Oxidative stability of omega-3 dietary supplements according to product characteristics

  • The objectives of the present study were to assess the oxidative stability of South Korean n-3 (omega-3 fatty acid) supplements carried out from 2018 to 2019 and evaluate the influence of product characteristics on oxidative safety. A total of 76 n-3 supplements were analysed for oxidation safety by four markers, including acid value (AV), primary oxidation (peroxide value, PV), secondary oxidation (p-anisidine value, pAV) and total oxidation value (TOTOX). Among the supplements tested, 5.3 %, 55.3 %, 28.9 % and 46.1 % exceeded the international voluntary recommended levels for AV, PV, pAV and TOTOX, respectively. Purity (%) of products, remainder of expiration date (suggested shelf life), package in press through package (PTP) and products with additives had statistically significant differences oxidation assessment levels (p < 0.05). In addition, n-3 group found in Algae oil had significantly lower AV levels than the group that did not, and product with Alaska pollack oil, had significantly higher pAV levels than without group (p < 0.05). The high oxidation status of South Korean n-3 products in the present study could not be considered a public health problem right now. However, the levels of oxidation may affect a lot the efficacy and safety of using n-3 supplements. Thus, current oxidation safety limits should be reestablished by regulatory bodies to ensure the safety and efficacy of n-3 supplements, so that the standards could be applied to the products available to consumers.

DPPH법에 의한 식용유지의 열산화 안정성 비교 (Comparison of Oxidative Stability for the Thermally-oxidized Vegetable Oils using a DPPH Method)

  • 유지의 산화안정도 측정을 위해 개발된 DPPH법의 최적화를 위해 시료의 양에 따른 유지의 산화변화를 분석하였고, 결정도니 조건을 사용하여 시중에서 튀김유로 사용되는 4종류 식용유지의 열산화안정성을 측정하였다. CDA와 p-AV는 산화반응이 진행될수록 증가하였으며 시료간의 상대적인 산화안정성 차이를 확인할 수 있었다. 반면에 DPPH법은 유지의 산화라디칼과의 반응성을 이용하며 흡광도의 증가와 감소를 반복하는 경향을 나타냈고 이로부터 유지산화라디칼의 변화를 측정 할 수 있었다. 또한 유지의 초기 전자 혹은 수소공여능을 확인할 수 있었고, DPPH 흡광도 증가를 통해 산화방지물질의 소진속도 및 산화라디칼의 생성속도를 계산할 수 있었으며, 산화방지물질의 소진시점을 결정할 수 있었다. 따라서 DPPH법을 기존의 산화도 측정방법과 병용한다면 유지의 산화도는 물론 산화반응 단계를 측정 할 수 있고, 산화안정성을 예측하는데 도움이 될 것으로 기대된다.

황색고구마 및 수박 초임계이산화탄소 추출물이 들기름의 산화안정성에 미치는 영향 (Effects of Added Supercritical Carbon Dioxide (SC-CO2) Extracts from Sweet Potatoes (Ipomoea batatas L.) and Watermelon (Citrullus lantus L.) on Oxidative Stability of Perilla Seed Oil)

  • This study was carried out to investigate the effects of supercritical carbon dioxide (SC-CO2) extracts from sweet potatoes (SP) and watermelon (WM) on the oxidative stability of perilla seed oils (POs) over the existing ones. A comparison was done between the oxidative stability of perilla oil (PO) after the addition of 0.1% of SP, and WM extracts and PO without extract. The oxidative stability was measured based on the viscosity, acid value (AV), peroxide value (POV), antioxidant (DPPH) activity, p-anisidine value (p-AV), and fatty acid composition. The viscosities ranges were: PO without extract, from 53.99±0.99 to 74.38±1.61 cps, PO with SP extract, from 53.99±0.10 to 58.73±0.8 cps, and PO with WM extract, from 53.98±0.10 to 56.00±0.70 cps. While the PO containing the SC-CO2 extracts had significantly lower AV, POV, and p-AV, their antioxidant activity was approximately 10 times higher than that of the PO without extract. There were no significant differences in fatty acid composition between SC-CO2 extracts added groups and PO without extract (p<0.05). The findings of this study confirmed that the SC-CO2 extracts from sweet potatoes and watermelon enhanced the oxidative stability of perilla seed oils, and are potential natural antioxidants for use in the food industry.

Oxidative Stability and Quality Characteristics of Duck, Chicken, Swine and Bovine Skin Fats Extracted by Pressurized Hot Water Extraction

  • The aim of this study was to investigate the oxidative status and quality characteristics of four animal skin-derived fats extracted using an identical extraction method. Pressurized hot water extraction, a green extraction method, was used to extract animal skin fats (duck, chicken, swine, and bovine skin). Multiple experiments were performed during accelerated storage at $60^{\circ}C$ for 90 days. Quality characteristics, such as extraction yield, iodine value (IV), fatty acid composition, and fat viscosity were determined. In addition, indicators for oxidative status, including acid value (AV), peroxide value (PV), p-anisidine value (p-AV), thiobarbituric acid reactive substances (TBARS), conjugated dienes (CD), and total oxidation (totox) values were evaluated. The fat extraction yield was highest in bovine fat, followed by duck, swine, and chicken fats. The IV was higher in duck and chicken fats. Duck fats contained the most unsaturated fats and the least saturated fats. Fat oxidation indicators, such as PV, TBARS, and totox values, were relatively higher in duck fats during storage compared to the other fats. Other indicators, including AV, p-AV, and CD, were similar in duck, chicken, and swine fats. Viscosity was similar in all the tested fats but markedly increased after 70 days of storage in duck fats. Our data indicate that duck skin fat was more vulnerable to oxidative changes in accelerated storage conditions and this may be due to its higher unsaturated fatty acid content. Supplementation with antioxidants might be a reasonable way to solve the oxidation issue in duck skin fats.

