Prevalence of overweight and obesity, and dieting attitudes among Caucasian and African American college students in Eastern North carolina: A cross-sectional survey

  • A cross-sectional survey was used to investigate the rates of overweight and obesity (BMI$\geq$25), and eating attitudes among college students. Data were collected at a large southeastern university. Adolescents (ages 18-25) self-reported weight and height (to calculate BMI), and, in addition to demographic information, completed the eating attitudes (EAT 26) scale to assess dieting tendencies. Significance of the mean BMI differences between gender and ethnic background were assessed by one-way analysis of variance (one-way ANOVA). Chi-square was used to determine whether the rate of those with BMI$\geq$25 between gender and ethnic background was statistically significant. While 52.7% of the students' BMI were within the normal weight category, 15.2% were underweight, 21.3% were overweight, and 10.8% were obese. The rate of BMI$\geq$25 differed by gender and ethnicity, with males and African Americans having higher rates. About 12 % of the participants reported disturbed eating behavior, which is lower than previously reported. Even so, results support the generally held belief that disturbed eating attitudes and unhealthy dieting are common among college students, especially among females. At the same time, disturbed eating attitudes are not just the domain of young female students; about 10% of college males reported disturbed eating attitudes. Findings of this study call for obesity prevention/intervention and lifestyle modification outreach programs among college students. Weight status and unhealthy eating behaviors of college. students should be a concern to health care professionals. While obese young adults will likely remain obese throughout their adult life, excessive dieting among students, which is linked to eating disorders and other health hazards, does not provide healthy and adequate alternatives for maintaining a normal BMI. Implications for obesity prevention programs are discussed.

혼자 또는 온 가족이 함께 하는 식사형태가 아동의 정신적.신체적 건강에 관한 자각증상에 미치는 영향 - 대전지역 일부 초등학생을 중심으로 - (Effect of Eating with Family or Alone on the Self-rated Mental or Physical Health - The Elementary School Children in Daejeon Area -)

  • The purpose of this study was to examine the effect of eating with family or alone on the self-rated mental or physical health and then work out strategies of making people recognize the importance of eating with family and its practice. Study subjects were 610 primary school 5th- and 6th-grade students in Daejeon Area. A questionnaire survey was carried out. 57.9% of students had working mothers. The frequency of meal in a day was $2.90{\pm}0.42$ and this frequency was lower in students who had working mothers (p < 0.05). The frequency of skipping breakfast (times/week) was $1.02{\pm}1.77$. The frequencies of eating alone (times/week) were $1.04{\pm}1.65$ for breakfast and $0.97{\pm}1.52$ for dinner. Also, the frequency of eating alone for dinner was higher in students who had working mothers (p < 0.001). When the frequency of eating alone for breakfast or dinner was higher, the frequencies of skipping breakfast and dinner were also higher (for all, p <0.01). When the frequency of eating alone for breakfast or dinner was higher, the self-rated positive mental health were lower (p < 0.05 and p < 0.01 respectively) and the self-rated negative mental health (for dinner, p < 0.05) and the self-rated negative physical health was higher (p < 0.05 and p < 0.01 respectively), thus presenting negative health. The frequencies of eating with family (times/week) were $3.37{\pm}2.50$ for breakfast and $4.14{\pm}2.19$ for dinner. Also, the frequency of eating with family for dinner was lower in students who had working mothers (p < 0.01). When the frequency of eating with family for breakfast was higher, the frequency of skipping breakfast was lower (p < 0.01). When the frequency of eating with family for dinner was higher, the frequency of skipping dinner was lower (p <0.01). In addition, when the frequency of eating with family for breakfast or dinner was higher, the self-rated positive mental health were higher (for both, p <0.01) and the self-rated negative mental health was lower (for breakfast, p < 0.01) and self-rated negative physical health were lower (for both, p <0.01), thus presenting positive health. Therefore, in order to maintain positive health, it is necessary to recognize the importance of eating with family at home and educate people to carry out a systematic and continuous dietary life, thus increasing eating with family and reducing eating alone and skipping a meal.

