A tremendous increase in the human population has put poultry industry under an increased pressure to meet steep increase in the demand. Poultry is contributing 25% of the total world's meat production and lesser cost of investment per bird makes it more suitable for the further breeding programmes. Major poultry diseases frequently lead to cardiac damage and cause huge economic losses to poultry industry due to mortality. The in vitro embryonic stem cell (ESC) technology has a futuristic approach for homogeneous populace of differentiated cells, for their further transplantations. During in vitro conditions the differentiated cell populace can be used in grafting and transplantation processes to regenerate damaged tissues. Therefore, the current study targeted the use of spermatogonial stem cells (SSCs) in the poultry production system through cardiac regeneration. The current study will also open new boulevard for the similar kind of research in other livestock species for the management of heart diseases.

This research was conducted to compare the meat characteristics of Korean native duck and imported commercial duck. The Korean native ducks and imported commercial ducks (broiler duck: Grimaud) were raised under identical rearing and feeding conditions for 8 wk and 6 wk, respectively. At the end of the rearing period, ten ducks from each group were slaughtered, and breast and leg meat were obtained 24 h after slaughtering for analyses of meat characteristics. The results showed that the breast of Korean native ducks contained lower moisture and fat, and higher protein and water holding capacity (WHC) than those of imported commercial ducks (p<0.05). The breast of Korean native ducks also had higher CIE $a^*$ and lower CIE $L^*$ (p<0.05). After cooking, the breast meat of Korean native ducks had higher shear-force, sensory attributes of texture, taste and overall likeness (p<0.05). Also, the breast meat of Korean native ducks contained a higher percentage of palmitic acid ($C_{16:0}$) and arachidonic acid ($C_{20:4}$) (p<0.05) than those of imported commercial ducks. Furthermore, the leg meat of Korean native ducks contained higher percentages of total unsaturated fatty acid and lower percentages of total saturated fatty acid (p<0.05). It is concluded that the meat from Korean native ducks, especially breast meat, had better quality parameters and contained higher amounts of unsaturated fatty acids.
To evaluate fertilizer value of animal cadavers for agricultural recycling, fertilizer components of animal cadavers by pig and poultry were investigated using rendering and alkali (KOH) treatment methods. Total nitrogen concentrations in meat waste by pig and poultry using rendering treatment method were 7.80% and 9.30%, respectively. Total nitrogen concentration in meat waste of pig by KOH treatment method was lower than that by rendering treatment method. Organic matter concentrations in meat waste of pig and poultry ranged 87.8~97.4%. Total phosphorus concentrations in bone waste of pig using rendering and KOH treatment methods ranged 5.59~11.18%. Animal cadavers contains nitrogen, phosphorus, potassium and other nutrients essential to plant growth. The results of this study suggest that animal cadavers can supply some of the nutrient requirements of crops and is a valuable fertilizer as well.
The objective of the study was to investigate the effects of dietary green tea on chicken meat quality and fatty acid content. Broilers were fed one of the four dietary treatments containing 0, 0.5, 1 and 3 % green tea for 10 days. Crude moisture, crude fat, crude ash, pH, meat color (CIE $L^*$, $a^*$, $b^*$) and fatty acid composition were measured in chicken breast meat during cold-storage. Crude fat did not differ significantly among treatments. Dietary green tea increased the amount of unsaturated fatty acids and decreased that of saturated fatty acids in chicken meat, resulting in increased ratios of unsaturated fatty acids to saturated fatty acids. The amount of linoleic acid (18:2) and linolenic acid (18:3) was increased with increasing dietary green tea. Lightness ($L^*$), pH, TBARS, VBN, and total plate count were not significantly different during storage. Dietary green tea did not affect storage properties of chicken meat. The results of this study imply that dietary with green tea may have positive effects on chicken meat quality.

This study was evaluated the oxidative stability of the breast and leg meat from chicken fed extract of medicinal herb mix (Lonicera japonica Thunberg : Morus alba L. : Coptis chinensis = 48.5 : 48.5 : 3.0%) and antibiotics (Albac G150). Ross chickens were divided into three treatments: basal diet (control), basal diet with antibiotics (0.05%) and basal diet with extract of medicinal herb mix (0.3%). They were fed the experimental diets for 35 days and slaughtered. After that, the breast and leg meat samples were stored at $4^{\circ}C$ for 10 days. Total phenol content of breast meat in Ross chicken fed extract of medicinal herb mix was higher than that of antibiotics treatment and control during storage. DPPH radical scavenging activity was the highest in leg meat of Ross chicken fed extract of medicinal herb mix at 0 day. $ABTS^+$ reduction activity was higher in chicken meat fed extract of medicinal herb mix than antibiotics treatment and control. This results showed that the diet with extract of mixed medicinal herb was more effective in oxidative stability of chicken meat than basal diet and diet with antibiotics.