Green Tea Extract is an Effective Antioxidant for Retarding Rancidity of Yukwa (Rice Snacks) Fried in Soybean and Rice Bran Oils

  • Yukwa is a popular Korean traditional fried rice snack. The high fat content and porous structure of Yukwa cause it to rapidly become rancid, presenting difficult challenges for commercial distribution. In this study, an-tioxidant activities of green tea extracts (GTE) were evaluated in Yukwa fried in soybean oil (SBO), rice bran oil (RBO) and winterized rice bran oil (WRBO) during storage at 4$0^{\circ}C$ for 12 weeks. Lipid oxidation of Yukwa was determined by acid value (AV), peroxide value (POV), p-anisidine value(AnV), totox value and sensory evaluation. The addition of GTE to the oils reduced the increases in AV, POV, AnV, and totox. Totox increased most vapidly in Yukwa fried in SBO, fellowed by RBO>WRBO>SBO+200 ppm GTE>RBO+200 ppm GTE > WRBO + 200 ppm GTE (p<0.05). Sensory evaluation revealed that the addition of 200 ppm GTE delays rancidity in Yukwa by 7~8 weeks; providing compelling evidence that GTE is an effective antioxidant for Yukwa.

오메가-3 제품의 산화에 대한 안정성 조사 (Omega-3 Oxidation State of Fish and Algae Oil Supplements in South Korea)

  • 오메가-3 제품의 안전성을 알아보기 위하여, 경기지역에 유통되는 20개의 fish oil과 algae oil을 원료로한 건강기능식품 오메가-3에 대하여 EPA와 DHA의 함량과 산화 정도를 조사하였다. 산가의 결과값은 0-2.9 mg/g으로 평균 및 표준편차는 $0.5{\pm}0.6$이며 CODEX/FAO의 기준 3.0 mg/g을 적용하였을 때 모두 적합하였으며, 과산화물가의 경우 2.6-14.1 meq/kg로 평균 및 표준준편차는 $5.5{\pm}2.9$이며, 기준 5.0 meq/kq을 적용하였을 때 20건 중 11건이 적합하고 9건이 기준을 초과하였다. 아니시딘가는 국제적인 기준을 20을 적용하였을 때 18건이 적합하였으며 2건이 기준을 초과하였다. 총 산화가는 기준 26을 적용하였을 때 16건이 적합하였으며 4건이 기준을 초과하였다. 오메가-3의 산화에 대한 안전성 확보를 위하여 새롭게 설정되어 3월부터 시행되고 있는 산가 및 과산화물가에 대한 기준 올해 11월 시행예정인 아니시딘가와 총산화가에 대한 시행은 매우 바람직하며 지속적인 감시를 통하여 산화로부터의 안전성 확보에 기여할 것으로 보인다.

식물성 유지 및 수중유적형 유화계에서 육두구 종자 에탄올 추출물의 항산화활성 평가 (The antioxidant ability of nutmeg ethanolic extract in bulk oil and oil-in-water emulsion matrices)

  • 본 연구는 육두구 종자가 천연 산화방지제로서 효과적으로 에멀젼 제조 시 안정성을 가지는지를 확인하고자, 80% 에탄올로 추출한 육두구 종자(NM80)의 항산화 활성과 유지 산화안정성을 in vitro system과 실제 유지 및 유화액 산화 시스템에서 평가하고자 하였다. 결과적으로 DPPH 및 ABTS 양이온 라디칼 소거 활성과 ORAC가 평가에서 NM80은 농도 의존적으로 항산화 활성이 증가하였으며, TPC, TFC, FRAP 환원력은 각각 33.74 μmol tannic acid equivalent/g extract, 0.13 μmol quercetin equivalent/g extract, 295.27 μmol ascorbic acid equivalent/g extract로 관찰되었다. 또한, 유지 산화안정성을 측정하기 위하여 옥수수 기름을 180℃에서 90분 산화시켰을 때 NM80 200 ppm 첨가 시 일차산화물인 CDA가가 0.69%로 나타나 대조군보다 3.26% 감소하였으며, 동일한 조건에서 이차산화물인 ρ-AV와 TBA는 대조군보다 각각 16.94, 17.34% 낮았다. 또한, 유화액을 제조하여 NM80 200 ppm 첨가 후 60℃로 4일 동안 산화하였더니, 헤드스페이스 산소 함량은 20.44%로 대조군보다 산소 소비율이 6.29% 감소하였으며, CDA의 양은 대조군보다 82.85% 낮았다. 이러한 항산화 활성과 유지 산화 안정성에서 우수했던 NM80은 향기 성분으로 알릴 페녹시아세테이트, 유제놀 아세테이트, 유제놀 등이 검출되었다. 이와 같은 결과로 항산화 활성과 유지 및 유화액의 산화 안정성의 효과가 있는 NM80을 식품가공 시 첨가한다면 천연 항산화제로서 에멀젼의 품질 향상에 기여할 것으로 판단된다.