초등학교 고학년의 식습관 및 영양 지식에 관한 연구 (A Study on the Dietary Habits and Nutritional Knowledge of High-grade Students in Elementary School)

  • This study was performed to investigate the dietary habits and nutritional knowledge of elementary school students (boy : 250, girl : 250) by gender. Frequency of skipping breakfast was high in both boys and girls. Duration of mealtime was significantly higher for boys compared with girls (p<0.001). Regularity of meals was not significantly different between boys and girls. Reason for irregular meals was 'no appetite' for both boys (39.6%) and girls (40.0%). Unbalanced diet was high in both boys (60.8%) and girls (59.6%), and problems related to dietary habits were in order of 'unbalance diet', 'irregular mealtime', 'overeating', 'skip a meal frequently', and 'eat out frequently'. Frequency of snack intake was significantly higher for girls compared to boys(p<0.05). The criterion for selecting snacks was higher for 'nutrition' compared to 'good taste' for both boys and girls. Frequency of eating out was statistically insignificant, and eating out preferences were in the order of 'Korean food', 'western food', and 'Chinese food'. Eating behavior 'eat meat, fish, egg, tofu every meal' was significantly higher for boys compared to girls (p<0.01). 'Healthful' response rates were 57.6% for boys and 58.8% for girls. Practice level of nutritional knowledge was significantly higher in girls compared to boys (p<0.001). To establish good eating behaviors, we should develop systematic and continuous education programs.

  • Objective: A case report on improving the symptoms of patients with fissured tongues by Ortho-Cellular Nutrition Therapy (OCNT). Methods: A 61-year-old Korean female who not only felt pain during her daily life, but also had difficulty eating due to a fissured tongue that lasted for three years. Results: The practice of Ortho-Cellular Nutrition Therapy (OCNT) improved the patient's pain and xerostomia caused by a fissured tongue. Conclusion: Ortho-Cellular Nutrition Therapy (OCNT) can be effective in relieving the symptoms of patients with fissured tongues.

어린이 영양지수를 이용한 강화군 영·유아의 식행동 실태 평가 (Evaluation of Dietary Behavior of Infants and Toddlers in Ganghwa County by Using Nutrition Quotient (NQ))

  • The objectives of this study were to assess food intake frequency and food behavior of infants and toddlers by using the Nutrition Quotient (NQ). A total of 368 subjects (infants 111, toddlers 257) in Ganghwa county were analyzed in this study. The NQ was examined using an NQ questionnaire, which consisted of 19 food behavior checklist items. The items were grouped into five categories: balance, diversity, moderation, regularity, and practice. All data were statistically analyzed by SPSS 20, and significant difference was evaluated by Student's t-test and $x^2-test$. The BMIs of infants and toddlers were $16.54kg/m^2$ and $16.01kg/m^2$, respectively. The frequencies of consumption of vegetables and fruits were higher (p<0.001) in girls and toddlers compared to boys and infants, respectively. Food behavior of meal regularity (p<0.001), breakfast eating (p<0.001), and chewing well (p<0.001) were also higher in toddlers compared to infants. Total NQ score of infants and toddlers were 62.05 and 64.91, respectively, which were within medium grade. The NQ score of toddlers was higher than that of infants (p<0.0.5). NQ score was positively correlated with parent's education, monthly income, age, and exercise. Therefore, children and their parents need proper nutrition education and counseling to correct their eating habits and improve their nutritional status.

노인들의 장수에 대한 관념 (A Study on Thoughts of the Elderly about Long Life(Chang su))

  • A long life is the desire of many people. The purpose of this study was to describe the thoughts that are held by elderly people about long life as the elderly are approaching the end of life. The research was conducted using an ethnographic method to add understanding to this subject. The field work for this study was done from July, 1991 to August, 1993 in third phases in Chun Buk province. The results of the present study show the following : The thoughts of the elderly about chang su showed three important concepts : In Myoung Sae Chun(lived as life), Su Cheuk Dah Yok(long life is a disgraces, and Transcendence of life: In Myoung Sae Chun showed the thought of limitation of man’s life and realistic thought about the life through free oneself from death and life. Su Cheuk Dah Yok meant experience of physical difficulty, experience of sons and daughter’s death ahead one’s own self. Senility was the most afraid problem for the elderly. Transcendence of life showed pursuit of a continuing life through connected with sons and the family. The conditions promoting chang su were described as clear water, fresh air, adequate eating, deep sleeping, gender(female). In addition it showed that ecological and environmental conditions (heavy work, starvation, vegetable food, physical environment, respection for the elderly). These results showed that the elderly was recognized one’s own self as living being rather than adhered to the life, and will promote understanding the elderly’s desire for long life. Also, suggested to nursing practice that should maintain self-esteem and respect for the elderly, Therefore, these results can be used nursing practice for the elderly.

