) and the flavonoid content was the highest on black rice ($24.33{\mu}g\;QE/mg$). The DPPH IC50 value was highest on wheat ($352.41{\mu}g/mL$) and lowest on black rice ($33.59{\mu}g/mL$). The ABTS $IC_{50}$ value was highest on wheat ($349.30{\mu}g/mL$) and lowest on black rice ($57.72{\mu}g/mL$). The results of the sensory properties revealed color to be highest on corn (7.33). The top grain was similar in all the samples (5.43-6.57). Flavor was highest on black rice and teff (6.43-6.48). The softness was the highest on wheat, sorghum, teff, and black rice (6.48-7.05). Sweetness was highest on sorghum, teff, and black rice (6.19-6.71). The overall preference also was highest on sorghum, teff, and black rice (6.14-6.48). Conclusion: Gluten-free flours can improve the quality characteristics and antioxidant activities of cookies.

A Survey on the Recognition and Preferences of Pickles in Kyongbuk Area (피클에 대한 인식 및 기호도 조사 -경북지역을 중심으로 -)

  • This study was performed to investigate the recognition and the preference of pickles by using the questionnaire. The subjects of this study consisted of 217 males and 359 females in the Kyongbuk area. The results were summarized as follows: Among the respondents 94.8% have hon pickles and mostly have eaten garnished pickle with pizza. The chief element to be considered in selecting the commercial pickle was considered to be 'sanitation'. and 'good taste'. The most important factor on preparation and production of pickle showed a receiving high mean value of 4.77. On their perception of pickle, 'pickle stimulate their appetite'received highest scare of 3.97. More than 41% of the respondents liked pickles and favorite pickle seasoning was vinegar(77.2%). Among the respondents 49.7% and 17.2% suggested the development fruit pickle and mushroom pickle respectively. Of the famished dishes with a pickle, preferable food was pizza, hamburg sandwich, pork cutlet, salad and hamburg steak in the order.

  • At present, Busan City has proposed various taxi industry development measures, but fundamentally there is a problem that the taxi supply is excessive compared to the demand. Therefore, this study tried to explore ways to activate the taxi reduction. We first identified problems with the taxi reduction program in Busan, and analyze thoughts of taxi operators and workers. As a result, difficulties in securing funding and lack of consent from a large number of stakeholders were identified as the first problem for current taxi reduction program. Second, both groups recognize the need for the taxi reduction, and taxi drivers are more willing to participate in the program. Third, the most important factor in determining to take the taxi reduction program was the amount of compensation. And to activate taxi reduction program, it is helpful for executives to improve their management conditions and for drivers to place reemployment.

A Study on Mercury Exposure Levels among Schoolchildren and Related Factors in High Mercury Exposure Areas in Korea (수은 고노출 지역 초등학생의 수은노출수준과 노출요인 연구)

  • Objectives: Blood mercury levels among adults living in certain areas of the Gyeongsang Provinces have been shown to be very high (Kunwee County $29.6{\mu}g/L$, Yeongcheon-city $26.7{\mu}g/L$). The purpose of this project was to determine mercury exposure levels in schoolchildren and factors related with their mercury levels in high mercury exposure areas identifyed by the 2007 Korea National Environmental Health Survey. Methods: From June to September 2010, 1,097 students from grades 3 to 6 at 19 elementary schools participated in this study, including 294 students from 10 elementary schools in Kunwee County, 529 students from Yeongcheon City, 122 students from two elementary schools in Pohang City, North Gyeongsang Province, and 152 students from two elementary schools in Ulsan Metropolitan City. Biological samples from schoolchildren, including whole blood, urine and hair, were collected to measure total mercury at the time of a health check up. Information about children was collected by questionnaire. Total mercury concentrations in blood were measured using the Direct Mercury Analyzer 80 with the gold-amalgam collection method. Results: The mean mercury levels were $2.70{\mu}g/L$ in 1,091 blood samples, $2.25{\mu}g/g-creat.$ in 820 urine samples and $1.03{\mu}g/g$ in 1,064 hair samples. Blood mercury levels in the schoolchildren was slightly higher than the result of $2.4{\mu}g/L$ from a 2006 survey of elementary school children on exposure and health effects of mercury by the National Institute of Environmental Research. However, 0.3% and 4.5% of participants exceeded the reference level of blood mercury by CHBMII ($15{\mu}g/L$) and the US EPA ($5.8{\mu}g/L$), respectively. The reference level of urine by CHBMII ($20{\mu}g/L$) was exceeded by 0.4% of participants. As factors, residence period in the study areas, residence type, father's education level and income all showed significant associations with mercury level in the biological samples. The number of dental amalgam sides showed an association with urine mercury. Fish intake preference and fish intake frequency were important factors in mercury levels. In particular, intake of shark meat and recent intake of shark meat were associated with higher mercury levels. In this regard, participation in the performance of an ancestral rite showed a relation with higher mercury levels. Conclusion: The intake of shark meat was very important factor to high mercury exposure level. It is recommended to monitor and manage students with high mercury exposures who exceeded CHBM II and EPA guidelines, and include blood mercury testing in the Children's Health check up for this province.