The objective of the study was to compare the carcass characteristics, meat quality, and blood parameters of slow and fast grown female broiler chickens fed in organic or conventional production system. The two genotypes tested were medium slow-growing chickens (SG, Hubbard Red JA) and commercial fast-growing chickens (FG, Ross 308). Both genotypes (each represented by 400 chickens) were divided into two sub-groups fed either organic (O) or conventional (C) systems. Chickens of each genotype and system were raised in a semi environmentally controlled poultry house until 21 d of age and were assigned to 5 pens of 40 chickens each. Then, O system chickens were transferred into an open-side poultry house with an outdoor run. At 81 d of age, 10 female chickens from each genotype and from each production system (n = 40) were randomly chosen to provide material for analysis, and were weighed and brought to the slaughterhouse to assess carcass characteristics and meat quality. The blood parameters were determined by using 5 female chickens from each genotype and from each production system (n = 20). FG had the higher live weight, along with carcass, breast, and thigh-drumstick weights compared to SG (p<0.05). FG had the higher breast yield, whereas SG had the higher thigh-drumstick yield (p<0.05). The O system resulted in a higher amount of abdominal fat (p<0.05). In addition, the O system values were higher for dry matter, crude ash, crude protein, and $pH^{15}$ values in breast meat, and for crude ash, crude protein, and $pH^{15}$ values in drumstick meat (p<0.05). In addition, total saturated fatty acids, total mono-unsaturated fatty acids, and total omega 3 were significantly higher in the O system than in the C system. Thus, the O system showed a positive advantage compared to the C system regarding female chicken meat quality, primarily within the ash, protein, and total omega 3 fatty acid profiles. In conclusion, the present study indicated that the main factor affecting the carcass characteristics of female chickens was genotype, whereas the organic system contributed to enhanced meat quality. These findings provide a better understanding of the relative roles of genotype and production systems in female broiler characteristics, and might aid producers in designing their facilities to optimize yield and quality while maintaining acceptable animal welfare standards.

This study was carried out to investigate the growth performance and the carcass ratio of meat-type Korean Native Ducks. Four hundred twenty Korean Native Ducks' chicks were selected and divided into four treatments (7 replications/ treatment, 15 birds/replication) by strains (A and B) and gender(male and female) with $2{\times}2$ fractal factors. There was no significant difference between A and B on the body weight at 2, 4, 6, and 8 weeks old (P>0.05). However, body weight of female was higher at 2 weeks old than male while that of male was higher at the 8 weeks old (P<0.01). Daily feed intake of male was higher compared to female during 6~8 weeks (P<0.05). On weekly body weight gain, there was no significant difference between strains, but gained body weight of male was higher until 2 weeks old while that of female was higher during 6~8 weeks (P<0.01). On the live body weight and carcass weight by strains and genders, B strain was higher than A strains at the 8 weeks of age (P<0.01). Carcass yield was the highest at 8 weeks of age in both strains (P<0.05). These results may provided the basic data on growth performance and carcass ratio of meat-type Korean Native Ducks.

The present experiment was conducted to evaluate the effect of stocking density on the growth performance, immune status, and meat quality of broilers. In total, 385 one-day-old Ross 308 broilers were randomly assigned to one of four distinct stocking densities: 26 birds/㎡, 22 birds/㎡, 19 birds/㎡, and 16 birds/㎡. They were fed the diet ad libitum for 5 weeks. Immunoglobulin (Ig) and corticosterone levels were evaluated, and growth performance, blood parameters, and breast meat quality were determined. It was observed that the weight gain and feed intake of growers (21~35 d) and broilers (0~35 d) were significantly reduced as the stocking density increased (P<0.05). However, the feed intake of starters (0~21 d) significantly increased as the stocking density increased (P<0.05). There were no significant differences in the biochemical profiles among the four different stock densities. Furthermore, no significant differences were observed in the stress parameters: (heterophils / lymphocytes ratio and corticosterone), IgA, and IgM; however, IgG significantly increased with stocking density (P<0.05). The pH, water holding capacity, and cooking loss of the muscle were all unaffected by the stocking density, but the shear force (tenderness) increased slightly as the density increased. The findings of this study suggest that a lower stocking density (16 birds/㎡) significantly improved the shear force of breast meat and IgG in broilers.
The effect of stocking density on the growth and meat quality of native Korean chickens was investigated. A total of 364 one-day-old native Korean chickens were randomly assigned to one of 5 treatments, each of which was replicated 4 times. Five distinct stocking densities-14, 15, 16, 18, and 22 birds/㎡-were compared. The diet was fed ad libitum for 10 weeks. Results indicated that the final body weight, body weight gain, and feed intake were lower (P<0.05) for the 22 birds/㎡ stock density as compared to the other stock densities. There was no significant difference in the feed conversion ratio, proximate analysis (DM, crude protein, crude fat, and crude ash), water-holding capacity, and cooking loss among the different stock densities. These results indicate that increasing the stock density to 22 birds/㎡ elicits some negative effects on the growth performance and meat quality of Korean-native chickens.
Background: Studies on prevalence of pale, soft, exudative (PSE) condition in Sri Lankan poultry industry is minimal. Hence, the objective of present study was to determine the incidence of PSE chicken meat in a commercial meat processing plant and to find out its consequences on meat quality traits of roasted chicken breast. Method: A total of 60 breast fillets were randomly selected, evaluated based on color L* value, and placed into 1 of 2 categories; PSE (L* > 58) or normal meat ($L*{\leq}58$). A total of 20 breast fillets (10 PSE and 10 normal) were then analyzed for color, pH, and water holding capacity (WHC). After processing those into roasted chicken breast, cooking loss, color, pH, WHC, and texture values were evaluated. A sensory evaluation was conducted using 30 untrained panelists. Results: The incidence of PSE meat was 70 % in the present experiment. PSE fillets were significantly lighter and had lower pH values compared with normal fillets. Correlation between the lightness and pH was negative (P < 0.05). Although there was no significant difference in color, texture, and WHC values between the 2 groups after processing into roasted chicken breast (P > 0.05), an approximately 3 % higher cooking loss was observed in PSE group compared to its counterpart (P < 0.05). Moreover, cooking loss and lightness values showed a significant positive correlation. Nevertheless, there were no significant differences in sensory parameters between the 2 products (P > 0.05). Conclusions: These results indicated that an economical loss can be expected due to the significantly higher cooking loss observed in roasted breast processed from PSE meat.