중학교 "기술.가정" 교과의 식생활 단원 교육이 학생들의 영양 지식, 식행동에 미치는 영향 (A comparison of middle school students' knowledge of nutrition and eating behaviors before and after studying the unit of eating habits in Technology.Home economics subject)

  • 본 연구는 중학교 $\ulcorner$기술.가정$\lrcorner$ 교과의 식생활 단원 교육이 학생들의 영양 지식 식행동에 미치는 영향을 알아보기 위해, 서울시와 의정부시 일부 중학교 1학년 학생 총 509명을 대상으로 기술 가정 교과의 식생활 단원 교육을 실시하여 식생활 단원에 대한 선호도 및 인식을 조사하고 교육 전과 교육 후의 영양 지식 및 식행동 변화를 비교 분석하여 교육의 효과를 검토하였다. 본 연구결과 식생활 단원에 대한 인식은 대체로 긍정적으로 인식하고 있는 것으로 나타났으나 수업시수의 부족으로 인하여 많은 학생들이 수업 방식이 이론에 치우친다고 느끼고 있었다. 따라서 학생들의 인식 및 활용도를 높이기 위하여 실험 실습 등 실생활과 관련시키는 수업 모형의 연구 및 수업시수의 확대가 절실하게 요구된다고 하겠다. 중학교 기술 가정 교과의 식생활 단원 교육을 통하여 남학생이나 여학생 모두에게 교육 전에 비해 영양지식이 향상되고 일부 식습관에서 긍정적인 효과가 나타났다. 영양 지식의 증가에 비해 식습관의 향상이 매우 적게 나타났음 볼 때 습득된 영양 지식이 식태도의 변화를 가져오고, 나아가 올바른 식습관으로 정착이 되려면 지속적이고도 장기적으로 반복적인 영양 교육이 필요함을 알 수 있었다.

16차시 식생활 교육이 중학생의 식행동과 영양지식에 미치는 효과 (Effects of 16-Class Nutrition Education on Middle School Students' Dietary Behavior and Nutritional Knowledge)

  • This study was conducted to evaluate the effects of a set of 16 nutrition education lessons on the eating behaviors and nutrition knowledge of middle school students. The target was a group of 128 boys in the first year of middle school in Changwon, who took the classes from the 29th of August, 2011, to the 17th of February, 2012. The education was performed for 16 weeks using the e-learning textbook, 'Health and nutrition of youth', and a teacher's guidebook developed by the Ministry of Health and Welfare. The results were summarized as follows. Students demonstrated significant changes in their knowledge about nutrition and in their dietary behavior due to the nutrition education, and the effects were observed to be maintained for one year after education. The average nutrition knowledge score before, immediately after, and 1 year after the education was significantly increased from 13.0 before the education to 18.8 after education (p<0.001), maintaining the score of 18.5 1 year later. The eating-related questions of 'I will practice healthy eating habits in life' and 'Nutrition education is necessary to build healthy eating habits', were given a high score by the students at the last survey conducted one year later. Of course, it is not easy to change the dietary behavior of students through dietary education in schools. Nevertheless, the results of this study demonstrated that such educatcan is necessary since the habits can indeed be changed, as observed in the present study.