An Evaluation on Use Suitability of Recreation Resource in Natural Parks (자연공원 휴양자원의 이용적합성 평가)

  • The purpose of this paper is to provide useful knowledge for recreation management in natural park(NP) by evaluating use suitability of recreation resource. We had obtained data through a questionnaire, which surveyed 385 visitors at 6 of the 73 NP in Korea in 2001, based on stratified sampling method. We have analyzed the data using the multiple regression method. We found that 1) in bivariate analysis, the relationships between use suitability and all the recreation resources are fairly high and statistically significant. The higher the degree of recreation resources, the higher the degree of use suitability. 2) in multivariate analysis, topography, social resource(SR), cultural resource(CR), landscape, smell, color and sound(SCS) have been turned out to be statistically significant at one percent level. 3) the direction of relationship between topography, SR, CR, landscape, SCS and use suitability is same. 4) in relative contribution of the use suitability of recreation resource, level of topography has been turned out to have about 1.05, 1.56, 2.16 and 2.70 times more important than that of SCS, SR, landscape, topography, respectively This results will be used for a criterion for recreation resource evaluation and a settlement of management priority and increasing user's satisfaction.

Motivation of the Satellite DMB Use and Genre Consumption (위성 DMB 이용 동기와 장르 소비: 장르 선호도, 레퍼토리, 소비유사성을 중심으로)

  • This paper attempts to identify motivations of the satellite DMB use and to examine the relationship between user motivations and structure of genre consumption. Firstly, this paper identified motivational dimensions for satellite DMB usage. The results of the factor analysis revealed three dimensions: information-seeking, entertainment-oriented and social communication. It accounts for 69.9% of the variances found within this data. Secondly, the results of the regression analyses suggested that both information seeking and entertainment-oriented motivations were closely related to genre preferences of satellite DMB contents. In addition, these two motivations predicted genre repertoires and similarity in genre consumption. In conclusion, motivations of the satellite DMB use were the best predictors for explaining the structure of genre consumption.

Genetic and phenotypic relationships of live body measurement traits and carcass traits in crossbred pigs of Korea

  • This study presents the estimates of heritabilities of body measurement traits and carcass traits, and genetic and phenotypic correlations of those traits for crossbred pigs in Korea. Body and ultrasound (A mode: Piglog 105) measurements in 221 pigs including body weight, length, height and width, three back fat thickness at the points of 4th, 14th rib and chine bone, eye muscle area and lean meat percent were collected at the ages of 70, 145 and 180 days and then slaughtered to measure carcass weight, back fat, belly, collar butt, spare rib, picnic shoulder, hind leg, loin, tenderloin, lean meat yield and intramuscular rough fat content in loin. Genetic analysis was done using a multi-trait animal model. Heritabilties of the body measurements were ranged from 0.331 to 0.559 and three measurements of back fat thickness were also high as range varying from 0.402 to 0.475 for the ages of 145 and 180 days. However, eye muscle area was moderate (0.296) at the age of 180 days. Heritabilities of retail cut yields were also high as ranged from 0.387 to 0.474 and of IMF content in loin was 0.499. Heritabilities of the cut percent traits were ranged from 0.249 to 0.488. Important positive genetic and phenotypic correlations were noted for all carcass yield traits (0.298 to 0.875 and 0.432 to 0.922, respectively). IMF showed low negative genetic correlations with carcass yield traits, such as carcass weight, picnic shoulder, hind leg, loin, tenderloin and lean meat yield whereas low positive genetic correlations with back fat, belly, collar butt and spare rib. Loin, tenderloin and lean meat percent showed negative genetic correlations with carcass weight, back fat thickness, collar butt, spare rib and picnic shoulder percent. The four body measurements at the ages of 70, 145 and 180 days had positive genetic correlations with belly, shoulder butt, spare rib, picnic shoulder and hind leg percent, but negative genetic correlations were shown with loin and tenderloin percent except body measurements at 70 days. The results suggest that carcass yield are negatively correlated with intramuscular fat content, which is a major factor deciding pork quality and the yield of loin and tenderloin are not increased as much as increase in body size. However, the proportions of belly and collar butt are increased with the body size. In conclusion, selection strategy should be designed according to the preference on composition of carcass in each country.

  • Over the past few years, security breaches have been consistently reported around the world. Especially, people's personal information are at risk of being breached as the firms gather and utilize the information for their marketing purposes. As an effort to revamp their data infrastructures, companies have rebuilt their system that almost every data, including the personal information, are stored within the digital database. However, this migration provides easier access to the database but it has also increased the system vulnerability. As the data can be easily exposed to the unauthorized personnel both intentionally and unintentionally, it is necessary for companies to establish a set of security protocol and operate the personal information protection system. There are two major certified security system in South Korea; PIMS from KISA and PIPL from NIA. This paper analyzes the preferences of SMEs and small business using conjoint attributes of PIMS and PIPL. The study shows that the business owners take post certification rewards as the most important factor. It also shows that the attributes that have the highest utility rates are the following; 1) KISA certification, 2) 79 points of protection counter measurements, 3) 28 items of life cycle, 3) 50 percent discount on certification fee, and 4) Reduced amount of fine for personal information leakage incident.