Eating control and eating behavior modification to reduce abdominal obesity: a 12-month randomized controlled trial

  • BACKGROUND/OBJECTIVES: Abdominal obesity is associated with metabolic disorders, and, in recent years, its prevalence in Korea has continuously increased. The change of lifestyle, particularly diet, is critical for the reduction of abdominal obesity. This study evaluated the effectiveness of an intervention focused on dietary self-efficacy and behaviors on the improvement of abdominal obesity. SUBJECTS/METHODS: Abdominally obese adults with additional cardiovascular risk factors were recruited through 16 medical facilities in South Korea from the year 2013 to 2014. The participants were randomly divided into 2 groups: an intensive intervention group (IG) that received a multi-component intervention to reduce abdominal obesity, by mainly focusing on dietary attitude and dietary behavior change, and a minimal information intervention group (MG) that received a brief explanation of health status and a simple recommendation for a lifestyle change. The interventions were provided for 6 mon, and health examinations were conducted at baseline, 3-, 6-, and 12-mon follow-ups. A path analysis was conducted to identify the process governing the changes in abdominal obesity. RESULTS: The IG showed an improvement in self-efficacy for eating control and diet quality at 6-mon follow-up. Abdominal obesity improved in both groups. Waist circumference was observed to be decreased through the path of "improved self-efficacy for eating control in food availability-eating restriction-improved dietary quality" in IG. Most changes in follow-ups were not significantly different between two groups. CONCLUSIONS: The intensive program targeting the modification of dietary behavior influenced management of abdominal obesity, and the effect occurred through a step-by-step process of change in attitude and behavior. Generally, improvements were also seen in the MG, which supports the necessity of regular health check-ups and brief consultation. The results can be used for further development and implementation of more successful interventions.

소비자교육을 위한 중년기 소비자의 성별, 비만도별 외식 행동, 식생활 라이프스타일 및 건강한 식생활역량의 차이 분석 (Analysis of comparisons of eating-out, dietary lifestyles, and healthy dietary competencies among middle-aged consumers according to obesity status and gender for implications of consumer education)

  • 일생 중 중년기에 해당되는 연령 40 ~ 50대 소비자를 대상으로 성별, 비만도별 일반적 특성, 외식, 음주, 식생활 라이프스타일, 건강한 식생활역량의 차이를 살펴보았으며, 이를 위해 2016년 식품소비행태조사 자료를 이용하여 분석하였다. 그 결과, 첫째, 체중조절 (다이어트)에 대한 관심도는 여성이 남성에 비해 유의하게 높았고, 남녀 모두 비만도가 높을수록 관심도가 높은 특성을 보였다. 실제 식사량 조절 경험 역시 여성이 남성에 비해 매우 높았으며, 남성은 비만수준이 높을수록 식사량 조절경험이 많은 반면, 여성은 과체중군이 가장 많았고 오히려 비만군이 가장 낮았다. 둘째, 외식, 음주와 비만과의 관계는 남성의 경우에만 유의한 것으로 나타났다. 즉, 외식빈도, 월평균 지출비용, 1회 지출비용 수준은 남성이 여성보다 모두 유의하게 높았으며, 이 중 월평균 지출비용, 1회 지출비용은 남성의 경우에만 비만군이 다른 집단에 비해 높은 수준을 보였다. 음주빈도 역시 남성이 여성보다 유의하게 높았으며, 남성의 경우에만 비만도별로 유의한 차이를 보이며 역시 비만군이 정상군보다 높은 수준을 보였다. 남성의 경우 외식유형 중 저녁을 포장마차 등 길거리음식으로 이용하는 횟수가 여성보다 더 높으며 비만군이 정상군 보다 더 높다는 결과 역시 남성의 외식 및 음주 특성과 무관하지 않은 것으로 판단된다. 셋째, 식생활 라이프스타일은 남성과 여성 모두 유사한 요인으로 분류되었으며, 비만도에 따라 차이를 보인 것은 남성의 경우, 건강 및 고급추구와 가격추구 식생활 라이프 스타일 등 2개 요인이며, 여성의 경우는 고급추구와 안전 추구 식생활 라이프스타일 등 2개 요인이다. 그리고 남녀 모두 정상군이 비만군보다 해당 라이프스타일의 성향을 더 갖는 것으로 나타났다. 넷째, '건강한 식생활 역량' 수준은 여성이 남성에 비해 지식, 실천 수준 모두 높았으며, 비만도에 따른 차이는 여성의 경우에만 유의하였다. 즉, 여성 중 정상군은 비만군에 비해 건강한 식생활 역량의 지식, 실천 수준이 모두 유의하게 높았으며, 특히 실천부분이 비만도와의 관련성이 더 큰 것으로 나타났다.
